In my opinion, if the technology is followed, absolutely everything can be produced on it - biscuits, pancakes, pancakes, cookies, pizza, brushwood, pies, pies, rolls, bread, dumplings, cheesecakes, charlottes, bagels, croutons, muffins, Easter cakes!.. Well and, of course, fluffy kefir donuts! At the same time, they can also be made in a wide variety of options. Judge for yourself - with and without yeast, with and without filling, in a frying pan and in the oven. There is plenty of room to fantasize and experiment! Today I suggest you study the recipe for kefir donuts at home without yeast, without filling, deep-fried in a frying pan.

Of course, as with any deep-fried confectionery, you will need vegetable oil. It is logical that it will be sunflower oil. And definitely refined! And the point here is not the smell, which, by the way, I really love. And the fact is that fluffy kefir donuts simply won’t turn out with fragrant oil... It will nourish the dough, make it heavy, oily and prevent it from frying. It's a completely different matter with refined sunflower oil. I keep it in my kitchen mostly for this purpose. However, I poured fragrant oil into the dough, but you can do it differently and use purified oil here too.

This homemade kefir donut recipe is really simple and quick. It takes about 12 minutes to knead the dough! And the time spent on cutting and frying, of course, depends on the number of servings. The fewer there are, the faster it will work. For one batch (one frying pan) it took me about 7 minutes to cut and 8 minutes to fry, for a total of 15. And then you can do everything at your own pace - while one batch is frying, form the preparations for the next one.

So, let’s bake delicious fluffy donuts using kefir, recipe with photo in front of you!

Ingredients:

  • kefir - 500 ml
  • eggs - 2 pieces
  • sugar - 3 tbsp. or to taste
  • sunflower oil - 6 tbsp.
  • premium wheat flour - 6 cups (750 g)*
  • salt - 0.5 tsp.
  • soda - 1 tsp.
  • * 1 cup = 200 ml liquid = 125 g flour

Additionally:

  • refined oil for frying - from 300 ml
  • powdered sugar for serving - to taste

I broke the eggs into a bowl, added sugar and salt. Beat with a regular whisk.
If you are used to sweet baked goods, then increase the amount of sugar, for example, to 6 tablespoons. I’m used to reducing the amount of sugar, so 3 tablespoons was enough for me. I always add salt to enhance the taste.

Pour in kefir and sunflower oil and stir again.

Then sifted the flour mixed with soda.

The amount of flour you have may differ from mine, since wheat gluten is different. As you knead, be guided by the consistency - the dough should not stick to your hands, but you also don’t need to fill it with flour too much.

Now let's look at how to cook donuts with kefir in terms of cutting. To do this, I rolled out part of the dough into a thick layer no less than 0.7 cm thick. Using a glass with a sharp edge, I cut out circles of dough.

I removed the excess dough, it will go to the next rolling out. And I made small holes in the center of the blanks. For this I used the cap from a bottle of sunflower oil. The cut out cores can be collected into a common ball of dough, or they can be fried separately. Thus, in addition to large “bagels”, you will also get fluffy kefir donuts in a mini version!

Heat the frying pan well with refined oil. I dipped the pieces into hot oil. I didn’t pack it very tightly, because the baked goods will increase in size under the influence of temperature. I fried it on each side until nicely browned, but it’s a matter of taste - you can make it more fried, or you can make it paler. The main thing is that the dough is baked. And for this you don’t need to rush too much. And cover with a lid to keep the temperature higher.

Place the finished donuts on paper towels so that they absorb all the excess fat.

When serving, I sprinkled powdered sugar on top! If you wish, you can top it with condensed milk, jam, topping, melted chocolate or any cream. But even without all this it will be delicious! You’ll probably have a cup of simple black tea to go with them! Well, or a glass of milk;)

  • 1 tbsp kefir;
  • 1 egg;
  • 0.5 tbsp sugar;
  • 25 g butter;
  • 10 g dry yeast;
  • flour;
  • a pinch of salt;
  • powdered sugar;
  • vegetable oil.

To make dough for donuts, you need to add yeast, 1 spoon of sugar and 3 flour to kefir. Stir and set aside in a warm place for at least an hour.

