Meatballs in the oven - general cooking principles

Surely, most of us, when we hear the word “meatballs,” immediately remember Carlson, who was stealing meatballs from the oven of Baby’s mother. Also, meatballs are often mentioned in other works of Astrid Lingred, and it is no coincidence, because meatballs come from Austria.

Meatballs in the oven are very easy to prepare. You will spend only 30-40 minutes and get a hearty dish that is healthy for both adults and children. You can eat them in their pure form (since in most recipes meatballs are made together with cereal), serve with a side dish. Don't forget about the sauce, use it with meatballs or pour it over a side dish.

  • Meatballs in the oven - secrets and useful tips from the best chefs

  • What is the difference between meatballs and meatballs and cutlets? The cutlets are prepared exclusively from minced meat with the addition of onions and eggs; spices and seasonings are added to the meatballs, and cereals and vegetables are added to the meatballs. In addition, an integral part of such a dish as meatballs in the oven is the sauce.
  • Do not use olive oil for frying vegetables and meatballs; when heated, it loses all its value. Give preference to vegetable oil.
  • To make meatballs easier to sculpt, add an egg or cereal to the minced meat. Another secret - beat the minced meat.
  • Meatballs can be made from one type of minced meat, but it will be tastier if you mix minced beef with pork or chicken.
  • If you cook meatballs in the oven, don't limit your imagination when preparing the sauce. Mix vegetables, cream, tomato paste, flour. The taste of the finished meatballs will depend on the gravy, and not on the minced meat from which you make them.
  • You can pour the sauce over the meatballs right away when you put them in the oven, but it’s better to first let them simmer for five minutes in the pan as is, and then pour in the gravy.
  • The sauce should completely cover the meatballs during cooking, then they will turn out more juicy and flavorful.
  • Meatballs are a dish that, without a doubt, deserves to be on your table at least once a month. Like, it consists of simple and understandable products, and preparing it is not difficult. Some call them meat balls, others hedgehogs, but the essence remains the same - this is a tasty, satisfying second dish that children really like, but adults don’t mind having lunch with this dish either.

    Today I want to dedicate this article to oven-cooked meatballs and gravy. I like this method because it is faster and easier. You can use absolutely any minced meat, even fish.

    The gravy plays a very important role here. It makes our balls juicy, tender and flavorful. Each of the sauces, be it based on tomatoes or sour cream, or any other product, imbues the dish with its taste, revealing it even more, combining with other ingredients.

    Delicious meatballs in the oven with gravy

    Milk-based gravy is a great solution when you don't have cream at home. It will replace them, no one will even suspect a substitution. The sauce is very aromatic and rich. It goes perfectly with minced chicken meatballs.

    Semolina in the meat balls will make them even more tender and soft. But if for some reason you don’t want to add this grain, then don’t worry, the meatballs won’t fall apart without it, but will be just as round and neat.

    We will need:

    • minced meat – 500 g (I used chicken);
    • onions – 1 pc.;
    • egg – 1 pc.;
    • greenery;
    • semolina – 2 tablespoons;
    • garlic – 3 cloves;
    • milk – 250 ml;
    • any frozen or fresh vegetables;
    • salt, pepper to taste;
    • Bay leaf.

    Preparation:

    1. Peel and chop the onions.

    I grate it so that the dish becomes juicier, but at the same time the onion itself is not noticeable in it.

    How to cook meatballs without rice in creamy sauce?

    You get incredible deliciousness if you bake meatballs in cream. And if you also sprinkle them with grated cheese, then it’s pure bliss. The rich milk-cheese aroma will fill your home, and no one will simply be able to resist it.

    By the way, in this recipe I did not grind the meat, but decided to finely chop it with a knife. Due to this, the consistency of my meat balls turned out to be denser, the meat in them can be felt well. When you don’t have a meat grinder at hand or are simply too lazy to use it for just one small piece of meat, then do as I do :)

    We will need:

    • chicken breast – 1 pc.;
    • onions – 1 pc.;

    Meatballs with potatoes in cream

    Very often, various fillers are added to meatballs, for example, potatoes. And this is very logical. Firstly, the quantity doubles, secondly, it gives a special tenderness to the dish, and, thirdly, no one will guess that there are potatoes in the composition at all, since they are not felt there at all.

