A classic recipe for pancakes with milk - getting ready for Maslenitsa. Menu for Maslenitsa. Recipes for dishes (pancakes) for the entire Maslenitsa week

If your milk suddenly turns sour, do not rush to throw it away. I suggest making pancakes using one very tasty and simple recipe. To make it soft, add a little boiling water to the dough, and in the end you will get an excellent option for treating your loved ones.

  • a glass of sour milk;
  • 100 ml boiling water;
  • 1-2 tbsp. granulated sugar;
  • 10 g vanilla sugar;
  • a couple of eggs;
  • 170-180 g flour;
  • 2-3 tbsp. vegetable oil;
  • a pinch of salt;
  • 2-3 tsp. baking soda.

How to cook:

Take a deep bowl and break the eggs into it, add salt to them and stir a little with a fork or whisk. Add granulated sugar and vanilla sugar to the egg mass, beat everything thoroughly until foamy. Pour the sour milk into the mixture, stirring constantly. The consistency should be uniform. Pour baking soda into a bowl and stir. To avoid the taste of soda, first quench it with vinegar. Sift the flour through a sieve and add tablespoons to the mixture. Do not forget to stir the mixture all the time, otherwise lumps will form.

Remove the milk from the refrigerator an hour before cooking; it should be at room temperature.

Heat the vegetable oil in a frying pan or microwave until warm and pour it into the contents of the bowl. Add a little oil to the pan and let it heat up properly. Use a small ladle to scoop out a portion of the batter and pour it into the center of the pan. Swirl to distribute the dough evenly.

Turn the pancake over to the other side after 2 minutes and continue frying for another minute, then you can remove it from the pan. Grease the pancakes with oil as desired and fold them in any way: triangles, tubes, squares. The dough turns out to be porous, and the taste itself is so delicate that it is impossible to stop eating them.

Put the kettle on and help yourself, bon appetit!

Pancakes with cucumber brine

Did you know that cucumber pickle can not only be drunk, but also added to pancake dough? If not, then try making pancakes yourself or for a holiday table. I suggest making a cheese filling to make the taste creamier.

  • 180-200 ml of cucumber brine;
  • 100-120 ml of clean water;
  • a glass of flour;
  • 2 eggs;
  • ½ tsp. soda;
  • 1 tbsp. granulated sugar;
  • 2-3 tbsp. vegetable oil;
  • 50-70 g hard cheese.

On a note!

The brine left over from salted tomatoes is suitable for the dough.

How to cook:

Break a couple of eggs into a deep cup, add sugar and stir the contents thoroughly. Use a whisk or fork to mix. Beat until foamy. Add warm water and vegetable oil to the eggs and stir again. Now pour in the brine, but first add soda to it so that it quenches.

Add flour little by little to the liquid mixture. Be sure to sift the flour, then the dough will be porous. There is no need to add salt due to the brine. Grease the frying pan with lard or oil. You only need to grease once, this amount will be enough for the entire frying.

When the pan is hot, pour in the batter and bake the pancakes until golden brown on both sides.

Grind the cheese on a coarse grater. If you like softer varieties, you can take “Russian”, “Dutch”, “Gouda”.

Spread the cheese shavings on the pancake, and then form an envelope so that all the edges meet in the center.

Place the pancakes in a heated frying pan, seam side down, and fry until golden brown.

You can decorate the finished dish with red caviar and sprigs of fresh dill or parsley.

If you like thin pancakes, but with some bumps on them, there is a recipe just for you. The indicated amount of ingredients is designed for approximately 14-16 pancakes, so if you want to cook more, then increase the amount, but according to the proportion.

  • 480-500 ml kefir 2.5%;
  • 230-250 ml hot water;
  • a couple of eggs;
  • 2 tbsp. Sahara;
  • ½ tsp. salt;
  • ½ tsp. baking soda;
  • 3-4 tbsp. sunflower oil;
  • 220-240 g flour.

