Large, overripe zucchini is very difficult to peel, and this is the main difficulty in preparing them. Also, such zucchini lose the softness and tenderness of young zucchini, and therefore are not suitable for fresh salad.

Therefore, from large ripe zucchini you can prepare dishes that require the addition of liquid. For example, vegetable stew goes great with them.

When milking this dish you need to take one large zucchini, one large onion, one bell pepper, two or three tomatoes. We also take herbs to taste, salt and any spices to taste and desire. You can also use other vegetables, such as carrots, turnips, fresh cabbage, celery.

First, prepare all the vegetables, wash them and peel them. Large zucchini should be cut in half and into several more pieces, then they can be peeled. This can be done either with a knife or a vegetable peeler. We also clean out the pulp and seeds from the inside of the zucchini. The remaining pieces of zucchini are cut into cubes measuring approximately one and a half by one and a half centimeters.

We also cut the onion into cubes, peel the bell pepper from seeds and membranes, and cut into cubes.

The tomatoes can be blanched and skinned first, but you can leave them like that. We also cut them into cubes, but smaller.

Now pour vegetable oil into a large frying pan and heat it. Quickly fry the onions, then add the bell pepper, and then add the chopped tomatoes. Salt and pepper everything to taste. Stir and place chopped zucchini on top. Cover the dish with a lid and simmer for ten minutes over low heat. After this, mix everything and simmer until the zucchini is completely cooked. Five minutes before readiness, add chopped herbs.

This stew is very suitable for meatballs or cutlets, baked meat or regular sausages. You can also serve this vegetable stew with mashed potatoes.

You can also make vegetable cutlets or pancakes from large overripe zucchini. To do this, be sure to wash and peel the zucchini, cut it and clean out the entire middle. After this, cut the zucchini into large cubes and pass them through a meat grinder. Along with the zucchini, we also skip a head of onion and a couple of cloves of garlic.

Mix all this, add salt and season with spices to taste. Add one or two eggs, a little flour or starch. The result should be a mass similar to thick sour cream.

Now heat the vegetable oil in a frying pan with the addition of butter, or cooking fat, and using a tablespoon, place small cutlets or pancakes there. They should not be thick, but it is best to make them literally one centimeter thick.

Fry the zucchini pancakes on both sides until golden brown and crusty. This can be done both with the pan lid closed and without it. Fry over medium heat or reduce to low, but then the pancakes will take a little longer to cook.

These zucchini pancakes should be served with garlic or green sauce. They are very fragrant and appetizing.

And of course, you can make caviar for the winter from large overripe zucchini. You can do it this way.

First, wash and clean the zucchini, cut them and clean out the pulp and seeds from the inside. Then cut into large cubes. We pass everything through a meat grinder.

Wash and peel the onions, carrots, and a few cloves of garlic. We also pass all this through a meat grinder.

Transfer the resulting mass into a large saucepan, add salt, peppercorns and cloves. Place the pan on the fire and bring to a boil. If there is little liquid in the pan, add some water there.

Cook the caviar over low heat for about twenty minutes. After this, we taste the caviar. If you like caviar saltier, then you need to add salt to taste, if you like caviar to taste sweet, then add a little sugar. You can also add spices to suit your taste.

After this, add vegetable oil to the caviar and cook for another twenty minutes. Next, turn off the heat, let the caviar cool slightly and put it in sterilized jars, roll them with sterilized lids.

If you plan to store caviar in the refrigerator, you can close the jars with clean cellophane lids. Then we let the zucchini caviar cool completely and put it away for winter storage.

As for the proportions of such caviar, I usually cook it the same way as my mother, by eye. That is, as many zucchini, onions, and carrots are available, I take as much as I need. The caviar turns out delicious, the main thing is to check for salt and sugar during its preparation. Sometimes, when possible, we also add tomatoes to this caviar. They give a slight sourness, which is sometimes very tasty.

Add spices to the vegetable mixture to taste and simmer until all vegetables are cooked. Place the mixture in a hot container, immediately roll up the lids and cover the “stew” with a fur coat.

And you can eat it not only as a cold appetizer, but when serving it as a side dish you can warm it up.

Salad of overgrown cucumbers for the winter in jars

Ingredients:

  • Cucumbers – 3 kg
  • Fresh dill - a large bunch
  • Onion - half a kilo
  • Vegetable oil – 250 ml
  • Salt - a quarter cup
  • Vinegar 6% – 250 ml
  • Sugar - half a glass

Preparation:

Cucumbers, peeled, cut into slices. Finely chop the dill. Cut the onion into rings.

Arrange the prepared vegetables in jars in layers: cucumbers, dill, onions, cucumbers and so on.

Make a cold pour from oil, salt, vinegar and sugar, that is, there is no need to boil the mixture. Pour the mixture over the salad and leave for 3 hours.

Sterilization of jars: 1 liter – 10 minutes; 0.8 l – 8 minutes; 0.5 l – 5 minutes.

