Easy homemade cupcake recipes. A classic cupcake recipe with step-by-step photos at home. How to make cupcakes: simple chocolate Easter eggs baked in eggshells for Easter

Simple cupcake - general cooking principles

A simple cupcake is prepared very quickly and easily, which is why it got its name. To prepare such baked goods, any ingredients available in the refrigerator are suitable. Butter or margarine, eggs (there are recipes without them) and sugar are added to the dough. A simple cake can be baked with milk, kefir, sour cream and even mayonnaise. To make the baked goods soft and fluffy, you can add a little soda to the dough, and vanilla or nutmeg for flavor. All of the ingredients listed are included in the basic set for a simple cupcake. And if you add 1-2 additional components, you will get a completely different treat. For example, you can add cocoa powder to the dough, and a simple cupcake will turn into a chocolate one. Take nuts and raisins and get a fragrant classic cupcake for a family tea party. Children love fruit muffins; to do this, just add pieces of fruit, zest and candied fruits to the dough of a simple muffin. There are a lot of options here.

Plain cupcakes are often used as a base for cakes. To do this, you need to bake a regular simple cake, and after the sponge cake has cooled, cut it into several cake layers. Each cake needs to be coated with cream. You can also bake several small cupcakes, cut them in half and layer them with condensed milk, chocolate spread or jam. Simple muffins are most often baked in the oven; a microwave or a slow cooker are also suitable.

Simple cake - preparing food and utensils

A simple cake can be baked in a regular pan or silicone molds in the oven. You can also prepare the treat in a microwave, slow cooker or bread maker. Each housewife chooses the most convenient baking method, depending on what appliances she has at home. From the dishes you need to prepare a deep bowl for the dough, a sieve and a measuring cup. It is better to use a mixer or blender to beat the ingredients - this greatly simplifies the process of preparing a simple cake, and the dough itself will turn out much better.

The flour should be sifted first. All ingredients (eggs, milk, kefir, sour cream, etc.) should be at room temperature. Butter or margarine should be softened or melted. The filling must be prepared in advance: chop the nuts, sort and rinse the raisins (and steam if necessary), wash and chop the berries and fruits. If frozen berries are used, they must be thawed and the juice drained.

Simple cupcake recipes:

Recipe 1: Simple Cupcake

A very simple cake that doesn't require many ingredients to make. The cupcake can be served as a treat on its own or used as a topping for a cake. If you put different ingredients into the dough, each time you will get a completely different tasting treat.

Required ingredients:

  • 2 eggs;
  • Butter - 95-110 g;
  • 325-330 g flour;
  • Sugar - 195 g;
  • 110 ml kefir;
  • 12 g soda;
  • Vanillin.

Cooking method:

Bring the butter to a soft state, beat with sugar, add vanillin. Pour in kefir, beat in eggs, add flour and a little soda. Beat the mixture with a mixer until smooth. If you are baking a simple cupcake and not a cake base, you can add dried fruits and any nuts to the dough. Oil the mold and fill it with dough. Bake the cake until done (about 40-45 minutes).

Recipe 2: Simple sour cream cake

Another option for making a simple cake is to knead the dough with sour cream. Otherwise, almost the same ingredients are used here as in the first recipe. For the filling, use raisins and nuts.

Required ingredients:

  • Margarine - 100-100 g;
  • Sugar - to taste (about a glass);
  • Sour cream - a glass;
  • 2 eggs;
  • 6 g soda;
  • Vanillin;
  • Raisin;
  • Walnuts;
  • Flour - 210-225 g.

Cooking method:

Sift the flour and soften the margarine. Chop the walnuts, but not too finely, wash the raisins and steam them in boiling water (if they are too hard). Mix softened margarine with sugar and eggs, add sour cream and flour. Beat everything with a mixer, add vanilla and a little soda. Place nuts and raisins into the dough and mix with a spoon. Grease the mold with oil and place the dough there. A simple cake is baked for about 35-45 minutes.

Recipe 3: Simple Jam Cake

To prepare such small cupcakes with jam, you need to take separate molds. For the dough itself you only need flour, eggs, butter and sugar. For the filling you can use any jam or jam.

Required ingredients:

  • 2 eggs;
  • 100-115 g sugar;
  • Jam or jam;
  • 3 g salt;
  • Odorless vegetable oil - 2.5-3 tablespoons;
  • 135-150 g flour;
  • Baking powder.

Cooking method:

Mix sugar with eggs. Then mix with butter, flour and baking powder. Add salt. Whisk all the ingredients. To make a simple cake with jam softer, you can leave the dough for 20-30 minutes. Grease the molds and fill 1/3 with dough, put in a little jam. Place more dough on top so that the mold is 2/3 full. Bake the cupcakes in the oven for about half an hour.