    In the same way, you can “hide” onions for those who don’t like them. Just grate it, the juiciness will remain, but the pieces themselves will not appear in the meatballs. These are such simple life hacks for parents of picky eating children.

    We will need:

    • minced meat – 0.5 kg;
    • potatoes – 0.5 kg;
    • onions – 1 pc.;
    • egg - 1 pc.;
    • cream – 250 ml;
    • mayonnaise – 1 tbsp;
    • salt, pepper, spices.

    Preparation:

    Chicken balls in sour cream sauce

    Sour cream sauce is as common as cream sauce. The meat turns out tender, soaked and juicy. And the dish itself is very appetizing. Therefore, if you have sour cream at home, it is ideal not only for meatballs, but also for stewing various types of meat.

    The recipe is very simple, there is no fuss with it. An easy, quick dish for lunch. You'll see that children will like meatballs with sour cream sauce the most; they will ask for more!

    We will need:

    • minced meat – 600 g;
    • sour cream – 1 glass;
    • egg - 1 pc.;
    • rice – 2-3 tablespoons;
    • onions – 1 pc.;
    • carrots – 1 pc.;
    • garlic – 1-2 cloves;

    • vegetable oil – 2-3 tablespoons.

    I always add whatever I have at home to this simple dish. I have zucchini, great, I’ll grate it into minced meat. Eating pumpkin is even better! I'll add that too. And every time it turns out very tasty. And no one, by the way, has any idea about any useful additions to meat. This, one might say, is my little secret, which now you know too!

    Bon appetit!

    Meatballs in the oven

    Published on June 29, 2017

    Good afternoon, dear readers, today we will cook meatballs with gravy in the oven. I don’t know about you, but my acquaintance with meatballs happened in kindergarten, it was from there that I remember this delicate taste and aroma of this dish.

    Unfortunately, many of us cook meatballs very rarely. Although, if possible, they eat them completely. Although you don’t need a lot of culinary experience to prepare them, since everything delicious is simple. Well, judge for yourself: minced meat, rice and a little bread crumb, that’s practically the entire composition of the meatball. And if you cook meatballs in the oven, it’s very simple.

    Of course, these are not all the ingredients used in the preparation of this dish; meatballs are often served with gravy, which also does not require a huge amount of time to prepare. Like cooking other dishes, cooking meatballs has its own little secrets, which you can read about below.

    And as always, I will not limit myself to one recipe since there are a huge number of them. So to speak, for any gourmet. Therefore, I will describe several recipes for preparing meatballs with gravy in the oven. To make it easier for you to choose for yourself the recipe that you like in all respects.

    Meatballs with rice as is a classic. The dish turns out tender and quite inexpensive due to the addition of rice to the minced meat.

    INGREDIENTS for meatballs:

    • 500 grams minced meat (any)
    • 1.5 cups boiled rice.
    • 1 onion.
    • 1 chicken egg.
    • 2-3 tablespoons of wheat flour.
    • Salt and pepper to taste.

    INGREDIENTS for tomato sauce:

    • 1 tablespoon tomato paste:
    • 2-3 cloves of garlic.
    • 2 bay leaves.
    • 1 carrot.
    • 1 onion.
    • 1 tablespoon granulated sugar.
    • 1 tablespoon sweet red pepper (paprika).
    • Vegetable oil.
    • Salt and pepper to taste.

    PROCESS OF PREPARING MEATBALLS:

    ☑ Cut the onion into small cubes. So that he can get ready. It is very important to finely chop the onion. The cooking time for meatballs in the oven is not long and in this short period of time the onions should have time to reach the desired condition.

    ☑ You can do different things with garlic: you can cut it, or you can just put it through a press. As you please. But I will say one thing: if you cut it, all the taste remains in pieces, and the press takes away part of the taste. Adjust the amount of garlic in this dish according to your preferences. In principle, you can do without garlic, but it’s better to add at least one clove. To give the dish full taste and aroma.

