Fruit soup on jelly with rice. Fruit soup - breakfast, afternoon snack or dessert? The best recipes for wonderful fruit soups: hot and cold. Fruit soup with ice cream

Exquisite dessert, lunch for your baby or a dietary dish? Today we will talk about how to prepare sweet soups.

We most often associate aromatic fish soup, tender and rich borscht with the word “soup”. Replace vegetables with fruits or berries, broth with light yogurt or cream, and meat with chocolate. This dish will certainly delight adults and children!

On hot days

Let's start with the menu for kids. Fruit soup is a great way to introduce your child to new foods. At an earlier age, you should carefully choose the ingredients so that you don’t have to look for a remedy for food allergies in pharmacies.

Many mothers begin to notice a decrease in appetite in their babies with the onset of hot summer days. Pediatricians recommend preparing lighter meals for children and not waiting for empty plates. However, not a single active toddler will refuse such a delicacy as fruit. In the absence of fresh ingredients, dried fruits are also perfect, so we will present two options for the dish.

Rice + fresh fruit

In summer and autumn, feel free to go to the nearest market for fruit or to your own garden.

To prepare jelly rice soup you will need:

  • 2 liters of water;
  • 1 kg of fresh fruit (pears, apples, grapes, cherries, apricots, cherries or peaches);
  • 50 g sugar;
  • 3 tbsp. l. starch;

If you are cooking, pay special attention to the processing of all components. Berries and fruits must be thoroughly washed and all twigs and seeds removed, and then cut into small pieces.

We put the ingredients into a pan of boiling water and cook for 10-15 minutes. This method of preparation will help not to lose all the vitamins. We dilute the starch in a small amount of water and add it to the soup. The liquid must be poured in a thin stream and stirred at the same time to avoid the appearance of lumps. Rice is cooked separately.

When serving, pour some rice into a plate and pour in the soup. You can decorate the dish with a mountain of whipped cream or offer your little gourmet a sponge cake.

From dried fruits

You can easily prepare fruit soup in winter and spring, even before seasonal fruits appear. To do this, you just need to stock up in the summer or buy the necessary dried fruits in the store.

Ingredients:

  • 2.5 liters of water;
  • 500 g of dried fruits (raisins, figs, apples, dried apricots, pear);
  • starch - 3 tbsp. l.;
  • 2 tbsp. l. Sahara.

Dried fruits should be washed thoroughly and chopped if necessary. As in the previous recipe, boil water and only then add dried fruits. Cooking time - 30 minutes. At the last stage, add diluted starch and wait for it to thicken.

This particular recipe is reminiscent of a kindergarten kitchen, where dried fruits are often used.

In addition to rice, sweet soups can be supplemented with semolina dumplings, pasta, rolled oats and croutons. Thus, you get a fairly satisfying dish that is suitable not only as a snack, but also for a full lunch.

For the little ones

As you know, the first complementary foods begin with porridge and one-ingredient puree. During this period, the baby has many new experiences. Fruit puree soup is one of the most common dishes for picky toddlers under the age of one year.

Ingredients:

  • apple;
  • three apricots;
  • egg;
  • 1 tbsp. l. Sahara;
  • 100 ml baby yogurt (liquid, without additives) or fermented milk mixture;
  • 100 ml water;
  • semolina - 1 tbsp. l.

First stage. Wash and peel the sweet fruits thoroughly, then cut into small pieces. Place apricots and apples in a saucepan, fill with cold water and cook for about 15 minutes. Soft apple slices will tell us about readiness.

Second phase. Take only the yolk from a boiled egg and mash it with a fork. We wait until the fruits have cooled a little and grind them using a blender. Add sugar and mix everything again.

Third stage. Place the pan on the stove and add semolina. Without ceasing to stir, cook the fruit soup for five minutes. At the end, add the yolk and yogurt, then mix everything thoroughly again.

“Milkshake” on a plate

When the heat outside is unbearably hot, children's fruit soup is best served cold. Our next recipe belongs to the “quickie” category, because its preparation will take just a few minutes.

Ingredients:

  • low-fat kefir or drinking yogurt without additives - 200 ml;
  • 2 tbsp. l. lemon juice;
  • ripe banana;
  • honey - 1 tsp;
  • fruits or berries with juicy pulp.

Using a blender, mix banana and kefir (natural yogurt). Add honey and lemon juice and beat well again. pour into a plate and decorate with chopped fruits, berries and your favorite breakfast cereals.

The child will certainly be interested in the colorful ingredients, and the mother will not worry about an empty stomach, because such a soup is quite filling and healthy.

For those with a sweet tooth

Depending on the amount of sugar, fruit soup can easily be classified as a dietary dish. However, our next recipe is for those who do not deny themselves sweets.

It will take you about thirty minutes to prepare a delicious chocolate grapefruit soup.