Recipe 4: Simple Poppy Cake

Simple poppy seed cake is made with milk. The recipe is so simple that anyone can do it. However, the ease of preparation and the minimum set of ingredients do not in any way affect the quality of the treat. The baked goods come out very rich and aromatic.

Required ingredients:

  • Sugar - about a glass;
  • 110 ml milk;
  • 2 eggs;
  • Vanillin;
  • 90-100 ml vegetable oil;
  • Flour - 315-325 g;
  • 9 g baking powder;

Cooking method:

Beat eggs with sugar, salt and vanilla. Add milk, vegetable oil, mix vigorously. Add flour, baking powder and poppy seeds. Fill the greased pan with dough and place in the oven. Bake until done.

Simple cupcake - secrets and useful tips from the best chefs

— In order for the cake to rise well, it is advisable to sift the flour. This will enrich it with oxygen and make the dough more structured;

— Place the cake in an oven preheated to 180 degrees;

— Homemade simple cake should always be baked at medium temperature and at medium level;

— You can easily check the readiness of the cake with a wooden stick. You need to stick it into the most raised place; if the stick comes out dry, then it’s time to pull out the cake. If there is still raw dough left on it, then the cake is not baked yet, but the heat in the oven needs to be reduced;

— If the baked goods are difficult to remove from the mold, you can do the following: place the mold on a wet towel for 5-7 minutes. After this, the cake should release well from the walls of the dish. You can also help with pulling out with a knife, but you should not do this with silicone molds;

— Since everyone’s oven is different, the baking time will also be different. The readiness of the cake should be checked periodically, but not every 5-10 minutes;

- If time allows, it is better to leave the dough to “rest” for 25-30 minutes. During this time, all the ingredients will “combine” better and the dough will become more homogeneous;

- Remove the cake from the mold only after it has cooled, otherwise some of the baked goods will remain in the mold.

If you want to remember the taste of childhood, then try making a classic cupcake according to my recipe with step-by-step photos. This delicacy can be quickly prepared at home without spending a lot of ingredients. The cupcake turns out to be quite sweet, so lovers of delicious desserts should like it. Personally, I really love drinking tea with a cupcake, it makes the tea drinking process much more fun.

  • Inventory and kitchen appliances: mixer, sieve, coffee grinder, oven.

Required Products

I got the recipe for a classic cupcake baked in the oven from my grandmother. As a child, she often spoiled me with different cakes, but I loved this cupcake the most. We don’t need any exotic ingredients to prepare it. Here is the list of products we need:

Flour must be sifted with a sieve.

Features of product selection

Some people don't like to eat raisins, so you can substitute them. My friend, for example, puts nuts instead of raisins. Although the capital cupcake, according to GOST, is made with the addition of raisins, if desired, it can be changed a little. Instead of raisins, you can also add dates, candied fruits, dried apricots, almonds, and Turkish delight.

If you are a lover of alcoholic drinks, then nuts or raisins can be infused in rum. A few days before preparation, make the tincture and hide it in a dark place. Baking with rum ingredients will have its own rich and pleasant taste. Such delicacies are made in the Bahamas, attracting tourists.

Cupcake is the American name for a cupcake.

For people with diabetes, sugar can be replaced with fructose. Instead of butter, add margarine with minimal fat content. Such a product will have a minimum amount of calories, but will still be tasty.

How to make a classic cupcake: step-by-step recipe

We will prepare this dessert in two stages. First, let's prepare the classic muffin dough. Next we will bake them. From the resulting dough you can make one large cupcake or several small ones, depending on what molds you have.

First stage: preparing the dough

We need softened butter, so it is better to remove it from the refrigerator an hour before preparing the delicacy. Or put it in a glass and place the glass in warm water, then the butter will soften faster.

Beat the softened butter together with the powder, but you can also beat it with sugar. However, then you need to make sure that all the sugar has dissolved. I make powdered sugar in a coffee grinder, but you can buy it ready-made at the supermarket.

Now beat the butter and powder into a fluffy mass using a mixer, and add vanilla sugar or vanillin. Next, add three eggs, but you need to add them one by one, while mixing.

After adding raisins to the dough, do not use a mixer.

After this, pour boiling water over the raisins. Then we squeeze it with a paper towel and add it to our dough.
Stir with a spoon until the raisins are completely distributed throughout the mixture.
Now add a pinch of salt and sift the flour using a sieve. Add flour in parts, while mixing the contents.
At the end you need to add baking powder and finally mix everything. Our dough is ready.

