Bon appetit!

Step 1: prepare margarine for the dough.

Place margarine on a cutting board and, using a knife, chop into pieces.

Next, move the chopped component into a small saucepan with a thick bottom and place on medium heat. Stirring constantly with a wooden spatula or tablespoon, bring the margarine to a liquid state. Immediately after this, turn off the burner and set the pan aside. Let the component cool.

Step 2: prepare the flour.

Pour the flour into a sieve and sift it over a deep bowl. This must be done so that the component gets rid of excess lumps and is also saturated with oxygen. This process will allow us to make the dough itself soft and tender. Then the pies will turn out very tasty and airy.

Step 3: prepare the dough for the pies.

Pour melted margarine into a bowl with sifted flour and mix everything thoroughly using a tablespoon.

Then use a knife to break the egg shell and add the yolk and white to a common container. Pour kefir here and knead the dough with clean hands. We should get a dense elastic mass without lumps. Attention: If necessary, add a little more flour.
Now we form the dough into a ball, wrap it in cling film and put it in the refrigerator for 1 hour. Let it brew and become denser. In the meantime, we will prepare the filling.

Step 4: prepare the cabbage.

Wash the cabbage well under running warm water and place on a cutting board. Using a knife, chop the vegetable into thin strips and immediately pour into a clean deep bowl.

Step 5: prepare the onions.

Using a knife, peel the onion and then rinse thoroughly under running water. Then place the component on a cutting board and finely chop into cubes. Transfer the chopped onion to a free plate and leave aside for a while.

Step 6: prepare chicken eggs.

Place the eggs in a medium saucepan and fill completely with plain cold water. Now put the container on high heat and wait for the liquid to boil. As soon as this happens, screw on the burner and boil the ingredients for 10 minutes. We should have hard-boiled eggs.
After the allotted time has passed, turn off the burner, and use oven mitts to take the pan and place it in the sink. Turn on cold running water and let the eggs cool completely. This procedure is very important, since it determines how easy it will be for us to subsequently clear the shells of the components.

Finally, place the eggs on a cutting board and finely chop into cubes using a knife. Pour the crushed ingredients into a clean plate.

Step 7: prepare the filling for the pies.

Place the first frying pan on medium heat and let it get hot. Then lightly screw on the burner, pour a small amount of vegetable oil into the container and lay out the shredded cabbage. Stirring occasionally with a wooden spatula, simmer the vegetable for 10 minutes. After the allotted time has passed, add tomato paste and salt. Having mixed everything again with available equipment, we continue to simmer all additional 10 minutes.

At the same time, place another frying pan on medium heat. Immediately pour a little vegetable oil here and let it warm up well. Then pour finely chopped onion into a container and, stirring it with a wooden spatula, fry until soft golden brown.

When this component and the cabbage are ready, turn off the burners. Pour the fried onions into the first frying pan, add chopped boiled eggs and, using a tablespoon, mix everything thoroughly until smooth. Attention: If desired, taste the filling and add a little more salt.

Step 8: prepare puff pastries with cabbage.

Take the finished dough out of the refrigerator, remove it from the cling film and place it on the kitchen table, crushed with a small amount of flour. Using a knife, cut it into portioned pieces of the size you would like the pies to be. Using clean hands, roll each piece into small balls.

Now, using a rolling pin, roll each into a thin cake (approximately thick 3–4 millimeters) and begin to form the pies.

Using a tablespoon, place the filling on each circle. We wrap it in dough so that we get a crescent on the side. Don’t forget to pinch the edges well so that during baking the pies do not open and the filling does not fall out onto the baking sheet.
When everything is ready, let's start preparing the baked goods. Turn on the oven and preheat it to temperature 180 degrees. Meanwhile, place all the pies, seam side down, on a baking sheet at a short distance from each other. Important: if you are not sure about the surface of the container, then it is better to grease it with a small amount of vegetable oil. Next, place the baking sheet on the middle level and bake the dish for 30 minutes. During this time, the pies should be covered with a golden brown crust and begin to smell fragrant. At the end, turn off the oven, and use oven mitts to remove the baking sheet and set it aside. Let the pies cool slightly.

Step 9: Serve puff pastries with cabbage.

Transfer the still warm pies with cabbage from the baking sheet to a special plate and serve to the dinner table along with tea or coffee. The baked goods are very tasty and filling, so you can easily take them with you to a picnic, to school or to work.
Bon appetit everyone!

If desired, instead of eggs, you can put fried mushrooms, chicken in the filling, and also fry onions and carrots;

To save yourself time, you can purchase ready-made puff pastry or prepare it in advance and store it in the freezer;

To make the dough fluffy and tasty, be sure to use premium and finely ground wheat flour.

First make the puff pastry filling. Remove the top leaves from the head of cabbage and separate the required amount of cabbage. Cut into thin strips. If the leaves are too hard, add salt and rub them a little with your hands. Heat vegetable oil in a deep frying pan or Dutch oven. Add cabbage, stir, add a little water (0.25-0.5 cups). Simmer the cabbage filling over low heat for about an hour, stirring occasionally.

To make the filling more spicy, additionally sauté onions and carrots in oil - one each, and season with ground pepper.

While the filling for the puff pastry pies is being prepared, hard-boil the eggs and cool in cold water. Add chopped eggs to the cabbage (I use a special metal grate for slicing), salt and season with salt to taste. Let the pie filling cool.

Remove the puff pastry for pies with cabbage from the freezer in advance. The average defrosting time at room temperature is usually 40-45 minutes. Cut the dough into squares - I had 4 rectangular layers, each of which I divided into 4 parts. Divide the filling into squares - about 2 tablespoons each, and form rectangular pies. To prevent the products from opening during baking, carefully pinch the edges. I usually go around the edge twice, the second time with a twist, so that the pies have a small twisted side.

Preheat the oven to 220 degrees (I do this on convection to speed up the process). Line a baking sheet with baking parchment and place cabbage pies made from yeast-free puff pastry at a short distance from each other. Prick the puff pastries with a fork - air generated during the baking process will escape through the resulting holes. Lubricate the surface of the products with vegetable oil.
