1. Three zucchini on a coarse grater, add salt, add eggs, slaked soda with vinegar,

Delicious minced meat in a frying pan is not cutlets, not belyashi, or chebureks. This is something new and incredibly appetizing: lazy whites with zucchini.

Lazy whites with zucchini: step-by-step cooking process

  1. Place any minced meat (I made it from chicken thighs) into a bowl.
  2. Wash (young) zucchini, dry and cut into medium-sized pieces.
  3. Grind: grate, pass with meat through a meat grinder, or you can use a food processor.
  4. Transfer the zucchini to a bowl with minced meat, salt and pepper to taste (you can add your favorite spices), add semolina.
  5. Advice. Zucchini does not have a pronounced taste, so it is not noticeable in minced meat at all. But thanks to them, the dish turns out very juicy and tender.
  6. Knead thoroughly with your hands, leave for 20 minutes in the refrigerator so that the semolina swells.
  7. At this time we will make the batter ourselves. Beat raw chicken eggs into a bowl, add thick sour cream (I use thick homemade sour cream made from milk and butter), salt and pepper to taste.
  8. Stir everything with a whisk until smooth, and then add wheat flour. There is no need to add everything at once, focus on the consistency: the dough should be thick, like pancakes.
  9. With wet hands, form the minced meat into cutlets of any shape and size.
  10. Pour a lot of refined vegetable oil into the frying pan (if you use aromatic homemade oil, the taste of the dish will be even better), heat it up.
  11. Dip the cutlets into the batter and immediately place them in hot oil: it is most convenient to do this with two tablespoons.
  12. Fry over medium heat on both sides until golden brown. Then transfer it to the pan and finish cooking in the oven.

Lazy whites with zucchini will be a wonderful snack and will diversify your menu. They taste like chebureks and belyashi, but still differ from them.   1. Small zucchini needs to be peeled and grated on a grater with large holes.

  3. Add eggs, soda, slaked with vinegar to the chopped vegetables, add a little salt and mix everything thoroughly.

  7. To prepare the filling, we need to grind the chicken meat into minced meat.
  8. Advice. For this dish, it is better to take chicken meat: firstly, it is tender and lean; secondly, it prepares quickly.
  9. We grate the peeled onion on a grater with small holes: like for potato pancakes - or grind it in a blender.
  10. Mix the minced chicken with onion, salt and pepper our filling for lazy whites.
  11. Now we prepare our own lazy zucchini pancakes. To do this, pour vegetable oil into a frying pan. When it is well heated, add a tablespoon of zucchini dough and spread it thinly.
  12. Immediately place minced chicken in the middle of each circle: that is, the filling for our whites.
  13. Place another thin layer of zucchini dough on top of the minced meat. The layers should be thin so that everything cooks well.
  14. When the bottom of the stuffed zucchini is well cooked, turn them over and cover. Covered, they should fry for 3-4 minutes over moderate heat.

  • chicken fillet - 170 g
  • zucchini - 1 (large)
  • boiled potatoes in skins - 2-3 pcs.
  • garlic - to taste
  • parsley and dill
  • chicken egg - 1 pc.
  • semolina - 3 tbsp.
  • flour - as needed
  • baking powder - 0.5 tsp.
  • salt - to taste
  • ground pepper - a pinch
  • vegetable oil - 100 ml

Preparation time: 15 minutes.
Cooking time: 40 minutes.
Yield: 2 servings.

How to cook zucchini whites:

1) For squash whites, you can use any meat. Today I have homemade chicken fillet.

2) First, cut the chicken fillet into pieces and place in a blender bowl. Then add herbs and garlic to the meat to taste. Add a pinch of salt and spices as desired.

3) Puree the minced chicken with a blender and place it in a bowl. Minced meat can also be made in a meat grinder or simply finely chopped with a knife. If the minced meat is too thick, add a little water or tomato juice (30-50 ml) to it.

4) Grind one large zucchini and several boiled potatoes on a fine grater. Potatoes will add a soft texture to the squash whites. Break a large egg into the vegetable mixture and mix with a spoon.

5) Now add chopped herbs to the container with the zucchini-potato mixture. To hold the resulting dough together, add semolina. It will swell and absorb zucchini juice, which will begin to stand out.

6) Stir the vegetable dough and, if necessary, add a little flour (1-2 tbsp)

7) A pinch of baking powder will add airiness and fluffiness to the whites. At the very end, add salt and spices.

8) Heat vegetable oil in a frying pan and spoon out the zucchini dough. Immediately add minced chicken to the dough.

9) Now cover the minced meat with zucchini dough. Fry these whites over medium heat on both sides until cooked.