Second stage: baking

Now let's prepare the form. You can bake in a large pan to get a simple cupcake, or you can bake portioned cupcakes in small pans. Grease the mold with butter. This procedure can be done using vegetable oil, but it seems to me that it will be tastier with butter. After this you need to sprinkle it with a little flour.

Then you need to make a small cut in the middle. Wet a spatula or knife in water and draw a strip down the center.
Bake in a preheated oven at 160 ºC. Cooking time – 60 minutes. You can check the readiness of the cupcake using a wooden toothpick. It should come out of the cake dry. After baking, it is better to leave the cake in the oven to cool, then it will be easier to remove it from the mold.

The first cupcake recipe was written down in a cook's book in 1796.

Sprinkle the top of the treat with powdered sugar. Now the dessert is completely ready. Vanilla raisin cupcake takes about 90 minutes to prepare using the classic recipe. Everything turns out simply, quickly and tastefully.

How to beautifully decorate and serve a cupcake

If you have made small portioned cupcakes, then there are a lot of beautiful and bright decorations for them. Complex figures are made using a pastry syringe. Only professionals can make such decorations, so we will skip them. Here are some easy ways to decorate cupcakes:

  • Cupcake in the form of a mug with hot chocolate (the baking mold must match the size of the mug; after baking, place the delicacy in the mug and pour chocolate over it; you can put a few pieces of Turkish delight or marmalade on top).
  • Cream dessert (serve the cupcake with a mold; apply a layer of cream on top, which swirls like a tsunami; this is very easy to do if you use a pastry bag).
  • Berry cupcake (this dessert is decorated with berries: blackberries, raspberries, strawberries, etc.).

All cupcake decorations are made only after baking.

If you baked a large classic homemade cupcake, then you can decorate it simply with powdered sugar, as I did. If desired, sprinkle small pieces of walnuts or almonds on top. You can also add various berries.

To prepare this delicacy, I used 200 g of butter. Some say it's too much and the cupcake turns out a little greasy. In this case, you can put a little less butter and add more flour. Or replace the butter with margarine.

While preparing the powdered sugar, add a little vanillin, it will give it a pleasant aroma. If you want to sprinkle nuts or berries on top of the cake, you need to chop them and place them on top of the powder. Instead of 3 eggs, you can put 4 or even 5, this will not make the dessert any worse.

All lovers of this delicacy should try baking it themselves. Write in the comments about what kind of cupcake you turned out. Please indicate possible modifications or changes to the recipe. Perhaps you will slightly change the way you prepare the dough for muffins in molds and get a new and tasty recipe, better than the classic one. Don't forget to tell us about this in the comments as well.

Ingredients:

  • Egg - 2 pcs.;
  • Sugar - 100 g;
  • Vegetable oil - 60 ml;
  • Soda - 0.5 tsp.
  • Vinegar - 0.5 tsp.
  • Flour - 200 g;
  • Cocoa - 50 g (optional).

Step-by-step recipe with photos:

1. To make these simple cupcakes, first whisk together the egg and sugar. Beat with a blender until foamy. If you don't have sugar on hand, you can use powdered sugar. They are interchangeable, but the baked goods will not be as sweet.

2. Add vegetable oil and soda slaked with vinegar to the resulting mixture. Baking soda can be replaced with baking powder.

3. Add flour and beat everything well.

4. Add cocoa to the finished muffin dough so that they acquire a chocolate hue. It is necessary to use natural, sugar-free. However, this point is optional; you can make them white, just add a pinch of vanillin for flavor.

5. Place the prepared base in silicone molds and bake at 200 C for 10-15 minutes. The oven should be preheated.

When ready, take it out and let it cool. Serve dessert with tea. Every housewife should have a similar simple technology for preparing sweets.

How to make cupcakes: simple chocolate Easter eggs baked in eggshells for Easter

Everyone will like this unusual and original execution of chocolate sweets. Try this quick and easy Easter baking recipe. Chocolate cupcakes in eggshells can be prepared not only for Easter, but also for other holidays, especially children's ones.

Time: 20 min + preparation 45 min.
Yield: 7-8 pcs.

Ingredients:

  • eggs - 2 pcs.;
  • sugar - 100 g;
  • butter - 62 g;
  • dark chocolate - 50 g;
  • flour - 62 g;
  • cocoa - 1.5 tbsp. l.;
  • baking powder for dough - ½ tsp;
  • salt.

