Chia puddings are a healthy and delicious breakfast. Chia grains are classified as superfoods and are therefore very popular among people leading a healthy lifestyle. Typically, the grains are soaked for 6-8 hours in milk, juice or yogurt. The seeds swell and the mixture becomes jelly-like, similar to pudding. I offer chia pudding with coconut milk; a recipe with photos will help you prepare it with honey and berries.



You'll need:

- chia grains – 2 tablespoons.,
- coconut milk – 150 ml.,
- liquid honey – 1 – 1.5 teaspoons.,
- orange – ½ piece.,
- frozen raspberries - a handful.

Recipe with photos step by step:





Pour chia grains into a glass jar.




Pour in coconut milk at room temperature. Leave for 10 minutes.




Mix. Leave for half an hour at room temperature.




Mix again. There is practically no liquid fraction in the mixture anymore. Close the jar with a lid and place the dish in the refrigerator overnight.






After 10 hours the mixture will thicken.




Add honey to chia pudding. Mix.




Defrost frozen raspberries and beat with a blender.




Cut the orange into cubes.






Place half of the pudding in the bottom of a tall glass.




Add a layer of raspberry puree on top.




The next layer is the second half of the pudding.




At the end add the orange cubes. You can sprinkle the dish with ground cinnamon or grated chocolate.




The dish is hearty, moderately sweet with the taste of coconut, raspberry and orange. Don't make chia pudding ahead of time. It is not recommended to store the dish.

In one of my first articles, I already talked about the fantastic benefits of chia seeds - it’s no wonder why they have become so popular. One way to consume chia is to make it into a dessert pudding for breakfast. It won't be difficult to prepare it.

Step one
The pudding is based on a combination of chia seeds and any type of milk. In my opinion, coconut and almond make the best desserts. The main thing is to remember the proportions: 3 tablespoons of chia seeds per 1 glass of liquid. For example, if you're making 4 servings (which is great since the pudding stays fresh for days), you'll need ¾ cup chia seeds and 4 cups milk. Combine the ingredients together and mix thoroughly.

Step two
This is where the fun begins: you can fantasize about the dessert as much as you like and add any healthy ingredients. For example, dried coconut, raisins, cocoa powder, pomegranate seeds, mango pieces, walnuts, almonds or pistachios. Try any combinations! Add them to the milk with chia seeds, stir and put the mixture in the refrigerator overnight, or if you don’t have time, for at least 20 minutes.

Step three
Stir the finished pudding, add a little milk and garnish with blueberries, raspberries, maple syrup, agave or honey if you like sweeter desserts. Below are the recipes that I usually use:

Chia pudding with cinnamon
2 cups almond milk
2/3 cup chia seeds
½ teaspoon vanilla
1 teaspoon cinnamon

½ teaspoon ginger
2 tablespoons chopped dates
2 tablespoons dried cranberries

Vanilla-coconut pudding with almonds
2 cups coconut milk
2/3 cup chia seeds
1/2 teaspoon vanilla extract

Chocolate Chia Seed Pudding
2 cups almond milk
2/3 cup chia seeds
1 tablespoon cocoa powder
2 tablespoons coconut flakes
½ tablespoon maple syrup

In addition, they contain calcium, manganese, magnesium, phosphorus, zinc, vitamin B1, B2, B3.

Chocolate creme brulee with caramelized bananas

Chocolate, cream, bananas... A fabulous dessert that combines the best flavors. You may not notice the new ingredient due to the delicate sweetness of the entire dessert, but your body will definitely notice this amount of additional nutrients!

You will need:

  • 125 gr. milk
  • 125 gr. greek yogurt
  • 30 gr. chia seeds
  • 30 gr. cocoa powder
  • 2 tbsp. maple syrup/molasses/honey
  • 1 large banana
  • 3 tbsp. Sahara

What to do:

  1. Combine milk, yogurt, seeds, cocoa, and syrup (honey). Cover the dish and refrigerate for at least 3 hours.
  2. Beat the resulting pudding/punch with a blender until smooth. Divide the pudding into molds; it is better to use ceramic ones for making soufflé or creme brulee, called ramekins.
  3. Place thinly sliced ​​bananas on top of the puddings, sprinkle each with 1 tbsp. Sahara. Caramelize the surface with a burner and the dessert is ready.

Lemon cupcake

A classic cupcake that can be served as a dessert on its own or baked for breakfast, served with jams and preserves.

