After another couple of minutes, put the eggs back into the frying pan, mix everything well, pour in Shaoxing (chef’s) wine, oyster sauce, sesame oil, pepper, salt to taste and after 30 seconds turn off the frying pan. Transfer to a plate and sprinkle with green onions.

- do not beat the eggs, pour them into the heated frying pan and start stirring quickly, then add the tomatoes. I personally don’t like this option because I just don’t like it when the eggs are unevenly beaten (personal quirks).