How to cook:

First, combine the eggs with sugar and salt in a deep bowl. Take a whisk and beat the mixture into a light foam. Add kefir, mix the ingredients until smooth. Pour hot water into another cup and add baking soda. Pour boiling water into the dough in a thin stream, stir the dough. Thanks to this technique, those very holes in the dough are created. At the penultimate stage, pour vegetable oil into the dough and mix everything again.

The final stage is adding flour. It should be free of lumps, sift it in advance. Add it to the kefir mass and stir. The consistency should resemble liquid sour cream. Heat the pan, pour a little dough into the center and spread. Fry the pancakes over medium heat until the sides begin to brown.

When the pancake is fried on both sides, remove it from the frying pan onto a separate plate.

The pancakes with holes are ready, brew some delicious tea, take out the jam or honey and take a sample. Bon appetit!

Orange pancakes

Do you want to surprise your family and cook unusual pancakes? The whole secret is in the addition of oranges, due to which a pleasant citrus note appears in the taste. You can add curd filling to the dessert or pour jam on top, it will be even tastier and more aromatic.

  • 200-230 ml milk;
  • 200-220 g flour;
  • a piece of butter weighing 40 g;
  • orange;
  • one testicle;
  • tbsp granulated sugar;
  • 2 tbsp. vegetable oil;
  • a pinch of salt.

How to cook:

First you need to prepare the orange. To do this, grate the zest from it and squeeze the juice into a separate plate. If you took too large a fruit, then half is enough. Break an egg into a bowl for kneading dough, add sugar to it and place it with a fork. Pour the orange juice into the bowl with the egg mixture, then add the orange zest. Melt the butter in the microwave, pour it into a bowl with the remaining ingredients, add vegetable oil. Now add flour to the liquid mixture, but not all, but only half. Stir the mixture thoroughly to break up all the lumps.

Warm the milk a little to room temperature, then pour it into the dough and stir. Now the pancake dough is ready, you can bake.

Heat a frying pan over medium heat and then grease it with a piece of lard. Before pouring the dough, stir it so that the zest rises to the surface. Fry the pancakes until golden brown.

Place the finished dessert beautifully on a plate, garnish with orange slices and serve the treat to the table.

Chocolate pancakes

If you love sweets, then you will probably like chocolate chip pancakes. Cocoa gives the dessert a beautiful color and aroma; decorate the pancakes with a scoop of ice cream, and your family will be absolutely delighted with such a delicacy!

  • 230-250 ml kefir;
  • 50 g butter (melted);
  • one testicle;
  • 200-220 g flour;
  • tbsp cocoa;
  • tbsp Sahara;
  • a pinch of salt;
  • vanillin optional;
  • 2 tbsp. vegetable oil.

It is better to use kefir with a fat content of no more than 2.5%, otherwise the dough will turn out too thick.

How to cook:

Break an egg into a mixing bowl, then add sugar and mash. Pour melted butter into the egg mixture, add cocoa, vanilla to taste. Don't forget to salt it. Mix the mixture until smooth using a blender. Add kefir, vegetable oil and sifted flour to the bowl. Add ingredients gradually, stirring the mixture. Cover the cup with the dough with cling film and place it in the refrigerator for an hour.

Then, when time has passed, grease the pan with lard and fry the pancakes on both sides until chocolate brown.

Place the finished pancakes on a separate plate, you can grease them with oil, then they will acquire a glossy shine. Before serving, pour chocolate syrup over the dessert and enjoy quickly.

Pancakes on water without eggs

A unique option, no special purchase of milk or whey is required. On Maslenitsa, you can quickly prepare pancakes early in the morning while the whole family is still sleeping. The main thing is that there is water and flour in the apartment. This method is ideal for those who fast or for some other reason do not consume animal products. By the way, fasting will begin immediately after Maslenitsa.

Ingredients:

  • water – 4 glasses;
  • white flour – 500 g;
  • baking soda and coarse salt - half a teaspoon each;
  • granulated sugar – 30-40 g;
  • refined sunflower oil (for dough) – 30 ml.

Preparation

Combine flour, salt and soda with granulated sugar, mix the ingredients together.

