Eggs do not tolerate sudden changes in temperature. With a sharp increase, an accumulation of moisture forms on the outer surface, which promotes the development of microorganisms. With a sharp drop in temperature, moisture appearing on the inner surface of the shell also contributes to the development of microorganisms.

To preserve the freshness and good quality of eggs you need to:

store eggs in the refrigerator at a temperature of 1 to 2 ° C;

store only eggs with clean shells;

do not store warm eggs;

Do not immediately transfer cold eggs to a very warm room;

check the integrity of the shell before storing it, since cracked eggs deteriorate faster than others (a crack, if it is not noticeable, can be easily detected by lightly tapping one egg against another - a cracked one makes a rattling sound);

And do not store broken eggs, but sell them as soon as possible;

Do not place eggs near strong-smelling foods.

If a catering establishment receives eggs with contaminated shells, they should be washed and dried and placed in a dry, clean room. It is not recommended to store such eggs.

Depending on the timing and methods of storage, eggs are divided into dietary and table. The first ones go on sale no later than five days from the day of laying, and have a stamp with a number.

Table eggs are divided into fresh, refrigerator and limed. If dietary requirements are violated, the eggs are transferred to the next category and called fresh. Eggs stored in the refrigerator for up to 30 days are also considered fresh. Eggs that have been stored in the refrigerator for more than 30 days are called refrigerator eggs. Limed eggs include eggs that are stored in a lime solution. All eggs, except fresh ones, are of little use for cooking: dishes whose recipes include beaten whites or separate whites and yolks. Refrigerated and limed eggs are only suitable for dough. The latter can be distinguished by their appearance - they have a fragile, uneven shell of a lilac hue, covered with tiny particles of lime. When you touch such eggs, white spots remain on your hands.

When using eggs, the cook must remember that a stale egg can cause gastrointestinal illness and that one poor-quality egg can spoil a large amount of dough, sauce, etc. Therefore, it is necessary to carefully check the appearance, color, taste and smell of eggs. We must also not forget that especially fresh eggs are required to prepare a certain group of dishes. An ordinary table egg can be fresh enough for hard-boiling, making omelettes, dough for pies, sweet pancakes, but not suitable for soufflés, Easter cakes, puddings, and sponge cakes. Dishes that include beaten whites in the recipe require a particularly fresh egg with a very dense white, otherwise it will not be possible to beat it. If the white is dense, then the yolk is almost invisible when viewed. When whipped, dense protein produces a fluffy, stable foam. Very fresh eggs are required for dishes such as fried eggs, eggs in a bag, since even the slightest taste of “staleness” in these products is very strong.

You can start lunch, dinner or even breakfast with cold cheese and egg snacks. Small portioned dishes are perfect for whetting your guests' appetites before serving the main course.

The cook must take into account that eggs are a sanitary-hazardous product. Protein serves as an excellent environment for the life of microorganisms. The shell protects the egg from getting inside; when damaged, microorganisms easily penetrate the protein. Fresh eggs contain the bactericidal substance lysozyme, a strong antibiotic, but when storing eggs, its activity decreases. Therefore, if sanitary processing rules are violated, eggs can become a source of dangerous food poisoning and infections, especially those associated with Salmonella group microbes.

The egg shell may contain microorganisms that contribute to the occurrence of infectious diseases. Therefore, before preparing egg dishes, you should perform their primary processing:

determine the freshness of eggs;

process thoroughly (the eggs are washed with warm water, preferably in a solution of baking soda (2 tablespoons per 1 liter of water));

rinse with boiled water.

The temperature of cold dishes and snacks made from eggs and cheese when serving should not exceed 10-12°C.

"Cheese croquettes"

Cheese croquettes are a spectacular hot snack made from bread, cheese, eggs and milk.

Ingredients: White bread (without crust) 300 g., Milk 1 glass, Eggs 2 pcs.

Cheese 100 g, dill, cinnamon, salt

White bread is cut into cubes. Place the bread in a deep bowl, pour in milk and leave for 15 minutes. After this, knead the bread with a fork and beat in 1 egg. Add coarsely grated cheese, salt, cinnamon and mix thoroughly. Make balls from the prepared mass. Dip them in beaten egg with chopped herbs. Fry the cheese croquettes until golden brown in plenty of oil. Place the cheese croquettes on a napkin to drain the oil. Serve hot.

"Cheese platter"

Ingredients: Dor-Blue cheese, Maasdam cheese, homemade cheese, grapes, nuts, herbs.

All three types of cheese are cut into cubes, placed on a large plate, and decorated with grapes, walnuts and herbs.

