  1. To prepare this dish, you need to take ready-made steaks (4 pieces) or a whole carcass. It must be peeled and cut into pieces 2 cm wide.

  2. Place the pieces on a baking sheet lined with parchment.

  3. Sprinkle them with coarse salt to taste and 1 pinch of sugar. Sugar will enhance the taste of the fish and make it even tastier.

  4. Then sprinkle them with 1 pinch of ginger and 2 pinches of black pepper.

  5. Using your hands, distribute all the spices over the surface and pour 40 ml of olive oil over the pieces.

  6. Leave them to marinate for 10 minutes, and in the meantime preheat the oven to 200 degrees. When the oven is warm enough, place the baking sheet there for 20 minutes.

Pan-fried salmon steak recipe

Cooking time- 15 minutes.
Number of servings – 1.
Inventory: grill pan, spatula, serving plate.

Ingredients

I recommend using fresh steak for this recipe. When choosing it, first of all, pay attention to the smell. It should resemble the salty smell of the sea - this will be the best criterion of freshness. Also carefully examine the flesh of the fish. Its color should be slightly pink. Pale color indicates that it was frozen, and dark red is a sign of old or artificially colored fish. If you choose steaks, press the flesh with your finger. In high-quality fish, the pit quickly restores its shape when pressed. After choosing a fresh product, we proceed to its preparation.

If you have tasty fish, you can prepare it in various ways. However, sometimes the simplest way can be the best. So, let's fry the salmon in a frying pan! To do this, you don’t need a lot of ingredients or complex technologies.

Salmon in a frying pan - preparing food and dishes

It is best to fry salmon in refined sunflower oil. Olive oil is not suitable: when heated, it loses all its beneficial qualities and begins to emit an unpleasant odor, which will be transferred to the fish. You can also take a small piece of butter.

The fish can be fried either in the form of steaks (then it will be crusty on the outside and juicy on the inside), or by first cutting it up and removing the bones.

You can add mushrooms, vegetables (but not potatoes), and seafood to the salmon. If you want to fry salmon in a pan with sauce, then the best option is to add cream or sour cream.

Last but not least, the pan you choose to cook your salmon is important. We advise you to use non-stick cookware.

Of course, the main ingredient of the dish must be chosen very carefully. There are two points that are decisive when determining the quality of fish. It's color and smell. Color – uniform, homogeneous, without shades. If you see that the salmon is pink around the edges and bright orange in the center, then the fish is not fresh. Another stopping factor is dullness. Do not buy fish of this color, this indicates that it has been waiting for a buyer for several days.

The smell should be neutral.

As soon as you start cutting salmon, pay attention to its density. The looseness and softness of salmon indicates that the product is not fresh at all. It happens that the color has not changed and there is no smell yet, but if the meat literally falls apart or is poorly cut, then it is not suitable for cooking.

Red fish is rightfully one of the most delicious and healthy sea delicacies. It has unique taste and a rich vitamin composition, thanks to which a person not only quenches appetite, but also maintains the health of his body.

Salmon is a delicate and mild-tasting fish that does not leave anyone indifferent. A steak prepared from it is a delicious dish that you can delight your family or guests with. It can be cooked in the oven, fried in a frying pan, grilled or grilled.

The final taste of the dish largely depends on the correctly chosen main ingredient, in this case salmon. Today, to prepare a steak, fish can be bought already prepared and cut (completely ready for frying) or unprocessed (in the form of a whole fish carcass). In the latter case, you will have to prepare the fish for cooking yourself.

The most important thing to pay attention to when purchasing salmon is the quality of the product. Fresh fish is characterized by a dense and elastic structure. But since most fish products are sold frozen, it is recommended to pay attention to the shade of the salmon flesh. Excessively pale peach color of the fish indicates that the product has been frozen several times. Such procedures significantly reduce the quality of fish. Therefore, such a product will not produce a juicy steak.

It is worth noting that the bright, rich shade of fish is also not a sign of quality. A dishonest supplier could color an ordinary cheap type of fish, passing it off as noble salmon. Be especially careful if you are offered to purchase fish from which the fins, tail and head have been previously removed.

Salmon steak in the oven

Baked fish in the oven is perhaps one of the most useful culinary methods of processing a product, which allows you to preserve the vitamins in its composition as much as possible. So, to cook salmon steak in the oven you will need to stock up on:

  • one lemon;
  • herbs, salt, herbs, spices - to taste.

First, it is advisable to prepare the fish steaks. To do this, each piece is thoroughly greased with freshly squeezed lemon juice. For convenience, it is recommended to use a special kitchen brush for baking. The baking sheets are greased with a thin layer of vegetable oil, after which the salmon steaks are laid out. Their location on the baking sheets should be such that they do not touch each other.

The sauce is applied on top of the fish - to prepare it, sour cream is mixed with salt and the housewife’s favorite herbs. If desired, you can add spices and seasonings. But use them in moderation - salmon has its own unique aroma and taste, so overdoing it with dressing can ruin the dish. Also, the presence of an overly thick sauce will create a “heading” effect, which will not allow the salmon to fry well. The total cooking time in the oven at a temperature of one hundred and eighty degrees is twenty-five minutes.