Use cold boiled water. Slowly pour it into the flour in a thin stream, stirring immediately with a fork or a kitchen whisk. Do this vigorously so that the flour does not have time to set into lumps. You can adjust the thickness to your liking by adding water to make the dough more fluid.

At the last stage, pour in vegetable oil, mix everything again and you can start baking pancakes.

I also recommend, in my opinion, the best recipe for pancakes with mineral water. If you fill them with condensed milk with nuts or fruits, the result is complete garbage! They will fly away on Maslenitsa in an instant.

Pancakes with whey

They are prepared without yeast, so they won’t take much time. In the evening we came home from work, quickly brought out the pancake mixture and not only for Maslenitsa, but any day for dinner there was a soft and tender yummy on the table. This option is most often used in making pancake cakes.

Ingredients:

  • whey – 800 ml;
  • granulated sugar – 60-70 g;
  • coarse salt – ¼ teaspoon;
  • wheat flour – 380-400 g;
  • chicken eggs – 2-3 pieces;
  • sunflower oil (for dough) – 30-40 ml.

Preparation

Pour the whey into a deep bowl (the whey should be at room temperature, you can even warm it up a little). Taste it right away, if it is sour, then this sourness will be felt in the pancakes, so adjust the taste with granulated sugar, you will have to add a little more of it. Break the eggs into the same bowl, add regular sugar (if you want, you can add vanilla to your liking), and add salt. Using a mixer or kitchen whisk, beat everything until smooth.

Add flour in small parts, continuing to knead the pancake mixture. Do this until you achieve a homogeneous consistency without a single lump. Pour the oil into the prepared pancake mixture, stir again and let the dough sit for about 15-20 minutes. After this you can bake.

Kefir pancakes without eggs

They turn out to be openwork, with a hole, have elasticity and are best suited for stuffing with fillings. You can use milk instead of water, the pancakes will turn out even tastier.

Ingredients:

  • white flour – 230-240 g;
  • kefir – 0.4 l;
  • drinking water – 1 glass;
  • coarse salt and baking soda - half a teaspoon each;
  • granulated sugar – 30-40 g;
  • sunflower oil (for dough) – 20-30 ml.

Preparation

Pour baking soda, granulated sugar and salt into a bowl with kefir, stir until the bulk ingredients are completely dissolved. Never use fermented milk product directly from the refrigerator; take it out in advance so that it warms up at room temperature. Gradually add flour, gently kneading the dough.

Boil water and pour almost boiling water into the pancake mixture. Immediately pour in the vegetable oil, mix everything thoroughly again and you can start frying the pancakes.

So, let's remember what awaits us on Maslenitsa weekdays, arrange a real farewell with your friendly family. Make it interesting and run to the fair and show.

When this long-awaited holiday comes, it will be possible to bake a whole mountain of pancakes that would melt in your mouth, drive everyone crazy and be very appetizing and beautiful. Agree, in order to cook something like this, the housewife will need to work hard in the kitchen.

You will need to follow all the rules and recommendations so that, first of all, the dough comes out to the desired consistency, and when frying, the pancake does not stick to the pan and does not turn out to be lumpy. Also, so that there are holes on it or, as they also say, bubbles, and the edges are thin and crispy. In general, at first glance it seems like a difficult task, but don’t worry, soon you will learn how to bake such delicacies yourself in a matter of minutes, and then once you adapt... and things will go like clockwork.

There are quite a large number of options for baking pancakes in the culinary world. Let me remind you, especially since you can become more familiar with each of these species on this blog. Proper and tasty dough can be made based on:

  • milk;
  • kefir;
  • water;
  • sour cream;
  • serums;
  • sour or powdered milk;
  • mineral water;
  • and oddly enough, even on beer)))

In a nutshell, to any such main component, ordinary baking soda is then added, or baking powder or yeast is used + flour is added and pancake dough is kneaded.

After this, you will need your fighting spirit, good mood and a frying pan. Yes, that's exactly it. Have you already decided on her choice, if not yet, then read the recommendations here?

Well, let's start in order and prepare different types of these delicate and sweet delicacies for each day of the week.