    ☑ As for minced meat, as already mentioned, you can use any minced meat from pork to chicken. But of course it’s better to use a mixed version - take half pork and the other half beef.

    ☑ Fig. Pre-cook the rice and add the already boiled ready-made rice to the minced meat. In order to properly cook rice, you need to pre-rinse it 4-5 times to remove the glutinous rice flour. Then put it in a saucepan, pour water 2-3 cm above the rice and cook it for 12-15 minutes. During this time, the water will boil away and the rice will be completely cooked. After draining the remaining water (if you poured more), rinse the rice under running water and transfer it to a bowl to cool. Short grain rice is best suited for making meatballs.

    And now almost all the ingredients are ready, you can start mixing them.

    ☑ Mix all ingredients in one bowl. Minced meat, rice, onion, garlic, egg, salt, pepper, meat seasonings. And mix all the ingredients well with your hands until smooth.

    ☑ Afterwards, leave the minced meat to soak for literally 2-3 minutes. Then mix everything well again and you can begin to form meatballs from the resulting raw materials.

    When shaping the meatballs, it is important to make them the same size. In order for everything to cook evenly and from an aesthetic point of view, it is also nice when all the balls are the same size.

    ☑ And so we make a ball of minced meat, dip it in flour and put it on the board. And so on until the minced meat runs out.

    ☑ The finished balls need to be fried in vegetable oil until they have a characteristic blush.

    ☑ Pour oil into a frying pan, heat it and fry the meatballs. Carefully transfer the fried meatballs to a plate.

    In the meantime, you can prepare the tomato sauce.

    ☑ We clean the second onion with a cube and send it to the frying pan for frying. As soon as the onion has become a little transparent, add the grated carrots and fry everything together until it turns a characteristic blush.

    ☑ Add prepared tomato paste to fry, stir and simmer for 2-3 minutes.

    ☑ Place the meatballs in a small saucepan, pour the prepared sauce and put on fire. If there is not enough sauce, add a little water.

    ☑ Bring the sauce to a steady boil, then reduce the heat and simmer with the lid closed for at least 30 minutes.

    ☑ After the time has passed, try the top meatball to see if it’s done. If the top one is ready, then the bottom ones are definitely ready.

    ☑ Transfer the balls from the pan to a dish, pour the sauce over them and sprinkle with finely chopped herbs. Serve the finished meatballs in tomato sauce to the table. You can use mashed potatoes as a side dish. Bon appetit.

    ☑ I add sour cream and milk to the flour and butter. I mix everything well with a whisk.

    ☑ I bring the mass to a thickness and simmer with the lid closed for 3-4 minutes over low heat. Stir the sauce from time to time to prevent burning.

    ☑ Place prepared meatballs on top of the cabbage.

    ☑ Pour sour cream sauce over the meatballs and place the pan in a hot oven.

    ☑ The sauce should cover the meatballs almost to the very top. Leave the tops uncovered and we will use them to determine the readiness of the dish.

    ☑ And so we put the mold in an oven preheated to 180-190 degrees and bake the meatballs in the oven until the meatballs acquire a characteristic blush.

    ☑ As soon as the tops turn golden, cut off another 5 minutes and turn off the oven heating.

    ☑ Let the dish simmer for 3-4 minutes and you can remove the dish from the oven.

    ☑ Meatballs in the oven with sour cream sauce are ready, enjoy your meal.

    Meatballs in the oven with gravy recipe like in kindergarten

    Oh yes, the meatballs in the kindergarten were just right. I still remember 2 meatballs and mashed potatoes with gravy. Those times were simply delicious.

    INGREDIENTS:

    • 500 grams of minced pork.
    • A glass of rice.
    • 3 tablespoons of tomato paste.
    • 2 bay leaves.
    • 2 onions.
    • 2 tablespoons of sour cream.
    • 1.5 glasses of water
    • 1 tablespoon flour.
    • 1 egg.
    • Salt and pepper to taste.
    • Greens for decoration.

