Since childhood, I have loved the very tasty, tender Curd House cake. It fascinated not only with its excellent taste, but also with its cooking technology. It looks like you're laying out cookies-cream-cookies, then pop! And from a flat cake it turns into an original architectural structure, practically into a tourist tent (and one would like to say into a pyramid) and is then cut into beautiful multi-colored triangles.

It was a culinary-geometric attraction, and every time, such a simple and instant magic of changing the shape of the cake delighted me!

The Cottage Cheese Cake is very easy to prepare; even children 8-12 years old can assemble it, if they are supervised by adults, and give mom a delicious hand-made gift for March 8th or a birthday!

Compound

  • Cookies - 36 pieces (regular, flat, like in Soviet times, better - square);
  • Fat cottage cheese (soft, small, except granular!) – 300 g;
  • Butter (good quality) – 150 g;
  • Sugar – 1 glass;
  • Cocoa – 1 tablespoon;
  • Salt - a small pinch
  • A little milk, kefir or liquid cream to moisten the cookies (you can use syrup from fruit compote or canned pineapples, peaches).

for glaze

  • Butter – 50 g;
  • Milk (sour cream or cream) – 2 tablespoons.;
  • Sugar – 4 tablespoons;
  • Cocoa – 2 tablespoons;
  • A pinch of salt.

How to cook

  • Curd cream: Softened butter (take it out in advance and let stand at room temperature), add a little salt and beat with sugar. As soon as the sugar dissolves, add cottage cheese to this buttercream. Don’t beat the cream with the cottage cheese, just mix it! Otherwise, it will be saturated with air and become liquid. Divide the cream into 2 parts, add cocoa to one (I advise you to mix the dry cocoa with 1 tablespoon of sugar well so that the cocoa does not form lumps in the cream).
  • Prepare the site for assembly: line the flat surface of the table or large cutting board with cling film or foil (a large piece so that all the cookies fit in: 6 pieces long, 3 pieces wide and the edges of the film/foil could be used to wrap the finished cake).
  • Assembly: moistening each cookie in milk (or syrup), lay out a rectangle from half the cookies (18 pieces): 6x3 (cookies).

Grease the resulting cake with white or chocolate curd cream.

Place a second layer of cookies dipped in milk and coat them with the second remaining cream.

  • And then there’s this trick, you need to fold the house: take the edges of the film (or foil) on both long sides of the cake, lift it, bringing the outer rows of cookies, left and right, towards each other and connect them (just along the line of the center of the cake). That is, the middle row of cookies remains like the bottom of the house, and the side rows form a sort of gable roof over it.

  • Cook the glaze– combine dry cocoa powder with sugar and salt. Add milk to them, mix until the sugar begins to get wet a little, dissolving. Add butter and heat, stirring frequently until thickened and sugar dissolved. Cool slightly (while the glaze cooks and cools, the cookies become more saturated with cream and soften).

  • Glaze and cool: Pour glaze over the cake, wait a little until it starts to dry. Then wrap the cottage cheese house (with the free edges of film or foil) and put it in the refrigerator to set for 12 hours.

Is it possible to replace cottage cheese with curd mass?

Of course, it is possible if it is a high-quality curd mass. Then there is no need to add sugar to the cream, but I would add a piece of butter - about 50-80 g. Oil is required to maintain the triangular shape of the Cottage Cheese House cake. In the refrigerator it hardens, holds together and holds the entire sweet structure of the cake.

You cannot use grained cottage cheese for cream! It's for other dishes. But children's curd cheeses are quite suitable.

Too liquid cottage cheese will harden in the cream worse than regular, dense one. It's better not to take risks. In general, try to choose high-quality natural products for the cream so that it turns out thick and strong.

Which cookies are suitable for Cottage Cheese House?

For our cake, it is best to use simple sweet shortbread (or, as it is also called, sugar) square-shaped cookies. Suitable: Jubilee, Strawberry, Sugar, Baked milk and various other cookies, ordinary and inexpensive.

