The rush demand for this product in the market is huge. Such an impact on the consumer's brainthroughout coffee historypreviously, perhaps, did not have a single product (with the exception of Starbucks in general).

I note that almost all professional coffee pots are very skeptical about Green Coffee for Weight Loss.

So, out of a dozen coffeemakers, professionals of the highest level from Europe and America, from the commercial and scientific environment, no one agreed to comment on this topic.

Almost everyone got off with the words " Compared to regular coffee, research on the physiological effects of green coffee is limited, and therefore no conclusions can be drawn. does not seem possible ».

This is explained by the fact that the majority of coffee specialists (as well as merchants in any other segment) do not study the topic of their business so widely as to be interested in green coffee - the raw material of our business.

But in vain. It's time to be deeper and more understandable, and, most importantly, more reasoned for your clients.

So-called« Green coffee bean extract» - the best-selling weight loss drug in the US in 2012. There are no such achievements from the bay of floundering. Experts may grunt skeptically, but there is definitely some secret in this popularity. In it we will try to figure it out today.

It is unlikely that any of the coffeemakers have been studying this topic for so long (and in vain - this is very instructive). I have devoted the entire last month to a detailed study of green coffee as a weight loss drug. But in my considerations, I do not pretend to anything - I just share my thoughts, knowledge and, most importantly, arguments.

So let's go.

First, about the types of product that use the words "green coffee" in their name. In the markets of almost all countries of the world (Ukrainian is no exception), green coffee is mainly sold in the following forms.

1. Green coffee beans.

2. Green coffee in ground form.

3. Green coffee in ground form with additives(cardamom, ginger, collagen, etc.)

4. EXTRACT from green coffee beans (often with additives).

5. Roasted coffee product (natural or instant) blended with green coffee, etc.

It would probably not be entirely competent to make any judgments simply by re-reading all the literature on the Internet (even if almost all of it). Therefore, I bought almost all types of this coffee in various online stores and tried them on myself.

1. Green coffee beans.

Such a product, with a proud description of "elite coffee from Ecuador" in the amount of 250 gr. (an ordinary pack of roasted coffee weighs the same) and with the wording "For weight loss" (+ corresponding recommendations for use) they sold me for 318 UAH. (293 UAH + 25 UAH delivery).

These are ordinary green coffee beans (or, as many coffee lovers call them, “beans”).

In this case, we are dealing with the most banal exploitation of the boom that unfolded around the mystical properties of ordinary green coffee beans.

And The "pull" is so great, and the madness of buyers who have heard about the fantastic properties of coffee is so blind that, perhaps, even peas or green beans could now be easily sold in these packages - people would still rush at it in their quest quickly and effectively lose weight.

It is this attraction of incompetent buyers that is actually used by the same incompetent, but cunning sellers. Since there is a “ringing” of green coffee, since the client wants it, you will get it: the most green coffee ...

It is interesting that variations of such a "masterpiece" on the Internet are sold at completely different prices. Which is understandable - after all, no one understands the value of this product for weight loss, so the numbers are “sculpted” according to the principle “who is on what much” - from the 300 UAH I paid.up to absolutely ridiculous 25 UAH. for the same amount of green coffee.

I won’t even bother ordinary coffee lovers with the technical details of the story about why this “elite” one does not at all draw on an elite one. The very first couple of criteria - "screening" (grain size) and the number of defects in coffee sent me into a deep psychological knockout...

Below we will talk about other, more perverse marketing approaches to consumer thinking. But still, I consider the sale of COFFEE BEANS to be the biggest profanation of the consumer, which is passed off as a “weight loss product”.

There are two reasons for this. First, atit is not possible for an ordinary coffee lover to consume this coffee at home: it cannot be either A) ground or B) cooked.

A) The fact is that green coffee beans are the original product, the raw material. All useful components are contained in it in solid form (even its most aromatic elements are oils).

Concerning green coffee beans several times harder than fried, the structure of which changes to a softer during roasting. That's why grinding green coffee at home is almost impossible. It will "kill" your coffee grinder the first time!

But people do not know this, and when they receive a package of healing green beans at home (green beans, as professionals call it), they immediately put them in their coffee grinder, which at this very moment is doomed to death.

My condolences to those thousands of sufferers who have already tried it on themselves and were left without a coffee grinder...

