By the way, this is not the first time I have used such a fermented milk drink. Once I cooked okroshka on ayran with shrimp. It turned out quite unusual and tasty.

In general, this summer dish can be seasoned not only with tan and ayran. Try it, maybe you will like vegetable crumble with kvass or kefir more. Although all types of fermented milk are suitable for it. In addition to the above, they use yogurt, whey, and yogurt.

Ingredients:

  • three or four potatoes;
  • four eggs;
  • 15-20 g mustard;
  • radish – 150 g;
  • two medium cucumbers;
  • chicken fillet – 200 g;
  • green onion - to taste;
  • dill - to taste;
  • tan without gas - 0.9 liters;
  • ground black pepper;
  • salt.



Preparation:

If you are preparing okrokha for the first time, then boil the potatoes unpeeled. Once my neighbor conducted an experiment and boiled whole peeled tubers. Of course, it was possible to eat okroshka, but... in general, it was kind of a crapshoot.

Peel the cooled potatoes and cut into cubes. Chop the greens and rub with salt.


Also cut the chicken meat. Prepare the eggs as follows: crumble the whites, combine the yolks with mustard and mash.


You can peel cucumbers and radishes, I didn’t. Chop them coarsely.
Now combine everything in one cup - vegetables, salted herbs, chopped protein and yolks with mustard. Add pepper and salt to taste.


All is ready. It’s better to pour the tan in crumbs just before serving. And if you wish, you can top it with sour cream.


In the summer heat, you don’t want to cook or eat hot dishes. But a refreshing okroshka on tan is an excellent lunch option. Try making this dish, even if you have previously made okroshka exclusively with the addition of kvass. Perhaps one of the recipes below will become your family's favorite.

The basic principle for preparing any okroshka is that all thick ingredients need to be chopped fairly finely. Moreover, all components need to be cut into pieces of approximately the same size.

The composition usually includes potatoes (pre-cooked in their skins and peeled), boiled eggs, and fresh cucumbers. Radishes and meat products are often added. The meat component can be any, but it must be lean. Usually, boiled beef or chicken, as well as boiled sausage, are used.

An obligatory ingredient in okroshka is greens, and there should be quite a lot of it. Choose varieties of greens to suit your taste. It can be not only green onions and dill, but also celery, basil, and parsley. Some housewives add 1-2 sprigs of mint to okroshka to give it a particularly fresh taste.

The fermented milk drink tan is used as a filling. Tan is a traditional product of Caucasian cuisine. It is prepared on the basis of milk and a special starter. Milk is used from cows, goats or sheep.

The product is completely ready for use and can be used undiluted. But sometimes when preparing okroshka, tan is mixed with whey or kefir. Cold soup cooked in carbonated tan has a piquant taste.

Interesting facts: natural tan has many beneficial properties; it has the most beneficial effect on the digestive organs, has a good effect on the heart and blood vessels, and is wonderfully refreshing in the heat.

Classic recipe for okroshka on tan

To begin with, you should master it by cooking on a tan. For this dish, you need to boil veal or beef in advance. The meat is cooked until cooked with the addition of salt and spices, and then cooled completely.

  • 1 liter of tan;
  • 5 cucumbers;
  • 5 eggs;
  • 3 potatoes;
  • 400 gr. boiled meat;
  • 200 gr. sour cream;
  • 100 gr. green onions;
  • 70 gr. dill;
  • 10 radishes;
  • salt to taste.

By the time you prepare the dish, you need to cook not only the meat, but also the potatoes. And also chicken eggs. All products must be cooled and cleaned.

Advice! Under no circumstances should you mix cold and warm ingredients when preparing okroshka. It is important that all ingredients are at the same temperature, otherwise the dish will spoil very quickly.

Cut the meat into small cubes; it is important to use a sharp knife and cut across the grain, otherwise the boiled meat will fall apart. Cut the potatoes into cubes of the same size.