    COOKING PROCESS:

    ☑Rinse the rice well, pour water into the pan just 2-3 cm above the rice. Place the pan on the fire and after boiling, cook for exactly 8 minutes. Then drain the water and rinse the rice in running water 2-3 times. Set aside.

    ☑ You need to rinse the rice in order to stop the cooking process, since the rice is still hot, it will continue to cook despite the fact that the pan is not on the stove. And with cold water we will completely stop the process of cooking rice and it will not boil in the meatballs, but will just reach the desired consistency. We've sorted out the rice, let's move on.

    ☑ Peel the onion and cut it as small as possible and preferably into cubes, or even better, pass it through a meat grinder.

    ☑ And so now we have meat, that is, minced meat, onions and eggs. All this needs to be mixed and brought to homogeneity.

    ☑ Make meatballs from the minced meat, dip them in flour and fry each one until golden brown in a frying pan.

    ☑ Tomato paste is diluted with 1.5 glasses of water and the resulting slurry is poured over the previously folded meatballs in the frying pan.

    ☑ Wait for the gravy to boil, reduce the heat to half and simmer the meatballs for 10 minutes.

    ☑ Next, dilute the prepared flour in a glass of water and pour over the meatballs. Salt and pepper to taste and add seasonings. Place the pan in the oven. Cook the meatballs in the oven at 190 degrees until done, which is approximately 30 minutes. It all depends on the features of your oven.

    ☑ While the meatballs are being prepared, you can have time to cook pasta or mashed potatoes in order to serve the meatballs with them.

    Bon appetit.

    Fish meatballs in the oven

    In fact, for meatballs you can use any fish, or rather minced fish. But it is better and easier to take sea fish in which the number of small bones is very small. Today you can easily purchase fillets of any fish.

    INGREDIENTS:

    • 500 grams of fish fillet (pollock)
    • 70 grams of rice.
    • 2 onions.
    • 2 fresh eggs.
    • 2-3 cloves of garlic.
    • 1 large carrot.
    • 100-130 grams of tomato paste.
    • 1.5 glasses of water.
    • Salt and pepper to taste.
    • Vegetable oil.
    • Greens for decoration.

    COOKING PROCESS:

    ☑ We twist the fish into minced meat.

    ☑ Peel the vegetables. Finely chop the onion. Pass the carrots through a grater.

    ☑ Rinse the rice well and boil until half cooked.

    ☑ Fry half the onions and carrots with tomato paste diluted in water.

    ☑ Mix the remaining vegetables with minced fish, eggs and rice. Mix everything well. Sometimes when using fish, the minced meat may turn out watery; this can be corrected by adding a couple of spoons of breadcrumbs to the minced fish.

    ☑ We form meatballs from the minced meat received. Place them in a baking dish.

    ☑ When all the meatballs are in place, fill them with fried tomato paste and put them in the oven. Cook the meatballs in the oven at 180 degrees for 15-20 minutes.

    ☑ Then decorate with finely chopped herbs and serve.

    ☑ If you cook everything correctly, it will be very difficult to distinguish fish meatballs from meat ones. Peace and goodness to everyone until we meet again!

    One of the most homemade dishes is meatballs, which we were treated to in kindergartens and at home as children. Everyone remembers how our grandmother cooked delicious meatballs. Why don’t you make these flavorful meat balls for your children? After all, to cook meatballs you don’t need special skills and abilities, everything is quite simple!

    Meatballs are koloboks made from meat, fish or some other minced meat. In the cuisines of many nations there are dishes reminiscent of meatballs, but the roots of this dish go back to Sweden. Most often, boiled rice, cabbage, and less often pearl barley or beans are added to meatballs. Depending on the national cuisine, the additives in minced meatballs may vary. Meatballs can be steamed and this is the healthiest option for preparing them; they can also be stewed in sauce, fried in oil, or baked in the oven.

    Meatballs in the oven

    The simplest recipe for making baked meatballs in tomato sauce is presented in our step-by-step tutorial; in other recipes the principle is the same, only the additives in the minced meat are slightly different. Cook with us and experiment with flavors.