Bring the butter to a soft state; you can melt it slightly.

Despite the variety of dough products in stores, there is nothing tastier than homemade pies or cakes made with love. But the most alluring and attractive word, it turns out, is the word “donuts”. When I got ready to please my family and announced that today there would be donuts for tea, my whole family, including the cat, immediately ran to the kitchen. The good thing is that this dish cooks quickly! So, the recipe for kefir donuts.

  • kefir 250 ml.
  • egg 1 pc.
  • sugar to taste (I put 5 tbsp)
  • salt a pinch
  • half a teaspoon of soda
  • flour 2.5–3 cups
  • vegetable oil for dough 2 tbsp. l.
  • vegetable oil for frying, at least a glass
  • powdered sugar for dusting to taste

Pour the kefir into a saucepan, add the egg, sugar, salt and begin to mix thoroughly until the sugar dissolves. This can be done with a spoon or a whisk. Then pour baking soda and vegetable oil into the pan. Mix everything again.

Pour the sifted flour into the kefir and egg and knead the dough. Knead with your hands until the dough begins to lag behind the walls of the dish, i.e. will become one. The dough should be smooth and shiny.

Place the resulting dough on a cutting board and begin to form the actual donuts. To do this, the dough needs to be divided into small balls with a diameter of about 3 cm. It is better to do this by hand.

To form donuts, you need to make cakes from the balls. Next, stick a wooden stick (you can use a pencil or pen) into the center of the cake. Then quickly roll the cake around the table using a stick. I saw this method once and I don’t remember where, but the main thing is that it works! You can, of course, form donuts in the traditional way - roll out the dough 1 cm thick, cut out circles with one container, and holes inside with a smaller container. But this is not so interesting for others! Leave the donuts to rise a little, and put a deep frying pan or deep frying pan on the fire.

Heat the vegetable oil in a saucepan high. Place donuts in hot oil and fry on both sides. Fry one side for about 1 minute. Place the fried donuts on a napkin or sieve to drain off any remaining vegetable oil. Then sprinkle with powdered sugar, and the more powder, the tastier the donuts.

  • 100 milliliters of kefir,
  • 2 tablespoons sugar (you can safely double the amount)
  • 1 egg
  • vanillin packaging,
  • 0.5 teaspoon baking powder,
  • 25 grams of margarine,
  • 200-225 grams of flour,
  • a glass of vegetable oil.

Place soft margarine in a bowl. Beat an egg into it, add sugar. Beat everything with a mixer.

After this, pour in kefir and beat again.

Then add vanilla, baking powder and flour. Knead the dough. It should not be thick, but soft.

Roll out the dough. Squeeze out large circles and make a hole inside.

Fry the donuts in vegetable oil over medium heat. Just warm up the oil well initially.

When removing donuts from oil, place them on a paper towel. When excess oil has drained, transfer them to a plate and serve.

Recipe 4: homemade kefir donuts (step by step)

Donuts can be prepared for breakfast, or you can take them with you on a picnic or walk. All in all, this is the perfect homemade dish. This pastry is very tasty, and besides, it is easy to prepare, because it is based on yeast-free dough.

  • Egg 1 pc.
  • Sugar 4-5 tbsp. l.
  • Kefir 2.5% 250 ml
  • Flour 390 g
  • A pinch of salt
  • Butter 30 g
  • Vegetable oil 3-4 tbsp. l.
  • Soda 0.5 tsp.
  • Powdered sugar to taste

Whisk 1 egg.

Add 4-5 tbsp. l. sugar and continue beating.

Then add 250 ml of kefir, a pinch of salt and mix again with a whisk to obtain a homogeneous mass.

Add 0.5 tsp. soda and 30 g of melted butter and mix well.

It is important that the oil is not hot.

Now add 390g of sifted flour. It needs to be added in parts so that the dough reaches the desired consistency.

It should not be too tight or too runny. When you add the first portion of flour, stir the dough with a whisk. At some stage, the dough will become denser and the whisk will no longer cope.

Then prepare your work surface and sprinkle it thickly with flour. Place the dough on it and start kneading with your hands. The ideal dough for kefir donuts should be soft. If it sticks a little to your hands, the next step will fix it.