But our people are the most purposeful in the world, remember? Therefore, they have adapted and use ... meat grinders to grind green grains!

By God, I'm not lying. What kind of sacrifices will you not make for the sake of losing weight ...

B) But resourceful sellers also began to be smart and understand that they would be torn to pieces for the stupidest advice to grind super-hard grains at home. Therefore, now the recommendations for coffee beans now sound like this: “Grind or pour water over whole coffee beans and let it brew for 10-15 minutes.

Tears burst my suffering soul ... For pouring hot water over grains of such density, naively believing that at least some element can be extracted from them in this way - it's the same asboil the pebbles that you brought from some Crimean beach in a cup of hot water ...

But this is only the first reason why green coffee cannot be prepared at home (neither ground nor brewed).

There is a second, much more important reason. And here the question is not even why it cannot be prepared, but that this coffee cannot be prepared at all!

You need to understand that when coffee is offered as a product for weight loss, sellers legally move into the field of medical drugs. And the hygienic issue there is several times more important than in a conventional product.

It's time to clarify one production nuance. We are talking about coffee beans, produced on coffee plantations. And there the green grain goes through phases such as FERMENTATION, WASHING, DRYING, STORAGE, PACKAGING and SHIPMENT.

Along with roasting fermentation is an extremely important process in coffee beans(I wrote about her in a note "»?»)

You can even say that this is the main process that takes place in green coffee beans.

During it, sugar and starch molecules decompose into carbon dioxide and ethanol without air intake (this process is catalyzed by enzymes (hence the name)). The effect of fermentation (otherwise known as the word "fermentation" familiar to us) is also used in the manufacture of bread dough, in winemaking, in brewing, and also for aging cheese.

Fermentation processes, although they were studied by Louis Pasteur, still carry many secrets. Only one thing is clear - that just as the roasting process transfers all the components of the green bean to a different physical form, the fermentation process also changes the state of the green bean, stopping most of the biological plant processes that occur in the coffee plant.

In this momentgreen grain still has the ability to grow, and a whole series of unfinishedfermentation processes.

It is these processes that are stopped by roasting the grain. Moreover, roasting is not just catalysis - "opening" of all useful elements in coffee, it is also the most important hygienic procedure, kind of grain sterilization(I remind you that coffee is roasted for 15 minutes at the highest temperature - up to 250ºС).

The procedure for packaging coffee after roasting is certified, because getting into the bag under vacuum, the grains will then go directly to the preparation of drinks by coffee lovers.

That is why when crossing the border of any country, a hygienic certificate is sufficient for coffee beans, and an additional phytosanitary certificate issued for products of plant origin is required for green coffee.

It is extremely dangerous to use a green product in food without additional processing. I will not describe all the possible terrible consequences, I will only say that one of the main components that people pay attention to in green coffee is the content ocratoxins and mycotoxins- mold fungi, which, in the absence of heat treatment of the product, can lead to complex infectious diseases.

Cattle that indiscriminately chew plant foods have a disease called "mycotoxicosis". But we are not cattle, agree, to stuff everything into ourselves indiscriminately? And it’s not without reason that coffee has been roasted for several centuries, right? ..

It was sort of a scientific, internal part of the product. Let's clarify a little more the external - the processes mentioned above: WASHING, DRYING, STORING, PACKAGING and SHIPMENT.

At all these stages, the grains are handled practically without any special hygiene standards (this is simply unnecessary - further coffee will be roasted anyway).

Green coffee is on the shelves...

It is washed with reusable water...

It is turned over (with hands and shovels) ...

They walk in it...

It is dumped into sorting machines...

And, in the end, they are placed in the most ordinary jute bags ...

In which coffee is folded into containers and floats to customers across the seas-oceans.

How many microbes are on the surface of green grains after so many processes (far from sanitary and food standards) - only God knows. And taking risks simply grinding an unhygienic product and eating it or drinking it is at least stupid, and at most unsafe.

I will not write anything about the taste of the drink made from coffee beans, although to my horror, I tried it. But what can you write about the dirty water left after washing not quite clean raw coffee beans? .. Try to cook potatoes for five minutes, and what remains - to drink - and you will understand everything.

2. Green coffee in ground form.

The unsanitary use of this product is not much different from what was described in the previous paragraph. Unless the seller did the most difficult operation at home for the client - GRINDING.

