Surely you have heard, and maybe even tried, Zebra pie. The amazing taste and interesting presentation cannot but remain in the memory. I absolutely love baking this pie because I appreciate that it doesn’t take up a lot of my time. And the products needed for cooking are the simplest and most affordable. But recently I slightly supplemented the recipe and modified it for a Zebra cake, preparing the dough with kefir or sour cream and spreading the cakes with lush cream. I will be happy to share all the details with you.

The history of the Zebra cake

The Zebra pie's cut resembles the stripes of the animal of the same name., so it’s not surprising that he got exactly that name. There is also a cake with the same name, only there the alternation of dark and light tones occurs not in one cake, as in our case, but in several cakes of different colors. Today we will figure out how to prepare the dough and bake a Zebra cake at home using a classic recipe with photos step by step with some interesting additions.

How to make Zebra cake at home

Before preparing the Zebra pie using a step-by-step recipe with photos, you need to turn on the oven to 160 degrees.

According to the Zebra cake recipe, to prepare the cakes at home, we will need a fairly large bowl. Break the eggs into it, add two pinches of salt, sugar and beat this egg mixture with a mixer until smooth and light white foam.

Then 2 tsp. We extinguish the soda with vinegar and add to the total mass. Also pour in 400 g of sour cream and mix everything well. The sour cream in this recipe can be replaced with kefir or regular yogurt without fillers. I make Zebra cake and pie according to the classic recipe with photo, usually with sour cream and occasionally with kefir.

You can also prepare Zebra cake using a slow cooker. Bake the cakes in the “Baking” mode for 60 minutes, and then open the lid and let the biscuit stand for 10 minutes so that it cools, after which you can remove it.

Now let's start adding flour to the dough. We will need 3-4 glasses. It is important to sift the flour into the dough gradually, observing the correct consistency. The dough should be a little liquid.

Now you need to take a second bowl and divide the dough into two portions in half. I usually do this by eye.

Add 4-5 tbsp to one bowl. l. cocoa powder You can add more if you want. This will affect the color of your dough and the contrast of the future cake. Sift a little more flour into a second bowl. Mix the dough in both bowls thoroughly.

You don't need to add a lot of flour. Make sure that the dough is not too thick, but resembles the consistency of thick sour cream and flows from the spoon when tilted.

Now take two baking dishes. If they are removable, you can line the bottom with parchment paper. If ordinary, grease with oil and, if desired, sprinkle the bottom and walls with flour, semolina or breadcrumbs.

We put both forms in front of us and proceed to the most interesting part - forming patterned biscuits for the future Zebra cake.

To do this, place first one spoon of white dough in the center of both forms, then one spoon of dark dough, then again one spoon of white dough, etc., until all the dough is finished.

You will get beautiful striped cakes that need to be placed in an oven preheated to 160 degrees for 45-50 minutes. A lot depends on your oven. Therefore, do not forget to check the baked goods with a toothpick and, if necessary, leave them in the oven for a couple more minutes.

If you only have one baking dish, that's okay. Just prepare one cake layer first, and when it is baked, form and place the second one in the oven.


We use the time while the cakes are baking to prepare syrup and cream for the cake.

To prepare the syrup for soaking our cakes, pour sugar, vanilla sugar into a saucepan and add water.

Then put it on the fire, bring it to a boil, then remove the saucepan and wait for the syrup to cool completely.

Zebra Cake Cream Recipe

To prepare the cream for the Zebra cake, pour cold sour cream into a chilled bowl, add sugar, vanilla sugar and beat everything thoroughly with a mixer to achieve a fluffy, airy cream consistency.

When both cakes are ready and completely cooled, trim the tops by cutting them off with a knife, and you can start soaking and assembling the delicious Zebra cake.

We place the first cake layer, apply our impregnation to it with a kitchen brush, then spread a thick layer of cream and place the second cake layer on top.

