Cooking step by step:

Take the puff pastry out of the freezer in advance so that it thaws at room temperature for half an hour. You cannot speed up the defrosting process in a microwave oven or in any other way; it should become soft naturally.
While the dough is defrosting, let's make the apples. After washing them, cut them into quarters and remove the partitions with seeds. It is also better to peel the peel - the taste will be more delicate.

Cut the apples into thin slices or cubes.


Now that the dough has thawed, it’s time to make puff pastries.

They can be formed in many different ways - with envelopes, corners, honeycombs, roses, scallops... I'm sure you will have a couple more of your own options.
You and I will definitely learn different techniques for serving buns, but first, let’s master one of the simplest methods - puff pastry.

Cut the dough strips into squares. Place 3-4 apple slices in the center of each, sprinkle with sugar and a little cinnamon. Then we pinch all four corners of the square tightly so that the puff pastries do not open during baking.

There are many recipes for making puff pastry, from the simplest to the quite complex. You can make extra dough; you just need to put it in the freezer. It should be stored for no more than a month.

Puff pastry buns can be prepared in the form of rolls, roses, and pies. You can add any jam, poppy seeds, jam, cinnamon or coconut.

Ingredients:

  • 280 ml cold water;
  • half a teaspoon of salt;
  • 680 g flour;
  • 90 g butter;
  • a couple of apples;
  • half a glass of sugar.

Step-by-step recipe for puff pastries with apples

Cool the completely boiled water and add salt. Stir.

Sift the flour through a sieve and gradually add it to salted water. Knead the dough for nine minutes until elastic.

Place the dough on a board sprinkled with flour. Roll out thinly.

Melt the butter and brush it over the entire surface of the dough using a special brush.

Roll the dough tightly into a rope, taking your time and wrapping gradually. Wrap the resulting dough in cling film and place it in the freezer for three hours.

Wash and peel the apples, remove the core.

Remove the dough from the freezer and roll it into a rectangle. Cut out even strips that are shorter in length.

Grate the apples and place the resulting mass over the entire strip of each piece of dough, sprinkle with sugar on top. Pinch the edges of the dough along the entire length, and wrap the resulting sausage in the shape of a snail.

Grease the sheet with vegetable oil and place the buns. Place them in an oven preheated to 200 degrees for 35-40 minutes.

How to quickly make puff pastries with apples

How to cook

How to cook

Take the dough out onto a floured table and let it thaw a little. It should be soft enough to be easy to roll out. If it starts to stick, you just need to periodically sprinkle it with flour.

Remove the seeds from the apples and cut them into the thinnest slices possible.

Boil water in a saucepan, add sugar, lemon juice and add the apples. Cook for three minutes, remove and dry.

Cut the dough into strips about three centimeters wide.

Place apple slices on each strip, edges on top of each other. At the bottom you need to retreat one centimeter.

Wrap the resulting blanks into rolls and fold the bottom edges.

Place everything on a baking sheet and place in the oven for half an hour at 190 degrees. Sprinkle the finished buns with powdered sugar.

If you don’t have metal or silicone molds, you can use regular paper ones or make them yourself from foil. It is better to take apples for such baking that are already quite ripe, but not completely overripe, so that they do not turn into mush during cooking.

To prepare false puff pastry, you need to remove the butter from the refrigerator in advance. Separate 50g of butter from the package and melt in a saucepan. Leave the rest of the butter on the counter at room temperature. I used a bread machine to make the dough for the cruffins. First, in a separate bowl, I diluted yeast and sugar in warm milk and left it under a towel for a few minutes. I poured flour and salt into the bread machine container. I turned on the kneading mode in the bread machine, and gradually poured milk with yeast into the container, and then melted butter (50g). The dough was kneaded for 20 minutes. During this time it became soft and stopped sticking to your hands.

I left the dough in the bread machine container to proof for 1 hour. The dough has approximately doubled in size. This can be seen in the photo.

