3.Margarine – 125 g

4.Cottage cheese – 230 g

7.Eggs – 2 yolks or 1 whole, without eggs.

Preparation:

Using the example of rolls with nut filling.

Nut filling: mix 4-6 teaspoons of sugar with ground (crushed with a rolling pin) walnuts (1 cup shelled).

1.Margarine should be soft, for this it is better to lay it out on the table in advance.

If you don’t have time, put the margarine in the bowl in which the dough will be kneaded, place the bowl in a large bowl of hot water, let sit for a few minutes until the margarine becomes soft.

2.If you don’t need to quench soda according to the recipe, mix it with flour in advance.

3.Knead all the ingredients into a plastic dough, roll into a ball, put in a plastic bag, and leave in the refrigerator for half an hour. You can work with the dough right away, but from the refrigerator it is more manageable and less sticky to your hands.

4.Take out half of the dough, the rest can lie in the refrigerator for several days.

5. Shape the dough into a flat cake and roll it out as thinly as possible with a rolling pin.

I usually do less than 5mm. You can trim the dough into a rectangle shape, and use the scraps to make a few more rolls. You don't have to cut it.

6.Sprinkle the rolled out dough with the filling, dry filling, for example, ground nuts with sugar, granulated sugar, hard cheese, press onto the dough with your hand. If there is not enough filling and it does not stick, you can press it onto the dough with a rolling pin. Then it will be more convenient to roll the dough.

7.Cut the dough in half. Roll each half into a tube. Cut the tube into rolls. You can cut at a right angle (as with cheese) or at 45 degrees, as in rolls with sugar, photo at the beginning of the article.

8.Sweet rolls can be dipped in sugar or smeared with strong sweet tea. Simply brush unsweetened ones with egg yolk (beat the yolk with a little water). Place on a baking sheet lined with baking paper.

9.Bake for about 25 minutes at 200 ºС.

For products made from curd dough, it is always better to use steam to avoid burning. Place on a baking tray with 100-150 ml of water in a mug. For all roll recipes, I leave a mug of water in for about 15 minutes, then remove it.

10.Serve the sweet rolls when cool.

You can also serve it warm with cheese or meat filling.

In both dough versions, the amount of flour is indicated approximately, because sour cream and cottage cheese can be more or less liquid, the main thing is that the dough is plastic. But do not overfill the dough with flour, otherwise it will be less tasty.

I often bake according to the first recipe, which contains starch; it seems more tasty to me. And it seems to me easier to work with, but it depends on the cottage cheese.

100 g milk

50 g sugar

50 g of high-quality fat (82%) margarine; if you are completely against margarine, take butter or vegetable oil

500 g cottage cheese

PREPARATION:

Pour dry yeast into warm milk, add half a teaspoon of sugar, 2 - 3 teaspoons of flour (from the general norm). Stir everything until a homogeneous batter is formed and leave for 30–40 minutes until a foamy cap appears.

Sift the flour. Add salt, sugar and stir everything so that all dry ingredients are evenly distributed.

Add softened margarine and sour cream to the flour mixture and grind into coarse crumbs.

Pour in the yeast mixture and knead the dough to a medium consistency - not very tight, but not too soft. Since flour is different everywhere, during the kneading process you may need to add a little flour (if the dough is runny and doesn’t hold its shape well) or milk (if there is still unmoistened flour or the dough is too tight).

Cover the kneaded dough and leave it alone for 10 - 15 minutes. During this time, the flour will absorb moisture, form gluten and the dough will be easier to knead.

Knead the rested dough thoroughly until smooth.

Cover the finished dough and leave it warm until it doubles in volume.

If you have time, knead the risen dough and let it rise a second time. If there is no time, the risen dough can be cut.

For the curd filling, grind the cottage cheese with the egg and sugar into a homogeneous mass. If the cottage cheese is too wet, you may need to add a little flour or grated breadcrumbs to the filling.

Roll out the dough into a rectangle 0.5 - 1 cm thick.

Spread the curd filling.

Roll the dough with the filling into a loose roll.

Cut the roll into pieces of the desired thickness. I got exactly 20 of them.

Place the curd curls loosely on a baking sheet lined with baking paper, cover and leave for 40 minutes to proof.

During the proofing process, the curls should increase significantly in volume.

5 - 7 minutes before placing in the oven, brush the curls with a beaten egg.

Bake at 180 - 200 C until browned.

To fill, mix sour cream with sugar.

Immediately after baking, generously coat the curls with sour cream filling, cover tightly and leave until completely cool (or at least until warm).