  • 160 gr. flour
  • 12 gr. baking powder
  • 4 gr. soda
  • 2 gr. salt
  • 170 gr. coconut oil (or butter)
  • 85 gr. + 60gr. Sahara
  • 2 eggs + 1 yolk
  • 170 gr. natural yogurt
  • 30 gr. poppy
  • 25 gr. chia seeds
  • zest of 2 lemons
  • 70 ml lemon juice

What to do:

  1. Preheat the oven to 175 degrees. Grease a baking dish (a loaf pan is perfect) with butter and sprinkle with flour.
  2. Mix together flour, baking powder, baking soda, salt. Beat butter with sugar.
  3. Add eggs to the butter and sugar, adding them one at a time. Add poppy seeds, seeds, lemon zest.
  4. Stir half of the flour mixture into the dough, then the yogurt, then the other half of the dry ingredients. Stir the dough until smooth, put it in the mold, put it in the oven for 45-50 minutes.
  5. While the cake is baking, prepare the lemon syrup to soak the finished cake. To do this, heat lemon juice with sugar, bring to a boil and dissolve the sugar. Pour syrup over freshly prepared hot cake. Allow the baked goods to cool and soak in the syrup right inside the pan for several hours. Then the cake will turn out aromatic and will have a pronounced lemon taste.

Oatmeal Blueberry Pie

This pie will be an excellent snack for you at work or at home, and you can also serve it for dessert to unexpected guests. It's quick and easy to prepare, and you can use absolutely any berries.

  • 340 gr. berries
  • 25 gr. chia seeds
  • 2-4 tbsp. Sahara
  • 70 gr. rice flour
  • 45 gr. oatmeal
  • 60 gr. almond flour
  • 50 gr. starch
  • 65 gr. Sahara
  • 1/4 tsp. salt
  • 1/4 tsp. soda
  • 1/4 tsp. cinnamon
  • 82 gr. melted butter
  • vanillin/vanilla extract

What to do:

  1. Crush the berries to make an almost homogeneous puree. Stir in seeds and sugar. Leave for 20 minutes. Then heat over medium heat and bring to a boil, stirring occasionally. Cook for another 3-5 minutes until slightly thick. Cool.
  2. Preheat the oven to 190 degrees.
  3. Separately mix all types of flour, oatmeal, starch, sugar (65g), salt, soda, cinnamon. Stir melted butter and vanilla into flour mixture. The result will be a slightly lumpy mass.
  4. Line a rectangular or square baking sheet with parchment, place half of the flour crumbs on the bottom, tamp down, lay out berry “jam”, spread the other half of the crumbs on top, do not crush them.
  5. Bake the pie for 45-55 minutes until golden brown. Cool completely, remove from pan, cut into squares.

Chocolate pudding (1 serving)

Pudding is the most common dessert made from chia seeds. There are many types of them, each taste is good in its own way, but chocolate remains our favorite.

  • 300 gr. milk (coconut or almond milk works great)
  • 25 gr. seeds
  • 3 tbsp. cocoa powder
  • a pinch of salt
  • 1 tbsp. maple syrup or honey
  • chocolate chips for decoration

What to do:

  1. Mix all ingredients in a tall glass, cover with a lid or film. Shake the glass to mix everything well.
  2. Refrigerate the pudding for at least 4 hours until the dessert is firm. Serve pudding garnished with chocolate chips and any topping of your choice. Nowadays in specialized stores you can buy natural toppings or syrups that contain absolutely no sugar, they will not harm the figure, and will not cause allergies in children.

Chia seeds are the name given to the grains of Spanish sage, which grows in South America. Local residents have used them for medicinal purposes for a long time. It contains many microelements: zinc, phosphorus, potassium. They also contain vitamins and polyunsaturated fatty acids.

When eating these grains, blood cholesterol levels are normalized, metabolic processes are improved, and mental activity is enhanced. It has been proven to improve intestinal motility. Below is how to make pudding using pudding grains.

Chia pudding: recipe with yogurt and raspberries

List of products (per serving):

  • Honey (type is not important) - 1 tsp.
  • Natural (Greek) yogurt - 170 g.
  • Chia seeds - 5 grams is enough.
  • Raspberries (frozen) - 50 g.
  • Peanuts (without shell) - 15 g.

Cooking process

Place raspberries in a bowl made of thick glass. Add yoghurt and honey in the required quantity. Beat these ingredients using an immersion blender. Carefully pour the resulting mass into a tall glass with a stem. Add chia seeds. Mix with a teaspoon. Place the glass and its contents on the middle shelf of the refrigerator.

How long should dessert be there? Four hours is the minimum. Ideally, it will sit until the morning. Then we take our soft pink chia pudding out of the refrigerator. Sprinkle it with chopped peanuts. Decorate with whole raspberries. Breakfast or afternoon snack is ready. We wish you bon appetit.

