Liqueurs are incredibly tasty and healthy alcohol. One of these is grape. It began to be made so long ago that it is difficult to name the exact date. One thing can be said that alcohol obtained from grapes has always been considered one of the best - vessels with it were placed on altars to please the gods, glasses with a sparkling drink were raised in palaces for the health of kings, doctors used them to treat many diseases, exhaustion, fatigue, depression.

The benefits of grapes have long been proven and they are successfully used in the modern world both as a delicacy and as a medicine. The composition of grapes allows you to restore the nervous system and blood composition, rejuvenate the skin and heart, cleanse the body of toxins and cholesterol, and defeat cancer cells. And the most important thing is that after any processing, the wonderful berries retain all the benefits and the entire range of their properties.

Grape liqueur is an excellent alternative to wine, and many believe that it is even tastier and richer. In addition, it is not sold in stores. But if you like it, cook it for your health!

Contraindications to drinking this drink are only a few health problems: obesity, diabetes, purulent processes in the lungs.

To prepare high-quality liqueur at home, you need to select high-quality raw materials for it. To do this, you will need sweet Muscat grapes (white or red), such as Russian Concord, Lydia (pinkish) or Isabella (purple). Small blue grapes or their homemade analogues are best used for wine.

Nuances:

  1. Grapes for liqueur are harvested ripe or overripe at a time when the weather is dry and warm outside.
  2. The berries for liqueur are not washed, you just need to separate them from the branches and sort them out. Bad ones - throw away (or use for making wine, chacha, etc.)
  3. If you notice that there was not enough natural yeast (from the skins of the grapes), i.e. the fermentation process has not begun, then add a handful or two of raisins to the “preparation”.
  4. The sweetness and strength of the liqueur can be adjusted by adding or subtracting a small amount of sugar or alcohol (vodka).

Classic grape liqueur

This recipe consists of completely natural ingredients. It contains no additives and is prepared without vodka. Its sweetness can be varied. The strength of the finished drink is 11-14%.

Prepare:

  • sweet grapes – 2 kilos
  • sugar – 0.5 – 0.7 kilo
  • water - 0.5 liters (sometimes, to increase the strength, the amount of water is reduced to a glass)

  3. Tie the neck of the container with a piece of gauze (protection from stones, etc.) and place it in a warm place for 2-3 days (the temperature in the chosen place should be 18-25°C).
  4. When you notice that fermentation has begun, remove the gauze and install a water seal instead, or use a rubber glove with a puncture in one of the fingers. Some craftsmen use a punctured condom (not used!) instead of a glove for this purpose - in general, this is a matter of taste.
  5. Now that everything is ready, place your liqueur in a warm place out of the sun for 1-1.5 months.
  6. After making sure that fermentation is complete, pass the liqueur through a cotton gauze filter (both cotton wool and gauze must be sterile) and pour into sterile (boiled or kept in a hot oven for 30 minutes) bottles.
  7. Be sure to do a tasting and store your liqueur for 2-3 years in a cool place (basement, cellar, refrigerator).

  4. As soon as signs of fermentation appear, place a water seal or a rubber glove with a puncture in your finger on the container.
  5. After a month (maybe a little more), when fermentation is completely completed, pass the liqueur through a cotton-gauze filter (both the cotton and gauze must be sterile) and add alcohol. In addition to vodka and diluted alcohol, you can also use moonshine. But it must be of very high quality (distilled 2-3 times and purified). Mix both liquids, taste and adjust the sweetness of the product (you can sugar it by adding 100-150 grams of sugar).
  6. Keep the liqueur in a cool place without light for 4-5 days, pass it through a sterile cotton-gauze filter again and pour into sterile (boiled or kept in a hot oven for 30 minutes) bottles.
  7. Taste the drink and you can safely store it (in a cool place) for about 3 years or even a little more.

Fortified grape liqueur

In this recipe you will use strong alcohol (vodka, well-refined moonshine, diluted alcohol), but you will not use water. This liqueur is prepared quickly. Its strength will be approximately 15%.