"Eggs stuffed with sprats"

Ingredients: eggs - 4 pcs., sprats - 1/2 jar, mayonnaise

The eggs are boiled. Cut into 2 parts.

The yolks are taken out and mixed with sprats. Everything is kneaded well.

Fill the whites with filling and decorate the stuffed eggs with mayonnaise.

"Eggs stuffed with salmon"

Ingredients: 5 eggs, 150 g lightly salted salmon (or trout, pink salmon), mayonnaise, parsley

Cut the eggs lengthwise into two parts. Remove the yolks and chop. The greens are finely chopped. Mix yolks and greens. Add mayonnaise and mix. Stuff the egg halves with the resulting mixture. The salmon is cut into thin strips. The strips are twisted into a rosette. The rosette is placed on half of the egg. Decorate with greens.

"Eggs stuffed with mushrooms"

Ingredients: 8 eggs, 20 g dried porcini mushrooms, 1 onion, 1 tbsp. a spoonful of melted butter, 4 teaspoons of mayonnaise and sour cream, 3 teaspoons of ketchup, herbs, salt.

For hard-boiled eggs, cut off part of the white from the blunt end and remove the yolks. Pre-soaked dried mushrooms are boiled, finely chopped, fried, mixed with sauteed onions and yolks, and salted.

The resulting minced meat is used to fill the whites, place them in a salad bowl, covering them with cut “caps” of whites on top, pour in the sauce, and decorate with herbs. To prepare the sauce, mayonnaise is mixed with sour cream and ketchup.

Technological process for preparing hot snacks from various products

Hot appetizers are similar in preparation technology to main hot dishes, but differ from them in their sharper taste, and are served in special dishes: portioned frying pans, crowns, small saucepans - cocotte makers. Hot snacks are included in the menu after cold ones.

A wide variety of products are used to prepare snacks: green salads and meat. Potatoes, fish, poultry, cheeses, etc. Therefore, the nutritional value of snacks is different: some of them are low in calories and serve only as a source of flavoring substances, vitamins and mineral compounds, others are rich in proteins, fats and their energy value is high.

Hot dishes are usually served at the beginning of a meal, after cold appetizers. In this case, they are called appetizers; they complement the composition of the main courses, decorate the table, satisfy hunger, stimulate appetite and complement the nutritional value of diets.

Ready-made hot snacks should be cooked through, but not overcooked. When served, they should have a temperature of 65°C, be beautifully decorated, and have a characteristic aroma.

Hot snacks cannot be stored. They are prepared immediately before serving. It is not recommended to leave snacks for the next day and reheat them, as they lose their taste and the shelf life of the products is limited.

The range of hot snacks is very diverse: hot sandwiches, warm salads, snacks from baked vegetables, fish, meat, poultry and eggs, fried and boiled meat, fish, poultry, hot game with spicy seasonings and sauces. As a rule, hot snacks are divided into the following groups:

  • a) hot sandwiches;
  • b) warm salads;
  • c) fish dishes;
  • d) dishes made from meat products;
  • d) julienne.

Among hot appetizers, juliennes, fried and baked meat and fish, and stuffed vegetables are widely popular. For example, an assortment of hot snacks:

Sour cream and mayonnaise sauce contain a significant amount of fat and therefore increase the calorie content of hot snacks. The recipe for many hot appetizers includes vegetable oil or sauces and dressings for them. Such dishes are a source of unsaturated fatty acids.

The main purpose of snacks is to stimulate appetite. The appearance of the dish plays an important role. To give appetizers an attractive appearance, various decorative elements from fresh and boiled vegetables and herbs are used.

Vegetables are cut into the form of stars, spirals, diamonds, and flowers are cut out of them. Mostly edible elements are used to decorate dishes. The presentation of dishes should not be overly complex and time-consuming. The work of preparing dishes is facilitated by the use of special devices: molds, recesses, carving knives, etc. In this case, sanitary rules must be strictly observed.

It is customary to prepare hot appetizers in portions. Such snacks include a variety of julienne dishes, which are prepared in cocotte makers, fish dishes baked in chilli makers, as well as a variety of dishes in portioned frying pans. The dishes in which hot snacks are prepared are placed on plates covered with paper napkins.

Despite the fact that snacks are called hot, they should not be scalding. Before serving, they can be reheated in the oven or microwave. Hot appetizers are served after cold ones, before the main course, if provided. If several varieties of hot appetizers are prepared, then fish, then meat, then poultry, and then mushroom and vegetable are offered.