Preparation:

  1. “Easter eggs” - how to make cupcakes? There are different recipes for making Easter eggs, simple and not so simple. We prepare the egg shells in advance. Wash the chicken eggs under running water and wipe dry.
  2. Now carefully make a small hole at the tip of the egg with the sharp end of a knife or a corkscrew. Also carefully (so as not to crack the egg) we pinch off the edges of the hole, making it a little larger so that you can insert a pastry syringe into it. We pour the contents out of the eggs, and then wash the empty shells inside under running water.
  3. Now we make a saline solution at the rate of 100 g of salt per 1 liter of water. Place all the washed eggshells in a bowl of saline solution. We immerse the forms one by one in water at the bottom of the bowl, holding them with our hands under the water so that the shells are completely filled with the salt solution. To prevent them from bursting while baking in them, leave the shells in water with salt for 30 minutes. After the time has passed, remove them from the solution and rinse them with clean water, inside and out. Then, turning the shells upside down, we place them on a terry towel to drain the remaining water from them.
  4. Then we leave them on a plate to further dry out the moisture inside the egg shells.
  5. When the egg shells are dry, pour a little odorless sunflower oil into each shell. After twirling the shell in your hands, lubricate it inside with this oil. Pour the remaining oil out of the egg shells.
  6. Place simple shells prepared in this way into molds. For stability in the molds, we use foil, having previously placed it in the molds.
  7. Using a mixer, beat 2 eggs with sugar.
  8. After melting the butter, remove the bowl from the water bath and add the dark chocolate pieces.
  9. Stir in the chocolate pieces to melt the chocolate in the hot butter.
  10. Sift the measured flour.
  11. Sift the powder into the flour, since according to the recipe, in addition to chocolate, the cake batter contains cocoa. Adding a pinch of salt and ½ tsp. baking powder for dough, mix everything thoroughly.
  12. Combine melted butter with chocolate and eggs beaten with sugar, mix.
  13. Now pour the simple, mixed liquid ingredients for the muffins into the sifted flour and mix the ingredients of the dough.
  14. Fill the egg shells with the resulting chocolate dough using a pastry syringe. You can simply place the dough in a bag, cut off the small tip of the bag, and then insert that tip into the hole in the eggshell and squeeze the dough out of the bag into the eggshell. We fill our improvised eggshell muffin tins with dough no more than halfway. The dough rises well during baking. If we fill more than half of the mold with dough, the excess dough will flow out. If there is any dough left, you can put it in regular cupcake and muffin tins. We bake chocolate cupcakes at a temperature of +180 ⁰С. Preheat the oven and place the cupcakes for 20 minutes. Check the readiness of the cupcakes with a wooden toothpick. If they are ready, then take them out of the oven, carefully scrape off any run-out dough from the eggshells with a knife, and then wipe them with a damp linen napkin. We do this right away, as the frozen dough will be more difficult to remove later.

Let the eggs cool. We free the simple cupcakes from the shell by carefully breaking it with the blunt end of a knife. Place in a vase or basket and serve. By the way, you can treat your friends to unusual cupcakes without removing the shell from them.

Cupcakes can be topped with Easter sprinkles or frosting if desired. Decorated with icing, simple chocolate cupcakes will look like small chocolate Easter cakes.

How to bake cupcakes - homemade version: (from the series - cupcakes, simple and delicious recipes)

Homemade plain cupcakes are a great idea for a simple and delicious dessert. To prepare them you will need products that are in the arsenal of every housewife.

Ingredients:

  • eggs in the amount of 3 pcs.,
  • sugar - 200 gr.,
  • butter - 200 gr,
  • starch - 100 gr.,
  • flour - 200-250 gr.,
  • baking powder - 10 gr.,
  • candied fruits or raisins - 100-150 gr.

Preparation:

  1. The easiest cupcake recipe. Beat the eggs. This can be done manually with a whisk or use a mixer at medium speed. Once the eggs begin to turn into a homogeneous mass, you can add sugar. For greater convenience, this can be done in parts. Then the sugar will dissolve faster and better.
  2. Melt the butter. This can be done in a water bath or in the microwave. It is not necessary to bring the liquid consistency to ideal - lumps of oil will dissolve on their own when mixed.
  3. Mix the butter with the egg and sugar mixture. At this stage, it will help melt those grains of sugar that did not dissolve earlier.
  4. Sift starch and baking powder into the resulting mixture. After this, mix everything thoroughly until smooth. This can be done with either a whisk or a mixer.
  5. Sift the flour. At this point, you don’t need to strictly follow the dosage - flour comes in different varieties. You need to focus directly on the density of the liquid. It should resemble liquid sour cream. In this case, you need to take into account the addition of filling. If you want muffins without additives, the dough should be thicker.
  6. Mix with filling. Moreover, it can be different: dried apricots, candied fruits, raisins. You can use not only dry fillings, but also fresh or frozen fruits. It is important to remember that fruit mixtures produce juice. As a result, the cakes may rise less. The amount of filling may also vary. It all depends on taste preferences. The main thing is not to overdo it, because if there is too much, the cupcakes may end up clogged.
  7. Preparing dough for baking. Simple muffin tins can be of different structures (metal, silicone, paper). When filling out the molds, you need to take into account that the cupcakes will increase in size. It is recommended to fill them not to the brim, but a little more than halfway, otherwise they may leak.
  8. Baking. The oven can be preheated to 180°C. Before putting the cupcakes in the oven, you can tap a little on the bottom of the baking sheet or on the bottom of the molds so that the mass is distributed more evenly.
  9. Bake the cupcakes for 25-30 minutes. Check readiness with a toothpick. If, after inserting the toothpick into the cupcake, the toothpick is clean, without traces of dough, simple and delicious cupcakes are ready.
Once cooled, you can decorate them with powdered sugar.