If there are no square cookies, then you can take a rectangular one, but then they need to be placed in a row vertically, lengthwise, that is, the long side will form the length of the cake, and the short side of the first three cookies in the row will form the width of the cake.

It is clear that in the case of long cookies, you need to lay out not 6 cookies in length, for example, 4.

How to soak cookies instead of milk

If you or your loved ones cannot tolerate milk, you can sprinkle the cookies with wine or cognac (or even grape, pomegranate or apple juice without pulp, fruit syrup - mulberry, pomegranate, rosehip syrup, etc.), diluted with boiled water.

If there is no syrup or juice, and alcohol is not acceptable, because you are preparing a curd cake for children, you can dip the cookies in liquid sour cream.

  • square shortbread cookies - 24 pcs
  • fatty (non-grainy) cottage cheese - 500 g
  • homemade sour cream - 6 tbsp
  • sugar - 120 g
  • vanilla
  • raisins - 100 g
  • milk - 100 ml
  • chocolate bar - 100 g
  • butter - 70 g

First, let's prepare a cream with a mild vanilla aroma. To do this, place cottage cheese, sour cream and sugar in a blender bowl (if you don’t have a blender, then use a regular masher for puree). If the mass is too dry, the recipe allows you to add a little milk. Beat the ingredients into a fluffy cream.

Cover the table with cling film or parchment. Soak each cookie in milk and place on the table. There should be 3 rows of cookies, 8 pieces each.

Place curd cream mixed with raisins on top. Then carefully, using cling film, “build” a house in the form of a triangle. It turns out that the fragrant curd mousse is hidden between the walls of cookies. Place the product in the refrigerator.

Preparing the icing for the cake. Break the chocolate bar into pieces, put it in a bowl and place in a water bath. Send butter here too.   • square cookies - 18 pcs
  • fatty (not grainy) cottage cheese - 400 g
  • homemade sour cream - 5 tbsp
  • sugar - 100 g
  • condensed milk - 100 g
  • vanilla
  • dried apricots - 100 g
  • coconut flakes - 5 tbsp
  • cocoa powder - 2 tbsp
  • dark chocolate - 50 g
  • milk - 100 ml
  • chocolate bar - 100 g
  • butter - 70 g

We take the previous recipe as the basis for preparing the dessert. That is, we prepare the curd cream in the same way: beat the homemade curd with sugar and sour cream in a blender. Next, divide the mousse into 2 equal parts. Add cocoa powder and grated chocolate (50 g) to one of them, and vanilla, dried apricots and 2 tbsp to the second. spoon of coconut flakes.

Next, we build a house on the spread film. To do this, soak the cookies in milk and place them on film in 3 rows of 3 pieces each. Lubricate them with condensed milk and put vanilla curd cream on top. Place the next layer of moistened cookies, onto which add chocolate cream. Then form a triangular-shaped house with your hands and put it in the refrigerator to harden.

Preparing the glaze is simple and quick - melt a chocolate bar with butter in a water bath. Pour the prepared mixture over the dessert on all sides and sprinkle with coconut flakes. Cool, cut into small triangles and serve with tea or cocoa.

Your first cottage cheese house from cookies I made it without baking three years ago. And I immediately realized that I liked this dessert! I liked everything about it - the top glaze, the creamy filling, and the overall delicate taste. So I started experimenting further. Today I'm going to talk about one of my favorite options!

For the glaze:

  • butter - 230 g
  • cocoa - 4 tbsp.
  • sugar or powder - 1 tbsp.

For the base:

  • rectangular cookies - 15 pieces

For filling:

  • pasty cottage cheese - 500 g
  • butter - 120 g
  • sugar or powder - 5 tbsp.
  • instant coffee - 2 tsp.

