Step by step recipe

  1. Place water in a saucepan to boil.

  2. Rinse the cauliflower thoroughly under running water. Disassemble it into small inflorescences.

  3. Add half a teaspoon of salt to the water and, when it boils, place the prepared inflorescences there and cook for about five minutes.

  4. Beat the eggs into a separate bowl, add milk, starch, mustard, a quarter teaspoon of pepper and whisk the liquid until smooth. The filling is ready.

  5. Drain the water and place the cabbage in a colander.

  6. While the cabbage is cooling, brush the bottom and edges of the baking dish with softened butter. Sprinkle it with breadcrumbs.

  7. Place the cooled cabbage florets into the pan. Distribute it evenly and fill it with filling. Sprinkle grated cheese on top.

We will take:

A delicious combination of vegetables and mushrooms; for me, there’s no need for meat, just make this casserole. Instead of champignons, use any mushrooms, only pre-boiled ones.

We use the following products:

  • Small cabbage head
  • Two young zucchini
  • Small carrot
  • Three hundred grams of fresh champignon mushrooms
  • Two medium onions
  • Two cloves of garlic
  • Two hundred grams of cheese
  • Piece of white loaf
  • Teaspoon of sugar
  • One and a half tablespoons of vinegar
  • Sunflower oil
  • Table salt, pepper mixture

Preparation:

Let's prepare the crackers in advance. Cut the loaf into cubes. Crush the garlic into the oil and pour over the bread. We put it on a baking sheet, put it in a very hot oven, and immediately turn it off. In fifteen minutes the crackers will be ready.

We dilute vinegar and sugar in two-thirds of a glass of water and marinate thinly chopped onions, keep it for about twenty minutes.

Cut the zucchini into cubes, mushrooms into plastic pieces, and carrots into cubes. Fry the carrots and mushrooms a little in a frying pan. Fry the zucchini in the same oil.

Place the cabbage inflorescences in salted boiling water for three minutes. Then dry and place in the prepared pan. Add mushrooms, onions and zucchini there, mix, cover with foil and bake for fifteen minutes.

Then we take out the pan, remove the foil and add crackers, sprinkle cheese on top and put it back in the oven for fifteen minutes.

4. Place the yolk and white in separate containers.

6. Beat the egg whites with salt into a fluffy foam. Try to achieve stable peaks, otherwise the soufflé will quickly collapse during baking.

7. Drain the cabbage in a colander. Let the inflorescences cool slightly.

8. Remove all hard stalks from the inflorescences, but do not throw them away. You will need them to prepare the sauce. Grind them into a paste using a blender.

9. Add chopped stalks to the egg sauce.

10. Carefully fold the whites into the sauce. Make sure that the foam does not settle.

11. Grease a refractory ceramic mold with oil.

12. Place a layer of cabbage mixture in the pan. Spread chopped tomatoes and peppers evenly over it.

  • Sesame (seeds) – 1 tbsp. l.

Algorithm of actions:

  1. Preparing the casserole begins with cooking the cabbage: both broccoli and cauliflower (divided into florets) need to be blanched in boiling, lightly salted water. Then drain the vegetables in a colander. Cool a little.
  2. Cut the ham (by the way, it can be replaced with regular boiled sausage) into cubes.
  3. Grate half the cheese using a grater with small holes, the other half with large holes.