Festive chocolate cupcake: simple baking recipes

And the ingredients are all simple, natural. No flavorings and no corn syrup. This recipe is good because the baked goods are prepared very quickly. And it turns out incredibly tasty. Moreover, there is room for culinary imagination. By combining recipes, you can get your own unique recipe. You will understand this as you cook.

All the necessary ingredients are readily available. Given its simplicity and speed, this recipe can be indispensable when you urgently need to prepare a dessert dish for a holiday (New Year, Christmas, Birthday, etc.). Finally, all lovers of chocolate and chocolate desserts will definitely like this cupcake. I have probably made this pastry at least two hundred times. And, as they say, he got his hands on it. Therefore, I want to not just tell you the recipe, but also give some subtle recommendations, nurtured by long practice.

Of course, I attach step-by-step photographs to the text, which reflect all the stages of preparing my chocolate cake. So, here's what we need from the products. This is premium wheat flour, cocoa powder (I usually buy “Russian”, which is shown in the photo), milk (preferably 3.5% fat), a couple of chicken eggs, margarine or butter, sugar and baking soda.

Chocolate cake recipe

  1. You need 200 g of margarine, or the same amount of butter. Usually, this is just one pack. Here's my first tip. If you are limited in finances, then try to purchase Zhar-Pechka margarine. If you prefer creamy, then you need to buy something expensive. With a maximum content of animal fats (84% or more).

    The fact is that most varieties of margarine and butter with a fat content of 72%-74% can give an unpleasant aftertaste or odor when cooked. The same applies to all kinds of spreads, margarine with added butter, etc. By the way, an off-flavor may appear after the cake has been in the refrigerator.
    This is probably due to all sorts of fillers that are added to almost every margarine and cheap varieties of butter. They give off a foreign smell and taste after heat treatment. Zhar-pechka margarine has not let me down so far. Practice has shown that this is one of the best options.

    I have never tried to make the most delicious cake using expensive butter. Recipes involve the use of different bases. So, completely melt 200 g of margarine in a saucepan. For speed, you can first turn on high heat, but for those who have never done this before, it’s better not to risk it, but to cook everything over moderate heat.

  2. Then immediately add one full glass of sugar (glass volume 230-250 ml). Pour in about 150-200 ml of milk. And add cocoa. Those who like a rich chocolate flavor should add three heaping tablespoons. If you want it to have a softer and less pronounced taste, then you can get by with two full tablespoons of cocoa.
  3. Using simple, familiar movements, you need to stir constantly. The mixture must be brought to a boil. Again, for speed, you can turn on high heat, but as soon as it boils, immediately reduce it to moderate. You need to cook for 7-9 minutes. You will get hot liquid chocolate.
  4. Remove the pan from the stove. Cool for a couple of minutes. Then pour some of the liquid chocolate into a separate plate - 6-7 tablespoons. Cover the plate with a lid to prevent dust or other debris from getting into the liquid chocolate. This part of the chocolate is needed for icing.
  5. Pour the remaining liquid chocolate into a clean container. I use a large enamel dish. Then add two glasses of wheat flour (the volume of the glasses is still the same). Two chicken eggs and a teaspoon of quicklime soda (without a slide). Mix all this until smooth. This is where space opens up for culinary exploration.

    Chocolate goes well with many other foods. You can crumble walnuts into the resulting dough. This time. You can add grated fresh orange. That's two. Or pitted cherries. That's three. Not to mention vanilla and cinnamon. There are many options. But in this recipe we will have a classic chocolate cake.
  6. Place the resulting baking base in a frying pan, previously coated with oil. Vegetable or creamy – it doesn’t matter. You just need to take a little more butter, as it burns out faster. It is necessary to coat not only the bottom, but also the walls, since the baked goods will rise during baking.

