Baking made from puff pastry with cocoa. Recipe: Puff pastry cookies with cocoa. Calorie, chemical composition and nutritional value. Without filling you can make cookies of various shapes

Of course, it’s easier to buy puff pastries in the store, but homemade ones will still be more satisfying and flavorful. Also, products made from store-bought puff pastry without yeast are, in my opinion, a little harsh. Puff pastry dough can be made at home with the addition of sour cream. Then the baked goods turn out soft and crumbly. It is very important not to overcook the puff pastry in the oven, otherwise it will turn out too hard. But you can get out of this situation, just soak the cookies in hot tea. Still, it is better to carefully monitor the cooking process and remove the products from the oven in time.

For homemade puff pastry, it is better to use creamy margarine. We take it out of the refrigerator immediately before grinding. This product must be mixed with flour and ground to a crumb state. After all the ingredients have been added, the dough needs to rest in the refrigerator.

how to make puff pastry for cookies with sour cream

Ingredients:

  • premium wheat flour – 400 g,
  • sour cream – 0.5 tbsp.,
  • egg yolk – 1 pc.,
  • cream margarine – 180 g,
  • sunflower oil – 1 tbsp.,
  • sugar – 2 tbsp,
  • salt - a pinch.

Cooking process:

1.For convenience, collect all the necessary products and start kneading the puff pastry. Take a dry bowl and pour the sifted flour into it, but not all of it, about 2/3 of it.

2.Now take margarine from the refrigerator. Grate it on a coarse grater and pour it into flour. If desired, you can simply cut the margarine. Then we make butter and flour crumbs with our hands or chop the food with a knife.

3. Pour sour cream and egg yolk into the general mixture, mix the mixture until a homogeneous consistency is formed.

4.Add a small amount of salt for taste, use table salt or sea salt. And all we have to do is add the remaining flour, knead the dough with our hands. The result is a non-stick lump. Chill the dough in the refrigerator for about 1-1.5 hours.

5. Roll out the dough and cut into small pieces, any size possible. Preheat the oven to 180 degrees.

6. Grease a baking tray with vegetable oil and place our products on it. We make sweet cookies, which means we sprinkle granulated sugar on top, but first grease the surface with vegetable oil or egg white. And if we bake unsweetened puff pastries, then serve them with boiled condensed milk or with beer.

7. Homemade puff pastry with sugar is baked for 15-18 minutes, it becomes rosy and flaky. We do not leave the cookies on the baking sheet, but remove them immediately. Place in a ceramic plate with a napkin and serve. Bon appetit!

Ninel Ivanova told how to make homemade puff pastry, with a recipe and photo from the author.

Jam puffs are a great way to start your Sunday morning. Crispy, richly filled, aromatic, they will replace the famous croissants. Those who love French breakfast will be pleasantly surprised to see such a homemade alternative on the table. The housewife will need very little time to bake a tempting delicacy at home.

To make jam puffs you will need:

  1. puff pastry – 450 g;
  2. jam – 100 ml;
  3. cocoa – 2 tbsp. l;
  4. sugar – 1 tbsp. l;
  5. nuts – 50 g;
  6. vegetable oil – 20 ml.

Jam puffs - recipe

We buy puff pastry in the store or prepare it ourselves. In the second case, it will take more time, but you can be sure of the quality of the products used.

We defrost store-bought ready-made dough by cutting the packaging and placing it along with the base on a flat surface in a warm place. After 20-25 minutes you can work with the dough.

From a strip of base 10 centimeters wide, cut squares 10 centimeters long. If necessary, roll out a little. We do this when we want to get a very thin base. But if you overdo it, the jam can leak and ruin the appearance of the product.

Let's prepare the filling. In a bowl, combine any thicker jam with walnuts and half the cocoa.

We take good quality nuts, and before using them we examine them for the presence of partitions and pieces of shell. If we find unnecessary garbage, we remove it. We chop the kernels with a knife.

Mix the filling and place a teaspoon on each square.

Then cover the filling with the free half of the dough so that you get a neat triangle. Use a fork to seal the edges, pressing them together. The top can be cut as in the photo.

We transfer the preparations to the parchment with which we covered the baking sheet. If necessary, it can be lubricated with vegetable oil.

We wet the tops of the triangles with water, egg or milk and sprinkle with the remaining cocoa mixed with sugar.

Bake the jam puffs for 15 minutes in an oven preheated to 250 degrees.

Serve the finished pies warm.

The appetizing puff pastries will impress with their fragility and multi-component filling. Children and adults will ask for more after the first bite. After all, the baked goods turn out to be truly delicious.

No filling

It happens that all family members have different tastes: some want unsweetened cookies, while others prefer fruit-filled cookies. You can get out of this situation by preparing cookies without filling (after all, the dough is initially unsweetened!) and serving it with sauce or syrup.

Without filling, you can make cookies of various shapes:

  • “Shapes”: cut out various shapes from the rolled out dough with a knife or molds;
  • “Bows”: cut the rolled sheet into squares, fold them diagonally, make 2 cuts to the left and right of the central corner towards the middle, unfold the workpiece, wrap the base with the cut strips, forming a bow.
  • All recipes for making “ears” have the same technology for creating cookies: first, the dough is rolled out into a rectangular shape, then sprinkled with filling, then rolled from opposite ends to the middle, the resulting “double” tube is divided into 4 cm pieces, placed on a baking sheet and baked . The recipes differ in the filling or dough composition.