Cucumbers can be cut into cubes, like the rest of the ingredients, or they can be grated. We do the same with radishes.

Finely chop the green onions, sprinkle with a couple of pinches of salt and mash very well with a wooden masher or spoon until the juice appears. Mix the onion with the remaining ingredients and finely chopped dill.

Peel the eggs, separate the whites and cut them into small pieces. Mash the yolks with a fork and season with sour cream. Mix. If desired, you can add mustard or grated horseradish to the sour cream to taste. Mix the sour cream dressing with the prepared products and pour in the chilled tan. Salt to taste and place in the refrigerator for 30-60 minutes.

Okroshka with sausage on tan with kefir

Okroshka cooked in tan with kefir has a milder taste. Let's make it with sausage.

  • 1 liter of tan;
  • 1 liter of kefir;
  • 500 gr. doctor's sausage;
  • 3 cucumbers;
  • 8 eggs;
  • 5 potatoes;
  • salt, herbs to taste.

Boil the potatoes in their skins and eggs until tender in advance. Let them cool and peel them. Cut potatoes, hard-boiled eggs, and boiled sausage into cubes. Chop fresh cucumbers in the same way, and chop the greens as finely as possible. Mix all the products in a large saucepan. Pour tan and kefir into the pan, stir and salt to taste.

Advice! In the recipe, the ratio of tan and kefir is 1 to 1. In this case, a pleasant and balanced taste is obtained. But, if desired, you can change the ratio of fermented milk products.

Dietary vegetable okroshka

Those who follow a low-calorie diet should definitely include okroshka in their diet. But dietary okroshka is prepared without the use of high-calorie ingredients. Therefore, sausage, sour cream and mayonnaise are strictly excluded. This can be vegetable okroshka, prepared without the use of meat ingredients. If you want to use meat, then it is better to take boiled chicken breast.

Here is a recipe for low-calorie okroshka, prepared without meat, potatoes and eggs.

  • 900 ml tan;
  • 250 ml of purified water or mineral water without gas;
  • 6-8 radishes;
  • 400 gr. cucumbers;
  • 50 gr. dill, parsley, green onions.

Wash the greens thoroughly. We chop it with a knife as finely as possible. Add a little salt and rub thoroughly until juice appears and the salt dissolves.

Modem radishes and cucumbers. Grate the vegetables on a grater with large holes. Mix grated vegetables with herbs. Pour chilled tan and mineral water into the okroshka, stir and add salt. Cool for about an hour in the refrigerator and serve.

Okroshka on Tanya with chicken

A more satisfying, but still low-calorie version of okroshka on tan is prepared with chicken and potatoes.

  • 350 gr. potatoes;
  • 250 gr. chicken fillet (weight of finished product);
  • 200 gr. fresh cucumbers;
  • 30 gr. green onions;
  • 4 eggs;
  • 2 teaspoons mustard;
  • 150 gr. radishes;
  • 30 gr. dill;
  • 900 ml tan;
  • salt to taste.

First of all, you need to cook the potatoes and chicken until tender. Potatoes can be boiled in water or steamed, or cooked in the microwave. The last option is the fastest. Cool and peel the finished potatoes. At the same time as the potatoes, hard-boil the eggs. When they are ready, fill with ice water and leave until completely cool.

Chicken fillet can be boiled in salted water with spices, or baked in foil in the oven or slow cooker. The finished meat should be allowed to cool completely. You can also use smoked chicken; just remove the skin and bones and cut it into pieces.

Chop the green onions and dill, sprinkle with a pinch of salt and grind. Add diced potatoes, fresh cucumbers and chicken fillet to the greens. Cut the radishes into thin slices or grate them.

We clean the boiled eggs and separate the whites. Chop the whites and add to the rest of the products. Place the yolks in a separate bowl and mash them with a fork. Add the mustard and mix it thoroughly with the yolks. Add the prepared dressing to the okroshka and stir well. Then pour in cold tan and salt to taste.

