Cooking yeast lean pancakes with mineral water

When talking about lean pancakes, most housewives immediately think of delicious yeast products. If you don’t know how to cook them, then we will tell you about it right now.

So what ingredients are required to make delicious lean pancakes with mineral water? To prepare such products we should prepare:

Knead yeast dough

Before preparing lean pancakes with mineral water, you should knead the yeast base. To do this, sugar is dissolved in a warm liquid without gas, and then quick yeast and a little wheat flour are added. After mixing the ingredients, cover the resulting mass with a towel and leave it warm for half an hour. After 30 minutes, table salt and the remaining wheat flour are added to the base.

Having received a viscous, but not very thick base, they immediately begin frying it in a frying pan.

Heat treatment of products

To prepare yeast pancakes, it is recommended to use a thick-walled frying pan. It is heated strongly with oil. Then put the dough into a hot bowl using a ladle or a large spoon. If the base does not spread across the pan, then spread it. In this form, the yeast pancake is fried on both sides until it is thoroughly browned.

Having removed one product and greased it with heated vegetable oil, put the next one in the dish using the same technique.

Serve delicious yeast pancakes

Once they are ready, they are placed in a stack on a flat plate and immediately presented to the household. In addition to dessert, sweet tea or coffee is served.

Now you know how to prepare lean pancakes using mineral water. They turn out even tastier with fruit filling. To do this, put a mixture of chopped apple, banana, kiwi, orange and pomegranate seeds into each pancake, and then wrap it in a tube or envelope. After this, the formed dessert is placed on a large plate and sprinkled with powdered sugar.

If desired, you can fill it with dried fruits and nuts, various berries or herbs. If you do not fast, then such products turn out very tasty with meat, cottage cheese, eggs and green onions, etc.

Pancakes are one of the favorite dishes in Russian cuisine. Pancakes can be both a main course and a dessert - depending on what filling you make and what sauce you serve with. Fasting is not a reason to give up pancakes, because Lenten pancakes on water do not violate the rules of Christian fasting.

Lenten pancakes can be prepared with both regular and mineral water, both with and without yeast.

Lenten yeast pancakes on water

Mix flour with sugar and add warm water to make the dough stretch. Yeast is dissolved in water with sugar and wait for foam to form (no more than a quarter of an hour). The dough should be poured into the flour and mixed. Leave the dough until bubbles appear. Add salt and vegetable oil to the mixture. For thin pancakes, add water and then mix thoroughly with a mixer or whisk. Lenten pancakes are baked in water in the usual way.

Lenten yeast-free pancakes on water

.

To form bubbles you need soda, which is quenched with citric acid. First, dissolve sugar and salt in water. The flour must be sifted and poured into water, stir until smooth. Soda is quenched with citric acid (first diluted in two tablespoons of water). Slaked soda is poured into the dough and mixed. After bubbles appear, you need to add oil and mix again. All that remains is to bake pancakes.

Lenten pancakes with mineral water

Lenten pancakes on water do not mean bland. Even in the absence of milk and eggs, the results will be tasty, delicate and, if you prepare the dough in mineral water.
For pancakes, you usually use highly carbonated water - this water provides maximum effect. The first step is to sift the flour and mix it with salt and sugar. Then pour mineral water into the flour. All that remains is to add vegetable oil and mix until it reaches the consistency of liquid sour cream. Next, you need to take a pancake frying pan and grease it with vegetable oil once (this is quite enough, because the dough already contains vegetable oil).

Lenten pancakes are baked with mineral water like any other. A portion of the dough is distributed over the pan and baked for a couple of minutes on each side. The pancakes won't brown too much, so be careful not to overbake.

Hot pancakes can be served with a variety of sauces - for example, mushroom, vegetable, onion. You can wrap lean fillings in them - greens, fried onions and carrots, fried champignons with onions, mashed potatoes. The filling can be sweet - from jam or jam, honey or freshly grated fruit.

Step 1: prepare the ingredients.

First of all, sift the required amount of wheat flour through a fine mesh sieve directly into a deep bowl. This process is necessary to make the flour more loose, airy and dry. We also put salt, sugar, vegetable oil and, of course, highly carbonated mineral water on the kitchen table.

