Using the technology described below, a very light and airy dessert is obtained. It has a pleasant berry taste and delicate structure. Therefore, it can be served not only for family tea, but also for any holiday. To prepare it you will need:

  • 500 grams of shortcrust pastry.
  • A kilo of canned cherries.
  • Egg.
  • ½ cup sugar.
  • 500 grams of cream cheese.
  • A tablespoon of flour.
  • Vanillin.

Sequencing

This is one of the easiest cheesecake options, so any beginner can easily make it. First of all, you need to do the test. It is divided into two identical pieces. One of them is rolled out and placed in a fireproof form, not forgetting to build sides.

To prepare the filling, combine the egg, sugar and cream cheese in a suitable container. Beat everything well with a mixer or whisk and distribute it over the dough. Place cherries on top in an even layer. The surface of the future dessert is decorated with strips of dough, making a mesh out of them. Bake cherry cheesecake at standard temperature. Cheesecake without baking

The technology for preparing this dessert is very different from previous versions. In this case, the oven will not be used. Due to the absence of heat treatment, all products retain all valuable vitamins and microelements. Therefore, a delicate cheesecake will not only be tasty, but also healthy. To prepare it you will need:

  • A stick of butter.
  • Half a kilo of not too fatty cottage cheese.
  • ½ cup sugar.
  • 200 grams of heavy cream.
  • 5 tablespoons of agar-agar (two of them will be used to make jelly).
  • About 300 grams of any berries or fruits.
  • 50 milliliters of water.
  • Berry syrup.
  • Coconut cookies.

The crumbled cookies are combined with soft butter and the resulting mixture is placed on the bottom of a deep form covered with cling film. All this is put into the refrigerator and they begin to create the filling. To prepare it, combine pureed cottage cheese, sugar and any berries or pieces of fruit in one bowl.

In a separate saucepan, boil the cream combined with three tablespoons of agar-agar. The resulting liquid is cooled and combined with the curd mass. The finished filling is carefully mixed and placed on the frozen cookies. All this is filled with jelly made from agar-agar, sugar and water. The form with the almost finished dessert is put into the refrigerator. He must stay there for at least four hours. Ideally, the cooling process should last overnight. After this time, the frozen cheesecake is removed from the mold by carefully pulling the edges of the cling film and cut into portions. We've all tried soft, delicious cheesecake at least once. Now any coffee shop offers this popular dessert on its menu. But not every housewife can boast of making cheesecake at home. But let's get back to the main types - with and without baking. Here I personally stick to the classic American recipe. And initially, this is a cheesecake that is baked in the oven. And nowadays, you can even cook cheesecake in a slow cooker. Although I have not tried this, you can find similar recipes on the Eat at Home website. I’m more for the classics and cheesecake, which always turns out great in the oven.

So, from the frequently encountered subtypes of cheese pie, we distinguish cottage cheese cheesecake, mascarpone cheesecake, ricotta cheesecake and cream cheese cheesecake. Speaking of cheese. Cheesecake without cheese is impossible as such. Even take the name, which literally translates as “cheese pie”. In fact, cheesecake is impossible without cottage cheese. But if you think about it, soft cheese and cottage cheese are almost identical dairy products.

Cheese Pie Basics and Interchangeable Ingredients

There are a lot of cheesecake recipes. Each pastry chef has his own signature recipe. Our famous chefs, such as Andy Chef or Yulia Vysotskaya, offer their versions of cheesecakes. People are constantly experimenting and introducing new ingredients. Those who are not “friendly” with the oven make curd cheesecake without baking. Someone bakes cheesecake in a slow cooker. Some people stick to the classics. But in all cases, the basic components are of great importance.

If you want your homemade cheesecake to be the same as what is served in restaurants, follow these simple rules. Let's start with the biscuit base. Professional confectioners will never reveal their recipes to us. At home, it is customary to make a cheesecake base from cookies and butter. And this cooking method has many advantages. Making such a base is very simple, and the taste is excellent! That's why I highly recommend making cookie cheesecake.