Salmon steak in foil

This recipe also uses an oven. However, the peculiarity of this dish is that the salmon cooks evenly without forming a crust. You will definitely need foil cut into four pieces. The pieces should be sized to completely wrap each fish steak. Ingredients you will need:

  • four prepared red fish steaks;
  • two tablespoons of low-fat sour cream;
  • one lemon;
  • sea salt;
  • white pepper;
  • herbs, herbs, spices - to taste.

Salmon steaks are sprinkled with freshly squeezed lemon juice and sprinkled with finely chopped herbs and spices. For this recipe, it is recommended to use basil, which, when baked, imbues the fish with its subtle, subtle aroma. Then you need to wrap each fish steak with foil so that it is in an airtight package. At an oven temperature of two hundred degrees, salmon steaks are cooked for twenty to twenty-five minutes.

If you want to get a golden brown crust on your steak, then after fifteen minutes of baking, the top of the steak should be freed from the foil.

Salmon steak in a frying pan

Quite a high-calorie recipe. Perfect for those who are not afraid to gain extra pounds, since cooking will require a fairly large amount of vegetable oil. The main condition for preparing this recipe is to use an absolutely clean frying pan with a thick, deep bottom - salmon absorbs all the aromas surrounding it, so do not be lazy to rinse the frying pan before cooking. Preparing the fish steak involves washing it, wiping it dry with a paper towel and sprinkling with freshly squeezed lemon juice. Then the salmon is lightly salted and sprinkled with spices and herbs.

In the meantime, you need to put the frying pan on to heat up. To do this, pour a small amount of vegetable oil and set the burner to medium heat. Place the fish steaks so that they do not touch each other. The total cooking time for a salmon steak that is at least two centimeters thick is four minutes on each side.

Salmon steak in a slow cooker

Using a multicooker is an excellent solution for those who cannot afford to spend a lot of time at the stove. Moreover, the taste of the dish is in no way inferior to salmon steak baked in the oven or fried in a frying pan. Ingredients you will need to stock up on:

  • fish steaks;
  • mustard;
  • freshly squeezed lemon juice;
  • seasonings;
  • potatoes;
  • greens.

Each salmon steak is thoroughly rinsed under water and dried with a paper towel. Then the fish is rubbed with seasonings and generously covered with mustard. The preparatory stage ends with sprinkling with freshly squeezed lemon juice. Salmon in this state must be set aside for twenty minutes, during which time it will have time to soak in the dressing.

After the time has passed, the fish is placed in the multicooker bowl. When deciding to steam, it is recommended to add a few cups of regular drinking water. You can also add a couple of potatoes, pre-cut into medium-sized cubes, and finely chopped greens. Total cooking time is thirty minutes. The recommended multicooker mode is “Steaming”.

Grilled salmon steak

Perhaps one of the fastest ways to cook red fish steak. In addition to salmon, you will need the following ingredients:

  • lemon;
  • olive oil;
  • coarse sea salt;
  • chicken eggs;
  • dill;
  • thyme;
  • basil

Fish steaks, previously sprinkled with freshly squeezed lemon juice, are thoroughly rubbed with sea salt, and then left in this state for five minutes. Meanwhile, the remaining squeezed lemon is cut into small cubes. To make the dressing, mix the egg yolk and olive oil in equal proportions. As a rule, frying a salmon steak on a grill or grill does not take more than ten minutes. The final touch will be thyme sprigs and lemon cubes, served along with the finished salmon steak.

Since red fish steak has been prepared for many centuries, experienced chefs and cooks have collected a lot of tips on how to enhance the taste and aroma of this dish. Below are some of them.

  • Salmon steaks go well with any cut vegetables and mushrooms.
  • If given a choice, always choose refrigerated prepared food over frozen food.
  • Fish must be defrosted exclusively in the refrigerator compartment. It is not recommended to use hot water - the product loses most of its vitamins and beneficial properties.
  • It is not necessary to strictly follow the chosen recipe. For example, many housewives do not consider it necessary to use salt, since, in their opinion, sea fish already contains it.
  • Placing a small stick of butter on top of a freshly cooked steak will impart a mild, creamy flavor and aroma to the fish.

If you bake salmon in the oven and want to give the fish a golden crust, then wrap the fish steak in foil like an envelope.

How to marinate?

Red fish left in the marinade for some time does not become softer, but acquires a richer and brighter aroma and taste.

To prepare the marinade for salmon steak, you will need to mix three pre-melted tablespoons of butter, a small grated apple, three finely chopped leeks and white pepper. The resulting mixture is thoroughly mixed until a homogeneous consistency is formed and seasoned with coarse sea salt. Next, the marinade is placed on medium heat and warmed up for ten to fifteen minutes.

Cooking time will depend on how juicy the apple variety you have chosen. It is recommended to give preference to the green variety of apples, as they have a richer aroma, and a hint of sourness will add a piquant taste to the red fish steak. After the time has passed, it is advisable to reduce the heat on the burner slightly and bring the marinade to a boil. After this, you need to leave the marinade to cool for sixty minutes.

Salmon... so much for a gourmet in this word. And for an ordinary person, not spoiled by restaurants, salmon can become a strong “drool maker”: this red fish looks very appetizing, especially in the company of vegetables and herbs. And you don’t have to overpay to try salmon steak in a frying pan. Today, salmon steaks are sold in almost any supermarket, and anyone can cook it. You just need to properly marinate the steak, place it in a frying pan and wait a few minutes.