After thousands of coffee grinders broken on green beans across the country, this is a serious step forward.

But since the sellers- people are not stupid, and they didn’t really want to break their coffee grinders either - the product that I received in the pack was not ground, but crushed origin. I think some grandmother was simply involved here for manual grinding (in the best peasant traditions of Ukraine ...)

I wonder if coffee beans were sold to me for 300 UAH , then the same 250 grams already ground (that is, they did a complex operation for me) cost only 95 UAH .

This is another confirmation of the lack of any soundness in pricing - so, what figure shot into the head, they put it ...

By the way, if in the instructions for drinking ground coffee I was recommended to drink it 3-4 times a day, then in the case of grain coffee - no more than two cups - because "it can cause nausea" ...

In general, all descriptions of how to prepare green coffee, in my opinion, were completely (and word for word) written off from ordinary roasted coffee. Moreover, it was so thoughtlessly that phrases like « In order to fully experience the taste of coffee, you need ...»

What could be the taste?? The drink turned out a little better than its dirty relative in grains from the previous paragraph! Which is natural - how could such shmatki be brewed? ..

Those who chewed green coffee beans will understand what the taste was like. I confess that he did not cause such disgust in me. But the fact that after its brewing in my office for half a day it smelled of straw from some rural barn is a fact ...

The remains also did not look very aesthetically pleasing (reminiscent of some kind of compound feed for horses) - there are a lot of leftovers in the cup, well washed, but practically not changed in their condition.

It was especially painful to remember how much roasted coffee changes when it becomes coffee grounds. And the "aroma" of green"straw" compared to roasted coffee - like comparing the nasty smell of raw meat and the aroma of roasted steak tickling the nostrils ...

3. Ground green coffee with additives (cardamom, ginger, collagen, etc.)

I call this category of green coffee "veiled". Not because it is incomprehensible, but because they tried to wrap the “magic” effect of coffee here in a series of the same “magic” effects of other products.

Just "green coffee beans" is, of course, good. But it sounds much better if you add Passiona collagen against cellulite (smoothing wrinkles) or an extract of the Asian mushroom Ganoderma (lengthening your life).

As an option - a "wonderful" coffee drink with lemon - "fitness coffee for weight loss":

Despite the fact that with its “porridge” of coffee components from this category it seriously misleads consumers, I won’t dwell on them now - at least we"clean" understand the variations ... In addition, there are more important “applicants”.

4. Extract from green coffee beans (usually with additives).

Unlike the previous (just ground) coffee, this includes (or rather, should include) extracts individual elements from green coffee beans, most often mixed with some additives.

This indication of "extract" just touches me. I can understand "caffeine extract" or "chlorogenic acid extract" - that is, some a separate and important element extracted from green coffee. But I can't understand green coffee extract extracted from green coffee" - How is that??!!

But what I can't understand even more is why people don't think about it? And they really believe in the "extract of happiness" - buy and drink? ..

There's just nothing to say...

By the way, about the composition of the shell of such capsules, there is a constant debate about their"naturalness"- I recently read how a group of Chinese manufacturers were jailed for adding not ordinary, but some kind of chemically harmful chromium to the capsules they produce (I won’t pump about gelatin, glycerin, etc.) ...

The most advertised "green-coffee" product today (and, in my opinion, the most prepared to attack the market) is " Green coffee 800"(and a number of products based on it) of the company" Leptin ", which is just in this category.

It is the most "capable" of the entire galaxy of "green slimming superfoods" that has torn to pieces the market of unfortunate people who want to lose weight. And it is worthy to talk about it separately, which we will do a little later.

5. Roasted coffee product (natural or instant) mixed with green coffee, etc.

It is impossible not to mention coffee, which literally took off to the skies a couple of years ago, and is just as rapidly disappearing from the field of vision of coffee lovers (I think that a similar fate awaits “green coffee for weight loss”).

The mentioned coffee was given a start in life by transnational coffee companies. First of all, "thank you" to Nescafe and their Green Blend coffee ad - that's where it all started. In order to deliver a direct marketing blow to the heart of the consumer, the giants were the first to launchproduct made from a mixture of roasted and unroasted (green) coffee beans .

I think, for good, today all sellers of green coffee in all its forms have to pay commissions to Nescafe for "promoting" the topic (tens (if not hundreds) of millions of dollars were spent on advertising Green Blend).

