Simple omelet recipe

First, let's prepare the necessary ingredients to prepare a delicious omelet with milk. We will cook it in a frying pan.

Products:

  1. -Eggs. Their quantity depends on the size of your frying pan. You need from four to eight pieces.
  2. -Milk or low-fat cream - three to four tablespoons for each egg.
  3. -Butter. You will need one hundred to one hundred and fifty grams of it.
  4. -Salt – a small pinch for each egg, plus one pinch for milk.
  5. -A teaspoon of flour.
  6. -Allspice to taste.

Preparation

Carefully separate the yolks from the whites. Beat the whites into a strong foam. Grind the yolks thoroughly with salt and pepper. Pour the required amount of milk into them. Mix everything thoroughly.

Now gradually add flour to the yolks. Flour in an omelette is needed to make it denser. Now add the whites little by little into this homogeneous mass and mix. But don't beat it!

Place the frying pan on the fire. When it is hot, brush it with oil.

Pour the eggs and milk into the frying pan. When the omelette begins to boil, reduce the heat to medium.

As soon as you see that the edges have become dense and a fried edge has appeared, turn the heat to minimum.

Fry the omelette until it is completely homogeneous and turns white. Now take a spatula, lift one edge of the omelette and fold it in half.

You can put it on a plate. Your wonderful omelet is ready!

♦ HOW TO COOK A LUXURIOUS OMELET WITH MILK

We will need: two eggs, one hundred and thirty grams of milk and a piece of butter.

Preparation

It is believed that you need to take the same amount of milk as eggs. To avoid mistakes, break the eggs into a glass. Look how much space they take up. This means you need the same amount of milk. Pour the eggs into a deep bowl. Pour milk there, add salt and pepper. Now whisk everything thoroughly with a whisk or fork until bubbles appear on the surface.

A few words about the frying pan. It is good to cook omelette in a non-stick frying pan. Ceramic will also work. You can fry an omelet in a cast iron or aluminum frying pan. But in enamel or stainless steel dishes, the omelette can burn. It is advisable that the frying pan has a lid. Thanks to the lid, you will get a fluffy omelette.

Place the frying pan on the fire and heat it up. Now you can add the butter.

Butter can be replaced with ghee or refined vegetable oil. But do not use spreads and margarine to prepare omelettes. They will give the dish an unpleasant smell.

When the butter melts, pour in the prepared mixture. Wait until it boils. Now turn the heat to medium and cover the pan with a lid. After a couple of minutes have passed, the omelette will turn white and not transparent.

Now turn the heat to minimum. Let the omelette cook until done. This will take five to seven minutes. Now you can put it on a plate and enjoy the wonderful taste.

1. The main ingredient for preparing the dish is eggs. You need to choose them very carefully. They must be the best and freshest. How can you determine the freshness of a product?

Carefully inspect the eggshell - it should be uniform and matte. If the surface is shiny, then the product is not the freshest;
- weigh the egg in your hand - it should be heavy by weight;
- Dip the egg into water. A fresh product must float. If it doesn't, throw it away.

2. Pay attention to the frying pan. The quality of the dish’s preparation largely depends on its choice. The pan must be thick and durable, otherwise it will not withstand strong heat and the dish will burn. The ideal option is a frying pan with high sides and a non-stick coating.

How to cook an omelette: delicious recipes with photos and secrets of a healthy omelette from the magazine "site"»

Omelette is deservedly considered an ideal breakfast dish. Eggs baked with cooked vegetables, melted cheese and boiled meat are very tasty, satisfying and healthy. A dish that combines sophistication and simplicity has been known to mankind since time immemorial. Even in ancient Rome, it was customary to end a meal with a sweet dish made from eggs: in those distant times they were cooked with honey and served for dessert.

The history of the omelet - all the interesting things

It is not known for certain when and when the omelette was invented. According to one version, the modern version of this dish - lightly beaten eggs fried on one side in butter (from the French - omelette), first appeared in France. The local chefs are sure: a real omelet has no place for flour, broth and dairy products. According to other sources, the omelet recipe was invented in the 19th century by a Viennese cook: it was in Austria that fried eggs, which were available to every poor person, turned into an exquisite dish for honoring kings.