    Meatballs with rice in tomato sauce in the oven

    To prepare you will need the following ingredients:

    Ingredients:

    • Minced meat (preferably from two types of meat) – 0.8 kg,
    • Onion – 1 piece,
    • Egg – 1 piece,
    • Rice – 4 tbsp. spoons,
    • Tomatoes (large) – 3 pieces or homemade tomato juice,
    • Sour cream – 100 g,
    • Wheat flour – 1 tbsp. spoon,
    • Salt and spices to taste,
    • Vegetable oil.

    Cooking process:

    To prepare meatballs in tomato sauce in the oven, you need to boil the rice until half cooked. To do this, rinse it and fill it with water, add salt and put it on medium heat. Boil the rice until half cooked and drain the water. It is preferable to choose round varieties of rice.

    Add pre-peeled and chopped onions, salt and ground black pepper to taste, boiled rice to the prepared minced meat, mix everything.

    When I have thick homemade tomato juice (which is made from pureed tomatoes) from homemade preparations, I do not cook the sauce for the meatballs. I just mix it with sour cream and add spices to taste. In the summer I use fresh ripe tomatoes, grated directly with the skin on. With the same success (but not with taste!) You can use ketchup diluted with boiled water or tomato paste.

    You can also make tomato sauce for meatballs with vegetables. To do this, you need to peel the carrots and onions, then grate the carrots on a fine grater, and finely chop the onions. Then fry the onions and carrots in a frying pan with the addition of vegetable oil until the onions are transparent. Tomatoes should be finely chopped, but it is best to grind them in a blender or grate them on a fine grater. Next, mix the fried vegetables with chopped tomatoes, add salt and spices to taste. Mix everything and simmer in a frying pan for no more than 10 minutes. At the end, add flour and mix thoroughly.

    Roll the rested minced meat into meatballs and place them in a deep baking dish greased with vegetable oil.

    Then pour the prepared meatballs with tomato sauce. In the photo recipe for the gravy, grated tomatoes are used, mixed with sour cream and a spoonful of flour, so no other vegetables are listed in the ingredients.

    The form with meatballs is covered (sealed) with foil. Place the pan in an oven preheated to 200 degrees Celsius and cook the baked meatballs for 25 - 30 minutes. If you cook meatballs without foil, you need to baste the balls with sauce several times during cooking to prevent them from drying out.

    Serve the finished dish with vegetables or a side dish. Most often, meatballs are associated with boiled pasta or mashed potatoes.

    Meatballs in the oven with cheese

    Meatballs with the addition of cheese turn out to be very aromatic and tasty, and the tomato sauce in which they will be cooked will add additional juiciness to the meat balls. The cheese goes into minced meat (to which we do not add rice!), and not for a beautiful golden brown crust.

    To prepare meatballs with cheese in the oven you will need the following ingredients:

    • Minced meat – 500 grams,
    • Cheese (any) – 150 – 200 grams,
    • Egg – 1 piece,
    • Onion – 1 piece,
    • To prepare the sauce:
    • Fresh tomatoes (large) – 5 pieces,
    • Granulated sugar – 1 teaspoon,
    • Salt and ground black pepper to taste.

    Cooking meatballs with cheese in the oven

    First, let's prepare the minced meatballs. To do this, add onions, which have previously been finely chopped, to the prepared minced meat. The cheese should be grated on a medium grater, then added to the minced meat, where the onions were previously sent. Beat in a raw egg. Also add salt and ground pepper. Mix everything, beat lightly, cover with a napkin and leave to rest.

    Now let's start preparing the sauce. To do this, cut the washed tomatoes into two parts and grate them on the finest grater, in the process the pulp will be ground, and the skin will remain in your hands, very convenient. Next, add granulated sugar, salt and ground black pepper to the tomato mass. You can add various dried herbs and spices to taste. Then pour the tomato mass into a frying pan and simmer for 10 minutes so that the excess liquid evaporates.

    Then you need to roll the minced meat into meatballs and, transferring them to a baking dish, fill them with tomato sauce. Place in the oven for 30 minutes, cook at 200 degrees.
