New Year is a controversial date for a church-going family. On the one hand there is a strict fast, on the other there are feasts with neighbors and relatives and children looking with sad eyes at the pastries and cakes. With the third - Christmas is ahead, a long-awaited and joyful holiday. And with the fourth - you can please the kids, respect your mother and treat your friends to something delicious without breaking the canon.

We offer you, dear housewives, 10 recipes for Lenten, beautiful and festive sweets.

Cashcake

The beauty of this no-bake cake is the cashew nuts, coconut cream and fresh berries. Soak 0.5 kg cashews overnight. In the morning, grind 10 dates, 150 g of nut mixture (hazelnuts, almonds, walnuts) with 1 tbsp in a blender. l coconut milk, place on a base lined with cling film. Then grind cashews with 1 banana, 1 tbsp. l, honey and 1 tbsp. l. coconut milk. Place 2/3 of the cream in the mold. Mix 1/3 with 200 g of bright berries, beat, place on top. Place in the freezer until evening. Before serving, sprinkle with coconut flakes and decorate with whatever you like. Amazingly delicious!

Gingerbread

The “trick” of gingerbread is its wonderful aroma, ease of baking and the ability to play with the recipe. The base is 0.5 kg of rye flour mixed with 0.5 kg of honey or sugar syrup and a bag of baking powder. Then add 2 tbsp of rum and/or 1 tbsp to the dough to taste. spoon of grated ginger, 1 tbsp. spoon of citrus zest, 2 tbsp. tablespoons of chopped nuts, seeds, sesame seeds or small candied fruits. The most important thing is a mixture of aromatic spices. Collect star anise, cinnamon, cloves, cardamom, and nutmeg to your taste. Heat the honey, sift the flour, mix with baking powder and nuts, knead the honey into a sticky dough. Roll it out into a layer 1-1.5 cm thick, cut out the shapes, and bake. Ready-made gingerbreads need to stand (hang on the tree) for at least 24 hours, otherwise they will be tough.

Kozinaki

An easy, cheap and children's favorite homemade delicacy. You will need 200 g of granulated sugar, 2-4 tbsp. l. water, 1 tsp. lemon juice, 100 g sunflower seeds or sesame seeds, walnuts, peanuts or almonds to taste. Roast the seeds or nuts until golden brown. Prepare a form for kozinaki, cover it with parchment paper and grease it with butter. Cook caramel from sugar, water and lemon juice in a frying pan until it is a beautiful light coffee color. Pour in the filler, mix very quickly and pour into the mold. When the delicacy begins to harden, make cuts on the soft surface to make it easier to break into portioned pieces. And help yourself to your health!

Jelly

A light, beautiful and endlessly varied dessert. If you simplify the task and use ready-made bags, even a dad or a schoolchild can handle it. If you follow the example of grandmothers and boil currants or quince with sugar, it will come out original. And the golden mean is an agar-agar base, natural coloring (juice of beets, raspberries, cherries, spinach, carrots, turmeric, saffron), fruit, berry or mixed filler and decor - mint leaves, whole berries, vegetable cream, sprinkles or topping . Soak 4 tsp. agar-agar, add a glass of water, a glass of sugar, bring to a boil, boil for 30 seconds, turn off, add dye, syrup and/or filler, pour into molds, put in the refrigerator, after 6-8 hours take out and decorate. Voila!

Fruit salad

Dietary, tasty and healthy dish. The peculiarity is the combination of tastes and textures of different components. Soft bananas and grainy pear pieces, slippery pineapple and sticky dates, tender persimmons and crisp apples. Sour kiwi and sweet plum, rich citruses and calm blueberries, piquant raspberries and exotic mango. You can add nuts, candied fruits, seeds, grated chocolate, sprinkle with coconut or corn flakes (before serving), add vanilla or cinnamon. The sauce in the short version is made from whipped cream or sour cream with sugar, in the lean version - from syrup, vegetable or coconut cream.

Lollipops

Yes, those same cockerels on a stick that gypsies sold in parks (buying them was strictly forbidden!). The recipe is as simple as ABC. Prepare and grease the molds with oil (boxes of shaped candies, metal lids from cans, etc. will do), and make “legs” out of matches or toothpicks. Boil syrup - 10 tbsp. l. sugar for 10 tbsp. l. water + 1 tbsp. l. lemon juice + natural food coloring. When a drop of syrup begins to harden in the water, it’s ready. Pour into molds, insert the “legs”, let cool - and feel like happy kids.