Making chia pudding with coconut milk

Ingredients needed (per serving):

  1. Walnuts (without shells) - one handful is enough.
  2. Kiwi - 1 piece.
  3. Coconut milk - ¾ cup.
  4. One small banana.
  5. Honey (any type) - to taste.
  6. Chia seeds - ¼ cup.

Practical part

Take a small bowl. Pour chia seeds into it. Fill with coconut milk. Place in the refrigerator overnight, making sure to place the container on the middle shelf. In the morning we take out the frozen mass. There is no need to remove anything from the bowl. Just mix its contents. Place sliced ​​kiwi and banana on top. Sprinkle chia pudding with nuts and pour honey. Now let's start tasting. Unsurpassed taste, isn't it?!

Blueberry Coconut Chia Pudding Recipe

Product set:

  • Regular sugar - 1 tbsp is enough. l.
  • 200 g blueberries (preferably fresh).
  • 2 tbsp. l. chia seeds (Spanish sage).
  • Coconut milk - no more than 200 ml.

Preparation

Place the washed berries in a blender bowl. Pour in coconut milk. Add sugar and chia seeds there. Click the “Start” button. The result is a liquid mass reminiscent of a smoothie. We need to carefully pour it into a glass, which we then put in the refrigerator for half an hour. After a few hours, you can eat coconut chia pudding. But before that, we decorate a portion of dessert with whole blueberries. It turns out incredibly tasty, and most importantly - healthy for our body.

List of required products:

  1. Cocoa powder - 1/3 cup.
  2. Raw almond flakes - to taste.
  3. Coconut milk (whole) - one glass.
  4. Maple syrup - 4-5 tbsp is enough. spoons
  5. Chia seeds - ¼ cup.
  6. Coconut flakes - to taste.
  7. Sea salt - one pinch is enough.
  8. ½ tsp. vanilla extract.
  9. Coconut paste spread - 2 tbsp. l.

Where do we start? Chia (Spanish sage) seeds should be ground to a fine powder. Now we need a powerful blender. Pour the required amount into the bowl. Add sea salt and also add coconut spread. Lightly beat all this. Pour cocoa powder into the previously obtained mass. Beat again using a blender.

Back to the ground chia seeds. Measure out ¼ cup of powder. Place into a blender bowl. Beat the ingredients until a homogeneous mass is formed. We have a mousse that needs to be distributed into molds. Then place a handful of almond flakes and coconut flakes in a hot frying pan. Fry them lightly until they are browned. Add the flakes to the not yet frozen chia pudding.

Now we put our future dessert in the refrigerator for exactly 24 hours. But the wait is worth it. Then we take out the molds with chia pudding. Decorate each serving with almond flakes or pieces of fruit. An amazing dessert is ready to eat.

Another option (with mango)

Ingredients:

  • ½ cup each of cow's and coconut milk.
  • Fresh mint - 5-6 leaves.
  • Plain water - one glass is enough.
  • ½ tsp. vanilla essence.
  • A pinch of chopped hazelnuts.
  • 4 tbsp. l. chia seeds.
  • Mango (small pieces) - 1.5 cups.
  • White sugar - no more than 1 tbsp. l.

How to cook

Place the mango pieces into a blender. Beat, gradually adding water. We should get a mass that resembles a thick sauce. Fill the glasses with it (1/3 of the volume). We put it in the refrigerator. We mark 1 hour.

In a separate bowl, combine two types of milk - cow's and coconut. Add regular sugar and stir. Add chia seeds. Stir the ingredients with a spoon for 3-4 minutes. We remove the mass to the side. After 5 minutes it will thicken completely.

We take the glasses with the frozen sauce out of the refrigerator. Fill them with a mixture consisting of two types of milk and chia seeds. Our dessert should be in the refrigerator for at least 4 hours. Before serving, decorate each serving (glass) with mint leaves and chopped nuts.

Finally

Now you can easily prepare chia pudding. If you eat this dessert for breakfast, you will get a powerful boost of energy for the whole day. For dinner, chia seed pudding is also good. If you wish, you can complement it with a glass of light wine or champagne.

I doubt there is a dessert even easier to prepare, a dessert made from chia seeds. And the best thing is that the taste is simply amazing.

I wouldn't say that the chia seeds themselves have any flavor at all, other than being super subtle and subtle, so in this case you'll get a nice mix of almonds and maple syrup. And chia acts as a thickener, turning the liquid into something like a pudding.

By the way, if you have never dealt with chia seeds, then be sure to watch the process when almond milk begins to slowly envelop each seed, creating a jelly-like shell around it. Very exciting!
