How to cook:

1. Set the oven temperature to 180 degrees and heat it up.

Pitted cherries must be placed in a sieve or colander; they will give a little juice, which should drain, this will prevent the pie from getting soggy.

Frozen cherries must be defrosted and the resulting juice must also be removed using a sieve.

2. Combine eggs and sugar in a bowl. If you scramble the eggs with a fork, the pie will be short after the oven, but if you spend a little more time on the process and beat with a whisk until there are small bubbles, the pie will be taller.

3. So, after mixing with a whisk, the eggs and sugar turned out to be a foamy, homogeneous mass.

Pour in kefir.

I made this pie with kefir with both 2.5% and 3.2% fat content. I didn’t notice much difference in the finished product. I think that even with 1% kefir the pie will turn out delicious, although I can’t say 100% sure.

Mix the kefir and egg mixture with the same whisk.

4. Combine flour and baking powder in a sieve. Sift into liquid mixture.

There is a nuance at this stage - the amount of flour will have to be slightly adjusted.

The recipe calls for 1 cup, which is 130 grams. But everyone’s flour is different, and if you also take into account the size of the eggs and the thickness of the kefir, then for the resulting too liquid mass you will need a little more of it.

The main guideline for the thickness of the dough will be its ability to fall from a spoon in a wide, heavy ribbon. You will get approximately a thick pancake batter.

That is, first you add the prescribed 1 cup of flour, mix well with a spoon, make sure that there are no lumps, and then take part of the dough into a spoon and observe - it flows quickly and the ribbon is thin, which means you add a spoonful of flour, knead and so on until will not look like the photo.

What will we get if we don't achieve the correct dough consistency? The cherries will sink into the batter and after the allotted baking time, you will have a fairly moist pie. And if you overly flour the dough, the cake will be too dry.

So follow the above tips and you will succeed.

But I want to immediately note that 1 cup of flour was always enough for me and there were no problems with the dough after the oven. Just in case, I’m giving you this hint so that there are no questions when executing the recipe. After all, we want to please our family with delicious baked goods.

If baking powder is not in the house, then it can be replaced with soda in the amount of 1 tsp. In this case, do not mix it with flour, but combine it with kefir. There is no need to extinguish the soda; kefir contains acid and upon contact with soda, small bubbles will appear in the fermented milk product.

This foamy kefir needs to be combined with beaten eggs, and then added sifted flour. Well, that seems to be all, the subtleties in preparing the dough are revealed, let's move on.

5. Grease the baking dish with butter, and to prevent the cake from sticking to the bottom, you can cover it with parchment paper.

You can take either a detachable or a solid form. The height of the pie will depend on its diameter. I think it’s clear that the smaller it is, the higher the baking will be. I use a baking dish with a diameter of 18 cm, and the height of the cake is 7 cm.

Pour the dough into the mold.

6. Arrange the cherries on top in a circle or just randomly. Those with a sweet tooth can sprinkle the cherries with sugar, 1-2 tablespoons. spoons.

While we were preparing the dough and peeling the cherries, the oven heated up to the desired temperature - 180 degrees.
