  • butter – 125 g;
  • sugar – 80 g;

  • water – 50 ml.

Cooking process:

Sift the flour into a cup and add sugar and salt. Vanilla sugar is added at the same stage. Mix dry ingredients.


Grate the frozen butter into the same container using a coarse grater.


Using your hands, grind the dry ingredients with the butter into fine crumbs; first rinse your hands with cold water.


To bind the dough, lightly shake the egg and add in small quantities, constantly kneading the sand base; you may not need all the egg.


Wrap the finished dough for the baskets in cling film and put it in the refrigerator for 20 minutes.


Then let it sit for 5-10 minutes at room temperature. Roll out into a layer 5-7 mm thick. Using a knife, draw a circle with a diameter larger than the mold.


Place the prepared pieces into metal muffin tins (no need to grease).


Spread the dough with your hands and remove any excess.


Bake the baskets in a preheated oven until golden brown at 180ºC for about 20 minutes.


To prepare custard protein cream, start with syrup. Pour water into the saucepan, then add sugar, do not stir under any circumstances. Bring to a boil and, while boiling, the syrup must be brought to a “soft ball” state. To do this, drop the syrup into a glass of cold water prepared nearby; it should roll into a ball. The whole process will take no more than 10 minutes.


At the same time, beat the whites into a strong foam.


Continuing to beat the egg whites, start pouring the hot syrup a little at a time around the edge of the cup. After you have added all the syrup, beat the custard from the egg whites until it cools completely. You should end up with a thick, shiny mass that remembers its shape well.


Cool the finished baskets and place one teaspoon of jam on the bottom of each.


Decorate the top with cream from a pastry bag.

Pour soda and yolk into this mixture and beat very well.

Add flour to the resulting bulk mass in small portions and quickly knead the dough for the “Basket” cake without stopping.

Bake in the oven at 200 - 220 degrees Celsius until browned.

Keep in mind that the shortbread baskets need to cool and harden, so you need to bake them a few hours in advance, up to a day in advance.

Let's make the cream. First of all, we begin to cook the syrup from sugar and water. Combine the ingredients in a saucepan and place on the stove.

Cook the syrup so that it gurgles, this means that the correct caramelization processes are taking place, stir and skim off the foam. Cook until the consistency of liquid caramel is achieved. We check simply - place a container with cold water next to it and periodically drip the resulting syrup into it with a spoon. Until we see that a soft ball forms in the water, we continue to cook. This process takes approximately 10 minutes.

At the same time, beat the prepared chilled egg whites.

Slowly pour the finished hot syrup into the whites being beaten at maximum speed in a stream. The cream will sag slightly at first, continue to beat and in the process the mass will increase again, become thick and keep its shape.

Following the syrup, add lemon juice and vanilla, continuing to beat the mixture until it becomes stable and retains its shape.

Add jam to the bottom of each basket.

Place the airy protein cream in a pastry bag with an appropriate nozzle and form beautiful snow-white peaks.

If the density of the ball resembles soft plasticine, then the syrup is ready. If the ball is easily wrinkled like dough, then the syrup is undercooked; if it is completely hard, then it is overcooked.
  • 5. While the syrup is boiling, beat the whites until foamy. Add vanilla sugar and continue beating. Then pour the finished boiling syrup into the protein mass. Don't stop whipping.