Pancakes and a variety of pies with savory fillings are also considered hot snacks. It is desirable that the pies served to the table be small and have a variety of fillings. Ingredients:

  2. Add curd cheese to the radishes. Stir the mixture until smooth. Wash the green onions, dry them and cut them into rings. Add to the cheese mixture.
  3. Initially, I already had cottage cheese with herbs. But there is not as much of it as I would like. Do you remember our goal? Make the filling as healthy as possible! That is why it is worth adding more greens. Read more:
  4. Mix the resulting mass well again. Spread the cream cheese filling onto the double chips. Whenever possible, I always stack the chips in twos - it tastes so much better!
  5. Serve the appetizer right away! Otherwise, the chips will become soggy and won't crisp up.

Cucumber appetizer with curd cheese

Ingredients:

  • 10 medium sized cucumbers
  • 180 g curd cheese
  • 50 g dried cranberries
  • 4 thin slices of salted salmon, trout, or some smoked fish (I used catfish)
  • 2 tbsp. nat. yogurt
  • 3 green onions
  • 1 sprig of rosemary, a handful of any greens
  • salt pepper

Cooking method:

  1. Place cranberries in a saucepan and add rosemary. Pour a glass of boiling water and bring to a boil. Turn off and cool. Remove the rosemary and strain the cranberries.
  2. For the filling, combine cottage cheese, yogurt, finely chopped herbs, green onions, and cranberries. Salt and pepper.
  3. Peel the cucumbers, cut into 4-5 cm cubes. Next, according to the recipe, you need to remove the seeds, preserving the walls and bottom. I honestly tried, nothing worked. That's why I got this little tool.
  4. And I made through holes in the cucumber slices. Stuff the cucumbers with filling and garnish with chopped fish.

  1. Drain the liquid from the beans and tuna, mash the beans lightly with a fork, and leave the tuna in large pieces. Add lemon juice and chopped parsley, stir; I almost never put salt in salads, but you have the right to add a little salt or add soy sauce - it will also be interesting!
  2. Toast the baguette/ciabata in a dry frying pan until desired. Brush lightly with olive oil and grate with garlic if desired. Place a generous portion of cheese and top with salad. I don’t really like onions in salads, but in this case, thin half rings on top just asked for it - just a little bit, for decoration and flavor accent.

Tomatoes stuffed with cheese and cucumbers

Ingredients:

  • Tomatoes - 5 pieces
  • Cucumber - 1 piece
  • Cream cheese - 150 grams
  • Mayonnaise - 1-2 tbsp. spoons
  • Greens for decoration - To taste

Cooking method:

  1. Prepare all the necessary ingredients. Choose small tomatoes, approximately the same size. It will be good if they are sufficiently hard and elastic.
  2. Cut the cucumber into small cubes. Please note: if the skin of the cucumber is bitter, it is better to cut it off.

A very interesting appetizer made from turkey meat, cream cheese and soft cream. Rolls will become the main meat dish on any holiday table. Tender and juicy, they go well with any side dish.

Ingredients:

  1. Take two peppers of different colors, cut off the tops, remove seeds and membranes. Prepare tapenade paste: combine lemon juice, zest of 1/3 lemon, olives, 2 anchovy fillets, 1-2 tbsp. l. capers, garlic, 1 tbsp. l. thyme, 1 tbsp. l. oregano and olive oil.
  2. Grind the ingredients in a blender until smooth, salt the paste to taste and place in the refrigerator. Chop the parsley and mix with cottage cheese, salt and pepper to taste.
  3. Fill the peppers with the cheese mixture, cool and then cut crosswise into slices. Place green salad leaves on a plate.
  4. Place slices of peppers on the salad, add pasta to the slices, garnish with olive halves and herbs.

Stuffed eggplants with curd cheese

Ingredients:

Carrot rolls with curd cheese

Ingredients:

Cooking method:

  1. Peel the carrots. Using a grater, cut the carrots into thin slices. Place a pan of water on the fire. Let's add salt and pepper. Place carrot slices in boiling water. Let's cook them a little.

Ingredients:

  • spinach
  • curd cheese 100 grams

Cooking method:

Appetizer of red fish with curd cheese

An excellent alternative to our usual red fish sandwiches. The appetizer is prepared in a matter of minutes, and it turns out really tasty. It is best to use lightly salted fish. Instead of cream cheese, you can use any soft cream cheese such as Philadelphia or Napoleon. Cheese with additional flavor or aroma is also suitable. Any crispy cookie is suitable as a base. Take note of this simple way of serving red fish, your guests will certainly appreciate it.