Okroshka with ham on a carbonated tan

In stores you can buy both classic tan and carbonated one. Okroshka cooked in carbonated tan has an original, well-refreshing taste. We will cook it with ham and green peas.

  • 150 gr. peas (canned);
  • 10 black olives (unstuffed and pitted);
  • 200 gr. ham;
  • 1 liter of carbonated tan;
  • 4 eggs;
  • 2 cucumbers;
  • 2 potatoes;
  • 1 carrot;
  • salt, herbs to taste.

Boil the potatoes and carrots until tender. Boil vegetables in their skins so that they retain their shape. Boil the eggs separately. All products are cooled and cleaned. Cut potatoes, carrots and eggs into small cubes.

Grind ham and fresh cucumbers in the same way. It is not necessary to remove the skin from cucumbers, but if it is rough, it is better to cut it off with a vegetable peeler.

Mix all the prepared products, add green peas (without liquid) and olives, cut into rings. Add finely chopped greens. Mix everything. Pour in the carbonated tan just before serving, mix and add salt.

Tan is an Armenian carbonated fermented milk drink made from cow or goat milk with the addition of a special starter. Okroshka based on it differs from ordinary okroshka made with kvass, whey, mineral water or other drinks in its special slightly sour taste and sharpness.

This cold soup can perfectly refresh and at the same time satiate you in the summer heat. In the classic version, it contains traditional vegetables, and instead of the usual boiled sausage, ham is used, which gives the dish a more interesting taste and aroma.

Ingredients:

  • 2 liters of tan;
  • 6 potato tubers;
  • 355 g boiled ham;
  • 6 eggs;
  • 2 fresh cucumbers;
  • 7 stalks of green onions;
  • 4 sprigs of dill;
  • 30 g salt.

Step by step recipe

Wash the potatoes thoroughly, place them without peeling them in a deep container, fill them with water and cook over medium heat until softened.

In another container, boil the eggs to a hard-boiled consistency. Cool them, fill them with cold water, remove the shells, and chop them into cubes.

Remove the boiled potatoes onto a plate, allow to cool, peel, cut into squares, and place in a clean large saucepan. Previously cut eggs are also placed there.

The ham is cut into thin strips and placed in a saucepan.

Washed cucumbers are cut into cubes.

Dill with onion feathers are washed, chopped and poured into a saucepan.

Mix all the chopped products, add salt, pour in tan, and stir well again.

The okroshka is allowed to brew in the refrigerator for thirty minutes and poured into plates; if desired, add mayonnaise, sour cream, mustard or liquid table horseradish.

Potatoes can also be boiled not in a saucepan, but in a multicooker container using the “steam” mode or in a double boiler, this way they better retain their shape after cooking, which facilitates faster peeling and subsequent beautiful slicing. Instead of ham, you can use regular boiled sausage and even sausages or small sausages.

Option 2. Quick recipe for okroshka on tan

The recipe for quick okroshka on tan does not use potatoes, so the cooking process time is significantly reduced. Despite the absence of this vegetable, okroshka still turns out very tasty, and sour cream adds richness to the dish. Also, the green apple used will give the okroshka a more pronounced sourness, and the radishes and mustard will add a slight spiciness.

Ingredients:

  • carbonated tan - 2 liters;
  • green apples - 2 pcs.;
  • 4 small cucumbers;
  • sour cream with an average fat content - 135 g;
  • red radish - 12 small pieces;
  • salt - 15 g;
  • dill - 5 sprigs;
  • green onions - 6 feathers;
  • spicy mustard - 45 g.

How to cook okroshka on tan

Wash radishes, apples, cucumbers well and dry with a soft cloth. If the peel of cucumbers and apples is rough, peel it off. Everything is cut into thin strips and placed in a large saucepan.

Add sour cream, mustard, chopped herbs to the fruit and vegetable mixture and mix.

When serving, the prepared mixture of vegetables and apples is laid out on plates, and a little tan is poured into each.

Instead of green apples, it is permissible to use yellow or red fruits, as long as they are sweet and sour.

