Preparation

Knead the cottage cheese with a pinch of salt until it becomes a homogeneous mass without lumps.

Add melted butter and stir.

Add flour and baking powder through a sieve. Flour almost always needs to be sifted: it is saturated with air, which then helps the dough bake better.

Knead the dough with a spoon or your hands, then form the dough into a ball with your hands.

And put the dough in the refrigerator for at least 1 hour. The dough should rest well in the cold so that it becomes more elastic. Then it will roll out better and will not crumble.

After an hour, we take our ball out of the refrigerator and leave it to warm up at room temperature for 10 minutes. After that, we begin to make the curd cookies ourselves. Roll out the dough on a flat surface, well sprinkled with flour - the dough will show a greater desire to stick to this very surface. The thickness of the dough should be 2-3 mm.

Take a culinary ring or a glass with thin edges and cut the dough into circles with a diameter of 9-10 cm.

Now dip each circle on one side into a saucer with sugar and fold it in half with the sugar side inward. Dip one side in sugar again and fold again with the sugar side inward.

Lightly crush the resulting quarter circle and dip it in sugar on one side for the last time, place it sugar side up on a baking sheet covered with baking paper or a silicone mat.

Place the baking sheet with cookies in an oven preheated to 200°C. Bake for 20-25 minutes, until golden top. Remove the baking sheet with cookies from the oven and carefully transfer them to a plate. At this moment, it may seem that the cookies have not been baked, since they will be quite soft, but this impression is false; as they cool, the cookies will “correct” and become as they should, soft with a pleasant crust.

I didn’t have the latter, so I just added half a teaspoon of baking soda and two teaspoons of vinegar to the dough.

Knead the dough. It turns out quite sticky and very soft - the ideal consistency for cookies made from cottage cheese dough.


Scoop the dough with a teaspoon, roll it a little in flour, and form balls the size of a walnut. Lightly flatten the balls and place them on a baking sheet lined with parchment paper.

Bake cookies for 15-20 minutes at 200°.

  • 150 gr. flour;
  • 1 tbsp. + 5 tbsp. Sahara;
  • 100 gr. butter;
  • 1 tsp baking powder;
  • a pinch of salt.

Preparation:

1. To begin, mix cottage cheese with 1 tbsp. sugar and a pinch of salt. If you want a more homogeneous dough, you should grind it in advance or grind it with a blender. Then add the melted cooled butter and mix again.


It is better to add flour in parts to make it easier to knead the dough.

When you knead, it may not hold its shape and fall apart. Therefore, it should be put in the refrigerator for 1-2 hours (the longer the better) to make it pliable.


3. When the time is up, remove the dough from the refrigerator and divide it in half. First we will work with one part, and put the second back in the refrigerator.

4. So, roll out the dough thinly and use a mold to cut out identical circles with a diameter of 7-10 cm. By the way, you can also form other circles from the remains of the dough.


5. Pour sugar (5 tbsp) into a small plate. Next, take the circle and dip one side into it. Then fold it in half with the sugar side facing in and press down a little. Dip one side again in sugar and fold inward again. Dip the resulting triangle into sugar for the last time. The same process must be done with the remaining circles.


As you can see, a lot of sugar is used for sprinkling, so you don’t have to add it to the dough if you wish.

6. Place the ears on a baking sheet covered with parchment paper, sugar side up. Bake at 180 degrees for 25 minutes until golden brown or golden brown. Before serving the baked goods, of course, you need to let it cool.

  • sugar - 4 tbsp;
  • egg - 2 pcs.;
  • flour - 500-600 gr.;
  • vanilla sugar - 2 sachets;
  • baking powder - 1 sachet;
  • a pinch of salt.

Preparation:

1. Place in a large bowl and whisk together softened butter, cottage cheese, sugar, a pinch of salt, vanilla sugar, 2 eggs and baking powder. Next, add the sifted flour in small portions so that the dough does not become hard. As a result, it should turn out soft and not stick to your hands.


2. In the meantime, you can preheat the oven to 180 degrees and install a grid with large holes in the meat grinder. Divide the curd dough into 4 parts, roll each of them into a “sausage”.


3. Scroll the “sausage” through a meat grinder and cut the emerging flagella with a knife to the desired length of the product. This is what it should look like when rolled through a meat grinder. Next, place on a baking sheet with parchment paper and sprinkle sugar on top.


4. Place in a preheated oven and bake for 15-20 minutes until golden brown. I usually serve these cookies with condensed milk or jam for tea. It turns out very tasty and it is swept off the table very quickly!


