Not everyone knows how to fry catfish in a frying pan without it falling apart. And I haven’t cooked this fish for a long time, somehow I preferred trout, halibut, pike perch. And then in the fish department I witnessed a conversation between a seller and a buyer. A middle-aged woman was asking the seller what this beautiful spotted fish was and what to do with it. Of course, my attention immediately went to this fish, and I saw my old friend catfish.
I have a rather complicated relationship with her; several times I had to give our dinner to the neighbor's cat because fish steaks fell apart right in the frying pan, turning into some kind of incomprehensible jelly mass. At first, I thought that I had made a mistake with the recipe or that I had gotten the wrong fish, but when such an embarrassment happened for the second time, I decided not to buy catfish again. Because I know from childhood: what happened once may not happen again, but what happened twice will definitely happen a third time. Especially if you don’t work on mistakes and draw certain conclusions.

And one day I came to my aunt, who at that moment was busy with dinner and, to my great surprise, was frying catfish steaks. It was she who explained to me exactly what I had done wrong before and what needed to be done to properly cook steaks from this fish.
In fact, everything turned out to be very simple, there are only a few important rules:
- Be sure to defrost the catfish completely.
- Before frying, fish pieces should be well breaded in flour or starch.
- Fry steaks in a hot frying pan over high heat.
- Use a Teflon-coated pan.
- Do not turn the steak to the other side until a stable crust has formed.
- Do not cover such fish with a lid; it is better to turn it over on different sides several times.
- Wait until it cools down and only then serve it.
Well, that’s all, as you can see, there is nothing complicated, so let’s prepare delicious, tender steaks from this wonderful and very healthy fish.

- catfish fish
- sea or table salt
- wheat flour
- vegetable oil

This article will talk about cooking blue catfish. Blue catfish is the most difficult of all catfish to cook. So I offer you an easy way to make a delicious dish from this “difficult” fish.

Catfish is “difficult” because if cooked incorrectly, the meat loses its shape and turns into mush. That won't happen in this recipe.

So let's get started. We only need a few products:
The catfish itself. Usually, since this fish is large, it is sold cut into steaks. This means that most likely you will have such a piece of steak.
Fresh chicken eggs. Their quantity depends on the weight of the fish. But, since eggs are a piece product, we proceed as follows. In any case, we first use one, and then, if there is not enough, add it. Again, one at a time.
Flour- any wheat. In sufficient quantities. It will take a lot, twice as much as for any other fish. Therefore, it is better to have at least half a kilo in stock. We do the same - sprinkle a little, and add as needed.
Vegetable oil, usual for frying. Its quantity depends on the volume of fish and the diameter of the pan. For the first time, pour half a finger of it into the frying pan. Then add as needed.
Salt taste.

Preparation:

Defrost the blue catfish completely. This large fish has tender meat and manufacturers and sellers take advantage of this. They mercilessly stuff it, usually cut into pieces for sale, with water and freeze it. Unlike other fish, whose meat is difficult to absorb liquid, and whose fillets are usually “glazed” with a layer of ice on top, blue catfish does not look like it is stuffed with water. But that's not true. When defrosting, you will see that there is a lot of water in it.

Drain off any liquid formed during defrosting. Moreover, we squeeze the catfish steak (lightly, without excessive enthusiasm), getting rid of excess water.

Pour some flour into a suitable container. It is convenient to use disposable substrates for this, on which vegetables and other products are often sold. Afterwards, simply throw away the backing with the remaining flour.
Beat the egg until smooth with a fork.

We cut the catfish together with the skin into pieces approximately the size of a matchbox. The remaining bones and fins can be frozen to later make fish soup or fish broth.

Add some salt to the flour. Dip the fish pieces first in flour, then in egg and then again in flour. We do this carefully and spare no effort. Add more if necessary.

Heat the oil in the frying pan thoroughly. On the biggest fire. We throw pieces of catfish into it.

Fry on one side, without turning down the heat, until crispy. Turn it over. We fry the same amount more. No need to keep it on fire for a long time. The tender catfish meat, when cooked, will begin to intensively release juice.

Therefore, a balance is needed here - cook, but do not let the liquid leak out. This is mainly achieved by using a battered “fur coat”, but this is not a panacea; under the influence of temperature, the meat begins to emit juice, and our task is to prevent this by having time to cook the catfish.
Remove from the oil, allowing it to drain thoroughly. You can place it on paper napkins to collect excess oil.

That's all. Serve to the table. At least as a main dish with the addition of a side dish. The best would be mashed potatoes and French fries. At least as an independent meal. With the addition of a light vegetable salad. The fish did not lose its shape, did not fall apart, but turned out to be the most tender, with a crispy, crispy crust.

The “armor” of flour and eggs, essentially batter, prevented the catfish meat from spreading. The hot oil easily formed a crust. And the strong fire allowed the fish to cook quickly. This is how, knowing the culinary basics, you can deliciously and easily prepare “difficult” blue catfish.