Option 3. Okroshka on Tanya with chicken

Okroshka can be prepared not only with a variety of sausages, but also with any type of meat. In addition, thanks to the meat, the cold soup turns out to be more healthy and rich. The chicken used in this version gives the okroshka a particularly delicate taste.

Ingredients:

  • 1.5 liters of tan;
  • 3 chicken legs;
  • 4 potatoes;
  • 4 medium cucumbers;
  • 4 eggs;
  • 5 small radishes;
  • 5 sprigs of dill;
  • 6 green onions;
  • 55 g hot mustard.

Step by step recipe

Chicken legs are washed and boiled in slightly salted water for 35 minutes. Remove from the broth, cool, and cut.

The washed potatoes are boiled in their skins, cooled, peeled, and cut into medium squares.

Cool hard-boiled eggs, peel off the shell, and remove the yolk from the white. The whites are cut into squares, and the yolks are mashed with a fork and combined with mustard.

Chicken fillet is cut into medium strips.

The washed cucumbers are cut into strips. If you come across bitter fruits, peel them.

The washed radishes are freed from the tail and green part, cut into squares, and placed in a deep container along with cucumbers, potatoes, and egg whites.

All greens are washed, dried on a soft cloth, chopped and poured into a container with the rest of the vegetables.

Add chicken pulp to the vegetable mixture, add some salt, add spicy dressing with yolks, mix well.

The thick mixture of okroshka is laid out on plates, two ladlefuls of tan are poured in, and mixed.

Using a similar recipe, you can prepare okroshka on tan with the addition of boiled beef pulp.

Option 4. Okroshka on tan with beets

An interesting and unusual version of the soup, but definitely worth a try. Not only does beets give okroshka an appetizing color, it also makes the dish more healthy.

Ingredients:

  • beets - 1 large;
  • boiled sausage - 340 g;
  • 3 cucumbers;
  • tan without gas - 1 liter;
  • half a dozen eggs;
  • 4 potato tubers;
  • red radish - 7 pcs.;
  • green onion - 6 feathers;
  • 5 sprigs of parsley and dill;
  • 10 g salt.

How to cook

Potatoes, beets, eggs are washed and boiled in separate containers in salted water until tender.

Place vegetables on a plate and set aside until completely cool. The eggs are transferred to another container with cold water.

Peel vegetables and eggs, cut everything into small cubes.

Rinse the cucumbers and radishes, cut them into squares, and place them in a large saucepan with the remaining vegetables and eggs.

The greens are rinsed, finely chopped and poured into a saucepan.

Cut the boiled sausage into squares, add it to all the previously prepared ingredients, add a little salt, and mix everything.

Pour tan into the entire mixture and stir again.

Place the saucepan in the refrigerator and leave for about an hour until the soup acquires a beautiful red color.

This okroshka with mustard is especially tasty. Tan can also be used with gas, or you can simply mix regular tan with carbonated mineral water.

Option 5. Okroshka on tan with green peas and olives

Fans of delicious first courses will love the following recipe for okroshka on tan. The olives and green peas included in the soup give the soup a unique taste and interesting consistency. And due to the fact that tan is diluted with water, okroshka is obtained with a more moderate, pleasant sourness.

Ingredients:

  • canned peas - half a jar;
  • black olives without pits - 12 pcs.;
  • milk sausage - 230 g;
  • mineral water - 125 ml;
  • tan with gas - 125 ml;
  • eggs - 4 pcs.;
  • cucumbers - 2 pcs.;
  • 8 green onions;
  • dill - 5 sprigs;
  • salt - 15 g;
  • carrots - 2 pcs.;
  • 4 small potato tubers.

Step by step recipe

Wash carrots and potatoes well and boil in slightly salted water until soft. Remove from the broth and remove the peel.

Cut the potatoes and carrots into squares.

Boiled and cooled eggs are peeled and chopped into squares with a knife.