“Pickles” from overgrown cucumbers

Ingredients:

  • Large cucumbers – 1 kg
  • Sugar – 5 tbsp. spoons
  • Salt – 3 tbsp. spoons
  • Water – 1.5 cups
  • Vinegar 9% - half a glass
  • Black and allspice peas - to taste
  • Coriander – 1 teaspoon
  • Mustard seeds – 1 tbsp. spoon
  • Cinnamon - small piece

Preparation:

Peel accelerator cucumbers (if they are very rough), cut into four parts, and if desired, cut out the center with the seeds. Next, cut the prepared vegetables into small “columns”, lower them into boiling water for a minute, drain through a colander and place in jars.

Prepare a marinade from water, spices and spices, pour in the overgrown pickles, pasteurize in a water bath for 20 minutes.

Ingredients:

  • Peeled yolks – 1 kg
  • Sea buckthorn – half a kilo
  • Sugar – 1,100 kg
  • Ice water

Preparation:

Cut the cucumbers into 4 parts, remove seeds from the middle, cut into cubes and pour into a convenient bowl. Pour ice water for 10 minutes, then drain the water and cover the cucumbers with sugar (take 100 g from the total weight).

Crush clean, dry sea buckthorn, mix with sugar, and bring to a boil over heat. Next, let the sweet mass cool, strain off the syrup, pour it over the cucumbers and put it on the fire.

The heating of the stove should not be high, it is better to set it slightly below average. Cook the cucumber pieces until they become translucent. Next, pour liter jars into the floor and roll them up.

This interesting preserve is easy to prepare. The cucumbers and peppers are crispy and reminiscent of the taste of summer.

Ingredients:

  • cucumbers – 4.5 kg;
  • granulated sugar - 1 tbsp.;
  • vinegar 6% - 1 tbsp.;
  • bell pepper – 0.5 kg;
  • vegetable oil – 1 tbsp.;
  • fresh greens (dill, parsley) - 1 bunch each;
  • onions – 0.5 kg;
  • salt – 1/3 tbsp.

Preparation:

Cut the cucumbers into rings, onions and peppers into thin half rings, and simply chop the greens with a knife.

Mix all the vegetables in a deep bowl, add the rest of the ingredients, mix, leave the bowl of food for two hours to form juice.

Place the salad in boiled jars, cover with lids, place in a thick-bottomed pan and sterilize the salad in the jars for about 20 minutes. Seal with lids, cover with a warm item and wait until it cools completely. It is not necessary to place jars on the neck.

Ingredients:

  • cucumbers – 2.5 kg;
  • carrots – 1.5 kg;
  • garlic – 2 heads;
  • coriander grain – 2 tsp;
  • ground red pepper – 1.5 tsp;
  • paprika – 2 tsp;
  • rock salt – 170 g;
  • refined oil – 260 ml;
  • vinegar 6% - 0.5 tbsp.;
  • drinking water – liter;
  • granulated sugar – 270 g.

Preparation:

Chop the cucumbers into long strips, peel the carrots, grate them as for a Korean salad, pass the garlic through a press. Mix everything and place in sterile jars.

In a separate pan, prepare the marinade, mix the bulk ingredients with the liquid ones (except vinegar). Boil the contents of the container, pour in the vinegar and pour the marinade into jars, cover with lids.

Sterilize jars of Korean-style cucumbers in boiling water for about 15 minutes. Seal with lids. Cool the glass container with the salad under a warm item.

Overripe bananas are best used in baking, and we love baked goods. My husband and I drink tea with something tasty at least 2 times a day. Whenever possible, I try to cook delicious food myself, which is why we were looking for a house with an oven and kitchen appliances. Baking tins are a problem in Thailand and can sometimes be hard to find, but larger stores usually have them. You can also use saucepans without plastic handles or a rice cooker pan for these purposes.

So, what to cook? If you need something simpler, then I make different cupcakes. I choose recipes depending on what products are available and what I want to get. Here is one of the simple and favorite recipes:

4-5 overripe bananas,
2 eggs,
0.5 cup sugar (if bananas are not very sweet, then a little more)
100 g sl. oils,
10g baking powder (you can take 3-5g baking soda and quench it with lemon juice or vinegar)
1.5 cups flour

Grind bananas in a blender. Add sugar, eggs and melted butter, mix well, I do this directly in a blender. Then add flour and baking powder and mix. You can also add vanilla sugar, raisins, prunes, oatmeal and whatever you want. Place the dough in a greased mold (if the mold is silicone, there is no need to grease it). I used the inner bowl of a rice cooker since I didn't have a muffin tin. Place in the oven and bake for about 40-45 minutes (if making muffins, then 20-30 minutes) at 180 degrees. If you are expecting guests or just have time, you can sprinkle the finished cupcake with powdered sugar or chocolate glaze with nuts or come up with something else, but I didn’t do anything, it’s so good and quick to eat. The cake turns out very tender and tasty:

I also really liked the recipe for Brazilian banana pie. It is even tastier and more tender than the previous cupcake. Even my mother, who is on a diet, could not resist. We will need:

