Olivier recipe classic with sausage composition. Olivier salad: classic recipe with sausage. Olivier with sausage and fresh cucumber - step-by-step recipe

To be honest, I don’t cook this salad often. And not because it is winter. It's just very filling, in my opinion. But, as they say, there are no comrades according to taste. For example, my husband doesn’t particularly like it, but the children eat it with pleasure. From time to time I experiment, prepare this salad for him again - what if he likes it? Same this time. I collected all the ingredients and prepared Olivier with sausage, as in the photo, but seasoned it differently than always. But what I seasoned it with and how I cooked it, read on.

In fact, there is nothing complicated. The composition is accessible to everyone, the proportions are almost equal. It is better to take milk sausage, good quality, or mix it equally with smoked sausage. Fresh cucumber is not exactly a winter ingredient, but if you happen to have one, you won’t regret chopping it up.

Ingredients

Step-by-step preparation

Combine all products in one large bowl. Season with homemade mayonnaise or sour cream, or mix both ingredients in equal proportions. I generally do without mayonnaise. By the way, without onions either - I don’t like its aftertaste. Let's find out what needs to be done to make it delicious.

Video recipe

  1. To avoid an onion aftertaste in the salad, I pre-marinate the onions. I’ll briefly tell you how: 2 pcs. bay leaf, 1 tsp. unrefined vegetable oil, 1 tsp. vinegar, 1 tsp. sugar and the same amount of salt. 10-15 minutes - and you're done. Suitable even as an independent dish.
  2. I salt the water in which the vegetables are cooked. This makes their taste more intense.
  3. I don’t leave cooked vegetables in water, otherwise they will fall apart.
  4. If time permits, I like to bake potatoes and carrots in the oven at 200 degrees. I wrap each vegetable in foil, and then all the vitamins are preserved in them, and when cut, they keep their shape.
  5. My last piece of advice: instead of mayonnaise, use sour cream, mix with mashed egg yolk and a small amount of mustard. Try it and don't thank me.

Benefit or harm: which is more?

Salad prepared at home is much healthier than one bought and prepared in a store. Judge for yourself - all the products included in Olivier are individually useful:

  • eggs are a source of protein and amino acids;
  • potatoes – due to fiber, reduces cholesterol levels in the blood;
  • pickled cucumbers regulate the water-salt balance, and a salad with fresh cucumber is simply a storehouse of vitamins;
  • green peas are a source of vegetable protein and fiber;
  • carrots – strengthens vision.

Only sausage and mayonnaise can ruin a reputation. But even for them I find an excuse or an alternative: instead of mayonnaise - low-fat natural yogurt or sour cream with mustard, instead of sausage - boiled meat.

But let's be realistic. The combination of seven ingredients in such quantities as we usually cook in leads to such undesirable consequences as:

  • obesity;
  • excess cholesterol.
  • So even after you have replaced the products with safer ones, it is still better to observe the measure: 100 g of salad per day will be more than enough.

    5 other options

    Did you know that classic Olivier is prepared only with boiled beef? Yes, this is the same salad that you remember from childhood: hearty, bright, reminiscent of warmth and home comfort.

    The highlight of this dish is the smoked chicken. Mix it with boiled poultry fillet or thighs. The end result is a tender, juicy dish with a spicy hint of smoked meats.

    • With apple and gherkins

    Apple sourness will get lost among the pieces of eggs, cucumbers and meat, giving the snack lightness and airiness. Apples, at least a little, will move us away from the heaviness in our stomachs and bring us closer to graceful figures. Perhaps this is the easiest version of Olivier of all known.

    Conclusion

    Today's Olivier with boiled sausage is a leap into the Soviet past. During a food shortage, we were truly happy to prepare such a dish for a family celebration. Today, we make it with caution, taking care of our health and looking for only high quality sausage.

    Today, on the eve of the upcoming New Year’s celebrations, it’s time to talk about our old “friend”, about the most important treat for the festive feast and a favorite treat for many residents of Russia.

    Of course, about the Olivier salad! About the same thing with sausage, which our mothers and grandmothers cooked from year to year, and we continue this tradition.

    And although almost every housewife knows the “secret” technology for its preparation, there are nevertheless several different recipes that should be tried. They will be discussed in this material. And here everything is logical: some people don’t like carrots, others don’t like putting onions there, some people should serve fresh cucumbers, not salted ones... In general, you can’t please everyone, but we’ll try!

    Therefore, I will offer local gourmets something delicious: classic and creative options, replacing some ingredients with others. So that everyone is happy! And not just for the holidays. Because this is an excellent additional snack for both a regular lunch and a family dinner.