The sausage is cut into cubes, the cucumbers are washed and cut into the same shape.

The olives are cut in half.

Having combined all the prepared products in one container, add green peas without liquid to them and mix thoroughly.

Pour cold tan and mineral water into the container, add salt to taste, and stir well again.

Pour into plates, sprinkle with chopped herbs if desired.

If you wish, you can add a little black pepper and a couple of drops of lemon juice to the okroshka on tan according to the recipe described above.

Okroshka with tan or ayran is one of my favorite recipes. With this fermented milk drink, okroshka becomes the most refreshing and tasty. Ayran goes well with vegetables. And, of course, such okroshka is very good for health.

To prepare it you can use meat, sausage, chicken. I made it with boiled beef, in my opinion, this is the most delicious option.

Okroshka on tan is the lowest in calories - only fifty to fifty-five kcal per hundred grams.

Tan can be carbonated or still; if you bought a drink without carbon, you can add a little mineral water to it for a more interesting taste.

How to cook okroshka on tan or ayran

Okroshka composition:

  • Any meat (I have beef) - two hundred grams,
  • Two eggs,
  • A small bunch of green onions, dill, parsley,
  • Two hundred grams of radish,
  • One hundred grams of cucumber,
  • Two hundred grams of potatoes,
  • Salt.

1. First, finely chop the onion and mash it with a masher.


2. Grate the cucumber.


3. Cut the boiled potatoes into cubes.


4. Add chopped radishes.


5. Cut the egg.


6. Chop the boiled beef and add to the plate.


7. Add finely chopped greens.


8. Place in portions on plates and top with ayran or tan.


9. The delicious okroshka is ready. You can let it sit in the refrigerator for an hour for better flavor!


Okroshka on tan or ayran with sausage


And yet okroshka is associated with sausage. In addition, it is easier to cook with sausage than with meat - after all, you cook the meat for a long time, and you can simply take the sausage and cut it.

Products:

  • Tan or Ayran – 1 liter,
  • Potatoes – 4 pcs.,
  • Eggs – 3 pcs.,
  • Small cucumbers – 3 pcs.,
  • Greens (onion, dill),
  • Boiled sausage – 350 gr.,
  • Salt, seasonings.

1. First, boil the eggs and potatoes, cool and peel.

2. Finely chop the greens and grind with a teaspoon of salt.

3. Cut or grate the cucumbers on a coarse grater.

4. Cut radishes, potatoes, eggs, sausage.

5. Mix all ingredients.

6. Fill with tan or ayran. Taste for salt.

Traditional Russian okroshka is delicious not only with kvass, but also with fermented milk drinks, such as tan (as well as ayran, kefir, whey). Select the thickness of the okroshka portion according to your taste or according to the wishes of your household: more base or more tan.

Okroshka can be made from just vegetables, eggs and herbs, but many people like meat options. As meat, the usual doctor's sausage and boiled beef are suitable for the tan version. Do not skimp on greens, usually dill and onions, but try arugula and fresh spinach.

For okroshka on tan, prepare the ingredients according to the list.

Tan is suitable both carbonated and non-carbonated, with cow's or goat's milk. Eggs and potatoes for okroshka need to be boiled and cooled in advance. I suggest steaming the potatoes, 20-25 minutes will be enough for medium-sized ones.

Peel the potatoes and eggs and dice them.

Sometimes I don’t add potatoes to my portion...

I have met and tried options in which the eggs are either rubbed or cut into four pieces lengthwise, but I still like the “small cube” option the most.

Finely chop the fresh herbs.

Cut the meat or sausage and cucumbers into cubes in the same way. The most delicious for me are summer, small cucumbers with pimples.

Mix all the ingredients together. Before serving, store the okroshka preparation in the refrigerator, do not add salt in advance, otherwise the cucumbers and herbs will become unappetizingly soggy.

When serving, pour the required amount of thana into the portions. Salt, ground pepper - optional and to taste.

Okroshka on tan is ready.