I suggest starting with the simplest and most traditional recipe, which any housewife, whether a beginner or an experienced one, knows. By the way, in cafes and various eateries, this option is most often used, based on choux pastry.

We will need:

Cooking method:

1. Take excellent quality flour, preferably premium whole grain flour. Sift it through a sieve to saturate it with oxygen.

2. After this, you need to add a spoonful of salt and two spoons of sugar. Although you can use a little more granulated sugar, be guided by your taste.

3. Then pour in warm milk, it is advisable to take fresh milk, not yesterday’s milk. Although even sour milk will turn out divinely delicious. Stir the resulting mixture thoroughly with a kitchen whisk.

5. The result is a slightly thick dough, into which you have to add vegetable oil or melt a small piece of butter.

Interesting! With the addition of vegetable oil, the pancakes will be drier, but if you add butter, they will become more moist and rich. You can observe this yourself, so start the experiment))).

6. After this, the whole mass needs to be mixed again and brewed with boiling water, and then mixed again with a whisk.

Depending on what consistency you like, thinner or thicker, dilute by eye using 2 or 3 glasses of water. The thickness of your pancakes will depend on this proportion; if you want to make them thinner, add batter; if they are thick, add thick batter.

Leave to rest in a warm place, cover with cling film or a towel.

7. And only after that start baking. Heat a frying pan; it is advisable to use a cast-iron beauty or one with a thick bottom. Next, pour the mixture into the pan so that it spreads evenly over the entire diameter of the circle.

Before baking, you will need to grease the pan with oil and heat it up very hot, and then fry it dry.

8. As soon as you see the edges starting to brown, take a spatula and turn the treat over to the other side. Remember that the second side bakes quite faster than the first.

Place all the pancakes on a plate in a stack; you can grease each one separately with butter, or you can do without it.

9. You can decorate with any sweet syrup, jam or condensed milk. Bon appetit!

By the way, if you want to decorate your table in an original and festive way, then do it in different ways, it looks funny and fun, you can see the ideas

  • Salt - 1 tsp
  • Baking powder - 1 tsp

Cooking method:

1. Take a well washed bowl and dry it. Break two chicken eggs into it, add salt and sugar. Since I liked the variety of sweet pancakes, I always add more sugar so that they don’t seem so bland. But, if you make meat fillings, don’t use too much sugar.

2. Whisk the egg mixture until foam forms on the surface. Then pour in the milk, you can warm it up a little, or you can take it out of the refrigerator in advance and let it reach room temperature. Whisk the mixture and begin to gradually add wheat flour in parts.

3. Carefully and slowly carry out this procedure, and you will need to sift the flour through a sieve; this can be done directly over the bowl. Add baking powder next.

4. Stir this egg mixture until it’s quite stiff, the thicker you make it, the more water you’ll need later to dilute the dough, and accordingly, more goodies will come out, but don’t overdo it, there’s a limit to everything). I gave you the exact proportions in the description of the ingredients.

Oh, and don’t forget about vegetable oil, add it to all the products in a bowl.

So, the dough has become a little tight and now boil it with boiling water and start stirring and stirring until it becomes the consistency of liquid cream.

Tadam, start baking. Heat a frying pan over medium heat, grease its surface with oil and only after that pour a ladle of liquid and shiny dough, make circular movements so that the whole mass spreads evenly and in a thin layer over the frying pan.

This activity is quite exciting, it takes an hour to prepare and is eaten in one go))). Fry on both sides until nicely golden brown.

5. And then invite all your friends and household members to a tasting and start eating together.

And to make the festive feast more fun and effective, make an inscription from caviar on this culinary product. And then, for sure, life is good, and your tummy will be delighted).

Milk pancakes - a delicious recipe made with yeast

Perhaps you are a fan of something original and not too simple. You like lace and openwork more than everything ordinary, then you will like this option, which will make simply awesome and beautiful bubbly pancakes. These are the ones most of us are chasing.