Ingredients:

  • dark chocolate - 150 g;
  • grapefruit;
  • 1 tbsp. l. Sahara;
  • ground cinnamon and cocoa powder;
  • cream - 100 ml (fat content 22%).

We only need the pulp from the grapefruit, so wash it thoroughly and remove the thick peel and all films.

Melt small pieces of chocolate in a water bath. Heat the cream separately and add it to the chocolate in a saucepan along with the sugar. Stir the soup until all ingredients are completely combined and pour into a plate. Place grapefruit pulp in the middle and sprinkle with a mixture of cocoa and cinnamon.

Serve chocolate soup immediately after preparation.

Using various dried fruits, currently offered by retail chains in a wide range, you can prepare a delicious vitamin-rich sweet soup from dried fruits. This unusual soup is interesting both as a dessert and as a separate dish, and children will definitely like this dish. We choose dried fruits carefully, “correct” ones (that is, not treated with unhealthy chemicals), which do not shine and look rather inconspicuous.

Since we are not preparing soup, but soup, we will need some ingredients besides the dried fruits and water themselves.

Sweet rice soup made from a mixture of dried fruits

Ingredients:

  • raisins – about 100 g;
  • dried apricots – about 150 g;
  • prunes – about 200 g;
  • figs – about 100 g;
  • peach – about 100 g;
  • rice - about 150 g;
  • barberry;
  • saffron;
  • vanilla.

Preparation

Wash the rice and boil in enough water for 9-16 minutes (depending on the type of rice). Salt the excess water; if you want, you can also rinse the rice with boiled water.

Steam with boiling water in a separate container. When it swells, add salt to the water and remove the seeds; you can cut each plum into 2 parts.

Pour boiling water over the remaining dried fruits and add salt after 8-15 minutes. This is done to remove unhealthy chemical additives (possibly) present on dried fruits, used by unscrupulous manufacturers and trading structures to improve the appearance and increase the shelf life of dried fruits. Dried apricots can also be cut into pieces, but not too finely.

Place prunes, barberries and other washed dried fruits in a saucepan (or better yet, in a ceramic container) and pour 0.7-1 liters of boiling water and cover with a lid. You can also cook in a thermos. Let the soup steep for at least 4 hours. If we start boiling, we will inevitably lose vitamins. If you don’t want to wait, simmer the soup in a water bath for 20-40 minutes. Add cooked rice, season the soup with saffron and vanilla. If you want it sweeter, add a couple of spoons of natural honey. Serve warm or cold with unleavened crackers.

This soup can be served with natural milk cream separately.

You can, in some way, modify the recipe and prepare a sweet soup from dried fruits with milk. In this version, we prepare everything in the same way as in the previous recipe (see above), only after washing the dried fruits with hot water, pour them with hot milk and infuse. Of course, to prepare such dishes you can use not only the dried fruits listed in the recipe, but also others.

Summer is that time of year when you don’t want to overload your body with heavy and hot food. But since we know that liquid is a necessary dish in the diet, we suggest you try making cold fruit rice soup using one of the recipes below.

General description of the dish

To make your own cold soup from fruits and rice, you can use both fresh and frozen fruits, as well as dried fruits. Berries can also be ingredients here. All of them need to be thoroughly washed, peeled and pitted, and then cut or grated.

If in a vegetable, meat or fish soup the water in which the main ingredient was boiled is used as broth, then for a fruit soup it will be nothing more than a compote or decoction.

Today, there are a lot of recipes on how to make fruit rice soup, and you can use dairy products, juices, jelly, and even carbonated drinks as a basis. To add zest to the dish, experienced housewives prefer to add chocolate, candies that suit the taste and consistency, as well as waffles or marshmallows. The most commonly used seasonings and spices are sweet vanilla, tart cloves and cinnamon, as well as essences, that is, concentrated solutions.

Secrets of cooking a light meal

Each of them has its own characteristics and subtleties, but we will share with you those recommendations that will be useful to you in any case.

  1. To prepare fruit rice soup, it is best to use those products that are currently in season;
  2. It is recommended not to heat treat those fruits and berries that can be eaten raw. This way you can preserve maximum beneficial properties (vitamins and minerals necessary for health), as well as aroma and taste;
  3. As with all things, check foods carefully before using them in your cooking. They must be fresh, without signs of spoilage. However, slightly mashed berries and fruits are also suitable for broth, since they will need to be mashed in any case;
  4. Many cold rice dishes are pureed before serving. In order to achieve the most delicate and palatable consistency, cooks recommend additionally grinding the soup mass through a sieve or cheesecloth with large holes;
  5. The ideal temperature for serving such a dish is ten to twelve degrees. To avoid waiting a long time for it to cool, you can add ice. But this only applies to some recipes.
