When casting recipes for the New Year's menu 2017, I checked whether the dish met these simple requirements:

  • The dish should be bright and elegant, like the rainbow plumage of a bird

A logical continuation - what to do with a fur coat? I think this year there will be a fur coat! Inexpensive, bright, loved by everyone and not subject to the sanctions of the Rooster, since there is no chicken meat. By the way, there is no ban on chicken eggs, right?

I have one interesting recipe fur coats. Friends recently gave me a very clever variation of the salad. It differs in that it contains a minimum of mayonnaise and contains an apple. Now I will briefly describe the layers. All ingredients, except herring and onions, are grated and laid in layers in the following sequence:

  1. Boiled potatoes
  2. Herring or salmon cubes
  3. Finely chop the onion (pre-scald with boiling water)
  4. Drizzle with a little refined vegetable oil
  5. Boiled potatoes
  6. Mayonnaise light mesh
  7. Apple
  8. Mayonnaise light mesh
  9. Boiled carrots
  10. Mayonnaise light mesh
  11. Beet.

Please note that mayonnaise only comes in step 7. I recently tested this fur coat recipe and everyone loved it. The apple fits perfectly and makes the salad piquant and juicier. This is probably now my favorite version of the main winter salad.

    • boil the carrots and divide them in half (chop one part, leave the other for decoration);
    • mix chicken, mushrooms, cucumber, carrots, sour cream in a separate bowl and salt to taste;
    • put it in a plate in a heap as in the photo, create the head of a cockerel and small chickens;
    • from the second half of the carrot we cut the beak, comb and beard (according to your imagination);
    • Sprinkle grated yolk on top and decorate with herbs (you can make your own eyes from olives or, if you have them, from black caviar).
  2. Second recipe for New Year's rooster


    (this time the New Year's salad will be layered):

    • boil a whole chicken in water with onions and peppers (you can also add spices for a wonderful aroma of the meat);
    • need to cut 1 fresh tomato And canned pineapple(5 rings is enough) into small pieces;
    • take a large shallow plate and place the chicken meat in the first layer, and generously grease with mayonnaise (do not forget that the shape of the salad resembles the shape of our New Year's bird– Rooster);
    • salt the second layer of chopped tomatoes and pineapples and also a thin layer of mayonnaise;
    • the next third layer and the final one will be canned corn(half a jar is enough) and again mayonnaise;
    • All that’s left to do is to decorate our prepared salad with herbs; you can cut wings and a tail for a cockerel from bell peppers and cucumbers.
  3. New Year's salad in the shape of a rooster with fried chicken and mushrooms

    • take chicken and fry it until golden brown;
    • then wash the champignons and fry them with onions just like the chicken;
    • prepare shelled walnuts, canned peas;
    • add salt, grease with mayonnaise and mix all ingredients;
    • place on a plate in the shape of a rooster; garnish with herbs and vegetables.
  4. Puff salad “Chicken” with fish


    You will need

    • 4 eggs,
    • 1 can of sardines (you can also use saury)
    • hard cheese (150 grams),
    • carrots – 1 piece
    • and onion - 1 medium head.

    And now the cooking process:

    • in the first layer (the shape is arbitrary, although now in the coming year of the rooster - chicken will be better) lay out the boiled chicken egg white, separated from the yolk and grated on a medium grater (you can grease it with mayonnaise or sour cream), add salt;

    • beets (3 medium tubers),
    • potatoes (5 small),
    • carrots (2 pieces),
    • eggs (2 pieces),
    • onion, lightly salted mackerel(1 medium fish),
    • mayonnaise, salt and parsley for decoration.

    Prepare the roll “Fur coat with mackerel” (by the way, you can take any other fish instead of mackerel):

    • Boil all vegetables except onions in their skins, cool, peel and put in the refrigerator for 2-3 hours;
    • also boil the eggs and rub them on fine grater;
    • We cut the fish and separate the fillet from the bones;
    • like eggs - grate beets, carrots, potatoes;
    • Finely chop the onion and mackerel fillet and mix;
    • We lay out layers on cling film - the first layer is beets, then carrots (slightly narrower than beets), spread with mayonnaise, potatoes and again mayonnaise, eggs and mayonnaise, put fish and onions in the middle and roll up;

    • put the potatoes on a flat plate and make a mayonnaise mesh - the first layer;
    • second layer – half a chopped cucumber;
    • the third layer is chicken meat and again a mesh of mayonnaise;
    • next layer – fried mushrooms with onions, mayonnaise mesh;
    • lay out the remaining cucumbers and the mayonnaise mesh;
    • before the final layer - eggs and mayonnaise;
    • the last thing - decorate with pineapple slices and pomegranate seeds (you can add greens for variety);

  • Bell pepper – 1 pc.
  • Tomatoes – 2 pcs.
  • Garlic – 1-2 cloves
  • Grated hard cheese – for sprinkling
  • Salt pepper
  • Mayonnaise – for lubrication
  • Vegetable oil - for frying

Cooking process:

Step 1. Eggplants should be thoroughly washed, dried, cut off the stems and cut each eggplant in half lengthwise. From each half you need to remove the pulp with a spoon so that fairly thick walls remain. Then the eggplant “plates” need to be lightly salted.