  • dry yeast - 1 sachet or 10 g
  • milk - 3 tbsp.
  • chicken eggs - 3 pcs.
  • flour - 500 g
  • sugar - 2 tbsp
  • salt - 1 tsp
  • vegetable oil - 2 tbsp

Cooking method:

1. Since the recipe will be yeast-based, you will have to make a dough. Therefore, you need to first heat the milk on the stove until it is warm and divide it in half. Then add dry yeast to one half (1-1.5 tbsp.). To get them off to a good start, you need to pamper them by adding granulated sugar and salt.

2. Cover the bowl with a lid and move it aside so that the mixture stands and a cap appears on top; this will take a lot of time, about 10 minutes.

3. After the time has elapsed, knead the dough, add flour and chicken eggs to the milk. Stir and then pour in the remaining milk until the consistency thins and becomes homogeneous in structure. At the very end, pour in 2 tablespoons of vegetable oil.

4. Now let the finished dough rise 3-4 times in a warm place.

Important! Do not forget to cover the dough with a lid so that it does not air out or dry out.

5. Before frying, grease the frying pan with butter and heat it well. Fry over medium heat, on both sides, so that each pancake is well baked and becomes rosy and golden. Bon appetit!

Pancakes for Maslenitsa 2019 - recipe with fillings

Well, well, we’ve baked a whole cartload, now let’s not forget that you can and should be stuffed with all sorts of sweet or meat ingredients.

But before that, I want to show you another option, which will also be classic and with the addition of soda. Which one do you prefer most, write your reviews and comments below under this article?

Since the pancakes will be stuffed, add very little salt and sugar so that they do not overwhelm the filling.

We will need:

  • cow's milk - half a liter
  • soda - 0.5 tsp
  • melted butter - 1 tbsp
  • chicken egg - 3 pcs.
  • salt and sugar to taste or a pinch

Cooking method:

1. Take a container that will be quite deep, break the eggs into it and beat everything well with a regular hand whisk. Add salt and sugar, pour soda into the resulting liquid.

3. Now add the sifted flour in small portions, stir thoroughly so that no lumps form. After this kneading, pour out all the remaining milk and melted butter, whisk thoroughly, you will get a viscous mixture, which is what you need for work.

Let the dough stand aside and brew for 30-40 minutes, and then proceed to the next steps

4. Take a frying pan of any diameter, or use a special pancake maker with low edges and bake our suns on it, spreading the dough over the surface in an even thin layer.

5. First, heat it well, and then turn it to medium heat. Coat the walls and the surface itself with butter, this must be done so that the first pancake does not stick; if this happens, then your frying pan has not yet heated up to the desired state, wait a little longer.

6. Look, those same bubbles are already visible at this moment.

7. Don’t think that this is quite difficult to do, any task requires skill and experience, so adapt. Pour into the very center and quickly rotate the dish in a circular motion.

8. And once you get a big mound, immediately make a special filling that can be made from fruits, for example, peaches + cottage cheese.

Or you can finely chop the apples into pieces and mix them in honey, and then roll them into rolls. I can also suggest using yogurt and cinnamon instead of honey, the stew is also very piquant and interesting.

You can fill it with cream cheese or just cottage cheese mixed with granulated sugar. Garnish as desired with mint sprigs and orange slices.

For sweeter lovers, there is also a banana and chocolate option. Melt the chocolate in a water bath, you can take both white and black, cut the bananas into slices.

And now this tender and delicious banana delicacy is ready.

For those who like to eat something heartier, I offer an option with ham and herbs. Or you can replace the ham with any red fish, and grease the surface of the pancake with liquid curd or cream cheese.

Also an excellent option is the type with bacon or some other meat, such as boiled chicken or beef. In addition to the meat, you can add grated cheese and sour cream.

Pancake recipes for Maslenitsa - the most delicious recipes

Everyone loves Maslenitsa, from young to old.

This is not surprising, because Maslenitsa is a very cheerful folk holiday with noisy, mass celebrations, games and fun.

These are fun tea parties with eating delicious pancakes, visiting, lavish feasts and delicious wine.