True, I'm not sure that Nescafe itself is happy today with the presence of such "followers" - a genie from a bottle called "Let's drink coffee green!" they themselves decently “cut off” sales ...

I've always had little idea of ​​the value of eating green coffee, but mixing roasted and unroasted coffee beans in general baffles me.

Such a mixture from a taste point of view makes no more sense than preparing a dish in which raw meat mixed with fried. What can be the gastronomic effect for a coffee lover here???

"It's unhealthy," say the coffee people. Completely in solidarity.

This group includes not only different types of coffee mixed with each other, but also options coffee with tea- type "Café Mince" - "very effective" slimming coffee, "produced in France and Vietnam" (what do you think, in which of these two countries is it produced? ..)

Pay attention - no one is deceiving anyone: the word "Green" is not written anywhere!

But it doesn't matter anymore. Blinded with happiness, clients who now do not need to do anything, but just drink coffee and lose weight, themselves draw green grains in their imagination. And "Coffee Means" mistakenly appears in the "Green Coffee for Weight Loss" segment on all sites that bring people the happiness of lost kilograms. Although, I repeat, there is not a word about "green" here ...

We are done with the classification. Now let's see what are the main arguments put forward by green coffee sellers and how objective they are?

A) In 99% of cases, the main argument is chlorogenic acid .

Why is chlorogenic acid chosen for the apologists of "green slimming" as a boundary pillar between green and roasted coffee?

The explanation, in my opinion, is quite simple. How can a seller prove that green coffee is seriously different from roasted coffee (especially if he has no knowledge on this topic)?

It's very simple - you need to take the most obvious element and build your entire strategy on it.

If you look at how the main components contained in coffee change during roasting, you will notice that almost all of them remain unchanged(there are only small fluctuations in one direction or another).

And only one element during roasting changes its state radically. This is, as you probably already guessed, chlorogenic acid.

All green coffee sellers are shouting with one voice that "chlorogenic acid disappears in roasted coffee.

In green (unroasted) coffee, it contains from 4 to 8%, and after roasting, its amount really decreases by 40-80%.

But we are smart people, we live in the age of materialism, we know the periodic table - how can you say such nonsense? The element took and just disappeared?..

These 40-80% do not disappear anywhere. Chlorogenic acid is just is being transformed into other elements, decomposing during heat treatment into a number of equally useful organic products (while changing their shape to a fluid one - more convenient for absorption by the body).

But these are general words about chlorogenic acid. And, looking ahead, I will say that it does not matter much. But about this- below.

B) In the meantime, a few words about ANTIOXIDANTS.

Despite the fact that I personally have never met a single coffee lover who drinks our noble drink in order to fill his body with antioxidants, this quality of coffee (thanks to the same chlorogenic acid) is the most valuable.

I wrote about antioxidants in the post "”, but in a nutshell, let me remind you what it is.

In their formula, human cells have free (unpaired) electrons ready to form a chemical bond with anything. And when bad and aggressive molecules (called “free radicals”) appear in the body, they attack the particles of the cells of the human body, as well as DNA and proteins. Connecting with the mentioned unpaired electrons, the radicals cause damage and cause changes in the structure of DNA cells.

For example, interacting with a protein, a free radical not only spoils it, but also leads to the formation of a new radical. That again enters into a chemical reaction and destroys the next cell, and so on. As a result, healthy cells are damaged, the body ages or even dies from a cancerous tumor.

The consequences can be the most serious: stroke, heart attack, cancer. Free radicals also contribute to premature aging of the body.

So, the role of antioxidants is the fight against these radicals. By bonding with them, antioxidants prevent free radicals from oxidizing human cells (hence the name "antioxidants" - "anti-oxidation").

There has been a lot of research on the topic of antioxidants in coffee (and almost all of them are positive). But the "judgment" of green coffee sellers in this case is that they claim that antioxidants are contained in only in green coffee.

At the same time, they themselves refer to almost the only study with such a conclusion, although the bulk of previous experiments claim that Antioxidants are formed in coffee just during heat treatment.(for one example, see the note “»).

The topic is generally poorly understood, but I am much more willing to believe the statement that there are more of them in roasted coffee - for the simple reason that I understand the role of roasting - as I said, it "opens" and catalyzes all the elements that are in green coffee in solid ("sleeping") state.

