  • add chopped cucumbers

How to choose the right one

When buying a product, you should choose carcasses with white meat; a yellow or purple tint indicates staleness. The top film should be beige, brown, and a purple tone is also undesirable. Sticky carcasses covered with frost are a sign of re-freezing.

The quality of the raw materials is no less important; with repeated defrosting and long-term storage, an unpleasant smell of old fish appears.

1 way:

  • boil two liters of water
  • add salt, allspice, bitter peas, bay leaf, boil for 2-3 minutes
  • Dip the prepared carcasses one at a time into boiling water, counting 10 seconds.

But this is a mistake; with prolonged heat treatment, the product becomes hard, softening again only after 30 minutes of boiling, but then the squid loses weight and volume. Boil water, add spices and lower the carcasses - immediately turn off the heat and cover the pan with a lid for 10 minutes.

How to clean properly

Many people do not know how to clean a carcass, which is quite understandable - the product still remains exotic for us. But cleaning is quite simple. It is necessary to let the raw materials thaw on their own (this will take time), and then:

4. Cook squid in salted water after boiling for no more than 3 minutes.

5. Cut the onion and fry in a frying pan in butter (80 g) until golden brown, when our onion is fried, put the chopped squid there. Fry for about 2 minutes.

7. Throw in our squid, add salt and pepper, mushrooms and season with mayonnaise (to taste). Let's mix!

  • Pickled cucumbers - 2 pcs.;
  • Eggs - 2 pcs.;
  • Salt - to taste;
  • Mayonnaise.

1. Let's prepare the squid. Boil them in salted water, first wait until the water boils, add the squids and wait until it boils again, take them out. I cook and clean the same in every recipe, so see above for how to do it.

2. Cut the onions and mushrooms.

3. Take a frying pan and fry the onion in it until golden brown. Add the mushrooms and cook until they become soft. Don't forget to add a little salt. Let them cool.

Ingredients:

  • Mussels - 250 gr.;
  • Crab meat (crab sticks) - 250 gr.;
  • Octopus - 250 gr.;
  • Squid - 1 pc.;
  • Small shrimps - 250 gr.;
  • Royal shrimps - 250 gr.;
  • Green radish - 1 pc. medium size;
  • Red fish - 200 gr.;
  • Capelin caviar as a dressing - 250 gr.;
  • Black peppercorns - 5 – 6 pcs.;
  • Greens (dill, onion, parsley) - to taste;
  • Coriander - a pinch;
  • Fresh lemon juice - 0.5 teaspoon.

1. You can take ready-made shrimp and peel them. We tear off the head, then the tail. We remove the torso and legs. What remains is the core, and that’s what we need.

2. Let's cut the fish. It is not necessary to cut finely for this salad.

3. Cut crab sticks (crab meat is possible) in the same way.

4. First, we will prepare the octopuses by cutting off and discarding the head with all its insides (ink sac, eyes) and rinsing well under running water. Next, cook the octopus only with the lid closed and add salt only at the very end.

If you have a large octopus, cook for 1 hour.

Cook medium size for 20 minutes.

Cook small ones for 7 – 10 minutes (frozen seafood is cooked for the same time).

Tentacles also take 7-8 minutes to cook the fastest.

5. Divide the octopus legs into 2 parts.

6. Now take a radish, only a green one; any other one won’t go with this salad. Grind into cubes. It will add juiciness to the salad.

8. Chop black pepper and coriander.

10. Well, now we start collecting. First, pour out the fish.
