The name “donut” comes from the Polish word “pączek”, which means crumpet. It will not be news to many that the United States celebrates Donut Day on the first Friday of summer. Various round shapes with or without a hole, with or without bright glaze and the presence or absence of filling (jam, chocolate or condensed milk) make donuts a bright delicacy. Today’s my recipe with step-by-step photos shows how to quickly and easily make delicious fluffy yeast donuts with kefir. From the many varieties of this dessert, we will prepare a classic version - a donut with a hole in powdered sugar.

Ingredients:

  • 1 tbsp kefir;
  • 1 egg;
  • 0.5 tbsp sugar;
  • 25 g butter;
  • 10 g dry yeast;
  • flour;
  • a pinch of salt;
  • powdered sugar;
  • vegetable oil.

How to make yeast donuts with kefir

To make dough for donuts, you need to add yeast, 1 spoon of sugar and 3 flour to kefir. Stir and set aside in a warm place for at least an hour.

Bring the butter to a soft state; you can melt it slightly.

Important to remember— yeast dough does not like cold ingredients!!!

Add butter and eggs to the dough.

Stir in flour.

For ease of kneading, grease your hands with vegetable oil. There should be no flour in bulk form. Otherwise, when frying the donut, a smoky sediment will form at the bottom of the pan.

Tear the finished dough into medium-sized donuts and let them rest for 30 minutes. During this time, the dough will rise, become soft and airy.

Using your index finger, create a hole in the center of the donut, slightly stretching the edges.

We “bathe” the donuts in hot oil on both sides. 🙂

To add more beauty and sweetness to our dish, cover with a good amount of powdered sugar, pouring each layer of donuts on the dish.

I don’t have to call eaters to the table.

They pull themselves up without waiting for the end of frying. 🙂

The best option for quick and easy baking is delicious, airy and fluffy kefir donuts, which I often prepare according to the recommendations of my grandmother, who in ancient times prepared excellent delicacies in literally half an hour, using an old simple recipe from a Soviet cookbook, which included step-by-step process with photos of the finished product. Classic dough for kefir donuts used to be not so easy to prepare; housewives did not have the appropriate kitchen equipment - today we can easily knead it using a blender and food processor, and the full recipe can be easily implemented at home.

Classic recipe for kefir donuts

Required kitchen utensils: whisk, frying pan, donut cutter, sieve, spoon, rolling pin, dough container and paper napkins.

Ingredients

How to choose ingredients

  • The most tender and airy baked goods are made from premium flour. But, at the same time, this flour contains the least amount of nutrients, since it has undergone the most thorough cleaning and grinding. This flour should be white, sometimes it has a light creamy tint. It has a neutral smell and crumbly structure. The presence of lumps or specks in flour is unacceptable. Buy this product in packaging made from natural materials. For example, in paper or fabric packaging. Fabric and paper allow air to pass through, so the flour does not rot.
  • Vegetable oil must be refined. It has gone through many degrees of purification, but its main advantage is the absence of odor. Natural sunflower oil from private enterprises is sold in the markets. It often has a strong smell of roasted seeds. This product will transfer its smell to the donuts, which is why it is best to use refined oil.
  • You can use both kefir and sour milk in this recipe.. It can be prepared at home. If you buy kefir in a store, never forget to look at the expiration date. This is not only an indicator of freshness, but also an indicator of naturalness. The shorter the shelf life, the more natural the kefir. The presence of starch as a thickener is a bad sign; it means that the production technology is broken. When making kefir, only milk, dairy products and starter culture are used.

Step-by-step recipe for delicious kefir donuts

Preparing the dough

  1. Whisk 1 egg.
  2. Add 4-5 tbsp. l. sugar and continue beating.

  3. Then add 250 ml of kefir, a pinch of salt and mix again with a whisk to obtain a homogeneous mass.

  4. Add 0.5 tsp. soda and 30 g of melted butter and mix well.

    It is important that the oil is not hot.

  5. Now add 390g of sifted flour. It needs to be added in parts so that the dough reaches the desired consistency.

  6. It should not be too tight or too runny. When you add the first portion of flour, stir the dough with a whisk. At some stage, the dough will become denser and the whisk will no longer cope.

  7. Then prepare your work surface and sprinkle it thickly with flour. Place the dough on it and start kneading with your hands. The ideal dough for kefir donuts should be soft. If it sticks a little to your hands, the next step will fix it.

  8. Make a small depression in the dough and pour 3-4 tbsp into it. l. vegetable oil.

  9. Lubricate your hands with this oil and knead the dough, this time with oil. If it leaks out during kneading, it's not a big deal. Gradually it will all go into the dough.

Forming and frying donuts

  1. Roll out the kneaded dough to about 1 cm thick.

    It is not advisable to roll out donuts using flour, as it will burn when frying. You should have some vegetable oil left on your work surface; it will prevent the dough from sticking. If there is no oil left, you can add a little more, just be careful not to overdo it.

  2. A special donut cutter will give your baked goods the desired look. If you don't have one, take a simple bowl and a small glass. Use a bowl to squeeze out the main circle, and a glass to squeeze out the middle. For this purpose, you can use different round dishes, it all depends on your imagination.

    Just don’t forget to grease it with vegetable oil, otherwise the dough may stick to it.

  3. Pour vegetable oil into a frying pan and heat over low heat.

  4. To prevent the oil and donuts from burning, it is advisable to fry them over low heat, slightly less than medium. This way they will be baked from the inside and will not burn.

  5. Place the finished donuts in one layer on a flat plate covered with paper. All the baked goods will not fit on one plate, so take several pieces. You can't stack donuts on top of each other. They are quite greasy, so you need to let the oil drain onto the paper, and not from one donut to another.

  6. Sprinkle the cooled donuts with powdered sugar. You can buy it in a store or make it yourself using a coffee grinder. You can also crush the sugar in a mortar.

How to decorate and serve

The classic decoration for this dish is powdered sugar.. It can be supplemented with small coconut shavings. Donuts will also look great with glaze. It can be of different colors, depending on the dye you choose.

If you prefer a natural design, make chocolate frosting. It can be made from dark or white chocolate. Or you can combine both glazes, then you will get a bright contrasting decoration. Small fresh strawberries or currants will be a beautiful addition to this muffin.

This dish can be served with tea or any other drink. Boiled or regular condensed milk would also be appropriate. Jam or preserves will also work.