Simple and delicious cottage cheese cookies without butter, margarine and eggs

And this version of cookies will appeal to those who are on a diet or those who just want to try a light dessert with low calorie content. We will exclude butter or margarine and eggs from the ingredients, but will add ripe apples. And we will get a low-calorie, healthy, but at the same time tasty and sweet dessert.


Ingredients:

  • 250 g cottage cheese;
  • 100 ml. kefir (yogurt);
  • 250 g flour;
  • 1-2 apples;
  • 5 tbsp. Sahara;
  • a pinch of salt;
  • cinnamon;
  • powdered sugar.

Preparation:

1. First, grind the cottage cheese through a blender or with your hands to remove large pieces, add sugar and salt. Then pour in kefir or yogurt and sift through the flour. Knead the dough, which in the end should be soft and elastic.


2. Now roll out the resulting dough thinly (2-3 mm) and cut into equal squares 5*5 cm using a shaped wheel.

  • 200 g flour;
  • 100 g butter;
  • 2 tbsp. Sahara;
  • 1/2 tsp. cinnamon;
  • 1/2 tsp. baking powder;
  • a pinch of salt.

Preparation:

1. Place sugar, baking powder and salt in a container for kneading dough. Then sift the flour to make the dough more airy. Mix everything well.


2. Take the butter and grate it on a coarse grater. Then the whole mass should be ground into crumbs.

The oil must be chilled, so put it in the refrigerator for half an hour before use.


3. Make a depression in the middle and lay out the cottage cheese. Knead the dough until it becomes homogeneous and does not stick to your hands. If it is difficult to mold, add a tablespoon of water or sour cream.

4. Then shape the dough into a sausage and wrap it in cling film to then refrigerate for 30-40 minutes. After this, cut the sausage into slices approximately 1 cm thick.

Ingredients:

  • 200 gr. cottage cheese;
  • 4 tbsp. Sahara;
  • 150 gr. flour;
  • 100 gr. butter;
  • 5 g baking powder;

Knead the dough with your hands until it becomes elastic and stops sticking to your hands. And put it in a plastic bag and leave it in the refrigerator for half an hour.


3. Sprinkle the surface of the table with flour and lay out the dough. Divide it in half. Roll out one part of the dough into a layer 3-5 mm thick. Using a glass, cut out round pieces with a diameter of approximately 8 cm. Do the same with the other part of the dough.


4. Take a separate plate and add sugar, as well as a little vanilla sugar. Now dip each circle on one side in this mixture. Then fold in half with the sugar side facing in. Fold the circle again to form a triangle and dip in sugar again.


5. Place the finished products in a baking dish lined with parchment paper, non-sugar side down and place in a preheated oven. Bake at 200 degrees for 10-15 minutes until they are golden brown.

Melt the butter and add to the cottage cheese, add baking powder, salt to taste and one tablespoon of sugar.


Gradually add the sifted flour while kneading the dough. The result should be a fairly soft and elastic dough. And if you overdo it with flour, then the cookies will turn out too dense.


We put the dough in a plastic bag or wrap it in cling film and put it in the refrigerator for 2-3 hours. Then we take it out and make many small balls from one large piece, which we roll into flat cakes.

First of all, we prepare all the indicated products. Then put cottage cheese, preferably melted butter, into a deep bowl, beat in chicken eggs, add vanilla and regular sugar, sift the flour, add baking powder and salt to taste.


Divide the resulting dough into 4-5 parts and roll them into sausages that will fit into the hole in the meat grinder.

Ingredients:

  • Butter - 30 g
  • brown sugar - 10 g
  • rice flour - 100 gr
  • egg yolk - 1 pc.
  • water - 3 tbsp. l.

For filling:

  • Cottage cheese – 170 gr
  • egg white - 1 pc.
  • sugar - 10 gr.

Cooking method:

In this recipe, the amount of ingredients is indicated per serving, if you want to make larger cookies, just double or triple the amount of ingredients.

In a deep bowl, place the indicated amount of butter, one egg yolk, add sugar, rice flour and add three tablespoons of clean water.


Then thoroughly knead the dough until smooth.


For the filling, combine the above amount of cottage cheese, sugar and protein, which we thoroughly knead to remove large lumps and mix.



Spread the curd filling evenly over the dough.


Rub the remaining piece of dough over the entire surface as a final layer.


Place in an oven preheated to 180 degrees for 15-20 minutes until done.