Progress of my construction actions:

  1. I started with the frosting. I combined softened butter, traditional cocoa powder and sugar (the amount can be increased if you like sweeter desserts).
  2. I beat it, although you can simply grind it with a spoon until a homogeneous mass is formed.
    The glaze is ready.
  3. It's time for parchment paper. Before you apply glaze for the house on it, you need to figure out how much area of ​​paper you need to cover.
    Cookies can be laid out in different ways. Firstly, you can take not 3x5 pieces, like I did, but 3x4 or 3x6. That is, the width should be three cookies, and adjust the length as you wish.
    In addition, cookies can be laid out horizontally or vertically. This time I preferred the first option. When I took 12 pieces (I made a 3x4 rectangle), I laid them out vertically.
  4. So, I figured out what the length and width of the base for the house would be. The length of the glaze can be applied directly flush with the cookies. The width of the glaze should extend beyond the edges of the cookies by 1.5-2 centimeters.
  5. Spread icing onto parchment paper and spread evenly. Just in case, I left 1-2 spoons so that later I could “plaster” something if necessary. I placed the cookies on top as planned - 3x5.
  6. Now for the filling. Its quantity may vary depending on the size of the cookies (mine are 7x5.5 cm) and the method of laying (vertical/horizontal arrangement).
  7. So, for the filling I combined butter, cottage cheese, coffee and powder.
    The butter here, too, as for preparing the glaze, must be softened.
    I took pack cottage cheese, 9 percent, MolKomovsky. Fat content is not of fundamental importance, but consistency and moisture content are the opposite. Coarse cottage cheese is usually drier. Therefore, it would require more oil or the addition of a small amount of sour cream.
    I simply ground the instant coffee into “flour” with two spoons.
    You can use sugar instead of powder, but the powder is gentler. To determine the quantity, try the finished filling. Perhaps 5 spoons will not be enough for you, and you will add a little more.
  8. So, I mixed all the ingredients well. My mixture turned out to be quite thick, so it was more convenient for me not to beat it, but to mix it thoroughly with a spoon.
    I placed the filling on the middle (second of three) row of cookies. I tried to lay it out right away so that the cross-section of the filling was close to the shape of a triangle - it covered the base of the cookies in the middle row, and tapered towards the top.
  9. And now the most exciting moment - I lifted both edges of the paper so that the first and third row of cookies formed a house (triangle).
  10. The top of the house should be covered with glaze. This is where chocolate indentations come in handy. Covered the top of the structure so that there were no bare cookies left.
  11. Looking from the side, I was convinced that everything was in order - the top of my house would be covered with glaze. Place the resulting structure in parchment paper in this position on a tray and put it in the refrigerator.
    The house must stay there for at least 6 hours. For me it took longer to cool - I cooked it in the evening, and we ate it in the afternoon.
  12. After a few hours, I took it out of the refrigerator and carefully removed the parchment paper.
  13. I really like the sides of the house - so chocolatey-chocolatey!
  14. I cut the dessert with a sharp knife into portioned pieces approximately 2.5 cm wide.

That's all - the festive, delicate-tasting delicacy is ready! 😉

From the ingredients we take:

  • 2 packs of inexpensive cookies (any kind will do except biscuits)
  • 400-500 g cottage cheese
  • 130 g soft butter
  • 1 cup of sugar
  • 1 heaped tablespoon cocoa powder
  • 150 g frozen berries (I used cranberries, but you can use absolutely any berries and fruits).

Preparation:

  1. Before use, the oil should lie down and soften naturally, but there is no need to help it by putting it in the microwave.
  2. In a small deep bowl, mix butter, sugar (half a glass) and cocoa into a kind of fudge.
  3. It is important to completely grind the butter and mix with cocoa so that there are no light creamy pieces left.
  4. Here I consider it necessary to warn: the sugar will not dissolve, the crystals will remain and will crunch on the teeth when eating this dessert. If you don't want to taste the sugar, replace it with powder. In this case, the fudge will be homogeneous. We set this bowl aside and prepare the curd filling in a separate bowl.
  5. To do this, simply mix the cottage cheese with the remaining half a glass of sugar.
  6. Roll out the cling film. Place chocolate fudge on it and spread it over the surface in an even layer.
  7. To know exactly which piece of film needs to be covered with fondant, first place the cookies on it. The most convenient way is 3 pieces wide, 6 pieces long.
  8. After the creamy base is laid, place the cookies on it.
  9. Cover it with some of the curd mass.
  10. Next, sprinkle frozen cranberries into the middle (no need to defrost them first, just pour boiling water over them).
  11. And, making something like a slide, we put cottage cheese on them.
  12. You can put a banana inside instead of berries, cutting it lengthwise.
  13. We put our hands under the cling film and lift the edges, forming a “house”.
  14. We wrap it in the same film and put it in the refrigerator. It is advisable that the curd dessert sit in it for 8-10 hours. It will be soaked and turn out very tender and soft. Before serving, cut the resulting sausage into small house pieces and serve with tea. For beauty, they can be sprinkled with powdered sugar. Bon appetit!

How to make a cake from cookies and cottage cheese without baking:

  1. First you need to prepare the curd cream. Mix cottage cheese, soft butter and sugar, vanilla - a mixer does this perfectly. Separate 2/3 from the total mass of curd cream and mix with cocoa, and leave 1/3 of the curd cream white.
  2. Heat the milk and pour into a deep plate or bowl.
  3. Let's start assembling the "House" cake. And we will do this on cellophane, larger than our cake, later you will understand why.
  4. We lay out the first row of 3x5 cookies on cellophane, after dipping them in warm milk. Grease the cookies with dark curd cream.
  5. Then we lay out a new row of cookies, not forgetting to dip them in warm milk (if the milk has cooled down, warm it up). Now grease with light curd cream.
  6. Place the last layer of cookies on the cream and also grease them with the remaining dark cream.
  7. After the rows are laid, you need to slip the rivers under the cellophane and lean the two outer rows against the middle one to make a house, lower the cellophane.
  8. To make the “Domik” cake made from cookies and cottage cheese look attractive, it needs to be decorated.   1. To prepare a cottage cheese house, mix softened butter with cocoa and sugar. The resulting mass should be laid out in a thin layer on baking paper in an area corresponding to the area of ​​4 rows of cookies, three pieces in each row (i.e. 12 pieces in total).
  2. Mix cottage cheese with sugar.
  3. Moisten each cookie a little in water (I use a silicone brush).
  4. Place all the cookies on the butter mixture.
  5. Place the curd mixture on the center row of cookies. The two outer rows of cookies need to be lifted up, closing the edges of the baking paper, thus forming a house.
  6. Place the house in the freezer for 20 minutes to harden. Then the house can be stored in the refrigerator or freezer if longer storage is required.

Products:

  • 300 g of delicious fat cottage cheese
  • 16 square biscuits or shortbread cookies, approximately 5 cm by 5 cm
  • 2 tablespoons sour cream
  • 1/2 cup sugar
  • a pinch of salt
  • vanilla sugar
  • finely grated chocolate or cocoa
  • 1-2 bananas
  • 1 cup milk for moistening cookies

Preparation:

  1. Grind the cottage cheese through a sieve, add sour cream, salt, vanilla, sugar and chocolate or cocoa. If the cottage cheese is dry, add more sour cream.
  2. Prepare polyethylene (use it to form a house).
  3. We dip the cookies on both sides in milk (we don’t soak them in milk, just dip them!) and place them in 3 or 4 rows on cellophane. Three rows will make a triangular house, four rows will make a square house.
  4. Lubricate generously with curd mixture. Place a whole peeled banana in the middle.
  5. Then, using cellophane, we lift the outer rows up, making a hut.
  6. You can leave the banana at the end, or you can cover it all with cottage cheese. :)
  7. In this form, leave the house in the refrigerator to harden a little.
    Next, remove from the cold, unwrap the cellophane and place on a plate.