    The dough should spread all over the bottom. It’s easy to speed up this process by simply shaking the frying pan in your hands, making circular movements with it. If the dough turns out to be too thick, then, as a last resort, you can lightly compact it with your palm. What are your dough recipes?
  7. Place in a preheated oven. Bake for 20 minutes at 200 degrees Celsius. You need to choose a baking mode that is uniform on all sides. Do not open the oven for the first 17 minutes, otherwise the cake will “fall”. In general, this dessert bakes well and quickly.
  8. Remove from the oven. Place it on a prepared clean dish, turning the pan upside down. It should lie upside down on the dish. Let the baked goods cool (15-20 minutes). Then coat with the previously set aside liquid chocolate. It is advisable to distribute the glaze evenly, but if it flows towards the center, it does not matter.

Anyway, then you can add more to each piece with a teaspoon. Additionally, you can sprinkle with walnuts or chocolate chips. It is not recommended to place finished baked goods in the refrigerator. Until it is eaten, it will remain perfectly preserved at room temperature.

This is how you can make delicious cupcakes, the recipes are simple - don’t forget to bookmark them. And also share with friends using the buttons below. Bon appetit!

A little history to whet your appetite

The history of eating cocoa beans goes deep into the past. Recent archaeological evidence suggests that the cultivation of the “chocolate tree” began in the rain forests of Peru. However, they received their first truly large-scale economic distribution in Central America. The Mayans and Aztecs gave it sacred meaning. The Mayans believed that beans crushed in water were the blood of the gods. The Aztecs associated it with the earth and the feminine principle.

In both of these civilizations, the cooking recipes were approximately the same. Grind raw or roasted beans, add water, pepper, vanilla, cinnamon and other spices. This drink was considered exclusively elitist. The Spaniards were the first Europeans to become acquainted with "brown gold". Until the 19th century, cocoa was considered an attribute of the elite in Europe. In the 17th century, Europeans learned to combine the product with sugar, after which hot chocolate became widespread among aristocrats.

The first simple recipes and technologies for producing powder and oil (1828, thanks to the Dutch scientist Conrad van Heuten) began the production of solid chocolate bars. Since the mid-19th century, chocolate and other chocolate desserts have taken on a modern appearance. They are becoming more and more accessible to wider sections of the population.

It is no coincidence that since ancient times it has been given sacred meaning. Simple and primitive recipes appeared a long time ago. It contains a large amount of flavonoids, especially epicatechin. These are antioxidants that eliminate destructive elements in the body - free radicals. Epicatechin improves cerebral circulation, which significantly enhances memory. Recent clinical studies have demonstrated a link between regular cocoa consumption and a reduction in plaque levels in brain tissue.

Benefits for the body

This is especially true for older people. Cocoa and products with its high content perfectly restore muscles after intense physical exertion. More and more athletes choose cocoa as their second drink after water. Whether the drink is cold or hot is a matter of taste. The high content of the microelement magnesium helps strengthen bone tissue.

Cocoa also promotes the production of endorphins – joy hormones. In general, regular and long-term consumption of cocoa for food greatly reduces the risk of major ailments in the modern civilized world. These are myocardial infarction, diabetes, stroke and cancer.

Just remember that the cocoa content in the dessert should be high. For example, in a chocolate bar there is at least 56%. In addition, it is worth considering that modern chocolate desserts add a lot of sugar and milk, which reduce the effectiveness of cocoa. In cheap chocolate (and milk chocolate in general) and bars, the benefits of cocoa are reduced to almost nothing. • how to choose products and equipment for a cupcake recipe.

Baking dish

Depending on the cake recipe, completely different shapes are used. So, paper, silicone or metal molds are used to prepare muffins and cupcakes. When baking small-sized muffins, the risk that they will not bake inside is minimal, but they may burn or dry out. Therefore, it is better to use paper or silicone molds for their preparation.

Classic muffins are prepared in rectangular or round pans with a hole inside, so they bake better. Most of the questions are related to the choice of mold material: silicone or metal?

Silicone molds are practical and convenient: they are easy to clean, take up little space in the kitchen, do not interact with food, and can easily withstand high temperatures in the oven, microwave, and low temperatures in the freezer. It is easy and convenient to remove baked goods from the silicone mold.

However, as many who have ever cooked in such forms note, muffins often remain raw on the inside, although the outside may be burnt. Silicone has significantly lower thermal conductivity (almost 40 times!) than metal, as a result, the part of the cake that is in the container bakes more slowly. And increasing the cooking temperature does not always help, since the exposed part may burn.

