How to make Sushi cake at home

This original and beautiful dish will appeal to lovers of Japanese cuisine. It is easier to prepare than traditional sushi and rolls, so you can easily prepare a treat for a holiday or family dinner.

  1. Boil the rice until tender in salted water. Cut salmon and cucumbers into thin slices.
  2. Line a 25 x 25 cm square baking dish with cling film and place the fish on the bottom.
  3. Place the cream cheese in a pastry bag, then brush the salmon with it.
  4. The next layer is cucumber strips and cheese.
  5. Combine vinegar and sugar in a glass. Mix the liquid with the cooled rice and shredded nori. Place the products in the mold and level the surface.
  6. Cover the cake with cling film and apply pressure. Place the dough in the refrigerator for 1 hour.
  7. When the required time has passed, turn the cake over onto a flat plate and remove the film.

A sauce made from cream, wasabi and curd cheese will give this dish a special taste.

Ingredients:

  • peeled boiled shrimp – 300 g;
  • boiled rice – 250 g;
  • curd cheese – 200 g;
  • lightly salted salmon – 150 g;
  • boiled tiger shrimps – 100 g;
  • avocado – 2 pcs.;
  • cucumbers – 2 pcs.;
  • nori seaweed – 2 sheets;
  • green onions - 3 feathers;
  • cream – 70 ml;
  • sesame – 60 g;
  • soy sauce – 60 ml;
  • rice vinegar – 50 ml;
  • sugar – 15 g;
  • wasabi – 15 g;
  • salt - to taste.
  1. Chop the green onions, cut the avocado into cubes, and grate the cucumber. Drizzle soy sauce over shrimp.
  2. Mix rice vinegar with sugar and a pinch of salt. Combine liquid with rice.
  3. Cut the salmon into thin strips.
  4. Beat the cheese, wasabi and cream with a blender.
  5. Place 1/3 of the rice in a springform baking dish with a diameter of 20 cm. Compact the base with wet hands.
  6. Cut the nori sheets into strips 5-6 cm wide, soak them in water and place them on the rice.
  7. Brush some of the cream onto the seaweed, top it with small shrimp, half the grated cucumber and half the remaining rice.
  8. Place nori, salmon, avocado, green onions, sesame seeds and rice on the filling.
  9. Place the dough in the refrigerator for 2 hours.

- fish (red, lightly salted) – 100 gr.,

for rice:

- rice (small grain) – 100 gr.,
- vinegar (rice) – 1 tbsp.,
- sugar (white) – 1 tsp,
- wine (dry, white) – 1 tbsp.

Recipe with photos step by step:





First, an hour before cooking the cake, boil the rice. To do this, rinse it thoroughly and soak it in cold water for about 20 minutes. Then we filter and fill it with cold water in the proportion of 2 parts of water to 1 part of rice.
While cooking, pour wine into the rice. So cook the rice covered over moderate heat for 20-25 minutes.
Then we put it in a colander, sprinkle with sesame seeds, add sugar and rice vinegar, mix the mass and the rice for the cake is ready.
Line the bottom of a large mold with cling film or grease it with refined vegetable oil.
Then we place thinly cut slices of red fish on the film.




In a separate bowl, mix soft cheese, wassabi (1 tbsp) and cream (1 tbsp).
Then we spread a thin layer of this cream on the red fish using a silicone spatula. Be sure to cook these with shrimp too.




Place dried seaweed sheets in one layer (they can be cut with scissors to fit the shape).




Now add half a portion of rice, gently pressing it onto the nori sheets with a spoon dipped in cold water.






For the next layer, mix wasabi with cream again (1 tablespoon each) and coat the rice with this sauce.




Now chop the fresh cucumbers with a vegetable slicer or simply on a grater and place them on top of the sauce.




Cover the cucumbers with rice mixed with the remaining cream cheese, and press the rice well so that it fits as tightly as possible.

Roll cake. How to make a layered version

So, we bring to your attention the first version of the cake, which is made in layers. The list of products is as follows:

1. Rice for sushi - 300 grams.

2. Nori sheet - 2 pieces.

3. Cucumber (medium) - 2 pieces.

4. Avocado - 1-2 pieces.

5. Lightly salted trout or salmon - 250-300 grams.

6. Rice vinegar.

7. Lightly salted soy sauce.

8. Wasabi.

9. Sesame seeds.

10. Ginger root (pickled).

Preparation:

Rice should be rinsed several times with running water. The bigger, the better. Until the water flowing from the colander is completely transparent. Allow excess liquid to drain. After this, transfer the rice into a saucepan, add water in a ratio of one to one and boil the rice for 10 minutes under the lid. Then remove from the heat and, without opening the pan, let the grains brew for the same amount of time.

Avocado and cucumber must be peeled and cut into long thin slices (it is convenient to use a special knife for this).

Lightly salted salmon (trout) must also be cut in layers into wide slices.

The nori sheet should be cut around the circumference or perimeter of the chosen cake pan.

