  • 1.5 tbsp. salt;
  • 0.5 tsp ground pepper;
  • 1 bay leaf;
  • 50 ml sunflower oil.

Method for cooking hedgehogs in a frying pan

Peel the carrots and grate them on a fine grater. It is better to use juicy, brightly colored carrots.


Lightly fry the carrots in a frying pan with the addition of a small amount of sunflower oil.


Meat for meatballs can be used of different varieties and from different parts of the carcass. I prefer pork because it is more tender than beef and cooks much faster. But this is a matter of taste, and you can take a good piece of veal or beef, turkey fillet or even chicken. Grind the meat into minced meat with the addition of one onion and let it stand in the refrigerator for about 30 minutes.

Then combine the minced meat, carrots and well-washed rice. Yes, raw rice is used in this recipe. Don't worry, he will have time to prepare later, being already inside the hedgehogs.


Add a tablespoon of salt, a pinch of pepper and mix the minced meat homogeneously with your hands.


We form hedgehogs by scooping up portions of minced meat with our hands and rolling them into a ball the size of a ping-pong ball. If the mince sticks, wet your hands with water.

So don’t be lazy, prepare the minced meat yourself, your efforts will be rewarded with excellent taste.

Preparation:

First, boil the rice in salted water until half cooked, that is, after boiling, let it cook for 7-8 minutes. Instead of salt, I crush chicken stock cube into the water. Then drain the water through a colander.

You can add peeled onions and carrots along with the meat, but I like it better if the vegetables are fried a little beforehand.

So, finely chop the onion and fry in vegetable oil until soft, until the onion just begins to turn golden.

Three carrots on a fine grater, add to the onion and continue to fry, stirring, until the carrots are soft.

While the hedgehogs are stewing, let's prepare the sour cream sauce. To do this, add 1 tbsp to the sour cream. l. tomato paste or 2 grated tomatoes without skin and 2 chopped cloves of garlic.

Stir, add salt to taste, 1 tbsp. l. flour without a slide and mix well again so that there are no lumps.

Add 1/2 cup hot water from the kettle and stir until smooth. The sauce is ready.

When the hedgehogs have been stewing in water for half an hour, add sour cream sauce to the pan.

My mother taught me how to make hedgehogs in this tomato sauce, so I always do it the way they taught me. I recently tried making meatballs in cream sauce, it’s very tasty, I won’t lie, but these are the hedgehogs in tomato – this is a recipe from childhood.

Today, out of curiosity, I looked on the Internet how people make hedgehogs in gravy and was surprised to find that there are a lot of false recipes, that is, people don’t get hedgehogs at all, but ordinary meatballs. Real hedgehogs are not pre-fried, that's why they are hedgehogs, because rice needles should stick out, and if you fry them, then there won't be any needles anymore, that's it! :)

For hedgehogs, you need to take long rice, not round rice. In general, below I am sharing my recipe for cooking hedgehogs in gravy; today I changed it quite a bit by adding crushed tomatoes to the gravy, although I usually just make do with tomato paste.

I rolled small balls and placed the hedgehogs on the bottom of the pan. It’s more convenient for me to make it in a saucepan, since I like there to be a lot of gravy and it all fits.

Ideally, there will be so many hedgehogs that they will fit in one row at the bottom of the pan. But it’s not a problem to lay it on top, sometimes I do it that way.

Making tomato sauce for hedgehogs

I fried the onions and carrots and put the tomatoes in the frying pan, which I ground in a blender. This is how I did it the first time, usually I just used tomato paste, but then I wanted to make a healthier dish.

I overcooked the tomatoes a little and put flour in the pan. Stir and fry for about half a minute.

Then I pour boiling water in a thin stream and immediately stir the gravy with a spatula so that the flour disperses. I wait until it boils and stir.

As soon as the gravy boiled, I added salt, sugar to my taste (sugar is definitely needed, otherwise the taste will not be the same, about two whispers), pepper, sprinkled with dried parsley.

I pour the gravy into the pan with the hedgehogs and put it on low heat with the lid closed to simmer for about 20 minutes.

The most thrilling thing is, despite any diet, eating a couple of hedgehogs with mashed potatoes, poured with gravy and licking the plate like when you were a child :)