When choosing a silicone mold, it is better to follow these tips:

  • It is better if the shape has low sides and a large base diameter. In a mold with high sides and a small base, there is a very high probability that the baked goods will remain raw inside.
  • Choose pans with the thinnest walls possible, so it will take less time for the cake to bake completely.
  • Thin silicone molds can be very unstable, so it is better to use kits consisting of a mold and a metal stand.
  • It is very easy to take the finished dish out of a silicone container, but difficulties may arise if there is a pattern with small details.
  • You can solve the problem with baking in a silicone container if you increase the baking time by about ¼ and bake the cake for an additional 10 minutes, turning on the oven only for heating from below. Everything, of course, depends greatly on the form itself and on the oven.
  • Metal molds are known to all baking lovers. The most common material is steel. Modern steel pans are coated with various non-stick coatings, thanks to which baked goods do not stick and are relatively easy to remove. The most convenient metal forms are those with a removable side and a replaceable bottom. In this form you can bake cake recipes and pie recipes.

Mixing container

Almost any utensil for mixing the dough for a cupcake recipe will work. The main thing is that there are high sides, which will prevent the dough from splashing.

Mixer

Making the cake batter requires both egg beaters and dough beaters.

Eggs

You need a lot of eggs for baking, just like for meringues, and always fresh. Before breaking eggs into a bowl, it is advisable to wash them well with soap, since it is on the surface of the shell that a large number of pathogenic bacteria can be found.

Flour

According to the classic cupcake recipe, you need to use premium-grade wheat flour. However, you can also use buckwheat, rye or corn flour. The rules for choosing flour are mandatory for everyone: the flour must be fresh, without foreign impurities and sifted immediately before kneading the dough.

The freshness of wheat flour can be determined by tasting it. Fresh flour should not be bitter, and it should not have a salty taste.

Baking powder

Baking powder, also known as baking powder, or baking soda, mixed with citric acid, is used to make baked goods fluffy and soft. The substances that make up the baking powder, when they enter a humid environment, enter into a chemical reaction, which results in the release of carbon dioxide. It is the gas bubbles that create small cavities in the dough and cause it to swell before our eyes.

In industrial baking powder, the proportions of soda and acid are calculated in such a way that the reaction proceeds without a residue. It is very easy to make baking powder at home; you will need baking soda and citric acid in a ratio of 5:3.

Housewives usually mix soda and vinegar separately from the dough, which is incorrect, since carbon dioxide almost completely evaporates before it gets into the dough. It is best to mix the baking soda and acid separately directly into the cake batter, this will allow it to rise significantly more.

Vanilla sugar

Vanilla sugar is added to the dough to give it a vanilla flavor. Making excellent vanilla sugar at home is very easy. You need to take a small glass or tin jar that closes tightly, fill it with fine sugar and carefully place a vanilla pod in the very center. After 2 weeks, the aroma of vanilla will so permeate the sugar that it is perfect for making any baked goods, including muffins.

Chocolate bar

Nuts and fruits were traditionally used as filling in the cupcake. Quite often, muffins are prepared with chocolate and berries. There are recipes for muffins with pumpkin, melon and honey.

We will prepare a completely non-dietary, tasty and sweet cupcake, the recipe of which involves the use of a chocolate bar. Children especially love this cupcake. Adults with a sweet tooth also never refuse a cupcake with Snickers, especially since if you do the math, one serving of the cupcake contains only 25 grams of the sweet bar.

Varieties of cupcake recipes

The most powerful impetus for the emergence of a great variety of cupcake recipes was the discovery of sugar. Sugar allowed us to make them sweeter, reduce the amount of fruit in the composition and concentrate on the dough.

With the advent of chocolate in Europe, bakeries became realms of bliss. In Barcelona, where the first European consumers tasted chocolate, there is a magnificent chocolate museum. Several exhibits are dedicated, including chocolate cupcakes.

The cupcake recipe has become the hallmark of many cities and countries. Traditional English muffin, cupcake, German stollen, Swiss birnenbrot - these are just the most common cupcake recipes in Europe. They all have a lot in common with the classic sweet bread recipe.

English muffin

Great Britain is a country famous for its rich history and tea drinking traditions, dating back to the 17th century. One of the obligatory dishes accompanying 5 o’clock tea was a muffin, although it appeared in Foggy Albion much earlier than the tea itself.

A muffin is a small, portioned cupcake with a base 5 to 10 centimeters in diameter. It is believed that the name "muffin" came to Britain with the rise of Duke William of Normandy from France, where "moufflet" means sweet bread. Some historians claim that the name comes from the German "muffe" (a type of German bun).

Muffins were made from wheat, oatmeal, and later corn flour. The ease and speed of preparing miniature sweets allows you to bake them every day. The muffin recipe began to be supplemented with various components, and by the 17th century it was no longer possible to imagine an English tea party without muffins with jam or chocolate inside.