Homemade sweets

Or rather, sweet balls, an Indian recipe. You will need a blender (at least a meat grinder), moderately viscous, juicy dried fruits (dates, dried apricots, prunes, raisins), honey (1 tbsp per 300 g of mixture), sprinkles (sesame seeds, coconut flakes, cocoa powder, grated nuts) and filling (banana pieces, candied citrus or melon, whole almonds, hazelnuts). Grind 300 g of pitted dried fruits, adding honey and (if the mixture turns out to be too crumbly) a quarter of a banana. With your hands dipped in water, form balls the size of walnuts, flatten them into a flat cake, put the filling in the middle, roll them up, roll them in sprinkles, place them on a baking sheet covered with foil or parchment, and put them in the refrigerator for 4-6 hours. And now - winter is around, and Calcutta is on the table!

Charlotte

This recipe breaks the mold - how is it, charlotte - and without eggs?! However, the role of eggs can be perfectly served by mashed banana or half a glass of freshly squeezed banana, apple, quince or pear juice. Cut 3 sour apples into thin slices, mix a glass of sugar, 150 ml of refined oil, a pinch of salt, a thickener (juice or banana) in a blender until the sugar is completely dissolved, then little by little add sifted flour, baking powder and vanillin to the dough. Place the apples in a greased pan, fill with dough and bake like a regular charlotte. The family will be surprised!

Marzipan

Remember “The Nutcracker” and the marzipan sweets you could only dream of? It turns out that touching and funny edible toys are easy to make at home. Soak 200 g of almonds in the evening, grind in a blender, mix with 100 g of powdered sugar, 2 tbsp. l. hot water and a drop of almond essence or a teaspoon of rum or cognac. Knead the almond dough. And feel like a magical confectioner - marzipan can be mixed with nuts, raisins, candied fruits, small pieces of chocolate, sprinkled with poppy seeds, coconut flakes, cocoa powder, painted with natural food colors and glazed to look like snow. You can mold anything from a plastic mass - craftsmen build castles, construct carriages and build ships. And you can make fruit, a rose, a pig or a lamb. And at the same time - something for the Christmas table - marzipan can be stored for up to two months.

Apples in caramel

A wonderful one-piece treat - also suitable for a children's birthday. Take 600 g of small apples, cook for 5 minutes, drain and leave to dry. You can blot it with a cloth. Make a syrup from 300 ml of sugar and half a glass of water; when a drop begins to thicken in the water, dip the apples, thoroughly dip them on all sides, take them out and put them on parchment to dry. Stick a “leg” into each apple. Melt a chocolate bar in a water bath, dip the semi-finished product, sprinkle with coconut or sesame seeds. Ready!

Have a sweet holiday! published

What sweets can be eaten during Lent - this is what interests most those with a sweet tooth, who cannot imagine their asceticism without small taste joys. For many, a small dose of chocolate can push all the problems raging around into the background. Without your favorite sweet, thoughts get confused, and the brain simply turns off - every second sweet tooth knows this. And if stress also happened, then what can we talk about fasting?!

What sweets are allowed?

But we hasten to reassure you, there is a certain list of sweet and healthy foods that can be allowed even during the strictest Lent:

  • Honey is a healthy natural product obtained through insects, not animals, which means it can be included in the lean menu of a believer. This is the only consolation for many who have decided to take the path of physical and spiritual limitations.
  • Dried fruits - a huge selection of dried apricots, raisins, prunes, dates, etc. Very healthy, very sweet and quite high in calories, so be careful. Otherwise, at this rate and during fasting, you can gain a couple of extra kilos. This is despite the fact that these days the goal of many who fast is the desire to “lose weight and cleanse their body a little.”
  • Nuts and seeds are a good storehouse of vitamins, minerals, essential fatty acids, fiber and protein. But you shouldn’t abuse them either!
  • Dark chocolate is only that which does not contain milk or dairy products. Also keep an eye on the filling in the chocolate bar; it may contain ingredients of animal origin.
  • Halva is allowed if it does not contain egg yolk. Therefore, read the ingredients carefully or prepare halva at home.
  • Marmalade, marshmallows and marshmallows are allowed only if they are prepared with pectin, a substance of plant origin.
  • Any baked goods made from lean dough consisting of water, flour, yeast and vegetable oil and nothing more!
Supermarkets have entire shelves with lean products for every taste and color. So as you can see, the choice is quite large!

