Its healing properties have been used since ancient times. Cherries have anti-inflammatory, antibacterial, expectorant and antiseptic effects. The beneficial properties are also preserved in tincture, liqueur, preserves, and jam.

Berry juice has a positive effect on the digestion process and helps cope with long-term constipation. A tasty tincture of cherries with vodka will be especially useful for people with problems with the circulatory system and heart pathologies. In this case, you need to add buckwheat honey to the classic recipe. In terms of the content of nutrients, it is not inferior to juicy berries, and in a duet the effect will be as positive as possible.

What to use for tincture - vodka or alcohol?

In medicine, medicinal tinctures are made with alcohol. High-grade liquid dissolves well various substances contained in fruits, berries, herbs, thereby enhancing the therapeutic effect. You can use vodka to make the tincture at home. It is necessary to choose the highest quality alcoholic product.

A simple recipe for cherry liqueur

There are many options for preparing a delicious berry drink. Every avid winemaker has a “secret” ingredient that creates an extraordinary cherry vodka liqueur. The recipe for the classic drink involves the use of only three ingredients: cherries, sugar and alcohol. Experts say that if you replace food alcohol with good, high-quality vodka, the taste of the tincture will not be affected.

Cherries for making a homemade drink should be juicy and ripe, burgundy in color. Some varieties of berries are quite sweet, so you will need a minimal amount of sugar. Not only freshly picked fruits, but also frozen ones will be used if the tincture is prepared in the cold season.

How to prepare a cherry tincture with vodka with a pleasant aroma and special taste? It is recommended to lightly dry the cherries in the sun to remove excess moisture. To do this, lay the berries on cardboard or newspaper in one layer and leave them in the sun. After 2-3 days, the cherries will reach the desired state. If the weather is not favorable, you can use the oven and place the berries there for 4-5 hours. This is done to enrich the taste of the cherry drink.

Cooking process

For 3 kg of ripe berries you need to prepare 500 g of sugar and 2.5 liters of alcohol (vodka). The amount of sugar can be increased if you like sweeter drinks. It is still better to start with a minimum amount and gradually change the volume of components as desired. Before preparing a cherry tincture with vodka, you should prepare a container for infusing the alcoholic product. A three-liter glass jar, thoroughly washed, will do.

The cherries need to be washed well with clean water (you can use a sieve). Don't take risks and use unwashed berries. Although many experts argue that this practice is no exception.

Clean berries are placed in a jar in a small layer, then half the sugar should be added. Next, add the cherries and a layer of sugar again. The final component should be a berry, which is placed up to the very neck of the jar.

The last step is to fill the container with vodka. The liquid should completely cover the cherry fruits.

How to properly age a drink?

The jar must be closed with a lid (nylon) and signed with the start date of preparation. It is better to infuse “cherry” in a dark place, for example in a cellar or pantry. This way the rich color of the drink and pronounced taste will be preserved. Many people advise not to limit the tincture's air intake and to cover the jar with several layers of clean gauze.

After a few days, you need to remove the container and mix the contents. This must be done for four weeks so that the sugar is completely dissolved. After the main aging, the drink should be filtered and poured into clean bottles. Place the remaining cherries back into the jar and add sugar again. Both the liquid and the berries should be infused for at least another week in a dark place.

Final stage

In order for the tincture of cherries with vodka to acquire its characteristic rich taste, it is necessary to mix the strained liquid with the resulting syrup. The thick syrup can be strained through cheesecloth or a fine sieve. Having combined the components, the tincture is poured into bottles with corks. It is recommended to immediately taste the resulting product and, if necessary, dilute it with natural cherry juice. In this form, the vodka tincture of cherries with pits can be stored for a year. After this period, the taste characteristics change somewhat, but such a product is also allowed for consumption.

“Spicy Cherry”: recipe

Fans of original aromas and unusual tastes will love the cherry tincture with vodka (a simple recipe) with the addition of various spices. You need to stock up on the following components:

  • Cherry (dark, juicy) - 2 kg.
  • Vodka (or diluted food alcohol) - 1 l.
  • Sugar - 250-300 g.
  • Cinnamon - half a teaspoon or 2 sticks.
  • Cloves - 8 buds or 1 teaspoon.
  • Nutmeg, star anise - half a teaspoon.
  • Coriander - optional (0.5 tsp).