Step 2: prepare the dough - stage one.

Pour the required amount of mineral water into a clean deep bowl, add salt and sugar to the container and lightly mix the ingredients with a tablespoon. Afterwards, we begin to gradually introduce sifted wheat flour into the liquid, while simultaneously kneading the batter using a mixer turned on at medium speed. Set the bowl aside and let the semi-finished flour product brew 30 minutes.

Step 3: prepare the dough - stage two.

Approximately in 25 – 27 minutes turn the stove on to medium level and place a saucepan with the required amount of vegetable oil on it. When the fat gets hot, which will happen approximately after 2 – 3 minutes, pour it into the bowl with the dough and re-mix the liquid mass with a mixer, turning on the kitchen appliance at medium speed and increasing it to maximum for 1 – 2 min t. The dough is ready!

Step 4: fry pancakes.

Now let's start frying the pancakes. Using a piece of ordinary sterile bandage, remove excess fat from the frying pan, put it back on the stove, turned on to medium level, and heat the container up to the aisle. There is no need to grease the pan, since vegetable oil is added to the dough. Now we take a whole ladle of dough, tilt the pan at an angle and pour the liquid flour mixture onto its surface. Then, with a circular motion of your hand, unfold the container so that the semi-finished flour product spreads over the entire bottom of the pan in an even layer, and put it back on the stove. Fry the pancake for 2 - 3 seconds or until the edge of the pancake turns brown. During frying, you can observe how the dough bubbles, this happens because it was prepared in mineral water, which is very saturated with oxygen.
After one side is fried, use a kitchen spatula to turn the pancake over to the other side and fry it for about 2 – 3 seconds. Then we transfer it to a cutting board, pour the second portion of batter into the pan in the same way and fry the next pancake.
It will take approximately 10 - 12 minutes to fry all the pancakes from a given amount of semi-finished flour product and the output will be approximately 20 – 22 pieces pancakes, depending on the size of the pan.
If you lay the pancake on your hand, you can see how thin and delicate it is.
And if you bring it to the window, against the light, you will notice a huge number of small holes.
After all the aromatic flour products are ready, proceed as desired, you can roll them into triangles, tubes, or leave them like that, first placing them on a plate and serving them as a main dish or dessert.

Step 5: serve lean pancakes in mineral water.

Lenten pancakes in mineral water are served hot or warm. This dish can be considered universal. Depending on the addition, pancakes can be a main course or a dessert. If you fill them with jam, preserves, nuts, honey or any kind of syrups, then they will look perfect on the sweet table. Well, such fillings as stewed vegetables, herbs, and lean cheese will make pancakes a great hearty dinner, breakfast or lunch. Cook with love and “Lent” will be a joy for you! Bon appetit!

- – If you decide to make lean pancakes with a sweet filling, then if you wish, you can add a bag of vanilla sugar or a teaspoon of liquid vanilla extract to the batter.

- – If the pancakes tear a little during frying, you should add more flour to the dough, but do not overdo it, otherwise they will turn out very thick.

- It is better to fry pancakes in a cast iron frying pan or in a frying pan with a non-stick bottom and low sides.

- – It is better to fill this type of pancakes with filling immediately after cooking, when the flour products cool down, their texture will become denser and they will not be able to take the shape you need.

After Maslenitsa comes Great Lent, during which a ban is imposed on all fasting foods. You have to give up many foods completely or limit their consumption. Regular pancakes are not eaten during Lent, as they contain animal products - eggs, butter, milk. You also have to forget about your favorite pancakes with a hearty filling.

However, this does not mean that you cannot prepare lean pancakes, which, even if they do not contain the usual lean ingredients, still turn out quite tasty. Moreover, the recipes for lean pancakes are varied, and their taste is not at all bland. And you can come up with very different fillings for them.

So, baking pancakes during Lent, without using dairy products, eggs and butter, is not only possible, but also necessary to make your diet as complete and varied as possible. It is sometimes desirable to eat such a tasty treat on ordinary days, especially for those people who closely monitor their health and weight.

Recipes for lean pancakes will also be useful for vegetarians who have completely abandoned not only meat, but also any other animal products.