Making zebra pie. Beat the eggs into a clean deep container and add sugar. Beat everything with a mixer into a fluffy, thick mixture.
Melt the butter (I did it in the microwave) and pour it into the egg mixture, whisking everything with a mixer. Then pour in kefir. So we will end up with a recipe for zebra pie with kefir.
Mix flour with baking powder and sift through a fine sieve. Knead the thick dough for the zebra pie.
Divide the dough into two equal parts. Add cocoa to one part. Mix thoroughly.
Grease the zebra pie baking pan with a piece of butter or line it with parchment paper.
First put 2 tbsp in the mold. l. white dough, place 2 tbsp on top. l. chocolate dough. So we form the base for the zebra pie until all the dough is gone.
Place the pan with the dough in a preheated oven at 180 degrees. The zebra pie should be baked in the oven at this temperature for 40-50 minutes.

To prepare the zebra cake, let the zebra cake cool. Using a thread, cut off the uneven top. Then cut the zebra pie into two equal parts. This can also be done using thread.
Preparing sour cream. Beat sour cream with sugar and a bag of vanilla sugar into a thick cream. At the end, add a piece of butter so that the cream does not subsequently spread into the zebra cake, and mix very thoroughly.
Cooking chocolate glaze. Combine milk and sugar in a saucepan. Bring everything to a boil on the stove, stirring constantly until the sugar dissolves. Add cocoa powder. Mix thoroughly. Cooking method:

1. In a bowl, cream the butter with half the sugar. Then, having beaten the eggs into another bowl, lightly beat them with a whisk or mixer and mix them with the oil mass.

2. Mix sour cream with baking powder and add it to the butter-egg mixture, mix again.

3. Pour flour into the resulting mass, then, mixing it well again and dividing it in half, add cocoa to one of the parts.

4. After greasing the baking dish and sprinkling it with flour or breadcrumbs, place 2 tablespoons of dark and light dough into it alternately, so that each color falls into the center of the previous one.

5. Transfer all the dough into the mold in this way, then bake the cake in an oven preheated to 180 degrees.

6. To prepare the glaze, mix sour cream with butter, sugar and cocoa in a saucepan, and bring to a boil with constant stirring (so that the sugar dissolves).

7. Taking the finished pie out of the oven, cut it lengthwise into 2 parts, then spread both sour cream to soak them (we prepare it by whipping sour cream with sugar). After that, cover the cake with glaze and sprinkle with chopped nuts.

Recipe 2: Zebra cake with semolina cream and condensed milk

This is an easier zebra cake recipe. Here, the “striping” of the cake is achieved very simply: we simply alternate brown and light cake layers, folding the cake. However, this will not affect its taste, and it turns out no worse than classic zebra.

3 eggs;
1 tsp. soda;

for dark crust:

200 gr. fat kefir;
400 gr. flour;
3 eggs;
200 gr. Sahara;
3 tbsp. l. cocoa;
tsp soda;

layer cream:

800 gr. milk;
200 gr. semolina;
200 gr. Sahara;
150 gr. butter;
1 tsp. citric acid;

for the top of the cake:

a can of boiled condensed milk;
100 gr. walnuts.

Cooking method:

1. To prepare a light cake, beat eggs with sugar, then add kefir with flour and soda, slaked with vinegar, and knead the dough.

2. After greasing the mold with sunflower oil, put the dough there and bake for about half an hour at a temperature of about 170 degrees.

3. To prepare the dark cake, beat the eggs with sugar, then, adding kefir with soda, slaked vinegar, cocoa and flour, knead the dough. Bake in the same way as light cake.

4. To prepare semolina cream, bring the milk to a boil, then pour semolina into it in a thin stream and add sugar, cook with constant stirring. Add oil. When the mass has cooled, add citric acid and mix well.

5. Having cut each of the cakes into three parts, put them into the cake, alternating dark cakes with light ones and coating each with semolina cream. Cover the top cake with boiled condensed milk and sprinkle with chopped nuts.

1. Beat the cream with half a glass of milk, instant pudding and sugar with a mixer, add cottage cheese to the mixture and mix well.

2. Taking an oblong mold and greasing it with vegetable oil, fill it three-quarters full with the resulting cream.

3. Dipping the cookies into the remaining milk, “sink” them into the cream in several rows. This will help you get stripes on the cut of the cake. Place the remaining cream on top and smooth it out, then cover it with film and place it in the freezer for several hours.