Be careful - it's still a post!

The main thing is not to forget that by deciding to fast, you have entered the path of restrictions with the goal of:

  • cultivate willpower;
  • strengthen faith in God;
  • develop your soul;
  • cleanse the body, its organs, blood, vessels;
  • lose a couple of extra pounds.
That is, whatever your goal, fasting implies restrictions on various desires, including food ones. And what kind of fast will this be if, even after giving up meat, you pamper yourself with all sorts of goodies, stroking your pride?

Fasting is an opportunity for believers to come closer to the Lord God by limiting and humbling their desires. And gluttony is a great sin! Knowing now what sweets you can eat during Lent, still be modest in your taste preferences. Of course, you can allow yourself to eat sweets, but do it solely to maintain your immunity, and maybe a little mood. The main thing is not to get carried away!
I wish you good health, strong willpower and confidence - you will definitely succeed!

Not everyone can live without sweets while fasting. In addition, sweets are most often not prohibited. The main thing is to prepare Lenten desserts that do not contain foods that are prohibited to be consumed during Lent of Peter the Great, Christmas, Dormition or Lent.
This is exactly why this category was created. Here are some interesting Lenten desserts with photos, made from simple ingredients. Every housewife can repeat many of them at home.
Many people come up with recipes for Lenten desserts themselves. When you want something sweet, you can come up with many interesting desserts for Lent from fruits, dark chocolate, cocoa, nuts, jams and sugar. And if you don’t have enough imagination, our section will help you with that.

Lenten desserts - three recipes for every day

LENTEN OAT COOKIES

Don't expect reasons for delight and applause from this recipe. Just a cookie to nibble on with tea or as an afternoon snack. Unobtrusive, inexpensive, uncomplicated - in general, an ideal option for every day.

140 g sugar;
75 g oat flour;
140 g wheat flour;
3 tbsp. l. any fruit juice;
50 ml vegetable oil;
1/3 tsp. salt;
1/3 tsp. soda

Mix both types of flour, sugar, salt, soda.
Separately combine the juice and oil. Gradually adding the dry mixture, knead a soft, non-sticky, tender dough.
Roll it out into a thin layer and cut out cookies using cookie cutters.
Transfer to a baking sheet and bake at 200 degrees for about 10 minutes.

Advice. If desired, you can add finely chopped dried fruits, nuts, and seeds to the dough.

LENTEN MUFFINS

The recipe is so simple that it’s hard to believe that anything good will come out of it. But believe me! Completely simple, almost primitive - but the result is very, very worthy.

2 cups of flour;
1 glass of any fruit juice;
1 cup of sugar;
6 tbsp. l. odorless vegetable oil;
1/3 tsp. salt;
1/3 tsp. soda;
nuts, berries or dried fruits to taste.

Mix dry ingredients. Mix oil and juice. Combine both masses, add berries or nuts. Place the dough in muffin tins and bake at 180 degrees for about 30 minutes. Check readiness with a wooden stick.

Advice. If desired, fruit juice can be replaced with strong tea.

LENT YEAST PANCAKES

Nothing special, just pancakes. Nothing complicated, just mix and wait until the mass doubles. Nothing complicated, just fry as usual. And yet... they are wonderful. Who wants thin lean pancakes with yeast?

2 glasses of warm water;
1.5 tsp. yeast;
1/3 cup sugar;
1/3 tsp. salt;
3 tbsp. l. vegetable oil;
1.5 cups flour.

Mix all dry ingredients, add warm water and oil. Knead a homogeneous batter and place it in a warm place to rise.
Fry in a well-heated frying pan like regular thin pancakes; if necessary, periodically grease the frying pan with oil. Enjoying the lace result.

Advice. Don’t forget to get a jar of grandma’s jam - it greatly improves the taste of lean pancakes.

Lenten desserts - three recipes for family tea parties

GALETTE WITH APPLES

Crispy and very tasty, the galette captivates with thoughts of usefulness: eating piece by piece, you want to think that whole grain flour brings more benefits than centimeters on the waist, and apples share vitamins more generously than calories.

150 g regular wheat flour;
100 g whole grain flour;
100 ml vegetable oil;
100 ml boiling water;
a pinch of salt;
3 large apples;
2 tsp. lemon juice;
1/2 tsp. cinnamon;
2-3 tbsp. l. Sahara.