You must first place a sheet of nori on the bottom of the mold or dish. The next layer is half of the prepared rice. Here we will make a note that if you are using a flat dish, then it is convenient to use a sliding form, in which all the layers are placed sequentially.

Then we repeat the layers, but instead of cucumber we will already have a layer of avocado. Place a second sheet of nori and the following layers on the salmon or trout: rice, avocado, fish.

The top of the finished cake is sprinkled with sesame seeds.

Ready! Now you just need to carefully remove the sliding form, cut the cake and serve with soy sauce, wasabi and pickled ginger.

Important note. If you used a deep pan to make the cake, the cooking technology will change slightly. In this case, the top layer will need to be covered with another, third sheet of nori. Press it firmly onto the fish so that all layers are compacted and carefully turn the cake onto a flat plate, trying to maintain its shape. And since the top layer will simply be dark from nori, it will need to be decorated.

Here let's look at the second option for preparing this dish, which we wrote about above. So, roll cake. How to make it yourself when you don’t know how to make the base itself, that is, these same rolls?

Here we will describe to you one of the simplest options for preparing them. We recommend not starting with complex options, but trying to make them for the first time, for example, the famous ones and then decorating the finished pieces in the form of a cake.

Ingredients:

1. Nori sheet - 3 pieces.

2. Cucumber - 1-2 pieces.

3. Soft cream cheese (preferably Philadelphia).

4. Special rice for sushi - 300 grams.

5. Avocado - 1-2 pieces.

6. Lightly salted salmon, salmon or trout - 250 grams.

Preparation:

Prepare the rice in the same way as in the recipe for the cake above.

Cucumber and avocado must be peeled and cut into long strips.

Fish fillets should be cut into wide thin layers.

Lay the rice in the next layer, leaving a narrow strip of clean sheet (about 3 cm).

Begin to tightly twist the “sausage” along its entire length, pressing all layers tightly against each other.

After 15-20 minutes, cut into finished rolls with a very sharp knife. Decorate the cake.

But buying the right rice doesn’t end there; it needs to be cooked correctly.

To do this, first rinse the cereal thoroughly. This is done like this: pour the rice into a saucepan, fill it with cold water and stir it several times with your hand, as if washing every grain. Do this procedure until the water becomes clear.

After this, pour cold water over the rice and leave it for 30-40 minutes. As soon as the rice doubles in size, fill it with clean water so that it is 2 cm higher than the rice itself. Place over high heat and bring to a boil, then reduce the temperature to low and cook under the lid until the water has completely evaporated ( 8-10 minutes). However, it should not be disturbed. Once the rice is cooked, turn off the heat and let it rest for 10-15 minutes.

How to choose nori

Pay attention to the production date and Gold, Silver, Red, Green markings. This is an indicator of quality. I think there is no need to decipher, the names speak for themselves. That's why we choose Gold for our cake. Nori should be intact, shiny and dry. The edges should be smooth and the color dark green, without gaps. To make it easier to work with and to reveal all the flavors, you need to hold it over a warm surface for 2-3 seconds, but not over an open fire!

How to choose an avocado

Only ripe avocados should be used in sushi. Its maturity can be determined by its color. We need a dark green, almost brown fruit. It will be soft and not have a tart aftertaste. But if the color of the avocado is too dark green, closer to black, then it is an overripe fruit and is not suitable for consumption.

How to choose cucumbers

You need to take ripe, firm, dark green cucumbers. It is best if it is a long variety with small seeds. It is better not to use soft, wilted vegetables.

How to choose fish

Sushi cake, the recipe of which necessarily includes the presence of seafood, does not imply one specific type. Which fish to use is up to each individual.

Let's take the most common one - salmon. When choosing salmon, pay attention to the color. If the fish is too bright, it is a sign of dye; if it is light, the storage conditions have been violated. It’s better to take a fresh (frozen) carcass and salt it yourself. Also, the finished fish may be too salty, which can affect the taste of the sushi.

Cooking fish is not difficult. To do this, rinse the fish and dry it. Mix salt and sugar (2 to 1) and rub the fish on all sides. For 1 kg of fish you will need 4 tablespoons of salt and 2 tablespoons of sugar. Place the fish pieces in a bowl and refrigerate for two days. After that, rinse it and leave it in water for 30-40 minutes. The fish is ready!

There are many options for sauces for rice, but we will take the most popular and 100% delicious. Add 2 tbsp to rice vinegar (50 - 60 ml). sugar and 1.tsp. salt. Mix everything thoroughly and add to the rice. For 1 kg of cooked rice - 80 ml of sauce. It’s better to pour in gradually so as not to overdo it. Leave the rice aside and stir it periodically with just a wooden spoon.

How to make a sushi cake

Peel and pit the avocado. Cut it into small (2x2 cm), thin pieces. Also remove the skin from the cucumber and chop it into the same pieces as the avocado.

We cut the fish into small squares or slices, having previously cleared it of skin and bones. If you think the fish is a little dry, you can add a little olive oil, but it doesn’t matter.