While the house was cooling, prepare the glaze:

  • 50 g butter
  • 2 tablespoons milk
  • 3 tablespoons cocoa
  • 1/2 cup sugar

Preparation:

  1. Melt all ingredients in a saucepan and bring to a boil. Cook for a couple of minutes and immediately pour over the cake from the heat, otherwise the glaze will cool quickly.
  2. Cover the top with glaze. Let it stand for another hour (but it’s better to leave the biscuit cookie house to stand overnight) so that the cookies are soaked and ready to eat.

  • cottage cheese - 400 g
  • sour cream - 2-3 tbsp. spoons
  • powdered sugar (or sugar) - 80-100 g
  • biscuit cookies (“Jubilee”) - 9 pcs.

  5. Lift the two side rows of cookies using the film and press them onto the curd mass. It should look like a house like this.
  6. Carefully wrap the house in film and put it in the refrigerator for six to eight hours.
  7. Before serving, decorate the house with chocolate.

Tip: You can melt the chocolate on the stove or in the microwave, but it is most convenient to do this in hot water. To do this, break the chocolate into pieces and put it in a small bag. Tie it tightly and immerse it in a cup of hot water. After about five minutes the chocolate will melt. Remove the bag from the water and dry it well with a towel so that no moisture gets into the chocolate. Cut the tip off the bag and decorate your dessert.

If you want to please your family with something sweet, prepare cottage cheese and chocolate “houses”. They will not refuse such a delicacy. And it won’t take you much time. The cottage cheese house cake made from cookies is quick and easy to prepare. Everything you need to prepare this dessert is either almost always at home, or can easily be purchased at the nearest store. And the best thing about this dessert is that you don’t need to bake or cook anything. You can involve your children in making this dish so that they spread the curd mixture on the cookies.

  • 500 g fine-grained cottage cheese;
  • 1 banana;
  • 50 g soft butter;
  • 0.5 cups sugar or powdered sugar;
  • for the base
  • 150 g soft butter;
  • 1.5 tablespoons cocoa powder;
  • 0.5 cups sugar;
  • 2 packs of the most ordinary cookies (in this case - “For tea”, but you can take any except biscuits).

Preparation

We start by making the chocolate-sugar mixture. To do this, mix cocoa powder, half a glass of sugar and butter in a small deep plate, which should first be removed from the refrigerator and left to soften at room temperature.


Grind everything thoroughly with a spoon and bring to a homogeneous consistency.
Your mixture should resemble sweet fudge or chocolate spread.
Keep in mind that sugar doesn’t melt well, so if you don’t want it to crunch when you eat dessert, replace it with powdered sugar or keep the mixture in a water bath. In this case, you will get a mass without any grains.


Next we move on to the cottage cheese. Combine it with sugar and butter.


Mix.


If you took coarse-grained cottage cheese, grind it through a sieve or cheesecloth. It will turn out more tender, and accordingly your “houses” will be softer. We take a regular plastic bag, cut it on one side and at the base to make a long cellophane strip, and spread the entire chocolate-cream mass on it, evenly distributing it over the surface.

Instead of a bag, you can take foil, cling film or even baking paper, but, as practice shows, they are not so convenient for preparing such a chocolate “house”: the foil quickly breaks, the cling film slides, and the paper is too hard.

Next, place the cookies on the chocolate-cream mixture. Three pieces wide, and decide for yourself how long your sweet “house” will be.


Spread some of the cottage cheese on the cookies in an even layer.


Peel the banana, cut it lengthwise and place it in the middle. Cover it with the remaining cottage cheese. Here, place more of the curd mass on the banana, making something like a slide. This is necessary so that when you fold the layer into a triangle, voids do not form in it.


Using your hands, lift the edges together with the bag and form a triangle.


Press down and wrap well with cling film. Place the resulting semi-finished product in the refrigerator for a day or overnight. The cookies should become soft. If you want to eat this delicacy literally right away, then soak the cookies in warm milk or compote. It is better to prepare this chocolate cottage cheese house cake in the evening, so that it soaks overnight and in the morning you serve a sweet dessert for breakfast. Remove the film from it and cut it into small pieces.