Snack on crackers with cream cheese

Holiday appetizers are filling thanks to sausage. This recipe uses smoked ham, but ham will also work. One point: the sausage must be uniform for ease of bending; large pieces of lard may interfere or fall out unsightly. Cottage cheese should not be confused with cottage cheese; this characteristic soft mass can be found in any supermarket. An appetizer with a homemade processed cheese sandwich will be even tastier. We take spices to taste, but I recommend paprika: it gives the cheese a pleasant red tint. So this ingredient will be combined with sausage not only in taste, but also in color. Ingredients:

  • 100 g salted crackers (20 pcs.);
  • 250 g curd cheese;

  • several sprigs or leaves of fresh herbs (parsley, dill, basil, lettuce);

  • 100 g sliced ​​sausage (10 slices).

Cooking method:

  1. Mix the cream cheese with paprika, salt and pepper in a bowl with a spoon. If the sausage is salty, do not add too much salt. Let the neutral taste of cheese make the appetizer harmonious, because there will also be an olive. Spices not only add color, but also make the dish more appetizing. The aromas of paprika and black pepper stimulate the appetite, and what else do you need at a rich New Year's table?
  2. Thinly slice the sausage. It is advisable to cut the sausage stick at an angle so that the pieces are elongated. We divide each plastic into 2 parts crosswise. Depending on the size of the crackers, make sure the piece fits comfortably on the cracker.
  3. Fill a pastry bag with cheese and apply the mixture onto the cracker in a circle, from the edge to the center. This creates a relief layer of cheese cream. You need salty crackers, preferably round ones, but small square ones are also possible. Check how easy it is to bite into the cookie. It is good if it is dense, but easily broken.
  4. We decorate all the cookies this way. By the way, you can make a pastry bag yourself. Make a square out of a sheet of parchment paper and fold it diagonally. The result is a triangle. Turn the obtuse angle up and fold the funnel from one acute angle to the other. Cut the edge of the funnel at an angle or give the tip a star shape for a relief design. Done, now you can fill the curd mass and decorate the crackers. This pastry syringe is used once.
  5. Place the pieces of sausage deep into the cheese mixture in a zigzag pattern at an angle, as in the photo. The result will be something like the Latin letter S. The cheese mass is dense, it will hold the sausage in the desired shape. Try not to touch the cream with your fingers to avoid unsightly dents. By the way, the thinner you cut the plastics, the easier it will be to form such a wave.
  6. Place olives and sprigs of herbs into the fold of the sausage (don’t forget to wash the greens). Greens will not only add color to the appetizer, but also refresh it. Instead of parsley, you can use crispy iceberg lettuce; the taste of green basil in the appetizer will also not be out of place. Zucchini roll with curd cheese

Summer is the season for zucchini, and you can cook everything from them. Among my favorite zucchini recipes is zucchini roll. It’s not difficult to prepare, but it turns out so delicious. You can make any filling you like: vegetable, mushroom, curd. I have it with cottage cheese, herbs and garlic.

Ingredients:

  • young zucchini without peel 600 g
  • flour 100 g
  • sour cream 60 g
  • egg yolk 3 pcs.
  • egg white 3 pcs.
  • baking powder (slightly heaped) 1 tsp.
  • black pepper
  • curd cheese 400 g
  • any greens 1 bunch
  • garlic cloves 2 pcs.
  • parsley leaves for decoration

Cooking method:

  1. Grate the zucchini on a coarse grater, add salt, and let stand for 10 minutes. Drain off the juice and squeeze well.
  2. Add yolks, sour cream, flour with baking powder to the squash mass, add pepper if necessary.
  3. Beat the whites into a stable foam, carefully add them into the zucchini mass in three or four additions, gently stirring from bottom to top.
  4. Line a baking tray with baking paper, grease it with vegetable oil, and place parsley leaves on the paper for decoration (you can do without decoration).
  5. Here you need good quality paper to which nothing sticks, and be sure to additionally lubricate it with oil. Baking tray size 29/35 cm.
  6. Carefully pour the dough onto a baking sheet so as not to knock off the pattern of parsley leaves. Smooth the dough over the surface. Bake in an oven preheated to 180 degrees for 15-20 minutes.
  7. Remove the cake from the oven, place it on a (dry) towel along with the paper, and leave to cool for about 30 minutes.
  8. While the zucchini crust is cooling, prepare the filling. Mix curd cheese with any finely chopped herbs, finely chopped garlic, and puree everything with a blender. if the cheese is not salty, add salt to taste. Ingredients:
