It’s rare that a family doesn’t like fresh baked goods. All kinds of cakes, pastries, buns and cookies are especially popular among men and children. And women, when they are not on a diet, of course, don’t mind enjoying a piece of fluffy charlotte or eating a couple

Pies with cottage cheese also occupy a place of honor in the hierarchy of flour products. When they sit in the oven, so fragrant and rosy, all family members, including the cat and dog, gather in the kitchen to smell the smell. And everyone can’t wait to get their portion of freshly baked goodies. Today we will talk about how to make pies with cottage cheese, discuss different recipes for their preparation and filling options. So let's get started without delay!

Baked goods

Dough pies with cottage cheese can be sweet and salty, oven-baked and fried, puff pastry and yeast... Everyone can choose a recipe to their taste. Take, for example, baked pies with cottage cheese. As a rule, they are prepared from yeast dough. And to bake them, you will need:

  • flour - 400-500 g;
  • granulated sugar - 3 tbsp. l. with a slide;
  • fast acting - 7 g;
  • milk - 200 g;
  • eggs - 3 pcs.;
  • cottage cheese - 400 g;
  • sunflower oil - 2 tbsp. l.;
  • a pinch of vanillin and 0.5 tsp. salt.

Don't forget that yeast dough doesn't like drafts! When working with it, the kitchen window should be closed.

First, sift the flour into a large bowl, then add the yeast into it and mix. Heat the milk until slightly warm. Under no circumstances should it be hot! Beat one egg into the flour with yeast, pour in the milk, add 1 tbsp. l. sugar and salt, mix everything thoroughly. Then add oil. At this stage, the dough becomes difficult to knead with a spoon (by the way, it is recommended to use a wooden spoon) - it’s time to move on to manual kneading. Lightly dust the surface of the table with flour, then place the resulting dough on it.

Knead it well for about 15 minutes - it should stop sticking to your hands. Then return to the bowl, cover with a clean cotton towel and leave in a warm place for one hour. Then take out the noticeably risen dough, knead it thoroughly again and let it rise again for an hour.

Preparing the filling

In the meantime, you can prepare the filling. Divide the remaining two eggs into whites and yolks. Pour the cottage cheese into a bowl, mash with a fork and mix with the yolks, 2 tbsp. l. granulated sugar and vanilla until smooth. If you like dried fruits, you can add a handful of well-washed raisins. When the dough has arrived, you can start making pies with cottage cheese.

Divide it into equal small pieces. Each of them is a future pie. The lumps need to be rolled out into circles, with a spoonful of cottage cheese filling placed on each one. Then carefully pinch the edges and shape the pie. Line a baking sheet and place flour products on it. Cover again with a towel, then let rise for half an hour. Then preheat the oven to 200 degrees.

Let's bake!

Lightly beat the whites with a fork and use a brush to form pies. Place the pan in the oven and bake the pies until done. If a toothpick or match remains dry after being inserted into the dough, and the product itself has acquired an appetizing golden color, then you can take it out! However, keep in mind that when baking yeast dough, it is better not to open the oven for the first half hour - it may not bake.

It is better to keep the finished pies with cottage cheese in a saucepan with a closed lid so that they remain soft. However, believe me, such baked goods will not be stored for long anyway - family members will instantly snatch them up!

Puff pastries

Now we’ll tell you how to make puff pastries with cottage cheese. For them you will need:

  • ready puff pastry - 600 g;
  • cottage cheese - 300 g;
  • eggs - 3 pcs.;
  • dill, green onions, salt and pepper.

So, while the puff pastry is defrosting, prepare the filling. It is better to take dry (low-fat) cottage cheese, because whole pies may not turn out crispy. Place it in a bowl and remember with a fork.

Finely chop the dill and green onions. In principle, you can take any greens to your taste - parsley, cilantro, etc. Add salt, pepper and stir. Beat in one egg, stir until smooth. The filling should be thick. If the egg is large and the mixture is runny, add more cottage cheese. Now start working with the dough. Lightly roll it out lengthwise and cut into equal squares. The number of squares you get will equal the number of pies you get.

Visually divide each quadrilateral into two identical parts and make three short parallel cuts on the right. Place the filling on the left side. Then carefully cover the mound with the “cut” side of the dough and carefully pinch the edges so that the pies do not open during baking. The cuts are needed so that steam can escape through these holes.

