These bagels are a childhood treat. Probably, once upon a time their recipe was published in the popular magazine “Rabotnitsa”, and all mothers prepared it for their children. I have already tried to cook something “from the past” more than once. And, unfortunately, the taste, spoiled by modern delicacies, said: “something is missing.” Bagels with marmalade are an exception.

The taste is simply indescribable, and such cookies disappear instantly and somehow completely unnoticeably, your hand just reaches out.

Butter (200 g);
- sour cream (200 g);
- flour (3 tbsp.);
- granulated sugar (2 tablespoons);
- sandwich marmalade (200 g).

Leave the butter at room temperature and mash with a fork. Or you can dissolve it in a water bath. Add sour cream and granulated sugar.

Mix thoroughly.

What I like about this dough is that it rolls out easily. Soft, pliable. All the procedures that follow were done by my daughter. So, divide the dough into 4 parts, roll each into a thin circle.

Cut marmalade for rolls into slices:

We cut the circle of dough with a knife into triangles - 16 or more. The more triangles you get, the shorter the finished cookies will be. I prefer long ones - the rolls will look better. Place a slice of marmalade on the wide edge.

To make bagels, roll each triangle towards the center, trying to press the edges tightly so that the hole is as small as possible, otherwise the marmalade will leak out of the bagel during baking.

Place on a baking sheet greased or covered with baking paper.

Bake for 30-40 minutes at a temperature of 160-180 degrees.

Some gummy candies (I like citrus)
1 white (yolk will be used as lubricant)
0.5 tbsp. Sahara
1/3 tsp. salt
12 g dry yeast (2.5 tsp)
1 tbsp. water (slightly warm), you can also use sour milk, kefir, milk - it doesn’t matter
100 g margarine
~ 3.5 tbsp. flour and a little flour for dusting

Preparation:

Melt the margarine and cool until warm. Combine all the ingredients, mixing the flour with the yeast and then combining with the liquid. Knead into a soft dough, cover and place in a warm place for 20-30 minutes until it doubles in size. Cut the marmalades into small pieces. When the dough has risen, separate a small piece and roll it into a rectangular layer 2-3 mm thick.

Lubricate the layer with vegetable oil

Cut into equal triangles with a curly knife

Place a piece of marmalade on the wide part of the triangle

Wrap with a bagel

And place on a baking sheet greased with vegetable oil.

  1. (very popular in China). Using the same principle, it is prepared from black or white sesame. It’s tasty, but it’s better to use a stronger flavor for filling in sweet pastries. Fruity or berry - to my taste.

Of course, the easiest way is to buy ready-made marmalade, just make sure that there are fewer chemicals in the composition. In my recipe - prepared with my own hands, three layers, with food coloring.

Ingredients for shortcrust pastry:

  • butter - 200 g;
  • sour cream – 200 g;
  • sugar – 4-5 tbsp. l.;
  • salt - 2 chips;
  • soda - 0.5 tsp;
  • flour - 2-2.5 tbsp;

Filling:

  • marmalade – 200 g.

By the way, I tried many variations of the dough, made it with yeast, kefir, cottage cheese, with and without soda, with milk, vegetable oil and even with mineral water. But the version of bagels on shortcrust pastry with sour cream seems to me the most successful. Tastes like childhood or grandma's!

Lightly melt the butter in a water bath or let it melt on a radiator or in the sun so that it is very soft and can be easily ground with sugar.

Divide the chilled dough into several parts. Roll out into a circle. Cut into 8 triangles.

Add sifted wheat flour in small portions. As soon as the dough begins to form a large lump near the beaters, stop beating.

Gather the dough into a ball. Wrap in cling film and refrigerate for 2 hours. I sped up the process a little and put the dough in the freezer for 30 minutes.

Divide the ripened dough into four parts and work with each separately. Keep the rest of the dough in the refrigerator while you work on one portion.

Roll out the dough between two sheets of parchment. Cut into triangles. Use the size of the triangles at your discretion. If the workpiece is larger, then you can put the whole marmalade. Place half a candy into smaller pieces. And if you really want to get a small bagel, you can cut the marmalade into cubes.

Place the marmalade on the wide side and wrap it in a roll. When placing the marmalade, try to fix the dough around the candy so that during baking, the marmalade remains inside the bagel. Cover a baking sheet with parchment and place the pieces. Bake in the oven for 30-40 minutes at 180 degrees until lightly browned.
