Pie with jam without. Quick pie with jam. Classic quick pie with jam

Ingredients:

For the test:

  • eggs - 2 pcs,
  • flour - 2-3 cups,
  • butter or margarine - 200 g,
  • sugar - 1 glass,
  • vanillin - on the tip of a knife,
  • baking powder - 1 teaspoon
  • jam or jam - 150-200 g

Preparation:

Melt butter or margarine and cool. Pour sugar into a bowl, add melted butter, eggs, vanilla and mix everything well. Gradually add sifted flour mixed with baking powder and knead the dough (the dough should not be stiff). Divide the dough into 2 unequal parts (1/3 and 2/3).

Place a smaller portion of the dough in the freezer for ~1 hour. Spread most of the dough evenly on a baking sheet (the dough can be rolled out thinly or laid out in a thicker layer). Place a layer of jam on top of the dough and gently smooth it out with a spoon.

Remove a smaller portion of the dough from the freezer and grate it onto the jam on top of a grater. Place the pie in an oven preheated to 200 degrees and bake for 20-25 minutes.

2. Yeast pie with apples and jam

Dough:

  1. water-200 g and 2 tbsp milk powder or 200 g milk
  2. 1 egg
  3. 1 tsp dry yeast
  4. a pinch of soda
  5. sugar-2 tbsp. l
  6. vegetable oil - 1-2 tbsp
  7. flour-300-400 g (it all depends on the type of flour)
  8. Apples-500 gr
  9. sugar-100 g (for those with a sweet tooth, you can increase it)
  10. cinnamon-0.5 tsp - more if desired
  11. jam - 5 spoons
  12. butter - 2 tbsp
  13. vegetable oil - 1 tbsp

Preparation:

Dissolve milk powder and yeast in warm water, or yeast in milk. Beat sugar and egg and combine with milk mixture. Add vegetable oil, a pinch of soda and flour. Knead well - I use a mixer attachment to make hooks.

Leave to rise for about an hour. At this time, we peel the apples from the core; I did not peel them. Cut into pieces. Heat butter and vegetable oil in a frying pan - add apples, sugar and cinnamon. Let's stew our apples a little.

When the dough rises, divide it into 2 parts. We roll out a large one into a layer with sides, distribute our apples on it, coat the apples on top with jam - preferably fragrant and dark, for example strawberry.

From the second part of the dough we make decorations for the top of the pie - stripes, flowers, flagella... whatever your imagination suggests. Lubricate the dough with strong tea and sugar and place in an oven preheated to 180 degrees. Bake until golden brown - it took me about 30 minutes. Brush the finished pie with milk or sprinkle with water.

3. Grated pie with jam

Ingredients:

  • 3 tbsp flour
  • 250 g butter or margarine
  • 1 egg
  • 0.5 cups sugar
  • 1 tsp vanilla sugar

Filling:

  • you can use any jam, I took blackcurrant

Preparation:

Rub flour with butter to form a cereal mass. Separately, beat the egg with sugar and vanilla. Pour the egg and sugar into the flour-butter mixture, mix everything together. Divide the dough into 2 parts (I make them into sausages to make it easier to grate later) and wrap them in cling film and refrigerate for 1 hour.

Grease the mold with oil, sprinkle with flour or semolina, grate 1 part of the dough on a coarse grater and spread the jam on top and distribute evenly. Take part 2 and grate it on top of the jam. Sprinkle the top of the pie with a mixture of sugar and nuts (I made hazelnuts, cashews and walnuts).

Bake at 180 degrees for 25-30 minutes. Cool and cut into pieces.

4. Pie with jam and coconut

Ingredients:

  • 200 g margarine or butter
  • 3 cups flour
  • 1 cup of sugar
  • 2 eggs
  • a pinch of salt
  • 0.5 tsp soda.slaked vinegar

Filling:

  • starch-2-3 tbsp.
  • jam

For sprinkling:

  • coconut flakes

Preparation:

Beat eggs with sugar and salt. Melt margarine (butter), mix with flour, add eggs, slaked soda. The dough should be soft and should stick to your hands! I didn’t chill the dough, but in principle, it’s shortbread, you can wrap it in film and put it in the refrigerator for 20-30 minutes.