And now - into the oven!

Line a baking sheet and lightly dust with flour. Preheat the oven to 180 degrees, carefully place the pies on a sheet. Beat the remaining two eggs with a fork and use a brush to thoroughly brush each piece.

Bake puff pastries with cottage cheese for about half an hour, until crispy. They turn out beautiful, with three holes through which the filling shines through appetizingly. Delicious both hot and cold. These savory pies can even be served with soup instead of bread.

Another recipe

And, of course, we can’t help but mention the one with cottage cheese. Their recipe is simple. The filling can be prepared using any of the proposed methods - either sweet or salty. And for the dough you need to take 2-2.5 cups of flour, 300 g of kefir, 1 tbsp. oil (sunflower), 1 tsp. sugar, half a tsp. soda and salt.

Pour kefir into a bowl, dissolve the soda in it and add sugar and salt. Then pour in the vegetable oil, mix everything thoroughly and pour the sifted flour into the bowl. Knead the dough with your hands and let it sit for half an hour. Then separate one piece at a time, roll it out thinly and, placing the filling in the center of the resulting flatbread, form pies. All that remains is to fry them on both sides in sunflower oil until golden brown.

Enjoy your meal!

Forgot to grease your puff pastries before baking? It's easy to fix! After baking, sweet products can be coated with honey or simply sprinkled with powder. Salted puff pastries are greased with oil.

Did the curd filling turn out liquid? You can add dried fruits, such as raisins, to it. Over time, it will absorb some of the moisture. If the cottage cheese itself is weak, then it is placed in a gauze bag and hung. Excess whey will definitely drain off.

It is very important to place puff pastry products in an already preheated oven. Otherwise they will dry out and crumble.

Step 1: prepare the dough.

When buying ready-made puff pastry, pay attention to the expiration dates and condition of the packaging. The dough itself must be of a certain plate or roll shape, without bumps or pinches, otherwise this may mean that it was defrosted during transportation.
Unpack the puff pastry and defrost it according to the instructions on the package. Usually it just needs to be left at room temperature for a while. You cannot refreeze the dough, so use exactly as much as you need, no more.

Step 2: prepare the egg.

Break the egg into a bowl and beat it until light foam using a whisk or a regular table fork. Many housewives suggest using only egg whites, but I don’t see much difference in order to pore over separating the yolk once again.

Step 3: form the puff pastries.

Dust the dry surface of the countertop with a small amount of flour. Lay out a layer of dough and roll it out carefully, making it thinner. Using a knife, carefully cut the dough into rectangles of any size. Usually I divide the layer into 4-6 parts. Inside the resulting squares or rectangles, place a little curd mass, placing it in the center. Brush the edges of the future puff pastries with beaten egg.

Fold the dough, extending one of the corners to the opposite one so that you get a neat triangle. Use your fingers to press the edges down, then run the tines of a fork or the flat side of a knife around them.

Step 4: bake puff pastries with cottage cheese.

Set the oven to preheat to 170 degrees Celsius. Grease a baking sheet with vegetable oil and place the puff pastries into it, leaving a free space of about 1-2 centimeters. This is necessary to ensure that the baked goods do not stick together. Brush the dough pieces with egg on top, make several small punctures in each with a toothpick, and immediately after, place it in the preheated oven for 15-20 minutes. The finished puff pastries will be covered with a golden crust and will rise a little, so you will determine that they are ready and can be removed from the oven.

Step 5: serve puff pastries with cottage cheese.

Serve the finished puff pastries with cottage cheese slightly cooled, it tastes better this way. Transfer them to a large, beautiful serving dish, brew fruit tea without sugar and start eating. And you don’t need to call anyone, your whole family has already come running to the aroma of sweet pastries.
Bon appetit!

Instead of curd mass, you can use regular cottage cheese by simply mixing it with granulated sugar. In this case, for aroma and taste, I add a little more vanilla sugar, literally 10 grams.

Before baking, puff pastry can also be greased with vegetable oil or an egg diluted with water in a one-to-one ratio.

In some recipes, chopped or ground walnuts are also added to the curd mass filling. But for my taste it turns out much more interesting with almonds.

Of course, you can use yeast dough to make puff pastries, but keep in mind that then they will turn out more airy and larger.