Of course, every family celebrates this holiday in its own way, but everyone has one thing in common: everyone bakes pancakes throughout the entire Maslenitsa week.

How the Maslenitsa holiday appeared, its traditions, customs and rituals

Maslenitsa is a fairly ancient Slavic holiday; it symbolizes farewell to Winter and the joyful anticipation of Spring.

The celebration of Maslenitsa always begins a week before Lent (the start date of the holiday is tied to Orthodox Easter and changes every year), the cheerful folk festival lasts the entire Maslenitsa week and ends with Forgiveness Sunday - the day that precedes the beginning of Easter.

The tradition of baking pancakes on Maslenitsa appeared a long time ago and was associated with people’s desire to win over the sun, to “persuad” it in this way to warm the ground frozen during the winter.

Since ancient times, Maslenitsa week has been famous for its hearty, plentiful food, long feasts and delicious dishes.

On the eve of the long Lent, people tried to enjoy hearty, tasty dishes to their heart's content and not deny themselves anything.

But the most important treat of this holiday remained, and remains to this day, of course, pancakes - as a symbol of the sun!!!

According to ancient folk belief, those pancakes that were baked on Maslenitsa turn out to be especially tasty.

Maslenitsa has always been famous not only for its rich treats and lush, hearty feasts: throughout the entire Maslenitsa week, people have fun, ride down the slides, organize dances, folk singing and make bonfires.

The most basic tradition of Maslenitsa is the burning of a Maslenitsa effigy on a fire.

This action symbolizes the departure of the winter that is boring to everyone. People rejoice and welcome the long-awaited spring.

Maslenitsa week

Before the adoption of Christianity, Maslenitsa was celebrated for 14 days; today it lasts 7 days.

They prepared for the celebration of Maslenitsa in advance and very carefully.

According to tradition, before the start of Maslenitsa, it was mandatory to visit all your relatives, neighbors and friends, and invite them to visit you.

Throughout the week of celebration, in addition to other festive foods, delicious and satisfying pancakes were baked. They were eaten at home, if visiting, or at street celebrations.

This delicious tradition has been preserved to this day.

Each day of Maslenitsa week has its own name and its own celebration traditions.

  • Monday - the first day of Maslenitsa is called “Meeting”.

On this day, they set up and rolled out ice slides, made a stuffed animal out of straw and installed it on the mountain, started baking pancakes, went to relatives and discussed with them how to spend the holiday week.

  • Tuesday – “Flirting”.

On this day, it was customary to have fun games, slide down slides, eat and treat people to pancakes. On this day, according to tradition, bride viewings were held. In fact, all Maslenitsa rituals boiled down to matchmaking in order to get married after Lent.

  • Wednesday is "Gourmand".

On this day, all housewives prepare various goodies in large quantities and decorate a rich table with them, but pancakes, of course, come first. Sons-in-law visit their mothers-in-law, and on Friday they invite them to their place.

  • Thursday – “Run out.”

From this day on, Maslenitsa unfolds in all its breadth: festivities last from morning to evening, people danced, danced in circles, sang songs and ditties. The people indulged in all kinds of fun, rode on slides, swings, held fist fights, horse riding and noisy feasts.

  • Friday – “Mother-in-Law’s Evenings.”

On this day, sons-in-law invite their mothers-in-law to visit and treat them to pancakes, and the son-in-law was obliged to personally invite his mother-in-law in the evening.

  • Saturday – “Sister-in-Law’s Gatherings.”

On this day, the young daughter-in-law invited her relatives to her place, treated them to pancakes and gave them gifts.

  • Resurrection – “Forgiveness Sunday.”

On this day, it is customary to ask forgiveness from all loved ones, relatives and friends for intentionally or accidentally inflicted insults. After this, you can start singing, dancing and feasting.

At the end of the holiday, a straw effigy, the main “heroine” of the Maslenitsa holiday, is burned on a huge bonfire and they say goodbye to winter.

“Pancake traditions” - recipes and ideas for pancake treats

The main delicacy of the entire Maslenitsa week is, of course, pancakes.

