Many people add a little freshly squeezed lemon or orange juice to blueberries. This gives the filling additional taste and aroma. Rum, liqueur and other alcoholic drinks can be used for the same purpose. Cream, sour cream whipped with sugar, or ice cream will help highlight the taste of the blueberry pie. Blueberries are juicy berries, so sometimes the juice may leak out of the pie. To avoid this, starch is added to the filling. Another option is to brush the surface of the dough with egg white, this is done before placing the berries on it. You can also add a small amount of crushed cookies to the filling, which will absorb excess juice.

    1. Place a sheet of foil on the bottom of a square baking dish (25x25 cm). The ends of the foil should hang slightly on both sides (about 4-5 cm). Turn on the oven to preheat to 175 degrees. Tool Oven thermometer How the oven actually heats up, even if you set a specific temperature, can only be understood with experience. It is better to have a small thermometer on hand that is placed in the oven or simply hung on the grill. And it is better that it shows degrees Celsius and Fahrenheit simultaneously and accurately - like a Swiss watch. A thermometer is important when you need to strictly observe the temperature regime: for example, in the case of baking.

    2. For the top layer of the pie, mix flour (1 cup), brown sugar (one and a half tablespoons), regular granulated sugar (one and a half tablespoons), a pinch of salt and cinnamon. Add chopped butter (60 g) and rub it into the mixture with your hands until you achieve a uniform crumbly consistency. (You can use a blender.) Divide the mixture into two equal parts. Flour seeder tool Flour must be sifted even if you grind it yourself and guarantee the absence of lumps and pellets. Waking up through the sieve, the flour is loosened, saturated with oxygen, the dough rises better and then has a better texture. You can sift using any fine sieve or, for example, a special OXO seeder, which works on the principle of a meditative rocking chair.

    3. For the bottom layer of the pie, in one bowl with a spoon, thoroughly mix flour (1 cup), baking powder, soda and salt (half a teaspoon), in another - sour cream and vanilla extract. In a third bowl, beat the butter (65 g) with sugar with a mixer at moderately high speed until the mixture becomes fluffy (about 5 minutes), add the egg and continue beating until smooth. Then combine the contents of all three containers, alternately adding sour cream and egg mixture to the flour and beating with a mixer at low speed.

    4. When the dough is ready, add blueberries to it and mix thoroughly with a spoon or hands so as not to damage the berries too much.

    5. Place the blueberry batter into a baking dish and smooth the surface with a spatula. Sprinkle the previously prepared crumbly mixture for the top layer of the pie evenly on top.

    6. Place the pie in the oven on the middle shelf and bake for 25 minutes.

    7. Remove the pie from the oven, sprinkle with the second part of the crumbly mixture and put it back in the oven. Bake until fully cooked (about 25 minutes).

    8. After oven, leave the cake in the pan for 10 minutes. When it has cooled slightly, remove it from the pan by carefully pulling it out by the overhanging ends of the foil.

Ingredients for the American Pie recipe:

for test: 1 1/4 cups (175 g) flour, 1/2 teaspoon salt, 1 tbsp. spoon (14 g) sugar, 110 g butter, 2-4 tbsp. spoons of boiled cold water.

For filling: 5 glasses of fresh pitted cherries, 3 tbsp. tablespoons lemon juice, 1 1/2 cups blueberries, 1 cup sugar, 1/4 cup cornstarch, 2 teaspoons butter.

Ingredients for the dough:
1.5 cups flour (1 cup in the US is 240 ml),
2 teaspoons cookie powder (1 tsp = 5 ml) - baking powder,
1/4 teaspoon salt,
115-120 g softened butter,
1/2 cup granulated sugar,
1 egg,
1/2 cup milk,
2 cups fresh/frozen blueberries
cookie powder.

Composition of products for crumbly crumbs:
1/4 cup flour,
1/4 cup sugar
cinnamon to taste - so that there is a pleasant brown tint,
20-25 grams of hard butter, cut into pieces.