    Classic recipe

    To make “ear” cookies from puff pastry according to the traditional recipe, you need to take 500 g of cottage cheese, butter and flour (you need the highest grade so that the cookies are softer and airier), 6 tsp. baking powder, 1.5 cups of sugar, a little salt, lemon juice (can be squeezed from 2 lemons) and 0.5 liters of powdered sugar. The dish takes almost 2 hours to prepare, taking into account the time the dough will cool in the freezer.

    To knead the dough you need:

    • Combine flour with salt and baking powder.
    • Add chopped butter, cottage cheese and knead the dough.
    • Roll it out to 5mm thick, fold it in half and roll it out again. Perform these steps at least 8 times.
    • Place the dough in the refrigerator for 8 hours or in the freezer for an hour.

    The dough is ready. You can make cookies filled with sugar. A baking tray is covered with baking paper, cookies are placed on it at a distance of about half an “ear” and sent to the oven for a quarter of an hour, preheated to 220°.

    While the ears are baking, make syrup. To do this, mix lemon juice with powder. Dip the finished cookies into this syrup and enjoy the unforgettable taste of airy cakes with a lemon flavor.

    Quick recipe

    For dessert, take ready-made dough (0.5 kg) and sugar (4 tbsp).

    How to cook:

    • Sprinkle the thinly rolled out dough (about 4 mm) with water and sprinkle with sugar (you can add vanillin).
    • Fold opposite sides towards the middle. If the layer is wide, then you need to fold it again and lightly press down.
    • Sprinkle with sugar again and fold in half, covering the bottom side with the top, press down again.
    • Cut the resulting sausage into pieces 3 cm thick.
    • Place side down on a baking sheet.
    • Bake in an oven preheated to 180° for about 12 minutes.

    You can prepare a puff dessert with honey: take it in the amount of 2 tbsp. using the same proportions of dough and sugar as in the previous recipe. In this case, the layer is smeared with honey, and the place where the tubes meet is coated with it. The formed cookies are sprinkled with sugar and baked until golden for 12 minutes.

    Delicious aromatic cookies with a milky taste will be obtained if the rolled out dough is first coated with heated butter mixed with milk, and then sprinkled with sugar and cinnamon.

A lack of this vitamin leads to serious disorders of the nervous, digestive and cardiovascular systems.
  • Magnesium participates in energy metabolism, synthesis of proteins, nucleic acids, has a stabilizing effect on membranes, and is necessary to maintain homeostasis of calcium, potassium and sodium. A lack of magnesium leads to hypomagnesemia, an increased risk of developing hypertension and heart disease.
  • Phosphorus takes part in many physiological processes, including energy metabolism, regulates acid-base balance, is part of phospholipids, nucleotides and nucleic acids, and is necessary for the mineralization of bones and teeth. Deficiency leads to anorexia, anemia, and rickets.
  • Chlorine necessary for the formation and secretion of hydrochloric acid in the body.
  • Iron is part of proteins of various functions, including enzymes. Participates in the transport of electrons and oxygen, ensures the occurrence of redox reactions and activation of peroxidation. Insufficient consumption leads to hypochromic anemia, myoglobin deficiency atony of skeletal muscles, increased fatigue, myocardiopathy, and atrophic gastritis.
  • Manganese participates in the formation of bone and connective tissue, is part of enzymes involved in the metabolism of amino acids, carbohydrates, catecholamines; necessary for the synthesis of cholesterol and nucleotides. Insufficient consumption is accompanied by slower growth, disturbances in the reproductive system, increased fragility of bone tissue, and disturbances in carbohydrate and lipid metabolism.
  • Copper is part of enzymes that have redox activity and are involved in iron metabolism, stimulates the absorption of proteins and carbohydrates. Participates in the processes of providing oxygen to the tissues of the human body. Deficiency is manifested by disturbances in the formation of the cardiovascular system and skeleton, and the development of connective tissue dysplasia.
  • Molybdenum is a cofactor for many enzymes that ensure the metabolism of sulfur-containing amino acids, purines and pyrimidines.
  • Selenium- an essential element of the antioxidant defense system of the human body, has an immunomodulatory effect, participates in the regulation of the action of thyroid hormones. Deficiency leads to Kashin-Beck disease (osteoarthritis with multiple deformities of the joints, spine and limbs), Keshan disease (endemic myocardiopathy), and hereditary thrombasthenia.

I cook the beans using a regular pressure cooker without pre-soaking. To do this, pour a glass of beans (Kidney TM "Mistral") into a saucepan, pour three glasses of boiling water, add a spoonful of vegetable oil to avoid excess foam and clogging of the pressure cooker valve. Don't add salt! Cook for about an hour.

Puree the finished beans using a blender along with the remaining cooking liquid. This makes approximately 600 g of finished bean puree. You will need a quarter for the cookies. Unused puree can be stored in the freezer.

Add honey and cocoa to the bean puree. Gradually pour in strongly brewed coffee and stir until a non-liquid plastic mass is obtained.