The dough rolls out very well! Grease a mold (I used a springform pan, L = 28 cm) with butter; you can sprinkle with semolina, breadcrumbs, and crushed cookies. The pie can also be baked on a baking sheet lined with baking paper or greased with butter.

Distribute the dough into the mold, sprinkle a little starch on top (about 1-1.5 tablespoons), lay out the jam, and also sprinkle it with starch on top. Bake in a preheated oven at 180 degrees until done. It took me 35 minutes. Sprinkle the finished pie with coconut flakes.

Roll the dough into a ball, place in a clean bowl greased with vegetable oil, cover the dough with a napkin and leave in a warm place for an hour, then knead the risen dough and let rise for another 30 minutes.

Wash the lime, dry it, grate the zest on a fine grater, cut the lime in half and squeeze the juice out of the halves (if the seeds get into the juice, remove them). Fry chopped almonds and cashews in a well-heated frying pan without oil for 5 minutes.

Mix lime juice and zest with jam and starch, add roasted almonds and cashew nuts, stir until smooth.

Grease a baking sheet with vegetable oil, knead the risen dough, roll it out into a rectangle on the baking sheet (if desired, leave a little dough for decorating the pie), make sides, cover the dough with a napkin and leave for 10 minutes.

Roll the rest of the dough into “sausages”, roll them into thin strips, and use a knife to make small diagonal cuts on both sides of the dough. Spread the dough evenly with jam and nuts, juice and lime zest, sprinkle the top thickly with chopped walnuts and decorate with strips of dough.

Gently brush the sides and ribbons of dough with melted honey and bake the pie in an oven preheated to 180 degrees for ~ 30-35 minutes. Cover the finished pie with a napkin or towel, let stand for 15 minutes, then you can cut it.

Place 1/2 of the dough into the baking pan and try to smooth it over the entire surface of the pan. Next add a layer of jam. And on it the second half of the test. Level it again and sprinkle the surface with sugar.

Place the pie in an oven preheated to 200 degrees for 30-35 minutes. Remove the fragrant pie from the oven, decorate and serve.

  7. I place the dough cake in a greased pan and form low sides.
  8. I distribute the jam. This pie will look good with plum and currant jam.
  9. Using the remaining piece of yeast dough, I make a decoration for the top of the baked goods. You can roll up small flagella and make a kind of lattice out of them.
  10. Now the decorated open pie should stand for a while (20 minutes).
  11. I brush the edges of the dough with beaten egg and place the pie in a preheated oven for 20 minutes at a temperature of 210 degrees.

That's the whole simple grandma's recipe. I am sure that your parents will also have a couple of options for delicious and quick homemade baked goods with jam for tea. Take a photo and post at least one of your grandmother’s favorite recipes in the comments. I will be very grateful.

My video recipe

Pie was invented a long, long time ago. If you believe historical information, you can find out that this dessert comes from ancient Egypt and is called “Fytyr”. They baked it there with a filling of nuts and raisins.

In Rus', pies played the role of invitations - they were sent to guests, thereby inviting guests to the holidays. At the actual celebration, pies were prepared for each guest. Particular attention was paid to godparents - they were served pies with jam, which were considered one of the most delicious types of this pastry.

Jam pie (classic)

This is the easiest recipe for making jam pie in the oven. Cut butter or margarine and melt it in a small saucepan. Add eggs and sugar to it, beat or mix it all until smooth.

Then you need to mix the flour with baking powder or slaked soda, and then start adding it to the mixture of eggs and butter.

Flour should be sprinkled a little at a time, immediately mixing it with the egg-butter mixture, so that the dough turns out less steep and softer when baking. The resulting dough must be kneaded until it becomes elastic and soft.

After this, the dough must be divided into two parts so that one is slightly larger and the other, naturally, smaller. The smaller portion should be placed in the freezer for an hour. Next, you need to grease the baking dish and sprinkle it with flour, then lay out the dough.