But do you know what is important from the above?

The fact that all the arguments about antioxidants do not interest any of the sellers. Because they use the category "chlorogenic acid" for the purpose of selling in a way that suits them.

For example, they confidently explain with a beautiful word"antioxidants" next argument.

AT) "Green coffee beans help the body burn fat."

Question: How is this item related to the previous one?

Answer: NOTHING. Antioxidants do not have no relation to the fat burning process.

But since the sellers are hooked on chlorogenic acid, which is found in green beans and which supposedly is not in roasted coffee, do they need to somehow develop this topic? ..

And then "profound" fabrications begin to be composed that "green coffee contains chlorogenic acid and antioxidants, which contribute to the effective burning of fat accumulated in the body."

And the fact that antioxidants have nothing to do with "fat burning" does not bother them at all. Why explain something if people want to buy this product so much that their brains go blind and they stop analyzing simple things?..

And the sellers at this time continue to "squeeze". For example, products appear that allegedly contain chlorogenic acid extract in the amount not of 4-8%, as it is found in coffee, but in a 50% concentration.Like "the more, the better."

At the same time, however, no one explains to unfortunate people who want to quickly lose weight how destructive acids are in concentrated quantities for the human stomach ...

In order to sell me something (especially a coffee product) - you need to try hard. Firstly, I myself am a seller with 20 years of experience. Secondly, I understand coffee. Thirdly, I think about what they tell me. And fourthly, my specialty is English and French.

So when someone sticks some super-serious document in my nose, I just take it and read it.

Here is the main study that all green coffee sellers cover up for:

I think that none of the "green experts" actually read it (perhaps only the one who wrote it - coffee scientists talk about whatthe study was commissioned by the manufacturer).

At one time (6-7 years ago) for several years I was the operator of the London CoSIC (Coffee Science Information Center) in Ukraine. From the head office, they sent me monthly reports on all the research that was carried out in the world on the topic of coffee.

One of the most important research criteria is a factor called "sample" (just like in sociological research).

This factor shows how many and what kind of people were studied, and how they represented the human race (sex, age, country, lifestyle, etc.).

Serious studies are usually carried out on thousands people - for example, one of the antioxidant studies I mentioned was done on over 7,000 women and 7,000 men.

Guess how many patients took part in the experiment on chlorogenic acid, constantly cited by "green coffee pots"?

I will answer: 16 .

SIXTEEN people. "Serious » study, to be sure. This is not quoted even on school polls ...Further without comment. Unless I would congratulate these 16 guys - now an entire industry has been built on experiments on them ...

In general, for each such study, I can put at least five, but with the opposite meaning. Undoubtedly, coffee is a great product for any diet, yes, it speeds up and activates the metabolism, having an excellent diuretic effect. But it cannot burn fat on its own.

As one of the clients joked: “Of course, you can lose weight from green coffee - but only if you pick it yourself on plantations” ...

That's just how to explain this to people who want to lose weight at any cost? .. No wonder, apparently, the working title of this article was the words "" Fool with a thought of riches ..."

D) Among the indicated advantages in the sale of green coffee, I everywhere meet the argument: “Since green coffee bean extract reduces the absorption of sugars, it is also reduces the feeling of hunger ».

E) And the last of the arguments in favor of green coffee: “During heat treatment, the caffeine content rises rapidly. That is why regular black coffee is not good for weight loss. In turn, green coffee does not have an invigorating effect. From him there is no "shaking" and problems with sleep.

Does green coffee contain less caffeine? Complete nonsense.

I don’t know what smart guy came up with this, but almost none of the experts disagrees on this question: green and roasted coffee contains the same the amount of caffeine.

Caffeine is an alkaloid, and unlike oils (which are "opened" by heat treatment), it practically does not change its state when roasted.

Yes, there is a nuance in which you can talk about a certain increase in caffeine in roasted coffee, but only proportional. It is related to the fact that the coffee bean loses weight when roasted, and it turns out that the proportion of the same amount of caffeine in relation to weight becomes higher (by about 10%).

But the amount of caffeine in coffee does not change. And if we compare not the grain indicators “before and after roasting”, but take the same number of grams of green and roasted coffee, the caffeine content in them will be almost the same.