Knead the risen dough and divide into 6 equal parts. Roll each part into a ball, cover with a towel and leave to proof for 10 minutes. Then roll each ball very thinly into a large rectangle until transparent.

Cut the peeled apple in half and then use a vegetable peeler to cut into thin slices.

Divide the soft butter into 6 equal parts. Alternately, evenly coat the rectangle with 1/6 of the oil. This should be done in a cool room so that the oil does not flow too much. Roll the oiled rectangles into tight rolls. Place each roll on a cutting board, cover with a towel and repeat the same with the remaining 5 pieces of dough.

When all 6 rolls are ready, use a sharp knife to cut each roll lengthwise into two equal parts. You will get 12 layered strips.

As soon as the apples release their juice, carefully drain it. For the filling, use only dry, well-wrung out pieces, otherwise the puff pastries will get soggy and fall apart in the oven.

There is another 100% way to make the filling so that the puff pastries do not leak in the oven. Place a teaspoon of butter in a frying pan and add apples and sugar. For flavor, you can mix apples with vanilla sugar, not regular sugar. Simmer the apples and sugar over the heat for 10 minutes, stirring constantly with a spatula. During this time, the sugar and juice from the apples will turn into a thick syrup, and the fruits themselves will become soft and give up excess liquid.

Forming puff pastries

Puff pastry is usually not rolled out to make the finished product more fluffy and flaky. Therefore, you can only roll it out lightly so that the final thickness is at least 0.5 cm. Cut the layer into quarters (about 10 -20 cm). Each piece of dough will be a puff pastry.

If you decide to make as many puffs as possible, in this case the dough needs to be rolled out thinly. But the finished baked goods will not be as voluminous.

Place 1 tbsp on each piece of dough. l. apples There should be enough space from the filling to the edges of the dough. Remember that the dough is no less tasty than the filling; you should not add too much to avoid the filling leaking out.

You can form the puff pastries directly on the baking sheet so as not to transfer them from the cutting board.

On top you need to cover the puff pastry with exactly the same size layer of dough. I have a shaped knife roller that allows me to easily make a mesh. That is, you need to run a roller over the dough plate, leaving a pattern that is not completely cut.

Use a knife to spread the mesh apart.

Cover the filled puff pastry with a mesh piece of dough.

If there is no figured roller, you can make closed puff pastries. In this case, cover the apples with exactly the same size layer of dough.

There is another option to make cuts with a regular knife. Make slits at a distance of 1 cm from each other; excess steam will escape through them, and the appearance of the puff pastries will become more interesting.

I press the dough around the edges and press it tightly. You can press the edges with a fork: you will get a beautiful curly rim. Squeeze as hard as possible to prevent the puff pastries from opening in the oven.

Place the pieces on a baking sheet lined with parchment.

To make the puff pastries have an appetizing and crispy crust, brush a mixture of yolk and milk with a brush. Break an egg into a small bowl and scoop out the yolk into a separate cup.

Add 1 tbsp. l. milk and stir the mixture. For crunch, you can lightly add salt to the puff pastries.

Using a pastry brush, coat each puff with this mixture.

To ensure that the delicacy gets a caramel crispy crust in the oven, use the following trick: combine 0.5 tsp. cinnamon and 1 tsp. Sahara.

Stir the dry mixture.

Now sprinkle the puff pastries on top. The sugar will stick well to the egg grease and the puff pastries will get a wonderful crust.

Now another secret to delicious puff pastry in the oven. Using a spray bottle, spray the puff pastries with plain cold water. This way the puff pastries will become even tastier, the dough will rise and reveal its layers much better.

After 20-25 minutes in the oven, the puff pastries will be ready. Be sure to cool the puff pastries before serving. The filling is so hot that you can burn yourself with it!

Sprinkle the finished treat with powdered sugar through a sieve. It will be even tastier and more beautiful. Bon appetit! The puff pastries are satisfying and moderately sweet.