1.5 cups flour,
1.5 cups cornstarch,
1.5 cups sugar,
1 packet of vanilla sugar (optional without it),
1 tbsp. l. baking powder (I took 1/3 tbsp of baking soda, slaked with lemon juice, you can also use vinegar),
200 g butter,
3 eggs,
1 glass of milk,
6 bananas (I took both 4 and 8, depending on the situation)

Mix flour, starch, melted butter, sugar and slaked soda and get a dough in the form of bread crumbs. Grease the mold with oil (we have a large baking sheet, I used it instead of a mold, the cake turned out thinner than the original, but no less tasty). Pour in half the dough, distributing it evenly. Cut the bananas in half lengthwise or into 3 parts if there are not enough of them. Place it on the dough. Sprinkle the remaining dough evenly on top. Beat the whites and yolks separately. Pour the whipped yolks into the whites, mix gently while gradually pouring in the milk. Pour this mixture over the pie and bake at 180-200 degrees for about 30 minutes. Cool (although we rarely manage to wait until it cools) and cut into portions. Cold tastes better. This makes a pie like this:

You will need:

  • 2 cups shortbread
  • 2 tsp. Sahara
  • 1/4 cup butter
  • 1 package pudding mix
  • 1 3/4 cups milk
  • 2 medium bananas
  • 2 cups whipped cream
  • 1/2 cup coconut flakes

Preparation:

  1. Preheat the oven to 190 degrees.
  2. Mix the crushed shortbread cookies and butter in a blender until smooth. Place in a mold.

You will need:

  • 230 g wheat flour
  • 120 g sugar
  • 1 tsp. baking powder
  • 1/4 tsp. soda
  • 1/4 tsp. sols
  • 1 tsp. cinnamon
  • 2 eggs
  • 115 g butter
  • 400 g banana puree

Preparation:

  1. Roast the walnuts in a dry frying pan for 8–10 minutes. Let cool, then chop into large pieces.
  2. In a large bowl, mix all dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon.
  3. Add walnuts. Mix well.
  4. Separately, whisk the eggs, add banana puree and melted butter (cooled to room temperature). Mix well.
  5. Pour the liquid ingredients into the dry ingredients and, using a silicone spatula, stir the mixture in a circular motion from bottom to top. Once the flour is moistened, stop stirring. The dough should be lumpy.
  6. Preheat the oven to 180 degrees. Grease muffin tins with vegetable oil and sprinkle with flour. Transfer the dough to the prepared pans and place in a hot oven on the middle rack for 50-55 minutes.

Sandwich with banana and Nutella


You will need:

  • 1 ripe large banana
  • 4 slices sandwich bread
  • 2 tbsp. l. roasted almonds
  • 60 g Nutella or any nut-chocolate spread

Preparation:

  1. Peel the banana and cut into slices. Chop the almonds.
  2. Spread chocolate spread on all 4 slices of bread. Sprinkle with almonds and press down with a spoon. Place banana slices on 2 slices.
  3. Assemble 2 sandwiches by covering 2 slices of banana bread with 2 slices of Nutella, spread side down.
  4. Place the sandwiches on the grill grate and place a weight on top of the board. Grill for 5 to 6 minutes, turning once to create browned stripes on the bread.

Banana pudding


You will need:

  • 2 tbsp. milk
  • 70 g sugar
  • 1 tbsp. l. flour
  • 2 tsp. starch
  • a pinch of vanillin
  • 2 yolks
  • 14 pcs. easy-to-soak biscuits
  • 2 bananas

Preparation:

  1. First, heat the milk, but do not bring it to a boil.
  2. Beat the yolks separately and pour in about a quarter of the heated milk. Beat further.
  3. Mix sugar, flour, starch and vanilla in a saucepan with the remaining milk.
  4. Cook, stirring, over medium heat until the mixture thickens. After this, remove from the heat and let the pudding cool, covered.

You will need:

  • 5 bananas
  • 850 g canned pineapples
  • 25 g coconut flakes

How to cook chicken with banana and rice. Cut the chicken into pieces, rub with pepper and salt, and make cuts in the flesh with a sharp knife. As soon as the water seal stops gurgling (or as soon as the glove falls off, if that’s what you’re using), a slight bitter taste will appear in the mash, the wort will lighten and foam will certainly settle in it. It must be drained from the sediment into a special vessel for distilling liquid - a distillation cube.

How to distill mash: stages of distillation

Stage 1

We carry out the first distillation, selecting the most important product until the strength of the mash falls below 30°C.

Stage 2

We dilute the moonshine with plain water, achieving a strength of 18-20°C. After that, we distill it again. The first 200 ml. We collect the moonshine in a separate container; drinking this distillate is not recommended.

Stage 3

We finish distillation when the strength of the mash drops below 40°C.

Stage 4

Finally, dilute the moonshine with water, lowering the temperature to 40-45°C. After this, keep the product in a cool, dark place for 2-3 days.