Cheesecake base

As mentioned above, cheesecake without cheese is impossible. Another thing is what kind of cheese to use? Options: cream cheese, not to be confused with processed cheese! This cheese is used most often in recipes. You can add a small amount of mascarpone to it, as I do. This is necessary for a more delicate texture of the filling. Cottage cheese can always be replaced with low-fat cottage cheese or ricotta. It all depends on your capabilities and wishes.

Next is the sweetener. Traditionally we use sugar or powdered sugar. But there are several other options that are quite acceptable. After all, it also happens that you cannot consume a lot of sugar for medical reasons. In this case, you can replace sugar with syrups with a low glycemic index. These syrups include agave nectar or maple syrup. And it happens that you want to replace sugar for some other reason. Then you can make cheesecake with condensed milk, or use chocolate as a sweetener. Cheesecake with chocolate turns out very tasty.

And additions: here there are no limits to imagination. Cheesecakes can be found with berry, lemon, mint, caramel, fruit, with Oreo cookies, with Baileys liqueur, even with beer. And a great many other flavor combinations. The same thing happens with cheesecake decor. These can be fruits, berries, chocolate chips or cookies, confectionery sprinkles, cream roses, waffles and multi-colored dragees. Everything will depend on your taste and the occasion for which the pie is being prepared.

What is the famous New York cheesecake?

So we smoothly get to the main character. This is a classic New York cheesecake recipe that does not contain ricotta and cottage cheese. It is usually prepared from cottage cheese and sour cream (or heavy cream). I already said above that I always add Italian mascarpone cheese. It is cheesecake with mascarpone that has a special, delicate texture. If you do not like or find it difficult to find this product, use only cream cheese. The calorie content of the pie naturally changes depending on one ingredient or another. In this case, we will prepare a cheesecake whose calorie content is not too high. In my version, the calorie content per 100 g is approximately 300 kcal.

In general, New York cheesecake is considered the most popular pie ordered in cafes. These are statistics from last year. Naturally, every housewife wants to try making this dessert at home. I dare to assure you that you will use this clear and simple recipe again and again. I have prepared many types of cheesecakes: cheesecake without cottage cheese, and cheesecake with curd, and cheesecake with condensed milk, and with cream, and with chocolate... I can say one thing - I like this recipe the most. It's impossible to go wrong with a cheesecake that always turns out right!

For the base

  • 120 g butter
  • 220 grams of any biscuits (such as “Jubilee”)
  • 2 tablespoons cocoa powder (optional)

For filling

  • 130 g 20% ​​sour cream
  • 250 g mascarpone
  • 400 g curd cream cheese
  • 170-200 grams of fine sugar (it is better to grind it into powder) - the amount of sugar depends on how sweet you want the pie to be
  • 3 large eggs

For decoration

  • fresh berries or fruits (optional, no decoration required)

Cooking method

Preparation 20 minutesTotal cooking time 1 hour 10 minutes

  1. Prepare the base: melt the butter and cool slightly, grind the cookies into fine crumbs in a blender or coffee grinder. Combine cookie crumbs, cocoa powder (optional) and melted butter. Mix well. The result will be a mass similar to soft plasticine.


  2. Take a heatproof round pan. The easiest way to make cheesecake is to use a metal split ring. Place a piece of parchment paper cut to the size of the circle on the bottom of the pan. Place the base mixture on the bottom of the mold. Distribute the mixture evenly over the bottom and sides of the pan. This can be done with your hands or a spoon. Turn on the oven at 180°C. And start filling.
  3. Combine curd cheese, mascarpone and sugar (or powdered sugar) in a deep bowl. Mix with a mixer on low speed until smooth. You will get a creamy thick mass, as in the photo.
  4. Add sour cream, mix again. Then, one at a time, add the eggs. After each egg added, be sure to mix the contents of the bowl with a mixer at low speed. You should get a smooth, fairly liquid mass. Place this mixture in the mold with the base and smooth the top.