Traveling through the centuries, the omelette has changed beyond recognition. Today we can enjoy this dish in hundreds of interpretations. Italian frittata is prepared in olive oil with the addition of cheese: first the egg mixture is fried and then baked in the oven. Japanese omurice is filled with fried rice. In Spain, potatoes, artichokes and seafood are added to the omelette, in America - cheese and ham, in China - bean sprouts, in Norway - smoked salmon. In France, omelette is usually served with Hollandaise sauce, in Scandinavian countries - with cranberry sauce.

The most popular omelette additions are ham, bacon, mushrooms, vegetables, cheese and seafood. These ingredients can be added directly to the egg mixture or the filling can be prepared separately and wrapped into prepared pancakes. Eggs can make friends with any greens - nettle, sorrel, green onions, young peas, broccoli, spinach. In the omelette, fragrant herbs reveal themselves beautifully - parsley, basil, thyme, oregano, rosemary. It is not necessary to cook an omelet with milk; eggs can be mixed with kefir, sour cream, cream, or yogurt. The dish is quite high in calories: one serving (200 g) contains about 370 kcal.

Today you can hardly surprise anyone with an omelette with herring or anchovies. But the sweet types of this dish - mint, chocolate, berry omelette - can be considered truly exotic. Beaten eggs mixed with honey, jam or fruit syrup make a wonderful dessert. The filling for such an omelet can be fresh berries, apples, plums, raisins, dried figs, canned peaches and pineapples.

How to cook a tender, airy, melt-in-your-mouth omelette? A little dexterity, patience and knowledge of simple secrets is all that is required.

1. Consistency
To make the omelet denser, add flour to the egg mixture. To make it fluffy, beat all the ingredients very well and cook the omelette in the oven or in a frying pan with a lid on low heat.

2. Taste
Sour cream added to the egg mixture will give the omelette delicate creamy notes. And for frying, it is better to use butter: it gives the finished dish a noble taste. It is very important not to overdo it with milk: add no more than one and a half tablespoons per egg. Spices are used for piquancy: chili pepper, garlic, paprika, nutmeg.

3 eggs
They must be selected - fresh and homemade. Before breaking eggs, you need to wash the shells well with soap. Experienced chefs recommend beating eggs with a whisk or fork. To make the omelette airy, it is better to use a mixer.

4. Vegetables
Vegetables for an omelet need to be fried, stewed or boiled so that they turn out soft and juicy, since the cooking time of eggs and different vegetables does not always coincide. There is no need to fry the onion too much, just brown it a little, since it will still be baked in the omelette itself.

5. Filling
The filling for the egg mass, especially if it is made from tomatoes, onions, or zucchini, is best prepared in a separate frying pan so that the vegetables release their juice. Greens and aromatic herbs can be added at almost any stage of cooking: pour into the egg mixture or sprinkle on the omelette a couple of minutes before cooking.

6. Dishes
Cast iron frying pans with a thick, evenly heated bottom are ideal for preparing omelettes. Ideally, these are cookware with a non-stick coating. It is better to use a lid with a hole so that evaporating moisture can escape through it.

Step-by-step recipe for a classic omelette in a frying pan

In a convenient bowl, release the eggs and immediately add milk to them. After adding a little less than a quarter spoon of salt, stir with a fork or whisk until smooth. The mixture needs to be shaken, not whipped, only in this case the omelette will turn out fluffy.

Place a slice of butter in a thick-walled or coated frying pan and place it over medium heat. Once the butter has completely melted and covered the entire bottom, quickly and carefully pour in the egg mixture.

Covering the pan tightly with a lid, slightly lower the heat and cook for about seven minutes.

Option 2: Omelet in a frying pan with a delicious cheese crust - a quick recipe

If choosing cheeses for your omelet is not a problem for you, use several varieties. For example, as a “pillow”, really choose a fast-melting one, and sprinkle the finished portion with another one, with a sharp taste or very salty.

Ingredients:

  • large eggs - two pieces;
  • a quarter glass of milk;
  • hard, easy-melting cheese - 100 gr.;

Using a fine grater, grate the cheese into a separate bowl.

Spread the cheese evenly over the bottom of a dry frying pan and place it on low heat.

As soon as the cheese shavings begin to melt, pour in the egg mixture and, without covering with a lid, bring to readiness - until the bottom is lightly browned.

Using a spatula, fold the omelette pancake in half, transfer to a plate and serve.

