Prepare all the necessary ingredients.


Wash the meat in one piece, dry it and cut into small pieces. Peel the onion, wash and cut into 4 parts.


Place the meat in a blender bowl, add the onion and grind everything together into minced meat. If you don’t have a blender, the onions and meat should be passed through a fine grinder.


Place the minced meat in a bowl, add the egg and salt.


Mix the minced meat and place it in a frying pan with heated oil.

Prepare the sauce. Finely chop the basil leaves.

Preparation. Divide a large pita bread in half.
Cut the cucumber into thin slices along the entire vegetable, use a vegetable peeler for this or cut with a sharp thin knife.
Spread caviar butter on one half of the pita bread. Arrange the cucumber slices.

Cover with the second part, which is also greased with cheese. Place lettuce leaves on top and sprinkle with grated cheese.
Cover with the third part, spread soft cheese and arrange the fish, sprinkle chopped dill on top.
Roll the pita bread and wrap it in film. Place in the refrigerator for a couple of hours.

  • We cut thin pita bread into squares, with an edge of 15-17 cm. We lay out the filling diagonally on half the square and level it. When applying the filling, you need to step back 1 cm from the edges. As a result, the filling on the pita bread will lie in a triangle.

  • Now brush the edges of the pita bread with egg and fold it diagonally, covering the filling. Press the edges with your fingers so that they stick together.
  • Fry the pasties in hot oil over low heat until golden brown, about 5 minutes on each side.

Lavash samsa with meat and cheese

  • Prepare the filling: mix minced meat (0.3 kg) with salt, green onions (1 bunch) and pepper.
  • 200 grams of Gouda cheese, grated coarsely.

To prepare fried meat in lavash, no specific recipe is used, because the filling for lavash can be very different. Undoubtedly, the base filling of this dish should be meat, and what else you decide to add is a matter of everyone’s taste.

We offer you three step-by-step recipes for making shawarma with different fillings

Carrot filling

  • Cut chicken fillet (1 whole breast) into small pieces, add salt, rub with grilled chicken seasoning and leave to rest for 20 minutes.
  • Shred white cabbage (200 g) into thin strips. It is convenient to use a shredder for this purpose.
  • Shave Parmesan cheese (200 g) or any other hard cheese (to your taste) into large shavings.
  • After 20 minutes, send the fillet to fry over high heat in a well-heated frying pan with added oil. You need to fry the pieces until they are golden brown, about a quarter of an hour.

  • Spread half of the pita bread on the table. Squeeze a strip of mayonnaise and ketchup from the short edge, distribute a strip of ¼ of the chicken fillet, a quarter of shredded cabbage, squeeze out the mayonnaise and ketchup again, then 50-80 g of Korean carrots and a quarter of the cheese crumbles. We fold the pita bread over the edges and roll it into a roll. Thus, we get 4 shawarmas.

Classic filling

  • Cut 2 fresh tomatoes and three short fresh cucumbers into small cubes and place in a colander to drain excess liquid.
  • Finely chop the onion (1 head) into half rings, sprinkle with salt and squeeze a little to release the juice.
  • Boil beef (400 g) until soft for 1.5 hours, then cut into cubes (small) and fry in oil until crunchy.
  • To prepare the sauce, you need to mix 100 g of mayonnaise with ½ tbsp. kefir. Then add to the resulting mixture, passed through a garlic press, 3-4 garlic, finely chopped dill (2 tbsp), ground black pepper (0.5 tsp), salt and granulated sugar a pinch, as well as ½- 1 tbsp. a very weak vinegar solution.

  • On half a sheet of lavash, apply a couple of spoons of sauce along the edge on the short side, then place the meat in bulk, then onions (¼ of the slice), cucumbers (¼ of the entire slice) and tomatoes (¼ of the entire slice), pour the sauce over the vegetables again and roll the lavash into roll, not forgetting to fold the edges inward.

This quantity of products makes 4 shawarmas.

Assorted filling

This filling uses several types of meat and vegetables - a real rainbow of flavors in a flavorful sauce. This is a very tasty filling option for pita bread.

Ingredients

  • Thin Armenian flatbread – 1 sheet;
  • Chicken fillet – 0.5 kg;
  • Smoked sausage – 0.2 kg;
  • Green onions – 1 bunch;
  • Medium pickled cucumbers – 3-4 pcs.;
  • Lettuce leaves - 1 large bunch;
  • Radishes – 5 pcs.;
  • Fresh tomato – 1-2 pcs.;
  • Olive mayonnaise – 100 g;
  • Classic 0% yoghurt – 100 ml;
  • Pepper mixture – 2 g;
  • Granulated garlic – ½ tsp.

How to bake pita bread with meat and vegetables in the oven

  1. Cut the chicken fillet into cubes, add salt and fry in oil for 17 minutes until golden brown over medium heat.
  2. Cut the smoked sausage into small cubes.
  3. Chop the cucumbers into cubes and place in a sieve to drain the marinade.
  4. Cut the lettuce leaves into small ribbons.
  5. Chop the radish into strips.
  6. Cut the tomatoes into small cubes and place in a sieve.
  7. Mix the sauce from mayonnaise, yogurt, pepper and granulated garlic. Salt it to taste and start assembling the shawarma.

8. Apply a few spoons of sauce to the edge of half the sheet, then add chicken, lettuce and tomatoes, then again a little sauce, after which sausage, cucumbers, radishes and green onions are laid out. Add a little sauce again and wrap the pita bread into a roll.

Adjust the amount of components per serving yourself. But don’t put too much, otherwise the shawarma will simply fall apart.

How to bake pita bread with meat filling

After the pita bread is filled with filling, according to any of the recipes suggested above, and rolled into rolls, it’s time to bake them. Usually the finished shawarma is fried on a speedo or grill, but this dish will be even more delicious if you bake the lavash rolls in the oven.

  • Place the shawarma in a fireproof form.
  • The top of the rolls can be coated with beaten egg, milk, sour cream or mayonnaise using a silicone brush.

  • Place the pan in the oven and bake the dish for no more than 20 minutes.
  • The baking temperature should not be raised above 180°C.

Shawarma baked in the oven turns out very rosy and tasty.

  • Thin lavash – 1 pc.;
  • Minced chicken minced – 0.5 kg;
  • Onions – 1 pc.;
  • Sour cream 20% - 1 tbsp.;
  • Boneless olives – 1 can;
  • Cheese “Russian” - 170 g;
  • Large chicken egg – 1 pc.;
  • Baked milk – ½ tbsp
  • Olive oil – 50 g;
  • Spiced salt - to taste.

How to cook pita bread with meat in the oven

  • Place a thick-bottomed frying pan on the stove and heat it over medium heat. Pour in the oil and let it warm up well.
  • Meanwhile, quickly chop the onion into cubes and pour the slices into hot oil. Fry the onion until light brown, stirring with a wooden spatula.
  • Then add chopped minced meat and fry the filling until cooked (about 10-12 minutes). Don't forget to salt everything to taste with seasoned salt. Remove the finished filling to cool.
  • Meanwhile, spread the pita bread on the table, grease it with sour cream, place the meat filling on top in an even layer, add cheese on top, leaving a piece (50 g) for the sauce, and scatter the olives cut into circles over the top layer of the dish.
  • We roll the flatbread with the filling into a roll, and then place this roll in a round shape like a snail.

  • Mix the sauce from the egg, milk, remaining cheese crumbs and salt and pour it over the “snail”, after which we put the mold in a preheated oven for half an hour. Cooking temperature - 190°C.