  5. Bake the cheesecake on the lower level of the oven at 180°C (fan) for about 50-60 minutes. How to check readiness? 1- the top will rise a little and become slightly browned; 2 - closer to the end of time, if you touch the top, it will shake. You can turn off the oven.
  6. Cheesecake with baked goods tends to crack sometimes. This occurs due to a sharp temperature change. To avoid this, leave the finished cheesecake in the oven turned off with the door slightly open.until completely cooled. Further -

    The pie must be refrigerated. This is the only way the cheesecake will acquire the correct consistency and taste. And most importantly, you can easily remove it from the mold.

Mix cheese with vanilla. In a separate bowl, whisk the cream and add to the cheese along with 1 ½ teaspoons of jam. Mix well and place in a 1 cm layer on the cooled base. Add 1 ½ tablespoons of jam to the remaining filling, mix and place another 1 cm layer on top of the previous one.

Repeat these steps until 1 cm remains to the end of the edge of the form. This way you will achieve an ombre effect - a smooth transition of color from light to darker.

Place the cheesecake in the refrigerator for several hours.

Meanwhile, soak the gelatin in cold water according to the instructions. Boil the remaining jam for 3 minutes (you will have about ⅓ of the original amount left) over low heat along with water and 50 g of berries. Add gelatin, stir and refrigerate for half an hour.

Then carefully spread the resulting jelly over the cheesecake and set aside to cool. Decorate the finished dessert with fresh berries.

Place on the base and refrigerate for several hours.

Pour the gelatin into the mixture, place in a water bath and stir until the gelatin dissolves. Add powdered sugar, mix well and cool. Then carefully spread the coffee jelly over the cheesecake and refrigerate for half an hour.

9. Avocado Cheesecake Pie

Ingredients

For the base:

  • 120 g shortbread cookies;
  • 70 g sugar;
  • 90 g butter;
  • a pinch of salt.

For filling:

  • 450 g cream cheese;
  • 200 g sugar;
  • a pinch of salt;
  • 120 ml lime juice;
  • zest of 1 lime;
  • 180 heavy cream;

Preparation

Mix cheese, sugar and salt. Add avocado pulp and lime juice and stir. Then add the zest and cream and mix well again. Spread the filling onto the base, garnish with zest and lime wedges and refrigerate for several hours.

  • 240 g flour;
  • ¼ teaspoon salt;
  • 4 tablespoons sugar;
  • 130 g butter;
  • 1 egg yolk;
  • 1–2 tablespoons cold water;

Mix flour, salt and sugar. Add softened butter and stir. Then add water, knead the dough, wrap in cling film and put in the refrigerator for an hour.

Roll out ⅔ of the dough into a circle with a diameter of 25 cm and place on the bottom of the mold. Form the remaining dough into a long sausage, roll it out and press it against the sides of the pan. Firmly connect both parts of the dough.

Mix cottage cheese and sugar. Add the butter and 3 egg yolks and mix well. Then add vanillin, starch and milk. Stir, pour in the remaining egg whites and mix again. Place the filling on the dough and bake in an oven preheated to 180°C for about an hour.

11. Cheesecake with pickles

Ingredients

  • 120 g pretzels (salty pretzels);
  • 70 g butter;
  • 450 g cream cheese;
  • 280 g goat cheese;
  • 170 g sour cream with 20% fat content;
  • 1 tablespoon ;
  • 3 eggs;
  • 50 g grated parmesan;
  • several pickles;
  • 3 cloves of garlic;
  • several sprigs of dill;
  • 2 teaspoons salt;
  • 1 teaspoon ground red pepper or paprika;
  • a pinch of ground black pepper;

Preparation

Chop the pretzels and mix them with the melted butter. Place in the bottom of a 20 or 23 cm diameter mold.

Mix cream cheese, goat cheese, sour cream and brine. Add eggs and stir. Add Parmesan, small diced cucumber, chopped garlic and dill, salt and pepper and stir.

Place half of the filling on the base, sprinkle with the remaining cucumber cubes and cover with the other half of the filling. Bake at 160°C for about an hour. The finished cheesecake can be decorated with salted and chopped dill.