Option 3: Delicate French classic omelette in a frying pan

According to the recipe, it is suggested to use white pepper, but not everyone likes its aroma. On the other hand, there are often descriptions of similar omelettes, in which, in addition to black pepper, red paprika is added. It’s difficult to say which omelet will be more “French”; perhaps it’s worth trying them all.

Ingredients:

  • butter, “Traditional” butter - 50 gr.;
  • three eggs;
  • fine salt.

How to cook

In a thick-walled frying pan, about twenty centimeters in diameter, slowly melt the butter. We heat it over low heat, not letting the fat sizzle - this is important.

In a bowl with added salt, beat the eggs until smooth. There is no need to beat, foam should not form, so first pierce the yolks with the tines of a fork and only then stir. If you want to add pepper, use ground white pepper; black crumbs will spoil the appearance of the omelette.

Stirring continuously in a circular motion, slowly pour the hot oil into the egg base, and then pour the mixture into the pan in which it was melted.

As soon as the edges of the omelette begin to turn pale, use a spatula to carefully pry up one of the edges and carefully roll the omelette pancake into a roll. Having tilted the pan over the plate, carefully transfer the omelette over the edge, directly into a serving plate.

Option 4: Airy omelette in a frying pan with a secret

Not much of a secret, more of a surprise. To make it a great success, choose large eggs, without replacing them with a large number of small ones. Of course, for the sake of the splendor of the dish, you will have to cook it exclusively with the freshest ingredients. And it’s better if they are homemade.

Ingredients:

  • four selected fresh eggs;
  • two tablespoons of milk.

Step by step recipe

Carefully breaking the eggshells, pour the whites into a small bowl, and place the yolks in a separate container.

Add milk and a little ground white pepper to the yolks. Whisk with a whisk or fork until smooth, so that there is no foam.

Add a little fine salt to the whites and beat until you get stable peaks. You can also beat the whites with a mixer, which will significantly speed up the process.

Place a large non-stick frying pan on medium heat and heat it well.

Pour the yolk mixture into the pan and distribute it evenly with a spatula over the entire bottom.

As soon as the top of the yolks becomes dense, reduce the heat to a minimum and spread an even layer of whites on the surface of the resulting pancake. We are waiting for the protein foam to set well too.

If the omelette begins to spring back when lightly pressed with a spatula, cut it in half. Using a wide spatula, fold both halves and immediately carefully transfer to plates.

Option 5: Hearty Bulgarian omelette in a frying pan with cheese and vegetables - “Mish-mash”

It is not necessary to use feta cheese in the omelette; other pickled cheeses are also suitable. Although the list indicates one pod of pepper, it is better to use two or three of different colors, accordingly changing the proportions of other products.

Ingredients:

  • fully ripe, large tomato;
  • 100 grams of tender cheese;
  • small onion head;
  • one sweet pepper;
  • four large eggs;
  • two full tablespoons of vegetable oil;
  • a couple of sprigs of fresh parsley and a few onion feathers.

How to cook

Thoroughly wash all greens and vegetables with water. Dry the onion feathers and parsley well, spreading them on a towel.

Cut the pepper and tomato pulp into small cubes, finely chop the onion, chop the parsley and young onions.

Pour oil into a frying pan and slowly heat it over low heat.

First, put the onions in the pan. After frying the slices until translucent, add the sweet pepper pieces, and after four minutes, the tomato pieces. Cover with a lid, simmer the vegetables for the same amount of time and add greens to them. Cook a little longer, about five minutes.

Crumble with your fingers, add the cheese to the vegetables and simmer everything together for another two minutes.

Fill the contents of the frying pan with eggs scrambled with salt, sprinkle pepper on top and, cover with a lid, bring to readiness.

Option 6: Hearty omelette in a frying pan with ham and cheese - “Calzone”

Use any ham; beef or chicken products will do. Add greens sparingly so that their taste does not overwhelm all other foods in the dish.

Ingredients:

  • hard cheese - one hundred grams and a little less - boiled ham;
  • two spoons of flour;
  • eggs - 2 pcs.;
  • three spoons of milk;
  • an incomplete spoon of “Farmer” butter;
  • fresh herbs to taste.

Step by step recipe

After whisking the eggs until smooth, mix the resulting mass with slightly warmed milk.

After adding the sifted flour and adding a pinch of fine salt, stir again without leaving any lumps. Set the bowl with the omelette base aside for 10 minutes.