Prepare:

  • sweet grapes - 2 kilos
  • vodka (diluted alcohol) - 0.5 liters
  • granulated sugar - 0.5 kilos.

You need to prepare it like this:

  1. Make syrup from sugar and water, simmering it for 5 minutes over low heat after boiling.
  2. Crush the grape berries and pour in cooled (to room temperature) syrup. Pour in alcohol and mix everything.
  3. Infuse the liqueur for 2 weeks in the dark under the lid, shaking from time to time.

  • grape juice – 1.5 liters
  • sugar – 0.5 – 0.7 kilo
  • vodka – 1 bottle (0.5 l.)

You need to cook like this:

  1. Heat the grape juice, but do not bring it to a boil (not higher than 90º). Steam comes out of the saucepan - remove from heat.
  2. Add sugar and dissolve it.
  3. Pour 100 ml of vodka and 300 ml of sweet juice into 5 glass bottles (preferably sterile) and shake thoroughly. You can taste it every other day.

Grapes are an amazing crop, suitable for making wine, chacha, juice and all kinds of strong liqueurs to taste. Infused berries make healthy alcohol-containing dessert drinks. Preparing sunberry liqueurs is simple, you just need to be patient and follow some recommendations. And we will tell you how to do it at home.

Unlike wine or chacha, the technology for making tinctures does not require special equipment or experience. The recipes for making grape liqueurs are very simple, however, not many people know them. The material presented below will introduce the most popular options. The main ingredients for their preparation are grape base, strong alcoholic drinks, and flavoring additives. To make the liqueur tasty, rich, aromatic, When manufacturing, the following principles should be taken into account:

  • select suitable raw materials;
  • follow the recipe;
  • insist in a dark place;
  • meet deadlines;
  • filter;
  • store correctly.

Compliance with important aspects will allow you to avoid mistakes; the result of your efforts will be a noble grape drink with a pleasant aftertaste. A small amount of tincture prepared at home will become a panacea for many diseases, stress, and will solve problems with poor appetite. The power of infused alcohol has been known since ancient times. Healers used it for anemia and neuralgia, but did not recommend it for diabetes.

Grape-based tincture is a source of health and vitality.

Selection of ingredients

It does not matter at all what variety is taken (white or blue), purchased at the market or collected from the plot. There is no fundamental difference in choice, the only difference is the color of the finished liqueur and taste. From the experience of winemakers, we can say that richer-tasting drinks are obtained from Regent, Bessarab, and Isabella wine varieties. If desired, you can take dessert varieties Muscat velvet, early Russian, and Vostorg. It is worth noting that the aromatic bouquet will depend on the taste of the grapes.

Raw materials must be fresh and unspoiled. The same goes for strong drinks; you need to take high-quality alcohol, vodka or home-made moonshine. If the recipe does not provide for flavoring additives, you can add them according to your personal preferences. For example, someone loves lemon flavor and wants to taste it.

By experimenting with additives, you can get new flavors of the drink every time.

Selecting the best bunches of grapes for preparing the tincture

Cooking rules

  1. To make the liqueur tasty, choose only ripe raw materials.
  2. To prevent the product from becoming bitter, we must separate the grapes from the bunches.
  3. Infuse in glass containers; bottles with a capacity of 1, 2, 3 liters are ideal for this purpose.
  4. The tincture should be in a dark place, this could be a closet or pantry.
  5. Unlike wine, the raw materials for this product must be washed, because we do not need the fermentation effect.
  6. To achieve a beautiful color and transparency, the finished product is filtered and, if necessary, clarified.

Options for preparing grape tincture

There are two main options, one - when raw materials with sugar are poured with alcohol, the second - involves the preparation of sugar syrup. For an alcohol base, any alcohol with a strength of up to 45 degrees is suitable. If you use real alcohol, you will need to dilute it. Many people use purified moonshine for this purpose. Alcohol will prevent fermentation from occurring, sugar will soften the taste, grapes will give the drink a beautiful color and a pleasant aftertaste with noble fruity tones.