Make a small depression in the dough and pour 3-4 tbsp into it. l. vegetable oil.

Lubricate your hands with this oil and knead the dough, this time with oil. If it leaks out during kneading, it's not a big deal. Gradually it will all go into the dough.

Roll out the kneaded dough to about 1 cm thick.

It is not advisable to roll out donuts using flour, as it will burn when frying. You should have some vegetable oil left on your work surface; it will prevent the dough from sticking. If there is no oil left, you can add a little more, just be careful not to overdo it.

A special donut cutter will give your baked goods the desired look. If you don't have one, take a simple bowl and a small glass. Use a bowl to squeeze out the main circle, and a glass to squeeze out the middle. For this purpose, you can use different round dishes, it all depends on your imagination.

Just don’t forget to grease it with vegetable oil, otherwise the dough may stick to it.

Pour vegetable oil into a frying pan and heat over low heat.

To prevent the oil and donuts from burning, it is advisable to fry them over low heat, slightly less than medium. This way they will be baked from the inside and will not burn.

Place the finished donuts in one layer on a flat plate covered with paper. All the baked goods will not fit on one plate, so take several pieces. You can't stack donuts on top of each other. They are quite greasy, so you need to let the oil drain onto the paper, and not from one donut to another.

Sprinkle the cooled donuts with powdered sugar. You can buy it in a store or make it yourself using a coffee grinder. You can also crush the sugar in a mortar.

The classic decoration for this dish is powdered sugar. It can be supplemented with small coconut shavings. Donuts will also look great with glaze. It can be of different colors, depending on the dye you choose.

If you prefer a natural design, make chocolate frosting. It can be made from dark or white chocolate. Or you can combine both glazes, then you will get a bright contrasting decoration. Small fresh strawberries or currants will be a beautiful addition to this muffin.

  • flour 3 tbsp.

  • salt 0.3 tsp
  • powdered sugar to taste
  • soda or baking powder 0.5 tsp.
  • vegetable oil for frying
  • egg 1 pc.

Let's start preparing dough for donuts using kefir according to my recipe with photo. Add egg, sugar, salt, vegetable oil and soda to kefir (if you use baking powder, it must be added to the dough along with flour) and stir well.

Then add flour and knead the dough, the dough comes out soft and sticks to your hands, there is no need to add more flour, because... The donuts will be tough. Let the dough rest in a cool place for 15-20 minutes.

Sprinkle the cutting board well with flour, divide the dough into parts, roll each of them out to about 1 cm thick.

Cut out circles from the dough (I use a large tea mug) in the middle with a glass or other suitable object, cut out the middle, so we will give the shape to our kefir donuts.

Fry the donuts in plenty of hot oil.

I am very happy that these donuts are fried on kefir for 15 minutes, no more.

Remove the finished delicious and classic kefir donuts with a slotted spoon and place on a paper towel to absorb excess oil.

We take out the dough, roll it out into a layer 2 cm high and use a glass to cut out circles, let them rise for 20-30 minutes.

Pour oil into a narrow, deep saucepan so that the donuts can float freely in it. As soon as the fat is well heated, drop a few donuts into it. Fry quickly, on each side for 2 minutes until beautifully golden.

  • powdered sugar.

Measure out the required amount of kefir. This time I had homemade sour milk - it fits the recipe perfectly. Curdled milk, yogurt, matsoni - everything is suitable.

Add egg, salt, sugar and butter, mix.

Add flour and mix again.

It's better if you can handle a minimum of flour. The dough must be rounded and placed on the work surface. If it sticks to your hands at all, add a little more flour.

Next, you can form a rope, which is cut into small pieces, each of which is rounded and fried. I go the other way: I roll out the dough into a layer up to half a centimeter thick, and use a glass of the required diameter to cut out circles.

Place the rounds in well-heated vegetable oil and fry over low heat, first on one side.

Then turn it over and fry on the other side.

Remove the finished donuts from the oil and place on napkins.

After a couple of minutes, they can be transferred to a plate and sprinkled with powdered sugar.

That's all. The whole job will take 15 minutes at most, and then you can pour a glass of cold milk and enjoy it.
