I continue to enjoy strawberry pastries and offer you shortbread curd pie. This pie is quite easy to prepare. The cottage cheese filling turns out very tender and simply melts in your mouth. In the original, this pie added fruit to the filling, but I didn’t like the look of this pie at all, so I remade it in my own way. This way I like it much more, and the recipe has been pleasing me for many years now.

Another important fact: after baking, the cake must cool completely, and then it is advisable to put it in the refrigerator. You want the pieces of the pie to be even and beautiful?

To prepare shortbread pie with cottage cheese and strawberries, prepare the necessary ingredients from the list.

Sift flour with baking powder into a bowl, add cold butter, which needs to be cut into cubes.

Grind everything into sand crumbs, add 1-2 tbsp. Sahara. It's very hot here now, so it's better to put the crumbs in the refrigerator while preparing the filling.

For the filling, mix cottage cheese, sugar and vanillin in a bowl. I advise you to immediately stir everything a little with a fork. Then add eggs to the filling.

Using an immersion blender, beat the mixture well until smooth and creamy.

Line a mold, mine is 22 cm, with parchment. Wash and dry the strawberries, cut each in half. Remove the shortbread crumbs from the refrigerator and divide into two parts. Carefully pour one part into the mold and smooth it out. Place half the strawberries on top.

Preheat the oven to 180 degrees and bake shortbread pie with cottage cheese and strawberries for at least 1 hour. The guideline is this: the top of the pie should be browned. Next, we proceed as I described above: leave the cake until it cools completely, and then put it in the refrigerator directly in the mold.

I left the pie overnight and this is the result I got - neatly cut pieces. Just right for morning coffee!

In order not to bother with flour and eggs, you should use ready-made dough. Take half a kilo of puff pastry. Other ingredients: 190 g granulated sugar, 360 g fresh strawberries, a large spoon of powdered sugar, 2 tablespoons eggs, 210 g soft cottage cheese.

  1. Thinly rolled out dough (2/3 parts) is laid out on oiled parchment. The filling of cottage cheese whipped in a blender with 1 egg and sugar is evenly distributed on top. Halves of berries are laid out on top of it.
  2. The remaining dough is cut into thin strips. They are used to decorate the future pie. The strips are also sprinkled with sugar and brushed with the remaining egg (beaten).
  3. The treat is baked for 35 minutes at medium temperature.

The resulting delicacy is generously sprinkled with powdered sugar.

Shortbread pie with strawberries and cottage cheese

The dough turns out to be simple, but at the same time crispy and tasty. Ingredients: 160 g granulated sugar, 180 g high-grade flour, egg, small spoon of baking powder, large spoon of starch, 220 g of hard elastic strawberries, 230 g of soft cottage cheese, vanilla sugar.

  1. For shortbread crumbs, combine all bulk ingredients, except starch, and melted butter. Only 90 g of sugar is taken. The mass is kneaded by hand, after which half of it is poured into a baking container covered with parchment.
  2. For the filling, combine the remaining sand, homogeneous cottage cheese, egg, and starch. The mass is whipped with a submersible blender.
  3. The curd filling is placed on the base. Halves of berries scatter in a chaotic manner.
  4. The remaining mass is distributed on top.
  5. The shortbread pie is prepared in a hot oven for 45 minutes.

The treat should be completely cooled before cutting into non-portioned pieces.

Jellied delicacy made with kefir

Both fresh and frozen berries are suitable for the filling. They need to take about 200 g. The remaining ingredients: 170 ml of full-fat kefir, 260 g of cottage cheese, 160 g of granulated sugar, ½ small spoon of salt, 3 tablespoons of eggs, juice of half a lemon, a bag of baking powder, half a kilo of high-grade flour.

  1. All ingredients are combined in the order indicated in the recipe. Beat them with a mixer at low speed until smooth.
  2. Place the washed berries on an oiled baking sheet.
  3. All the dough is poured on top.
  4. The delicacy will be baked at 180 degrees for about an hour.

If you choose a multicooker for cooking, the baking mode is set to 55 minutes.

With strawberry jelly without baking

If you can’t tinker with the oven, you should choose a no-bake treat. Ingredients: 230 g shortbread cookies, half a stick of good butter, 380 g low-fat cottage cheese, 1 tbsp. granulated sugar, 620 g strawberries, 35 g gelatin, 420 g low-fat sour cream.

  1. For the base, cookie crumbs are combined with liquid butter. The combined components are placed in a suitable container covered with parchment.
  2. 20 g of gelatin is soaked in 90 ml of cold water. The liquid must be boiled.
  3. Half a glass of sugar, all the strawberries and cottage cheese are whipped in a blender.
  4. Next, the gelatin is heated and poured into the berries. The mass is whipped.
  5. The curd and berry mixture is poured onto the crust.
  6. A filling is prepared from sour cream, the remaining gelatin and sugar. The products are whipped and poured onto the already frozen top layer of the treat.

This cake with cottage cheese is served to the table after all layers have cooled and hardened. If you want fresh berries, you can take strawberries from jam.

Frozen berries are first defrosted at room temperature. All the juice drains from it. You will need 400 g of strawberries.   2. For the filling, combine the powder and the remaining cottage cheese.

Ingredients: half a kilo of strawberries, 220 g of sugar, 180 g of high-grade flour, half a stick of butter, 230 g of sour cream, 2 large spoons of corn starch, small spoon of baking powder, 3 tablespoons of eggs, 380 g of cottage cheese.

  1. Soft (not melted) butter is ground with half the granulated sugar. The ingredients are mixed with 1 egg.
  2. High-grade flour with baking powder is sifted into the mixture. Form the resulting dough into a ball and refrigerate for 15 minutes.
  3. For the filling, the cottage cheese with the remaining sugar is ground in a blender. Starch, the rest of the eggs and sour cream are added to them.
  4. Quarters of berries are mixed into the curd mixture.
  5. The dough is removed from the refrigerator and distributed in the oiled bowl of the device. High sides are formed.
  6. The filling is placed inside.
  7. In the program intended for baking, the dessert is prepared for 45-50 minutes.