Eggplant with walnuts and garlic recipe

You will need:

2 eggplants
2 cloves garlic
200 g walnuts
vegetable oil
mayonnaise
salt

How to cook:

Salt the eggplants cut into slices and leave for half an hour. At this time, chop the nuts and stir the resulting mixture with mayonnaise. Add chopped garlic and mix everything.

Rinse the eggplants cold water, dry a little and fry on both sides. Place the fried eggplants on a paper towel to remove excess fat, then transfer to a plate. Place on top of them nut mixture. It is advisable to put the snack in the refrigerator for about 1 hour.

Goose with apples or cranberry sauce

You will need:

goose - 3.5-4 kg (you can use duck or chicken)
onions - 2 pcs.
carrots - 1 pc.
aromatic apples - 2-3 pcs.
cumin - 1 tsp.
salt and ground pepper - to taste
strong aromatic alcohol(brandy, rum, cognac) - 1 glass
flour - 2 tbsp. l.
pepper - to taste

For the cranberry sauce:

cranberries - 200 g
red onion - 2 pcs.
apple - 1 pc.
garlic - 3 cloves
ginger root - 3 cm
vegetable oil - 3 tbsp. l.
sugar and salt - to taste
cold water - 1/2 cup.

How to cook:

It is better to soak the goose in strongly salted water in the evening - this way it will be softer. We cut off excess fat from the carcass (from the neck and tail), cut off the last phalanx of the wings, and gut it. Wash and dry.

For the filling, coarsely chop 1 onion and apples, add cumin, mix.

Rub the carcass on all sides with salt and ground pepper (salt is not needed if you pre-soaked the goose). Using wooden skewers or toothpicks, close the goose's throat with skin. Stuff the goose with apples and onions with cumin and sew up the hole (skewers or toothpicks will do). We tie the legs with non-synthetic thread. Using a skewer or other sharp object, we make punctures in the skin of the carcass so that the fat can be better rendered out of it. Place the goose with apples in an oven preheated to 180 degrees for 50-70 minutes. The goose should lie on its chest, back up.

After the specified time, carefully turn the carcass over and fry the same amount, periodically pouring the rendered fat over the goose. Next, we bring it to readiness (when the meat is pierced, the juice from the carcass should flow clear) depending on the oven and the size of the bird.

While the goose with apples is cooking, you can make the sauce. First the broth. Place the cut wings, giblets, trimmed fat, spices, chopped carrots and a second onion fried in a dry frying pan into the pan. Fill with water, bring to a boil and cook for 10 minutes. Approximately 10 tablespoons of goose fat, rendered during the roasting of the bird, mix with a couple of tablespoons of flour, put on fire, add a glass of alcohol, salt, a couple of ladles of goose broth and cook together, stirring, until the sauce thickens.

Let the finished bird stand for 10-15 minutes, covering it with foil to make it juicier. Serve with sauce, and the filling can be used as a side dish.

You can also make poultry with cranberry sauce. In this case, we prepare the bird according to the recipe; inside we simply put onion cut into rings and lemon slices. And pour cranberry sauce on top.

How to make it: Peel and core the apple. Cut the pulp into small cubes. Cut the onion into feathers, garlic into thin slices. Grind the ginger. Heat vegetable oil in a saucepan. Put onion in it and fry, add garlic, ginger and apple. Cook for another 5 minutes. Add cranberries, pour in water. Bring the sauce to a boil over high heat and cook, stirring, until thickened, about 10 minutes. Season with sugar and salt to taste. Cool before serving.

Recipe for champignons stuffed with cheese

You will need:

large champignons - 10 pcs.
onion - 1 pc.
cheese - 150 g
breadcrumbs - 1 tbsp. l. (without slide)
salt
freshly ground pepper

How to cook:

Wash and dry the champignons. Carefully separate the stems of the mushrooms so that the caps remain intact.

Place the champignon caps on a greased baking sheet (or in a baking dish) and add a little salt.

For the filling, chop the onion (finely or into quarter rings), chop the mushroom stems, and grate the cheese on a medium grater. Fry the onion in a frying pan with vegetable oil (about 2-3 minutes). Add mushroom stems to the pan with the onions, salt and pepper and fry the mushrooms and onions for about 5 minutes (you can add finely chopped garlic). Add to pan with mushrooms and onions breadcrumbs or bread crumbs and stir. Cool the mushrooms with onions and breadcrumbs a little. Then mix with half the grated cheese.

Place the prepared filling into the champignon caps and sprinkle the remaining cheese on top. Stuffed champignons Bake in the oven for about 10-12 minutes at a temperature of 190-200°C.

Recipe for delicious French pork meat

You will need:

hard cheese - 200-300 g
pork - 400-500 g (you can also use chicken)
onions - 3-4 pcs
mayonnaise - 400 g

How to cook:

Wash the meat, dry it and cut it across the grain into layers approximately 1 cm thick. Beat each layer of meat well, add salt and pepper. Peel the onion and cut into rings or half rings. Grate the cheese on a coarse grater.
