Recipe for Armenian salad with fresh red beans Lobuts

  1. Main ingredient Armenian bean salad Lobuts is red bean. If you do not grow beans yourself, then buy them at the market, since red beans in cans (canned) completely lose their beneficial substances and minerals during canning, the taste and aroma become unnatural, which will affect the dish as a whole.
  2. Before preparing the salad, red beans must be washed and soaked in water for at least 5 to 6 hours. This preparation saves on cooking time for the beans and makes them fluffy and tender. After the beans have swollen, boil them in salted water until tender.
  3. 15 minutes before the end of cooking the beans, begin preparing the other components of the dish. Rinse the parsley and place in a colander - let the excess moisture drain, then finely chop. Peel the onions, rinse and cut into thin slices.
  4. The beans are ready. Drain the broth and transfer the beans to your favorite salad bowl. Add onion. Season with salt and pepper. Season with vinegar and vegetable oil. Mix all the products carefully, trying not to turn your culinary masterpiece into an outright bean porridge.
  5. It is not recommended to serve immediately. The salad should be lightly marinated. All components must share taste and aroma with each other. That's why we put the salad in the refrigerator for at least two hours. Now Armenian red bean salad Lobuts ready, and when serving, be sure to sprinkle chopped parsley on top, this will not only give the salad a bright and appetizing look, but will also add additional aromatic notes. Prepare a lot of it at once, because the salad bowl becomes empty in a very short period of time.

Every housewife has “secret” recipes. It is not only complex with a large number of ingredients that plunge guests into culture shock. These are the most common, time-tested, budget-friendly and labor-free. Among bean dishes, I consider this salad one of the simplest, but at the same time very tasty and healthy.

“Lobuts” is a salad of Armenian cuisine, but other peoples of the Caucasus also have similar recipes.

The most important ingredient is red beans. I still recommend taking the red one. It not only looks beautiful, but also tastes (and in composition) different from white.

Soak the beans in water for 4-6 hours. But in general, you don’t have to do this if you have a multicooker-pressure cooker. Then the washed beans can be placed in a bowl, filled with cold water and set to the pressure mode “Beans” for 45 minutes or “Baking” for 60 minutes.

If cooking takes place in a saucepan, then cook the beans until tender (without overcooking). We do not add salt during the process.

For lobutz it is also better to take red onions. It's just right for salads, not as harsh as white. It is more beautiful to cut the onion into rings, but you can chop it if desired or make it into half rings.

There are not many remaining ingredients - ground black pepper (you can use white), salt, vinegar and vegetable oil.

Throw the cooked beans into a colander, then pour them into a salad bowl, add onion rings, salt and black pepper.
I pour in 1 tbsp. a spoonful of vinegar. I prefer natural apple. I don't really like the wine in this salad.

After that I add 2 tbsp. spoons of vegetable oil. This time I used walnut oil (very tasty). You can take olive, sunflower (better fragrant).

The result is a delicious, aromatic dish. I won’t say that the salad is dietary, it is quite high in calories, which means it’s filling:
- calorie content = 176 kcal
- proteins = 4.8 g
- fat = 11.3 g
- carbohydrates = 13.7 g.

It would be nice to decorate the beans with herbs, but I didn’t have any on hand. And this is a winter salad, so we can do without green decorations. You can also sprinkle with chopped walnuts.

I advise you to take a closer look at this simple dish, and also try Georgian Lobio.
Don't look at the fact that there are few ingredients and it's very simple. It turns out delicious, so the salad bowl will be empty :)
