    Peel the potatoes, wash and cut into cubes. Place in broth. Place the pan on the stove and start cooking the cabbage soup.


    Peel and wash the carrots and onions. Finely chop the onion and grate the carrots. Place these vegetables in a frying pan and pour in sunflower oil.


    Simmer the carrots and onions in a frying pan, stirring for 7-8 minutes.


    Then place the carrots and onions in a saucepan with broth and potatoes.


    After 10-12 minutes, add fresh cabbage cut into thin strips to the cabbage soup.


    Then add tomato juice. I always cook it in the summer. If you don’t have fruit juice, then fresh tomatoes will do just fine. You will need two or three medium tomatoes. They can be passed through a meat grinder or grated. If you have neither fruit juice nor tomatoes, then take good quality tomato paste. However, I find it much tastier with fresh tomatoes.


    At this stage, salt and pepper the cabbage soup to taste. Lay out the bay leaf.

    During this time, the turkey that we took out of the broth cooled down. Separate the meat from the bone and divide into small pieces, you can cut it. Place the meat in the pan.
    Cook the cabbage soup until all ingredients are ready. At the end of cooking, add chopped dill or parsley. I also add chopped garlic, but this is optional.


    Turkey cabbage soup and fresh cabbage are ready. Serve with or without sour cream.