Preparation of crumbly crumbs (Streussel topping):
Mix flour with sugar and cinnamon, add butter cut into pieces and, using two knives (one knife against the other), chop it into crumbs. (25 g butter, 2 tbsp flour, 2 tbsp sugar, 0.5 tsp cinnamon)

Don’t try to do this with your hands, otherwise the butter will melt and everything will stick together... This crumb is very popular among Americans, they sprinkle it on any pies. American pies ("pie") differ from ours both in form and in content: the bottom and walls of the form are lined with a thin shortbread cake, then this cake is filled with anything - apples, apricots, peaches, plums, cottage cheese filling, and on top of this whole structure sprinkled with crumbly crumbs - and this pie (pie) goes into the oven for 45 minutes.

Preparing the pie:

1. In a large dry bowl, whisk together flour, cookie powder and salt. It is advisable to sift the flour, it will be enriched with oxygen - and the dough will rise better. Take a few spoons of this flour mixture and sprinkle it over the blueberries (rinse and dry them first) in a separate bowl. Turn on the oven to heat to 200 C.

2. In a small bowl, beat the softened butter and sugar until white, beat in the egg, and knead well.

3. Mix the flour mixture with the egg-butter mixture, gradually add milk. At the end of kneading, add the sprinkled blueberries and stir gently. The dough should turn out neither thick nor liquid, with a consistency close to thick sour cream.

4. Grease a mold (preferably square, it looks beautiful) measuring 20 cm x 20 cm with deep edges, put the dough there - it may seem to you that there is very little dough, but don’t worry, it will grow a lot. Sprinkle crumbs on top and place in the oven for 45-50 minutes at 200 C. According to my observations, when the kitchen is filled with an incredible aroma, the pie is ready - or almost ready. Remove from the oven, brew some tea and enjoy! The pie really turns out to be very crumbly, light and not cloying. I believe that such a pie can be made with cherries, raspberries, and currants!

Americans typically serve these baked goods with either ice cream or whipped cream. So you can experiment if your pocket allows it.

Blueberry Pie Recipe

Ingredients:

Preparing blueberry pie:

1 Remove the butter from the refrigerator and leave it at room temperature for 10-15 minutes. It should become soft. Cut the butter into small pieces and mix with flour (rub the flour into the butter with your hands or using a fork). Grind the yolks with sugar and vanilla, add to the flour and carefully, without kneading it too much, knead the dough. Wrap the dough in film and put it in the refrigerator for half an hour.

2 Sort the blueberries, wash and dry. Cover the berries with sugar to taste and let stand for 1.5-2 hours. Drain off the released juice.

3 Divide the dough into two unequal parts. Roll out a layer from the larger one and place it in a prepared pie pan, preferably a round one. The dough is easy to transfer into the mold using a rolling pin. Place berries on the dough. Roll out the second part of the dough, close the pie and carefully seal the edges. Pierce the pie with a match in several places to allow steam to escape. Bake in an oven preheated to 220 degrees until golden brown, 25 minutes. Be sure to cool (preferably in the refrigerator), otherwise it will be difficult to remove the cake from the mold.

1 You can use a mixture of berries - blueberries and black currants, cut in half (see photo).

2 You can use frozen berries.

3 The dough can be kept in the refrigerator for longer. Up to 2 hours or more.

4 Working with stubborn, brittle shortcrust pastry is greatly facilitated by the following method - the dough is rolled out between two sheets of parchment (or a large sheet folded in half). The dough rolled out in this way is easily transferred into the mold. You can also use cling film for these purposes.

5 The taste of blueberries is perfectly complemented by lemon or orange juice (a couple of teaspoons).

6 Berries produce juice when exposed to high temperatures. Despite the fact that we pre-soak the berries in sugar and drain the juice, there may still be enough liquid left in the filling, which will then spread into a puddle around the piece of pie. This can be avoided in various ways. For example, add starch, cookie crumbs or crackers to the filling. Sometimes egg white is used for these purposes - they brush the dough with it before adding the filling.
