Making high-calorie cheese from goat's milk is as easy as its previous version. Only in this recipe we will not use vinegar. So, you will need 2 liters of milk, a tablespoon of salt, 6 fresh eggs and 400 ml of sour cream.

This is my most favorite recipe. The time to create such a product is quite long, however, it's worth it. The finished product is incredibly tender, tasty - much better than store-bought. Take your time and get ready! I do with it, I recommend trying it.

Required products:

  • 8 liters of whole milk;
  • 0.4 g thermophilic starter;
  • 1/4 tsp calcium chloride;
  • 1.3 g dry rennet;
  • 30 ml of cold water;
  • 1 liter of warm water;
  • rock salt.

Cooking process with photos:

1. Pour the milk into a 10-liter saucepan and heat it to 32 ° C, stirring constantly.

Sterilize purchased, bringing it to a temperature of 72-74 ° C, and quickly cool to 32 ° C. With homemade milk, such an operation is not necessary.

2. Add the starter to the pot and wait a few minutes for it to absorb the liquid. Gently stir the solution and leave it for 30 minutes to allow the lactic acid bacteria to multiply.

3. Add calcium chloride to the pot and stir.

4. Dissolve the rennet in 30 ml of water, carefully add it to the container and mix thoroughly. Leave on for 40-60 minutes.

5. After an hour, cut the cheese clot into cubes with a side equal to 1 cm. Wait another 5 minutes when the cubes settle to the bottom of the pan. Knead the mass for 5 minutes. Again, leave the pan for a few minutes.

6. Without affecting the cheese mixture, pour 1 liter of whey into another container with a ladle. Stir the remaining grain for another 10 minutes.

7. Heat a liter of water to 42 ° C and pour it into the cheese mass. Stir for 20 minutes, heating the pot to the indicated temperature if necessary.

8. Using a sieve, completely remove whey from the mixture.

9. Scald the mold for pressing and lavsan fabric with boiling water. Put it in a mold and fill it with cheese grains. Cover with cloth and lid.

10. Place a load on the lid - it should weigh twice the weight of the cheese mass. In this case, 2 kg. Leave to press for half an hour.

11. After 30 minutes, remove the cheese from the mold and turn it over. Cover with a cloth and put it under the press again, already 3 times heavier than the future cheese head. Leave to press for 60 minutes.

12. After an hour, turn the head over again and do the same procedure, increasing the weight of the press to 4 kg. Press for 2 hours.

13. Now turn the cheese over for the last time and leave it under a pressure equal to 4 kg for a day.

14. After 24 hours, remove the head from the mold and generously salt on all sides. Wrap the product again in a cloth and place in a mold, leaving for another day at room temperature.

15. Move the cheese to a drainage mat to dry for 3-4 days. The head must be turned twice a day.

Pack the finished product in a shrink bag and put it in the refrigerator. It will ripen for 45-60 days. But the more it lies on ripening, the tastier it is 🙂

Goat milk cheese with pepsin at home

Do you want to try the resulting product as soon as possible? Then you need to use pepsin for faster cooking. This will not spoil the taste, but it will turn out creamy and very tender.

Required Ingredients:

  • 25 liters of evening infused milk;
  • 1/4 package of pepsin;
  • 150 ml of cool water;
  • salt.

Start cooking:

1. Dilute 1/4 pepsin in cool water and dissolve it completely.

1 sachet of pepsin is designed for 100 liters of milk. To prepare 25 liters, divide the sachet into 4 equal parts.

2. Pour the milk into a saucepan and heat it to 35-37 ° C, stirring constantly.

3. Add pepsin and mix again. Cover the pan with a lid, keep the temperature at 35 degrees. Heat for another 30-35 minutes until a cheese curd forms. It should be tight - check it for a break. It may take a little longer to heat up.

4. Cut the clot into cubes and stir with a ladle. Let the mass stand for 15 minutes to allow the grain to settle.

5. Place the saucepan back on low heat and stir constantly. Excess whey must be removed with a ladle.

6. Cover the sieve with a cloth and pour the whey with grain into it. Season generously with salt on top of the cheese mass. Cover with a plate and place a press on top.

7. After 45 minutes, remove the cheese from the mold and turn it over. Salt the head again, cover again and place a weight on top. Keep the cheese in shape for an hour.

Now you can try the finished product - it turns out tender and soft enough. And you can leave the cheese to drip under pressure or without it, if you like it harder.

How to cook soft Adyghe cheese from goat milk?

The product got its name thanks to its homeland - the Republic of Adygea. It turns out very soft and does not require maturation. It is better to make it from homemade milk, so the taste will be softer, more tender.

You will need:

  • 4 liters of milk;
  • 1.2-1.5 l of whey;
  • 1 tsp salt.

How to do:

1. Heat whey to 72°C and milk to 85°C in different pots.

2. Turn off the heat and gradually add the whey to the pan, stirring constantly.

Add the whey until the milk turns into cottage cheese.

3. Stir the resulting mass and leave it for 20 minutes.

4. After the specified time, discard the cottage cheese in a colander. Add 0.5 tsp to the mass. salt and wait 20 minutes.

If you want to make cheese from pasteurized milk, then boil it and cool it to a temperature of 36-38 ° C. Heat fresh milk to this temperature. Pour the acidin-pepsin starter diluted in a third of a glass of milk at room temperature into the prepared milk. If you have an electric stove, be sure to move the pan away from the burner so that the milk does not heat up and the enzymes do not cook. Cover the saucepan with a lid.

After 30 minutes - 1 hour, a dense clot should form, but sometimes you have to wait about 2 hours: the time depends on the amount of leaven. Determine the readiness of the clot with the help of a knife blade: if, after immersion in the pan, the blade comes out clean, the clot is ready, that is, the leaven particles are compressed and do not stick to the blade.

If you get a mass that looks like yogurt, cover the pan again with a lid and leave for another 30 minutes. Such a mass could be due to an insufficient amount of acidin-pepsin. If, after an additional 30 minutes, the mass does not acquire the desired consistency, slightly heat the pan, stirring the mass thoroughly, and fold it into a fine sieve. Transfer the mass to small sieves lined with cotton cloth, salt (do not salt in the pan!), mix and tamp. Tie the ends of the fabric and place the mass under the load. Periodically cut the mass into cubes and mix so that the whey drains faster.

The process will take quite a long time, as the cheese layers will gradually settle to the bottom and compact. Lay layers of cheese at intervals of 20 minutes. Close the forms with an absorbent towel or napkins and leave to mold and ripen under its own weight for 2 days. After a day, you need to turn the molds over for equilateral self-pressing of the cheese mass.

Remove the cheese heads from the molds, sprinkle with salt (¼ tsp) on both sides and leave for 24 hours on a drainage surface, covered with a towel. Place the heads in a large container.
