Not so long ago, baked goods such as muffins and cupcakes became popular in our country. That is, essentially, small cupcakes with or without filling. And somehow our manna cakes, sour cream cakes and large diamond-shaped cupcakes faded into the background. But it all depends on the form in which the baked goods are served. For example, muffins and cupcakes are served portionwise in small paper cups; by the way, they are also baked directly into them. So why not try making manna using the same baking molds. After all, at its core, manna is the lightest version of a cupcake that is suitable for children and the elderly.

To prepare manna we will need:

  • — 160 gr. semolina;
  • — 130 gr. wheat flour;
  • 180 gr. granulated sugar;
  • 350 gr. kefir;
  • 0.5 tsp. soda;
  • 2 chicken eggs;
  • 40 gr. vegetable oil.

Pour kefir into a large container

Add a glass of semolina and granulated sugar to it.

Place two chicken eggs in a bowl. Mix everything well.

Add sifted flour in small portions. If you need to make semolina completely dietary, remove the flour from the recipe and add twice as much semolina.

At the end, add half a teaspoon of baking soda or a teaspoon of baking powder. There is no need to quench the soda, since the dough contains a fermented milk product.

You can take vegetable oil or pre-melted butter. You will need 2 tablespoons. Add the butter to the dough and knead well.
At this point we pause work for about 1 hour. You need to let the semolina swell and let the soda and kefir react.
Returning to work, first of all, turn on the oven and let it heat up to 150 degrees.

The finished dough must be poured into molds. In this case, a metal muffin tin is used. You can take silicone molds or, as mentioned earlier, special corrugated paper molds.


It is best to grease the inside of a metal mold with butter and sprinkle with semolina so that the cupcakes do not stick. This problem does not arise with silicone and paper molds.

Spread the dough with a spoon, not reaching the edges by about 0.5 cm. Unlike flat muffins, manna dough is porous and rises very well.

You can add any available berries by pressing them into the dough. Or take raisins, nuts, dried fruits, chocolate pieces and much more to suit your taste.

Cupcakes with semolina or simply manniki are the most delicate baked goods, which are also dietary. These muffins can be prepared for both small children and elderly people, whose diet is very strict and should not include heavy flour products. A cupcake baked from semolina with kefir can be served at a festive table where friends and relatives will gather.

This dessert, made from semolina and kefir, is very easy to prepare. It requires relatively few products, which also facilitates the process of assimilation of the dish by the body. Semolina is known to be an easier ingredient in baking than flour. Therefore, the dough with it turns out lighter and more airy. It is important to remember here that manna does not like high temperatures, and it should be baked at 160-170 degrees.

Sometimes the recipe still contains flour. It is taken in approximately equal proportions with cereal. To diversify the manna recipe, you can add dried apricots, prunes, crushed nuts or raisins. And for fruit lovers, there are fruit and citrus muffins. For the first, you can use absolutely any fruit, which is best cut into pieces and added to the dough. But in the recipe for a dessert with citruses you will need pulp and zest crushed in a blender.

It can also be baked with sour cream, then you do not need butter or margarine. But if you have already made the dough without butter, then after the oven you will need to soak it in sour cream or syrup to make it tender.

Decorate the finished dish with powdered sugar, chocolate or protein cream. In the latter case, you can add fresh berries or special cake decorations.

A simple recipe for manna

This is the simplest kefir cake, which is easy to prepare and very tasty to eat. For it you will need a round collapsible mold or a special silicone muffin mold.

Ingredients: 300 g semolina, 2 eggs, 375 ml kefir, 100 g butter, a pinch of salt, 140-150 g sugar.

How to cook:

  1. Mix kefir, salt and semolina until smooth in a bowl and leave for half an hour.
  2. Meanwhile, beat the eggs with sugar using a whisk.
  3. Melt the butter in a water bath.
  4. Combine everything and mix.
  5. Grease the mold with butter and pour the dough into it.
  6. Place in an oven preheated to 160 degrees and bake for an hour (50-60 minutes).
  7. If you like a golden brown crust, you can set the temperature to about 200 degrees for the last 5-10 minutes of baking.

If you want to bake something as healthy and nutritious as possible, then kefir cake will be a great option. Do not deny yourself the pleasure of trying this tender and melt-in-your-mouth dessert.