After this, you need to take the jam and distribute it evenly over the dough in the mold. Then we take out the dough that was in the freezer and grate it on a coarse grater. Pour the resulting crumbs evenly over the jam.

The pie should be baked in an oven preheated to 200 degrees for half an hour.

Pie with kefir jam

Cooking time – 50 minutes. Calorie content – 220 kcal.

You need to break the eggs into a deep bowl and beat them with a mixer. Then add sugar and salt and beat again to form a dense white mass. Continuing to beat the mixture, slowly pour in the vegetable oil. Pour kefir, cooled in advance in the refrigerator, into it and beat until smooth.

After these manipulations, you need to add baking powder and beat with a mixer again. When whipping, do not get carried away - the dough will thicken quickly. The resulting mass should be viscous and thick. It should flow, but not be too liquid.

After this you can grease the mold. Then you need to pour the dough into it and smooth it out with a spoon. Jam is placed on top of the spoon, which also needs to be leveled. Then you need to lay the dough again and smooth it out.

After this, you need to preheat the oven to 180 degrees, put the cake there and reduce the temperature to 160. Approximate baking time is 50 minutes.

Quick shortbread pie with jam

Cooking time – 25-30 minutes. Calorie content – 351 kcal.

You need to grate the butter and mix it with half the flour. Then you need to add vanilla sugar, regular sugar and salt. Afterwards, you need to beat the egg separately, add it to the flour and stir until smooth. Next, you need to add the rest of the flour and baking powder, then stir again and knead the resulting dough.

The dough should be elastic and soft, but should not spread. It should not be divided into two parts, so that one becomes larger and the other smaller. The smaller part should be placed in the freezer for half an hour.

Then you should grease the mold and place a larger piece of dough evenly along the bottom. Pour or lay out jam on top and smooth it out with a spoon.

Then you need to grate a smaller piece of dough on a coarse grater and sprinkle the resulting pieces with jam.

The oven needs to be preheated to 180 degrees and place the pie in it for 25-30 minutes.

Yeast pie with jam in the oven

Cooking time – 30 minutes of baking + 1 hour 20 minutes. preparation. Calorie content – 280 kcal.

First you need to warm up the milk a little so that it is approximately room temperature. Next you need to add yeast and stir until smooth. Then add salt and sugar to the resulting mass and mix again. Now we set all this aside to allow the yeast to activate.

After some time, add the egg there and mix thoroughly. Then, without ceasing to stir, add flour a little at a time. Next, take the resulting dough and knead it on the table, the surface of which we sprinkle with flour in advance, otherwise the dough will stick.

After all these steps, you need to put the dough in a deep, wide bowl and cover with something. The dough should rest for about 40 minutes. During this time, the dough will rise, after which it will need to be kneaded again and put there in the same place for the same time.

Then separate the fourth part from the dough and put it aside. Place the remaining dough on the greased pan and carefully level it out. Then spoon the jam on top and smooth it out. We take the set aside part of the dough and make oblong flat lines out of it, with which we need to lay a mesh on top of the jam.

After decorating the pie, place it in the oven, preheated to 190-200 degrees. Bake the yeast dough pie with jam in the oven for about half an hour.

Fytyr in Egyptian

Cooking time – 30 minutes. Calorie content – 265 kcal.

First you need to warm the milk to room temperature, then add yeast to it and let it sit so that the yeast is activated.

Add egg and salt to the resulting mass.

Mix all this until smooth and, without ceasing to stir, add flour.

Knead the resulting dough. It will turn out not sticky and cool.

Divide this dough into two parts and roll them out thinly, but not too much - the dough should not tear.

After this, grease the layers of dough with butter and roll both flat cakes into a roll.

The roll itself needs to be wrapped in a snail.

The resulting snails should be placed individually in plastic bags and refrigerated for 2 hours.

While the dough is in the refrigerator, you need to prepare the cream. Break the egg into a deep bowl and mix with it regular sugar, vanilla, starch and half a glass of milk. All this needs to be mixed until smooth.