In a bowl of sufficient volume, mix both types of flour and add salt. Pour in vegetable oil and grind into crumbs. Pour in boiling water and knead into a soft, elastic, non-sticky dough.
Peel the apples, remove the core, and use a vegetable cutter to cut into thin slices. Sprinkle with lemon juice.

Roll out the dough into a thin round layer. Place apples in an even layer over the entire surface of the biscuit, except for 2-3 cm at the edges. Sprinkle them with sugar and cinnamon.
Fold the edges of the biscuit up, carefully place it on a baking sheet and bake at 200 degrees until done - about 25 minutes.

Advice. Add some sea buckthorn or cranberries to the apples - the taste will be completely different!

ORANGE CAKE

The taste of this cupcake is very simple and unobtrusive - just what you need to decorate a family tea party. A simple cooking process, a fairly simple result, simple homemade gatherings. However, do not think that all this simplicity is an indicator of low quality baking - on the contrary, the cake comes out very good: light, aromatic, real.

150 ml orange juice;
zest of 1 large orange;
150 g vegetable oil;
150 g sugar;
380 g flour;
1/3 tsp. salt;
1 tsp. soda;
2 tbsp. l. water;
1 tbsp. l. vinegar.

Remove the zest from the orange and squeeze out the juice.
Mix fresh orange juice with vegetable oil (refined, odorless), add sugar, stir until all the grains are dissolved. Add salt and vinegar, add flour and knead into a homogeneous dough.

In a small container, mix soda and water and add to the dough.
Transfer the dough into a greased and floured pan and bake until done for about 40 minutes at 180 degrees. If desired, sprinkle with powdered sugar and cut after complete cooling.

Advice. If you have time, additionally prepare thick orange syrup and soak the finished cake with it.

Check out honey cookies made with olive oil.

GINGER CAKE

Like most Lenten baked goods, due to the absence of eggs in the dough, the cake turns out to be quite loose and crumbly, however, in this case this is not a minus, but rather a plus: a minimum of effort - and for tea you have a piece of ginger joy that melts on your tongue, nice surprising in its richness of flavors.

80 ml refined sunflower oil;
80 g pitted prunes;
80 g sugar;
150 ml strong black tea;
150 g + 1 tbsp. l. flour;
90 g honey (about 3 tbsp);
1 tsp. ginger powder;
1 tsp. cinnamon;
1 tsp. soda;
1/2 tsp. salt.

First, brew tea – strong and rich. For a more interesting result, you should take tea with bergamot, orange zest or candied lemon – the citrus note will fit perfectly into the overall taste, turning an ordinary cupcake into a stylish treat.
Pour oil into a saucepan, add sugar and honey, stir, place in a water bath and heat until the ingredients are completely dissolved.

Cut the prunes into small pieces and roll them in a tablespoon of flour.
Add soda to a saucepan with honey, sugar and butter, stir - the mass will begin to foam and grow. Great, that’s how it should be – add salt, cinnamon, ginger. Pour in the tea. Add flour and quickly mix everything until smooth. The dough will not be thick and pourable.
Add prunes and pour into a greased baking dish. Place in the oven for 40 minutes, temperature 180 degrees. Check readiness with a wooden stick.
The finished cupcake can be decorated with any jam or sprinkled with powdered sugar or cocoa.

Advice. When serving, decorate the cupcake with finely chopped candied ginger.

Do you know what you can cook?

Lenten desserts - three recipes for the festive table

LENTEN TRUFFLE CAKE

Believe me, this is one of the most incredible Lenten cakes you have ever tried! Incredibly rich, chocolatey, moist and rich in flavor, guests will be blown away. And those who don’t fast, by the way, too.

Cakes:
250 ml of plant milk (soy, coconut, almond, sesame, oat or any other);
300 g flour;
1/2 bar of dark chocolate;
130 ml odorless vegetable oil;
130 g sugar;
3 tbsp. l. cocoa;
1/2 tsp. salt;
1 tsp. baking powder;
1 tbsp. l. lemon juice.

Fruit layer:
150 ml of any jam with a sour taste (currant, plum).

Cream:
270 ml strong tea;
300 g dark chocolate.