Video recipe for making muffins with semolina

Muffins with semolina with milk are delicate in texture. It seems that cottage cheese has been added to them. You can put juicy summer berries, apple slices or jam in the muffins. They will help diversify the sweet dishes on your menu.

  1. Soak semolina in sour milk or kefir. Leave to swell in a cool place for one hour.
  2. Beat the eggs until thick foam. You can separate the whites from the yolks and beat the whites separately, gradually adding fine sugar. When you get a thick, elastic white foam, add four yolks to it. Mix carefully.
  3. Add slaked soda with vinegar, vanillin, softened margarine to the soaked semolina with milk. Beat well with a mixer. Pour flour into semolina and margarine and mix thoroughly until lumps disappear.
  4. Combine semolina and beaten eggs. Mix gently and quickly. Place in molds and bake immediately in a hot oven. If the muffin tins are made of iron, they must be greased with oil before pouring the batter. If they are silicone, you don’t have to lubricate them.
  5. Bake at 200 degrees for about 20 minutes. Check readiness with a match. If the matchstick is dry when you pierce the cake, it means it is ready.
  6. When the cupcakes have cooled, remove them from the pans and sprinkle with powdered sugar.

Semolina cake with dried apricots

Components

  • instant semolina 1 tbsp;
  • dried apricots;
  • butter 1 tbsp. l.;
  • wheat flour 1 tbsp.;
  • vanillin;
  • baking powder 2 tsp;
  • a pinch of salt;
  • eggs 2 pcs.;
  • vegetable oil 80 ml;
  • milk 250 ml.

Recipe

  1. Beat the eggs and sugar into a strong foam. Add refined, odorless sunflower oil to the eggs.
  2. Heat the milk to 40 degrees and add butter to it. Pour semolina into milk. If you have instant semolina, you don’t need to let it swell. If it’s regular, add warm milk and leave for an hour, covering the container with a lid.
  3. Add baking powder and salt to flour. Combine flour, milk with semolina and egg-butter mixture. Preheat the oven. Grease muffin tins.
  4. Pour the dough into the molds. Place half a dried apricot whole or cut into small cubes into each mold. Bake at 180 or 200 degrees for about 20 minutes.
  5. Allow the finished cupcakes to cool. Remove from pans and dust with powdered sugar or glaze.

Semolina carrot-tangerine cake

Components

  • semolina 1 cup;
  • sour milk or kefir 200 ml;
  • egg 1 pc.;
  • sugar 100 g;
  • butter 2 tbsp. l.;
  • wheat flour 160 g;
  • baking powder 10 g;
  • tangerines 2 pcs. (small);
  • carrots 1 pc.;
  • tangerine juice 2 tbsp. l.;
  • powdered sugar 4 tbsp. l.

Recipe

  1. Soak the semolina in milk or kefir and leave for 1 hour, covering with a lid. Do not put it in the refrigerator.
  2. In a separate bowl, beat the egg with sugar and butter at room temperature.
  3. Add the egg-butter mixture and flour with baking powder to the swollen semolina.
  4. Grate the carrots on a fine grater. Peel the tangerines (you can take one small orange instead of two tangerines). Grind tangerines or peeled oranges in a blender. Add grated carrots and tangerines to the dough.
  5. Pour the dough into molds, bake in a hot oven at 180 degrees for about 20 minutes.
  6. Add a few tablespoons of tangerine juice to the powdered sugar to prepare the glaze. Drizzle frosting over finished cupcakes and sprinkle with orange zest.

You can make semolina muffins with cocoa powder, pistachios, or banana pieces. Just remember to soak the semolina before cooking, add butter, baking powder and eggs. Then you will have real muffins with semolina.

Pour semolina into a bowl, add kefir at room temperature, stir and leave for 40 minutes until the mass swells.

Melt the butter (you don’t need to melt it completely) and cool slightly, add sugar, vanilla sugar and salt to it, beat the mixture with a whisk.

The dough will be pourable and homogeneous.

Distribute the dough into silicone molds, leaving 5mm of the top. These cupcakes will not rise much when baked.

Preheat the oven to 180 degrees and bake semolina muffins for 30-35 minutes. The top of the cupcakes will be well browned - this determines their readiness, but I still advise you to play it safe and check the readiness with a toothpick or wooden skewer (when piercing the finished cupcakes, the toothpick should remain dry).

Sprinkle the cupcakes with powdered sugar and enjoy the taste! From the specified amount of ingredients you will get 12 very tasty semolina muffins mixed with kefir.