Next, we take the yeast-raised snails out of the refrigerator and roll them into round cakes so that they can fit in the baking dish. Place the first cake in the mold so that there are high sides, otherwise the cream will overflow.

Then pour the cooled cream on top and cover with the second flatbread, folding the edges under the first sheet. After this, you need to pierce the top layer with a fork so that air can escape during baking.

Bake in the oven at 200 degrees for half an hour.

  1. Pies should be served cooled - they taste better this way. There is, however, an exception - the Fytyr pie is best eaten warm;
  2. Pies are most often made in a round shape - this is considered the traditional shape of this dish, but no one is stopping you from improvising;
  3. Bake in the oven on either the lowest or medium setting at the proper temperature;
  4. If the pie filling is wet, then you should bake it a little longer and on the lower level, so the dessert will be baked for sure;
  5. Always follow the recipe.

Enjoy your tea with fragrant homemade cakes!

Option 2. Quick recipe for jam pie without eggs

Those who prefer homemade baked goods to store-bought ones, but don’t have any eggs in the refrigerator, can prepare a pie using this recipe. To make delicious and aromatic baked goods for tea, you need a minimum set of ingredients and a couple of minutes of free time.

Ingredients

  • 250 g margarine;
  • a glass of jam;
  • three glasses of premium flour;
  • table salt;
  • 5 g soda.

How to quickly make jam pie without eggs

Option 3. Chocolate pie with jam without eggs

Fans of chocolate desserts can prepare a cake with jam and cocoa. If there is no cocoa, you can add chocolate by melting or grating it. The dough is kneaded in water, and vegetable oil is used instead of butter. Therefore, such pastries can be safely prepared during the fasting period.

Ingredients:

  • stack boiled water;
  • 4 g baking soda;
  • 125 ml refined vegetable oil;
  • a packet of vanillin;
  • stack premium wheat flour;
  • 75 g cocoa powder;
  • stack granulated sugar;
  • half stack jam.

How to cook

Sift the flour twice through a sieve into a deep container. Combine it with vanilla, cocoa powder, soda and granulated sugar. Stir.

Carefully pour boiled water and refined oil into the bulk mixture. Stir with a spatula. Place parchment paper on the bottom of the greased pan and transfer the dough into it.

Remove the pie from the oven and cool. Cut lengthwise into two layers. Coat one with jam, cover with the second and coat the surface and sides of the pie with jam.

Cut the crust with a thin knife or kitchen string. Coat the pie with thick jam so that it does not drip from the cakes. Take only high quality cocoa; a product intended for making a drink will not be suitable.

Option 4. Pie with apple jam without eggs

This type of baking is suitable for those who, for medical reasons, are contraindicated from eating eggs, or when they simply don’t exist, and you don’t want to run to the store at all. For a jam pie without eggs, the apple product is best, as it has an incredible aroma.

Ingredients:

  • 800 g apple jam;
  • four stacks flour;
  • 150 g mayonnaise;
  • stack granulated sugar;
  • 100 g margarine;
  • 4 g soda.

Cooking method

Remove the margarine from the refrigerator in advance. When it becomes soft, put it in a container, beat in the eggs and grind thoroughly until smooth. Add mayonnaise, baking soda and sugar. Continue rubbing until the crystals dissolve.

Gradually add flour, stirring continuously. Knead the dough with your hands and divide it in half. We place one part in the freezer, and roll the other into a layer according to the size of the baking sheet. Place it on the oiled deco. We do not make large sides.

Distribute apple jam evenly throughout the dough. We take the dough out of the freezer and shred it using a grater directly over the layer of jam so that the crumbs evenly cover it.

Place the baking sheet with the pie in the oven for half an hour, preheating it to 160 C. Cool the finished pie, cut into slices and serve with any drinks.

You can decorate the top of the pie with whipped cream and chocolate chips. For flavor, before spreading the jam, sprinkle the dough with ground cinnamon. Baking time may vary up or down depending on your oven.
