Since feta cheese is usually salted, it is advisable to add something to it for a more harmonious taste of the filling. Usually this is cottage cheese, other homemade or store-bought cheese, or, as in my version, hard-boiled eggs.

Prepare the ingredients according to the list:

Grate the cheese coarsely or crumble it with a fork.

Peel the eggs and also grate or chop them.

Mix the cheese with the egg mixture and the khachapuri filling is ready.

Thaw the dough at room temperature and cut into small rectangles. From a standard package containing two sheets of dough, I got 12 pieces.

Roll each piece into a square. Try not to disturb the layers, so roll mostly in one direction. Place the filling on the dough, leaving the corners of the dough clean.

Preparation of khachapuri:

  1. Combine sugar, salt and soda.
  2. Pour kefir into a deep bowl, add vegetable oil, then a mixture of sugar, salt and soda. Mix everything.
  3. Gradually add flour a little at a time and mix with a whisk until you get a soft dough. Flour can be added if necessary.
  4. Roll the elastic dough into a ball (it should not stick to your hands), put it in a bowl, cover with a towel and put it in the refrigerator for three hours, but you can also overnight.
  5. Grate the cheese, add butter and egg, mix until smooth.
  6. Take the dough out of the refrigerator and divide it into balls. Roll each one out to a thickness of 0.5 cm. Place the filling in the middle of the flatbread, wrap it in the form of an envelope, press it with your hand or a rolling pin, and sprinkle with flour.

With feta cheese and cheese

Prepare the following products:

  • 500 ready-made puff pastry;
  • 250 g cheese;
  • 350 g cheese;
  • 50 g flour;
  • 100 g butter;
  • one egg.

  1. Grate the cheese on a coarse grater, put it in a suitable bowl, break the egg, mix it all well.
  2. Cut the dough sheet into four squares of the same size and roll them out.
  3. Place the filling in the middle of each of them, connect the corners to form an envelope, and pinch them properly so that the filling does not leak out.
  4. Make all the remaining khachapuri and place them on a baking sheet or in a baking dish. Brush the top with egg, but this is not necessary.

First you need to sift the flour

Add baking powder, a teaspoon each of salt and sugar. Stir all this, add the egg and kefir and knead the dough

Now put the dough in the refrigerator for 1 hour, and in the meantime grate the cheese. You need to be careful here. The cheese should be only a little saltier than usual. If it is even more salty, then it needs to be diluted with plain cheese.

Take out and roll out part of the dough. Place the filling in the middle.

  1. Grate the cheese, add butter, naturally melted, and 1 chicken egg. Mix thoroughly.

  • Kefir – 1 tbsp.
  • Flour – 3 tbsp.