    In short, Olivier is always one of the first treats to leave the festive table. Therefore, they prepare it for the celebrations, as they say, with basins, and this is already an established tradition. Well, after getting acquainted with these recipes, each housewife will have her own, expanded arsenal of such a tasty and simple snack!

    Classic Olivier with pickles and sausage

    It’s interesting that this particular option is considered traditional and classic in our country. It is also called “winter”.

    As it should be, carrots, onions, and, of course, pickles take their rightful place here. Although the latter may be pickled, this is allowed. Here you will need to choose to your taste.

    Ingredients:

    • Doctor's sausage or other – 150 gr.
    • Hard-boiled eggs – 2 pcs.
    • Boiled potatoes in their jackets – 2 pcs.
    • Boiled carrots – 1 pc.
    • Pickled cucumbers – 2-3 pcs.
    • Green peas (canned) – 100 gr.
    • Onions – 1/2 pcs.
    • Pepper and salt - to taste.
    • Mayonnaise

    Cooking process:

    Boil eggs, as well as potatoes and carrots in salted water in advance. Next, all these ingredients are cooled and cleaned. Then you should cut them into cubes one by one: potatoes, carrots, eggs, sausage and pickles.

    In turn, the onion needs to be finely chopped and pre-scalded with boiling water so that it is not so hot. This is necessary, otherwise it will be strongly felt and will clog the taste of other products.

    All the elements of the future salad must be placed in a large dish. Let's not forget about canned peas. You can add a little dill if you wish.

    Then you need to pepper (optional) and lightly salt the resulting dish. All this is thoroughly mixed and laid out in a beautiful salad bowl.

    You can add mayonnaise immediately before serving or immediately if you are sure that it will be completely eaten by the guests.

    It's time to sprinkle with finely chopped herbs and serve.

    This classic version can be prepared without carrots and without onions.

    Olivier with sausage and fresh cucumber - step-by-step recipe

    And this is the so-called “summer” option, and this is also a classic. Although they probably cook it more often in the summer, when there are a lot of fresh cucumbers.

    To prepare this version of a popular dish, you first need to boil (then cool) potatoes, eggs and carrots. Moreover, potatoes, as a rule, are boiled in their skins, and carrots are peeled. However, this is not for everyone - some find it more convenient to boil potatoes in their peeled form.

    Ingredients:

    • Boiled potatoes with skin – 3 – 4 pcs.
    • Boiled carrots – 1 pc.
    • Hard-boiled eggs – 2 – 3 pcs.
    • Cucumbers (fresh) – 1 pc.
    • Doctor's sausage – 150 – 200 gr.
    • Green peas (canned) – 100 gr.
    • Green onions, fresh dill - optional.
    • Mayonnaise – 2 – 3 tbsp. spoons.
    • Salt - to your taste.

    Cooking process:

    Pre-cooked carrots and potatoes (in their jackets) must be peeled. Then you should peel and boil the eggs. Cut the sausage into cubes.

    You also need to cut the other key ingredients into cubes: fresh cucumber, potatoes, eggs and carrots. All this needs to be put in a deep bowl. Green peas are also added there.

    With the addition of mayonnaise, the resulting deliciousness is mixed again - ready! All that remains is to transfer it to an elegant salad bowl and serve it on the festive table.

    How to prepare Olivier salad with sausage and pickles in a new way

    This unusual option is dedicated to the experimental combination of fresh and pickled cucumbers. In addition, frozen peas and something else are added here. The result is a very interesting “synergistic” effect. It looks bright and attractive, you have never tried Olivier like this!

    • Salted (pickled) cucumber – 1 pc.
    • Mayonnaise – 3 – 4 tbsp. spoons.
    • Green onion - a small bunch.
    • Spicy mustard - 0.5 teaspoon.

    Cooking process:

    First you need to do the preliminary preparation of the elements of the future treat. So, you should peel boiled potatoes, eggs and carrots, and then cut them into cubes. Sausage, fresh and pickled cucumbers should be cut in the same way.

    Frozen green peas need to be removed from the freezer and placed in hot boiling water for about two to three minutes. After this, it must be immediately directed through a powerful stream of cold water so that the peas have time to retain their bright, fresh color.

    All prepared ingredients are placed in a bowl. You should also put canned green peas and finely chopped herbs there.