The berries should be sorted, washed and dried. Each cherry must be pierced with a toothpick in order to release more juice into the tincture. The fruits are placed in a clean, wide-necked container in layers, alternating with spices and sugar. Spices can also be poured into a thick fabric bag and placed in a bottle.

If you seal the bottle with a lid, the drink will taste strong. To make the tincture soft and easy to drink, it is better to tightly tie the neck with gauze folded in several layers.

The infusion process differs from the classic recipe. It is necessary to keep the container in the sun (possibly on a windowsill) for 2 months. Be sure to stir the cherries every 3 days. When the tincture of cherries with vodka is ready, it is filtered and poured into a bottle. This drink is stored in a cool place, protected from sunlight. Cool well before serving.

Recipe for quick cherry liqueur

When you want to surprise guests with an alcoholic drink of your own making, for example, for a celebration, but there is little time to prepare it, you should turn to a proven and reliable method. A quick tincture of cherries and vodka is made within 2 weeks. It is important to follow the technology, and then the end result will be an amazing drink.

First of all, carefully wash the cherries and get rid of leaves, cuttings and spoiled fruits. The quantity needed is enough to fill the bottle to the top. Before filling the container, the berries must be dried so that the tincture is not watery.

To make a homemade cherry drink, it is better to take vodka that is not the cheapest, because the taste of the future tincture depends on this ingredient. Choose the one you usually buy for a feast. You will need at least 1 liter of it. We take the minimum amount of sugar - 200 g.

Step-by-step instruction

We pour clean berries into the bottle up to the neck and fill it with forty-degree liquid so that all the cherries are covered. Close the container tightly with a nylon lid and place it in a dark, cool place (not a refrigerator) for 2 weeks.

The next stage is straining. Separate the liquid from the cherries using gauze or a sieve. Leave the berries in the same glass container and add sugar. This part is again covered with a lid and left to infuse.

Pour the liquid into a clean container, close the lid and place in a dark place.

After 4 days, you need to drain the syrup squeezed through cheesecloth from the cherries and add it to the second bottle. Now the alcoholic product is considered completely ready for use. It is advisable to store the tincture in the cellar or on the bottom shelf of the refrigerator.

Do I need to remove the pits from cherries to prepare the tincture?

Before making a cherry tincture with vodka, many people wonder about removing the pits. Is it really worth doing this, because the hydrocyanic acid and amygdalin they contain negatively affect the body? In fact, the possibility of poisoning is excluded.

The process of infusing the drink is not so long that harmful substances have time to be released. In addition, the drink is not subject to heat treatment. Cherry pits do not increase bitterness, but, on the contrary, enhance the taste, making cherry vodka tincture drinkable.

Recipe for "cherry" without seeds

You will have to work hard to prepare such a drink. Seeds from berries are not removed very quickly, especially if you use improvised tools. The most common option is using a safety pin or hairpin. The rounded side of the instrument is carefully placed in the hole where the stalk was located, and the seed is removed. For this occasion, avid winemakers and lovers of cherry jam can purchase a mechanical machine for squeezing out the seeds.

The finished cherries (1 kg) are covered with sugar (3 kg) and left for several hours until the juice is released. After a few hours, pour vodka (1 liter) into the container with berries, cover with a lid and shake a little. The bottle must be placed in a dark place where the temperature does not rise above 20 °C.

After 3 weeks, the drink must be filtered and bottled. In a cool place, tincture of cherries with vodka retains its taste characteristics for at least 3 years. You can drink such alcohol without fear, but in moderation.

Cherry liqueur without sugar

The easiest way to prepare the drink is cherry tincture with sugar-free vodka. In this case, it is better to use only the sweetest berries. The taste of such “cherry” will be with a subtle sourness, more intense. It is prepared according to the classic recipe, but excluding granulated sugar from the list of ingredients. Many winemakers advise pouring berries with food grade alcohol diluted to 45°. Infuse the fruits for at least 30 days in a dark and cool room. Then it is filtered and bottled with screws or corks.

Nalivka is a sweet fruit and berry alcoholic drink. The strength of such a drink usually ranges from 18 to 20%, sugar content - 28-40%. It is made from alcoholized juices and infusions of fresh fruits and garden berries. Sometimes alcohol is added to strengthen it and speed up the production process.

