"Nuts" is chocolate, the distinctive feature of which is the presence of whole hazelnuts. In Russia, the bar appeared in the last century, in the late 90s. In 1997, a confectionery factory in the city of Samara began producing it. In 2008, the composition of the Nuts bar was slightly changed. The chocolate was supplemented with an increased amount, which slightly improved the taste.

In 2004, a raffle promotion from the Nestlé company was launched. Consumers who found a special code on the back of the package could win valuable prizes. Ingredients for a Nuts bar

Caramel:

  • sugar - 350 g;
  • water - 150 g;
  • heavy cream - 80 ml (here 33%);
  • butter - 30 g.
  • proteins - 100 g (~3 pcs);
  • vanilla sugar - 1.5 tsp;
  • sugar - 400 g;
  • water - 200 ml;
  • glucose syrup - 280 g;
  • citric acid - on the tip of a knife;
  • powdered milk - 4 tbsp. (~30 g);
  • cocoa powder - 1 tsp. (~5 g);
  • hazelnuts - 300 g (roasted).
  • milk chocolate - 100 g.

Coating:

  • milk chocolate - 300 g.

Step-by-step preparation

Let's prepare the form

Line a rectangular pan 30 cm long, 10 cm wide and 6 cm high with foil or parchment paper.

Let's prepare caramel

In a medium saucepan with a thick bottom, combine water, sugar and citric acid. Place on medium heat and wait, without disturbing, for the sugar to dissolve. If droplets appear on the walls of the pan, soak the brush in water and wash them off.

When the sugar has dissolved, continue to cook without disturbing until 175 degrees. Remove from heat, pour in cream and stir quickly, only very carefully. Add butter and mix again.

Place back on the heat and bring to a boil. Remove from heat, carefully pour into prepared pan and let cool completely.

Tip: Once the caramel has cooled slightly, you can put it in the refrigerator until it cools completely.

Prepare nougat

Pour the whites into a large heatproof bowl, add vanilla sugar and set aside.

Pour water into a saucepan with a thick bottom, add sugar, glucose syrup and citric acid.

Stir, place on medium heat and cover with a lid. Bring to a boil and cook with the lid closed for about 2-3 minutes.

Then remove the lid and cook without disturbing to 130 degrees. As soon as the syrup reaches 130 degrees, beat the whites until stiff peaks form.

When the syrup has heated to 140 degrees, pour it in a thin stream into the whites and continue beating for about 2 minutes until thick.

Add milk powder, cocoa and mix until smooth.

Add nuts and mix with a spatula.

Place in the mold, level the surface and let cool slightly.

Melt milk chocolate in the microwave. Pour it over the nougat and distribute evenly. Place in the freezer for 2 hours.

Prepare chocolate for coating

Melt the milk chocolate in the microwave, just remove and stir every 10 seconds.

Place 3 identical jars or glasses in a row on a baking sheet. We take the bar out of the freezer and remove it from the mold. We put it with a chocolate base on the jars and remove the foil.

Pour the melted chocolate on top and distribute it evenly throughout the bar. Let it sit for a couple of minutes and transfer it to a plate or cake rack.

Store in the refrigerator, and 30 minutes before serving, remove and let stand at room temperature.

Nuts are very similar to the real thing and just as tasty. You can make not only a large bar, but also many small ones.