    In a separate container, mix hot mustard with mayonnaise, and then season with the resulting mixture. Add a little salt (to taste) and ground black pepper, and then move everything carefully. Step-by-step recipe for the classic Olivier salad with photos

    1. Wash the potatoes and carrots. Place to simmer in cold water. Vegetables must be cooked in their skins, preferably in different pans, because carrots can cook faster. The approximate cooking time for vegetables until fully cooked is 20-30 minutes. To check whether vegetables are cooked or not, pierce them with a knife. If the knife comes out easily, the vegetables are ready. After the potatoes and carrots are cooked, drain the water and leave them to cool.
    2. At the same time as the vegetables, start boiling the eggs. Place them in cold, slightly salted water. Bring to a boil and cook for 10-12 minutes. Once ready, drain the hot water and pour cold water over the eggs to make it easier to peel them.
    3. Open a can of green peas and drain the juice. Pour the peas into the salad bowl.
    4. Peel the eggs, chop, add to the peas.
    5. Peel the potatoes and carrots, cut into cubes, add to the salad bowl.
    6. Cut pickled cucumbers and sausage. Add to other ingredients.
    7. If necessary, add salt and pepper. Be extremely careful with salt, do not over-salt the salad. Remember that one of the ingredients is pickled cucumbers, which themselves are salty. Therefore, before adding salt, give the salad a good stir and taste it.
    8. Season with mayonnaise. Stir and taste. Add missing ingredients if necessary.
    9. Salad ready! Before serving, you can decorate the dish with vegetable figures, finely chopped herbs or olives.
    Such a familiar dish is always awaited at the festive table. So add a new element. Use your imagination. Bon appetit!

    Although the Olivier winter salad is considered an unspoken symbol of the New Year, you don’t need a special occasion to prepare it right now. Meat salad with boiled sausage, pickled or pickled cucumbers, peas and boiled potatoes has become popular due to its ease of preparation, availability of ingredients, satiety and “signature” taste. Over time, many recipes have appeared that fit into the framework of the classics or include completely unusual ingredients, for example, fried mushrooms or apples. Also, in the classic Olivier with sausage, fresh cucumber is often added instead of salted, canned peas are replaced with frozen ones. Some people always add boiled carrots, cut into bright cubes, while others believe that carrots should only be added to the Stolichny salad. There is a lot of controversy about onions. Is he needed in Olivier? Which one is better – onion or green? Sausage is a separate matter. The “correct” recipe usually uses Doctor’s or Molochnaya, and if you want variety, you can use smoked.

    It is customary to season Olivier with mayonnaise. But if you have your own reasons for not liking it, prepare a dietary version with low-fat sour cream or Greek yogurt, adding a little mustard. It will also turn out delicious, although unusual.

    We prepare Olivier salad according to the classic Soviet recipe - with boiled sausage, pickles and canned green peas

    Ingredients:

    • boiled sausage, without lard (Doctorskaya, Dairy, etc.) – 400 g;
    • canned green peas – 400 g;
    • potatoes - 4 medium-sized tubers;
    • pickled cucumbers – 4 pcs.;
    • chicken eggs, large (category CO) – 4 pcs.;
    • not very large carrots - 2 pcs.;
    • onion – 1 head;
    • mayonnaise – 4-5 tbsp. l. (taste);
    • salt, freshly ground pepper;
    • fresh herbs - to decorate the salad.

    How to cook - step-by-step instructions:

    1. Boil potatoes and carrots in their jackets until tender (can be done in one pan). Separately cook hard-boiled eggs. Cool all cooked ingredients completely and peel. All ingredients need to be cut into small cubes. It is traditional to start with potatoes, but this is not necessary. Place the chopped potatoes into a deep bowl.
    2. Grind the carrots in the same way.
    3. Eggs to speed up the process. You can pass it through a special grill - an egg slicer. If there is no such device, cut it like the previous salad components - into cubes.
    4. The shape of cutting cucumbers is the same.
    5. But the onion needs to be chopped as finely as possible so that it does not overwhelm the flavors of the other components. Also, to get rid of excess bitterness, you need to pour boiling water over it. After chopping the onion, place it in a colander and scald. Wait for the liquid to drain and place the onion slices in a common bowl.
    6. Now the sausage. Usually, “Doctor” or a similar variety is added to Olivier. If you don't want to deviate from the classic scenario, take any boiled sausages without adding pieces of lard or cheese. You can also use sausages. You also need to cut into cubes.
    7. After pouring everything chopped into one deep container, add peas and mix well. It is better not to dress the entire portion of salad at once - it will lose its taste during storage. It is recommended to set aside the part that will be served, add salt, pepper, and seasoning.