Depending on the preparation method, the ripening period for liqueurs ranges from one month to six months. There are late-ripening, mid-ripening and early-ripening liqueurs.

Wash the cherries. Remove the tails. We do not remove the seeds. They give flavor to the finished drink. Wash the jars. Mentally divide the jar into 4 parts. We put cherries in 1/4. Sprinkle 4-5 tbsp. l. sugar, add cherries and sugar again. So, until the jar is filled to 3/4 of the total volume.

After a while, drain the liqueur. Then filter through gauze folded in several layers. Pour the liquor into bottles, but do not fill the bottle to the very top. Already in the bottle the liqueur will play slightly. After 1 week, open the bottle caps and release the air. Close again. Place the liqueur in a dark place for 1 month. Regardless of the recipe, the liqueur is prepared according to the same principle:

  1. Selected cherries are covered with sugar and left for up to 3 days.
  2. Afterwards, an alcohol-containing element is added, mixed and left to infuse for 1-3 months.
  3. The finished product is filtered from the cherries with pits and poured into a more suitable container, which must be sealed.

Product storage rules

The finished homemade tincture with seeds must be stored in a tightly sealed container. It is better to keep the liqueur in the refrigerator or cellar or basement. In such conditions, the shelf life of the product will be 3 years.

Features of use

If an alcoholic infusion of berries with seeds is used purely for medicinal purposes, then the amount should be limited to 50 ml once a day. But most often such alcohol is consumed on holidays.

It’s better not to drink tincture with seeds with vodka just like that. It goes well with many dishes and snacks. Unsweetened liqueur with seeds goes well with meat products and fish. The sweet liqueur goes well with cheese or various dessert dishes and cold appetizers.

Step 1 out of 6

Wash the cherries. Go through. Remove the tails. Do not remove the pit. It adds flavor to the liqueur. Place cherries in well-washed jars. I used 3 liter jars. Place cherries in 3/4 of the jar. Sprinkle sugar between layers of cherries. For each jar about 500 grams. More is possible. Sugar will add strength.

Step 2 out of 6

The original recipe said that you should add all the cherries, then the sugar. I tried to do this. As a result, the sugar remained at the top, and the cherries released juice weakly. Don't do this!

Step 3 out of 6

Fold the gauze in three. Use a rubber band and cheesecloth to cover the neck of the jar. Place in a warm place for 2-3 days. Usually the liqueur is prepared in the summer. A sunny window sill is quite suitable. After 3 days on the cherry, a light foam will appear at the edges. It's okay if you increase the time by 1-2 days. The main thing is that the first signs of fermentation appear. Remove the gauze from the jar. Place a glove over the can. It is better to tie the edge of the glove tightly to the can. Make a hole in the glove itself with a needle.

Step 4 out of 6

After 3 days on the cherry, a light foam will appear at the edges. It's okay if you increase the time by 1-2 days. The main thing is that the first signs of fermentation appear. Remove the gauze from the jar. Place a glove over the can. It is better to tie the edge of the glove tightly to the can. Make a hole in the glove itself with a needle.

Step 5 out of 6

Return the jar with the glove to a warm place for 3 weeks. Your participation will not be needed yet.
After a while, the cherry will begin to ferment, and the glove will wave its hand at you. The hole we punctured serves as insurance so that the glove does not get torn off.
After 3 weeks the gloves will fall off. Remove them from the jars. Place a plastic lid with holes on the jar and drain the liquid. Afterwards, the liquid itself will need to be driven through gauze twice. This will remove all impurities.

Ready!

Pour the resulting liqueur into bottles. Place in a cool place like a cellar. Pour the liquor into the bottle not right up to the cap. In the cold, processes will take place, and the liqueur will be drawn out. You can drink it straight away, but it is too strong.
I got 3 liters of first-press liqueur.
Do not throw away the cherry pulp that remains in the jar. Add 300 grams of sugar to each jar and pour in as much water as you drained the juice. Put on a rubber glove and leave again in a warm place for 30 days. This will be a second-press pour.
Then you will also salt it, filter it and bottle it. The two types of liqueur can be mixed or stored separately.
After 3-4 days after the bottle is clogged, open one of your bottles. If you hear a hissing sound, it means the liqueur is still fermenting. Pour all the wine into a single jar and put a glove on your throat. Let the wine ferment for 1-2 weeks. Filter. Bottle again.
