We will need:

  • salmon – 150 gr
  • red caviar – 1 tbsp. spoon
  • squid – 150 gr
  • shrimp – 150 gr
  • crab sticks – 100 g
  • hard cheese – 70 gr
  • egg – 2 pcs (whites)
  • onion – 1 pc.
  • mayonnaise – 3 tbsp. spoons

The weight of squid and shrimp is given already in boiled form. That is, in order to obtain it, you will need approximately twice as much raw food.

  • For the marinade:
  • water – 300 ml
  • salt – 1 tbsp. spoon
  • sugar – 1 teaspoon
  • vinegar 9% – 3 tbsp. spoons

Preparation:

1. Prepare the marinade. To do this, pour cold water into a bowl and stir salt and sugar in it until completely dissolved. Add vinegar. Don't be afraid that there will be too much for the amount of water. Everything will be delicious! The water can be cooled and boiled, but you can also use raw water. Of course, not from the tap, but bottled.

2. Peel the onion and cut into thin half rings. And if the head is large, then cut it into quarters. Use white onion. Our salad will be in delicate pink and white tones.



Pour the marinade over it and let it sit for 10 – 15 minutes. This is the minimum infusion time. It’s okay if the onions marinate longer.



The longest part of making a salad is the preparation. We need to clean and boil the squid. Most likely, everyone knows how to do this.



To quickly peel the skin from the squid, you need to pour boiling water over it for two minutes.



Then pour off half the boiling water and add cold water so as not to get burned. Peel the skin with your hands. If necessary, remove the film, remove the entrails and hard chord.

Pour water into a saucepan and bring it to a boil. Salt and add squid to it. After boiling again, cook for 2 minutes.

4. Cool the squid and cut into thin strips. Prepare a salad bowl or bowl where we will put all the cuttings. This is where we send the chopped seafood.



5. Now let's make crab sticks. I bought this variety with caviar. That is, we will get a real royal treat, the caviar will be inside the salad and on top.

You can cut them into two parts, but I decided to leave them whole. Personally, I really love it when I come across quite a tangible piece in salads.

In addition, they are not very large in size, although it was written on the package that they were “King” shrimp. We also put them in a salad bowl.



7. Boil the eggs, cool and peel. Carefully remove the yolk and set it aside. I will use it in another recipe.

And for this we only need protein. We need to cut it into thin strips, similar in size to chopped squid.




8. We also need to grate the cheese on a coarse grater. It is better if it is a hard cheese, such as Parmesan. You can use Gouda, it is cheaper.



Or, as a last resort, take semi-hard cheese. The point is that it is preserved in the dish, does not become soft, and retains its appearance. Well, taste, of course, plays an important role. Add it to the bowl.



9. By this time, our onions have already been pickled. You can try it, there is no bitterness anymore, the taste is slightly sour and pleasant.

You need to drain the marinade from it. This can be done using a colander. But the marinade must not only be drained, but also the finished product must be thoroughly squeezed out. Not only will excess unnecessary liquid be removed, but also excess salt and acid.

10. And we have one more component left - this is red fish, today we have salmon. You can simply cut it into pieces. But I decided to leave some of the fish for decoration, and cut the rest.

Ingredients:

  • 2 glasses of white wine
  • 1.5 tablespoons black peppercorns
  • 3 cloves garlic
  • 2 bay leaves
  • 2.8 liters of water
  • juice of 1 lemon
  • 900 g octopus
  • 450 g medium shrimp
  • 450 g squid
  • 450 g crab meat
  • 40-50 g carrots, cut into strips
  • 40-50 g onion, cut into strips
  • 40-50 g celery, cut into strips
  • For the marinade: 1/2 cup olive oil
  • 10 g parsley
  • half a cup of minced garlic
  • 180 g peeled orange
  • 2 cups orange onion

Preparation:

In a large saucepan, combine wine, peppercorns, garlic, bay leaf, water and lemon juice. Bring everything to a boil, then reduce the heat and leave to simmer over low heat. Add the octopus and cook for about 45 minutes until tender. Remove the pan from the heat, leave the octopus to cool directly in the liquid (it may be better to prepare it 2 days in advance).

Remove the octopus, place it in a bowl, close it and put it in the refrigerator. Boil the peeled shrimp and squid in the same liquid for 3 minutes, then cool them in the same way. Also put in the refrigerator.

In the same marinade, now lightly boil the carrots, onions and celery for minutes. Drain and cool the vegetables.

Remove the thin purple skin and suckers from the octopus. Marinate in olive oil, garlic and parsley for 1 hour. Heat the grill.

Fry the octopus on it for 10 minutes. Cut into small pieces. Mix the remaining seafood with vegetables and segments and orange juice. Leave to marinate for at least 12 hours before serving.