Korzh. To prepare the crust, heat the milk. Place the chocolate broken into pieces into a saucepan with milk and stir until completely dissolved. Add sugar, salt, baking powder, cocoa, pour in vegetable oil. Gradually add flour - the dough should be viscous, but flows quite well from a spoon. Add lemon juice and stir quickly again. Place the mixture in a greased pan, bake at 180 degrees for about 40 minutes, check for doneness with a wooden stick.

Remove the cake from the mold only after it has cooled completely. Cut lengthwise into two equal parts.
Using a blender, beat the jam into a homogeneous mass, spread it on the bottom cake layer, and distribute it evenly.

Cream. Prepare in advance two bowls of different sizes that will fit inside each other. You need to put ice in the larger one. Pour freshly brewed warm tea into the smaller one (it’s good if it’s tea with bergamot or orange zest), add chocolate and stir until it is completely dissolved. After this, place a small bowl in a large one filled with ice and begin to whip the cream. It sounds strange, but this is exactly what needs to be done - at first the mass will be liquid (it will begin to seem that everything is lost and the food has been spoiled in vain), then it will gradually begin to thicken. At this stage, periodically turn off the mixer and check the consistency of the cream - when the whisks begin to leave a distinct mark on the surface of the cream, stop, because at this moment it is easy to overbeat the cream (in this case, it will be so thick that you will not be able to grease the cake with it, you will have to cut and lay out in pieces). The final result should be soft, mousse-like and hold its shape well.

Place half of the finished cream on the bottom cake layer, distribute it evenly over the entire surface, and cover with the top cake layer. Spread the other half of the cream on top and sides of the cake.
We leave the cake to soak overnight, after which you can brew coffee and surprise your guests.

Advice. Prepare a little more cream - it makes excellent decorations that can be piped from a pastry syringe.

LENTEN "NAPOLEON"

Layered cakes, custard. Everything is for real, as in, only in the Lenten version!

Dough:
1 glass of vegetable oil;
1 glass of sparkling mineral water;
4.5 cups flour;
1/2 tsp. salt.

Cream:
150 g peeled almonds;
1 liter of water;
300 g sugar;
200 g semolina;
juice and zest of 1 lemon.

Mix oil, water, salt. Gradually adding flour, knead a non-sticky elastic dough. Form a ball and put it in the refrigerator for 2-3 hours. After the specified time, divide the dough into equal pieces (12-15 parts), roll each of them into a thin layer, cut off the excess using an inverted plate, carefully transfer it to a baking sheet, and prick it with a fork in several places. Bake at 200 degrees for 5-7 minutes each until light golden brown.

Grind the almonds into crumbs. Gradually adding water, do not stop working with the blender. Mix the resulting milk with sugar, bring to a boil, add semolina in a thin stream, cook until thickened. Add lemon juice and zest to the cooled cream and blend again with a blender.
Grease each cake with cream, leaving some of the cream on the sides and top. If desired, break one cake layer for sprinkles and decorate the cake.
Leave to soak for at least 5 hours. We serve it to guests and collect compliments.

Advice. If desired, decorate the cake with nuts.

Lenten dessert for a snack

OAT BARS

It's great to have something sweet and pleasant at hand - something that can lift your spirits, satisfy your hunger and at the same time be beneficial. How about homemade cereal bars?

2 cups oatmeal;
2 ripe bananas;
2 tbsp. l. honey;
1/2 cup chopped nuts (hazelnuts, peanuts, cashews, pistachios, almonds and others);
1/2 cup chopped dried fruits (raisins, dried apricots, prunes and others).

Place the oatmeal in a dry frying pan and dry it thoroughly - a pleasant, distinct oatmeal smell should appear in the air.
Lightly fry the mixture of chopped nuts in the same way.
Peel the bananas and mash them into a puree with a fork.
Mix nuts, cereal, dried fruits, puree and honey. Place the resulting mass in a baking pan lined with parchment paper. We level, compact - the thickness of future bars should not exceed 1 cm.

Bake at 180 degrees for about 20 minutes. Cut into bars, leave to cool completely in the mold, then separate from each other, if necessary, wrap in baking paper and store in an airtight container.

Advice. Try adding grated apple or pear to the bar mixture - this reduces the shelf life, but softens and improves the taste.

In addition to the bars, you can also make them by involving your child in the most exciting process.

Lent is not a time for despondency, sadness or greyness. Fantasize. Create. Live to the fullest and enjoy what your days are filled with today.