Since ancient times, the tradition has been preserved of preparing pancakes in a wide variety of ways, and eating them with butter, sour cream, honey, caviar, fish and vegetable fillings.

Which pancakes are the most delicious and what makes them tastier – it’s hard to say, because everyone has their own opinion on this matter, their own tastes.

Some believe that pancakes without sour cream are not pancakes, others recognize only sweet pancakes with sweet fruit fillings, and still others adore pancakes with caviar or red fish.

There are no pancakes that are “mandatory” on this holiday: everyone chooses their own.

In Rus' there was a custom: the first cooked pancake was never eaten; as a rule, it was given to a beggar to remember all the deceased, or it was simply placed on the window.

Pancakes are baked throughout the entire Maslenitsa week.

To ensure that you don’t get tired of this dish over the course of seven days, of course, you can master several recipes for this delicacy and prepare a variety of pancakes, surprising your family and friends every day with delicious and original recipes.

The main thing in pancakes is, of course, the dough, and baking them is a real art.

In order for the pancakes to turn out thin and tender, it is very important to correctly guess the consistency of the dough.

The dough for pancakes with milk is kneaded to the consistency of liquid sour cream - it should flow easily from a spoon, but it should not be too liquid, i.e. it should just “drain” and not “flow”.

The dough of this consistency quickly covers the bottom of the pan, and thanks to this the pancakes turn out thin.

Traditionally, vegetable oil or melted butter is added to milk pancake dough: it is necessary to avoid burning.

In addition, then the pancakes get a beautiful “porous” texture.

Thin pancakes with milk are an English version of traditional fluffy Russian pancakes baked with yeast.

In ancient times, in Rus', only such pancakes were prepared: thick, fluffy and satisfying. In Europe, pancakes look like thin, almost transparent “napkins”.

In France they are called “crepes” and are served with hundreds of different fillings.

The main secret of thin pancakes is the batter: the thinner the batter, the thinner the pancake.

Before pouring the first pancake into the frying pan, you need to warm it up well.

The readiness of the pancake is determined by when it begins to brown around the edges.

You can get a real “openwork version” of pancakes, so that they really “fit into the hole”, if you add some of the milk from the recipe to the dough a little hot.

Fortune telling on pancakes for Maslenitsa

Probably not a single Russian holiday is complete without fortune telling. They tell fortunes using boots, mirrors, flowers, candles, coffee. On Maslenitsa, fortune telling using pancakes is very common.

There are several ways to assign pancakes for Maslenitsa week.

Method number 1. Suitable for married girls. Even at the stage of creating the dough, they look at its quality. If the dough fits well, then the girl will have a good year and her family will not get sick. And if the dough does not fit well, then the year will not be the most successful for the girl and her family.

Method No. 2. Fortune telling by the first pancake. Fortune tellers try to bake the first pancake as best as possible, because it can be used to judge the girl’s future. If the pancake turns out beautiful, with smooth edges, rosy and well baked, the girl will get married, if she hasn’t already. For a married girl, a good first pancake means well-being and prosperity in the family throughout the year.

Method No. 3. This fortune telling was again popular among unmarried girls. If the first pancake turned out good, they took it out onto the street and gave it to a random male passerby, asking his name. The girls believed that their future husband would have the same name as this man.

Method number 4. This fortune telling is suitable for everyone, but it can hardly be called serious. The idea is that girls made a question or a wish, took a pancake from a stack and looked at its pattern, trying to find an answer or some secret sign for themselves. Of course, they tried to see only the good.

Method No. 5. The most delicious way is to tell fortunes using the fillings in pancakes. Only unmarried girls did fortune telling. The point is that the filling could be used to judge the character of the future husband. First, all the girls baked pancakes together and prepared various fillings, and then wrapped the fillings in the pancakes so that it was impossible to guess what was inside.

After that, they took turns taking any pancake they liked. So, a girl who got a pancake with cottage cheese was promised a caring husband. The one who ate the pancake with meat - a smart, wealthy and gentle groom. With sour cream - insecure and timid, with honey - romantic and beautiful, with jam - cunning and cheerful.