Today, you can use special silicone or metal molds to make muffins. The muffin dough is prepared according to the classic muffin recipe.

As the name suggests, a cupcake is a cake made from a mug. Like a muffin, a cupcake is a fluffy cupcake prepared according to a classic recipe. A cupcake is distinguished by the presence of cream, roses, nuts, chocolate chips or icing on the surface of the cupcake.

References to cupcakes have been found in cookbooks dating back to the 18th century. The English and French nobility paid great attention to confectionery products on their tables. Every nobleman wanted to amaze his guests with delicious treats. Cupcake recipes were bought and sold for a lot of money.

German stollen

The first mention of stollen in German sources dates back to 1329. At Christmas, the bishop of one of the cities in Saxony was presented with a gift of snow-white, oval-shaped sweet bread.

At the beginning of the 14th century in Germany, a cake recipe called for the use of only lean products, which the local aristocracy did not like. The Saxon Elector appealed to the Pope several times with a request to allow the addition of butter to the stollen. Permission was received only in 1491.

From now on, butter could be used in the cake recipe, but only with obligatory repentance in the form of a monetary donation for the construction of the cathedral. The next stage in improving the stollen recipe was the addition of nuts and dried fruits, and then the use of yeast dough.

Dresden stollen is the most famous cupcake recipe that is baked in Germany to this day. In Dresden, citizens celebrate Stollen Day on a grand scale. Every year, bakers compete to bake the biggest, sweetest and most unusual stollen. In 2005, the giant cupcake was included in the Guinness Book of Records, as its weight was more than 4 tons.

Kulich

In Orthodox countries, Easter cakes have been one of the symbols of Easter celebrations for more than a thousand years. To prepare the yeast dough for the Easter cake recipe, you need a large amount of eggs, butter and dried fruits.

The recipe for Easter cake has remained virtually unchanged since the 13th century, when chronicles mentioned the making of special bread in honor of the holiday. Kulich, along with colored eggs and Easter, is the main dish at the Easter meal.

Due to their labor-intensive nature, sometimes Easter cakes are prepared according to the classic cake recipe and decorated not only with powdered sugar, but also with icing, chocolate, marzipan and nuts.

In Italy, panettone is baked for Christmas according to a recipe that came from Milan. According to the most romantic legend, a student of a Milanese baker came up with a cupcake recipe for his beloved. The main feature of panettone is that it is not baked until the end. In the very center, the panettone remains a little wet, sticky and looks undercooked.

Pannetone is served with tea or coffee, and only hot. It is important to taste the core before it cools and dries out. The pannetone recipe involves adding candied fruits, nuts and spices.

History of the cupcake recipe

The cupcake recipe is one of the earliest inventions of confectioners. Cupcakes began to be prepared as a sweet pastry in Ancient Rome and Egypt. They appeared not so much because of a craving for sweets, but because of the need to preserve the fruit harvest for as long as possible.

The ancient Romans mixed pomegranate seeds, nuts, and raisins with barley flour to create sweet, soft flatbreads. The ancient Egyptians used dates, lemons and oranges to make cupcakes. As historians suggest, it was from Egypt that a recipe for a cake came to Rome, prepared not in the form of a flat cake, but in the form of fluffy bread.

As the story goes, at the beginning of the first millennium, cupcakes became very popular in the Middle East. Here the main ingredients in the cupcake recipe were nuts and honey. After the collapse of the Roman Empire and as Christianity spread, ancient cultures began to decline, and with them culinary traditions.

The era of the early Middle Ages was marked by great migrations, wars and a food crisis. Sweet pastries with fruits and nuts were banned, and then the cupcake recipe was completely forgotten.

And only with the flourishing of European states in the late Middle Ages, the culinary art began to be revived. Knights and conquerors gradually began to turn into wealthy nobles, who no longer built defensive fortresses, but luxurious houses. Art began to develop rapidly. The rich villa could not be imagined without paintings and frescoes.

Rich meals became an obligatory event in the social and political life of the nobility. The art of cooks and pastry chefs has become worth its weight in gold. The best cupcake recipes instantly became the subject of hunting for culinary experts.

The cupcake recipe is based on sponge dough and sweet filling. Easter cakes, which are usually prepared with yeast dough, have become a variety of cupcakes. If in the early Middle Ages the church did not approve of the consumption of sweet pastries, calling for modesty, then by the 13th century everything changed and luxurious cupcakes became an attribute of the Christmas holidays.

Cake recipes may include the use of cottage cheese, kefir and sour cream. Dairy products make it more tender and juicy. Curd cake recipes are lower in calories and can be included in the diet even of people trying to lose extra pounds.