On alcohol

Traditional grape infusion is prepared with alcohol. The strength should not be higher than 60 degrees. Otherwise, the drink will be very strong, although there are no comrades in taste and color, However, you should follow the general recommendations:

  1. Fill a 3-liter jar with berries, shake them down so that they fit tightly. If water appears, it is better to drain it.
  2. Sprinkle half a glass of sugar on top. If someone likes very sweet infusions, you can add a little more sugar. The taste of the tincture may be affected by the natural sweetness of the grapes - this should also be taken into account.
  3. Pour 60 degree alcohol over the grapes. If the alcohol content is low, then instead of syrup you need to put granulated sugar.
  4. The syrup is cooked at the rate of 1 glass of water per 100-120 g. Sahara. Cool the syrup and pour it into a jar with infusion.
  5. Seal the jar with a lid, shake the contents, and place it somewhere dark and cool.
  6. After 2-2.5 weeks, the product can be filtered and then allowed to settle for a few more days.
  7. Pour the finished infusion into bottles. Store for up to 2 years.

Preparation of alcohol tincture on grapes

If you add a few crushed grape seeds, the taste of the liqueur will become more piquant.

On vodka

Vodka, unlike alcohol, is a more accessible product for the people. If you have grapes of any variety on your property, you can infuse them with regular vodka. The result will be a noble drink no worse than expensive cognac. It is prepared in the same way as with alcohol. The only difference is that the vodka does not need to be diluted.

  1. Separate the grapes from the bunches, wash and dry. Excess moisture will take away the alcohols, it is better not to rush in this matter.
  2. Place prepared grapes to the top of a 3-liter jar.
  3. Fill the contents of the jar with vodka, cover with a nylon or metal lid. Carefully turn the bottle over and shake until everything is mixed.
  4. Place it where it is dark and not hot, a kitchen cabinet is ideal.
  5. Leave for at least 25-30 days, the longer it sits, the tastier it is. This drink can be stored for more than 2 years.

For this recipe, you need to shake the contents of the jar periodically to dissolve the sugar.

A bottle of grapes, infused in a dark place

Differences in preparing tinctures

If you prepare the infusion with sugar, you will have to shake it often, but if you prepare it with syrup, this need disappears. When preparing a tincture of moonshine, flavoring additives are used to drown out the pungent odor.

Preparing syrup for grape tincture

To make the bouquet sound brighter, you can add lemon slices, nutmeg, cloves or cinnamon. There are known cases where the taste of alcohol was enhanced with raisins, prunes, and ginger. You need to add additives in small portions so as not to “clog” the main component - grapes.

Due to the grapes, the drink loses its strength. Its average strength is 25-30 degrees.

In a short time you can prepare a praiseworthy alcoholic product. The recommendations will be useful for beginning winemakers. Homemade grape alcohol fully retains its beneficial properties; it contains a large amount of vitamins and acids necessary for the body.

What people will come up with to get an intoxicating drink. If you associate grapes only with making wine, why not find out what grape tincture is. Alcohol is not difficult to prepare, the main thing is that the owner stocks up with a sufficient number of berries.

Preparation of the drink begins with preparing the berries. They are torn from the brushes, washed and air dried. The raw materials are placed in a jar and sprinkled with sugar, poured with vodka or moonshine. Infuse the mixture until the fruits turn white. This takes from 2 to 4 weeks. The ratafia is filtered, bottled and placed in a dark, cool room for a week.

You can also make a tincture of grape berries using alcohol. The preparation technology differs from the previous recipe in that the fruits are first poured with 70-degree alcohol. After 10 days, the product is drained, and a new batch is diluted with 40-degree alcohol. After 3 weeks, this mass is also removed from the sediment and the first and second liquids are combined in one container. The third portion of the tincture is prepared with water or weak alcohol with a strength of 10 - 20 degrees. The mass is allowed to stand for 1 month, after which it is filtered and combined with the rest of the liquids. Ratafia has a rich taste and a small amount of degrees.