Cut the boiled ham into cubes as finely as possible, and grate the cheese using a coarse grater.

Heat a slice of butter in a frying pan over maximum heat. Reducing the heat to medium, pour the omelette mixture into the pan. Fry for up to three minutes until the top is set.

Carefully turn the omelet over using a wide spatula. In an even layer, retreating from the edges by a centimeter, we distribute cheese shavings over the surface of the omelette, and put ham and finely chopped herbs on it, covering only half of the omelette cake.

Fold the omelette in half and press the edges tightly with a spatula; cook over low heat for two minutes per side.

Option 7: Quick and tasty breakfast of omelette in a pan with vegetables

Without bringing it to foam, beat the eggs with sour cream. Add a little ground pepper and salt to the omelette mixture, coarsely grate the cheese into it and mix well.

Pour the prepared mixture over the vegetables fried in a frying pan. Cover with a lid and simmer the omelette over low heat for ten minutes. Before serving, it is advisable to sprinkle the hot omelette with finely chopped herbs.

Option 8: Omelet in a frying pan with potatoes and soft cheese

This is no longer just breakfast, but if you are not particularly hungry, then a whole lunch. Potatoes can, with no less success, be boiled ahead of time in their jackets, cooled, peeled and cut. Before preparing the omelette, it is first browned in vegetable oil, then sprinkled with paprika and poured over melted butter. You can simply add a slice of butter and stir the potatoes after they have melted.

Whisk the eggs and milk well. Lightly add salt, pour the scrambled eggs into the frying pan, distributing them evenly over the entire vegetable layer and cook the omelet, covered, over low heat.

Spread the soft cheese evenly over the surface of the finished omelette with a spoon and keep it for some time over low heat, letting the cheese melt. Cut the finished omelette into pieces, transfer to a plate and serve, sprinkled with chopped dill.

Option 9: Omelette in a frying pan with shrimp

Shrimp need to be boiled not just in salted, but even slightly salted water. Accordingly, reduce the amount of salt in the dish itself so that the shrimp meat is more noticeable in the omelet.

Ingredients:

  • peeled shrimp - 150 gr.;
  • four eggs;
  • half a cup of very heavy cream;
  • spoon of flour;
  • garlic;
  • half a spoon of dried thyme;
  • non-fragrant vegetable oil.

Bring a glass of salted water to a boil. Place the shrimp in intensely bubbling water and boil for five minutes after boiling again. After removing from the stove, leave the shrimp in the broth for another two minutes, after which, placing them in a colander, strain out the excess water.

Omelette - general principles of preparation

It is unlikely that it will be possible to list all the omelet recipes, because there are hundreds of options for preparing the popular dish from a mixture of milk and eggs. The classic cooking recipe is very simple - just beat 2-3 eggs with a small amount of milk, season the mixture with salt and pepper (you can do without it) and bake the mixture in the oven or fry in a frying pan. A more dietary option for an omelet is to cook the dish in a double boiler. Children's omelettes are best cooked steamed or in a slow cooker. Sometimes a little flour is added to the egg mixture for density or soda for fluffiness. You don’t have to use milk for an omelet; you can prepare an egg dish with the addition of sour cream, mayonnaise and even water.

To make the food more satisfying, appetizing and tasty, a variety of fillings are used. The most common of them are: tomatoes, cheese, sausage or frankfurters, any greens, mushrooms, green peas, bacon or ham, bell peppers, etc. There are a lot of options, so try to experiment a little and come up with your own original omelet recipe. For the filling you can also use carrots, zucchini, boiled beef or chicken, shrimp, salmon, ham, corn, spinach, crab sticks and many other ingredients. A wide range of seasonings, spices and herbs are used to prepare the dish: a mixture of peppers, garlic, herbs de Provence, cardamom, saffron, basil, cilantro, etc.

The omelette can be served hot or cold with hot toast, chopped herbs or any suitable sauce (soy, cream or mayonnaise).

In order to prepare an omelette, you will need a bowl in which to beat eggs and milk, a whisk or fork (you can also beat the mixture with a blender or mixer), a knife, a cutting board, a milk measuring cup, a frying pan or a baking dish. Depending on the recipe, additional equipment may also be required: vegetable slicers, vegetable peelers and a grater. The omelet is served in regular serving bowls.
