Spring and early summer are the best times of the year for me. Nature wakes up, the first greenery appears, onions and sorrel are already growing in the beds. We rejoice at the first berries ripening in our gardens. Strawberries are the first long-awaited sweet that gives us not only vitamins, but also good mood. And what a aroma this berry has! Yes, and it is very useful. And how many different dishes can be prepared with this wonderful berry. And one of the most popular is strawberry pie.

You can prepare a hot treat for tea, and on a warm summer day a refreshing cold cheesecake is perfect. There are many options, but today let's focus on baking with strawberries, which will not be difficult for us to prepare. Every housewife has products for such baking on hand.

Let's start our acquaintance with strawberry delicacy with the simplest recipe that can be prepared in 30 minutes. Then unexpected guests are not scary. Look at the ingredients - they are the simplest, any housewife always has them in the refrigerator.

We will need:

  • fresh strawberries - 500-600 gr.
  • flour - 300 gr.
  • eggs - 5 pcs.
  • sugar - 200 gr.
  • vegetable oil - 150 ml.
  • baking powder - 2 tsp.
  • vanilla sugar - 8 gr.

Before preparing the pie, wash the strawberries and leave them to dry on a paper towel.

Let's start preparing the dough. To do this, carefully separate the egg yolks from the whites. Place the yolks in a separate plate.

To make the whites whip better, cool them first.

Meanwhile, beat the egg whites with a mixer. It is best to use a blender. Gradually add sugar and vanilla sugar to the whites and beat at low speed until stiff peaks form.

If the sugar has run out and the whites are not yet whipped, increase the mixer speed and continue beating for a while.

It is easy to determine the readiness of the whites by tilting the container with whipped whites - they should be motionless.

Gradually add one yolk to the whites, while continuing to beat the egg mass with a mixer.

Pour vegetable oil into the eggs in a thin stream.

Now let's prepare the dough. Sift the flour through a sieve and mix it with baking powder.

Line a baking dish with parchment paper, grease it with vegetable oil and pour the dough into it. Using a spatula, level it out and stick the strawberry directly into the dough.

Bake in an oven preheated to 170 degrees for about an hour. The dough rises like biscuit dough. And you can check the readiness with a toothpick - if the dough does not stick to it, then the pie is ready.

Let the cake cool, remove from the pan and sprinkle powdered sugar on top.

Step-by-step recipe for dough with sour cream

I personally like to prepare the dough using sour cream. Often, sour cream lingers in the refrigerator unused, then it’s time to make delicious dough with it. Strawberry pie with sour cream is easy to prepare, and the baked goods will certainly turn out rich and tasty, and the dough will be fluffy. Let's try.

We will need:

  • fresh strawberries - 200-300 gr.
  • flour - 2-2.5 cups
  • eggs - 2 pcs.
  • sour cream - 1 glass
  • sugar - 200 gr.
  • butter - 70 gr.
  • baking powder - 1 tsp.
  • soda - 0.5 tsp.
  • vanilla sugar

Try to rinse the strawberries in advance and place them on a paper towel to dry.

For the dough, mix eggs with sugar, add vanilla sugar and beat with a mixer or whisk.

Add sour cream to the dough.

Melt the butter until liquid and also add to the dough. Mix everything well.

Sift the flour through a sieve and let it saturate with oxygen. Pour flour into the dough, add baking powder and soda. Let the dough sit for a little while, about 10 minutes.

Line the pie pan with paper, grease it with oil and pour the dough into it.

The consistency of the dough should be similar to thick sour cream.

Press the strawberries into the dough around the circumference quite thickly (it tastes better this way).

Place the pie in an oven preheated to 180 degrees and bake for 20 minutes. Then reduce the temperature to 170 degrees and bake for another 25 minutes.

Do not open the oven door while baking! Otherwise the biscuit will fall.

Video on how to make jellied pie from shortcrust pastry

Jellied pies always turn out delicious. As a rule, sour cream is used for filling and in combination with berry filling, such baked goods turn out aromatic and juicy. This recipe uses shortbread dough and is easy and quick to prepare.

Strawberry cake with kefir

Kefir, like sour cream, is a frequent guest in our refrigerator. Making kefir pies is a pleasure. Baking with kefir cannot turn out dry and hard; be sure to add soda and do not need to extinguish it.

We will need:

  • fresh strawberries - 150-200 gr.
  • flour - 400 gr.
  • eggs - 3 pcs.
  • kefir - 1 glass
  • sugar - 200 gr.
  • salt - a pinch
  • baking powder - 1 tsp.
  • soda - 0.5 tsp.

To prepare the dough we need a mixer.

Beat the eggs into a bowl, add a pinch of salt and beat them with a mixer until foamy.

Gradually adding sugar, continue beating the eggs. Beat until fluffy white mass.

To make the eggs beat better, cool them first.

Add soda to kefir, stir and pour into the dough.

Instead of kefir, you can use sour milk, or rather yogurt.

Mix flour with baking powder. Sift the flour and gradually pour it into the dough, while continuously stirring the dough.

The dough should turn out like thick sour cream.

We cover the baking dish with paper (if you have a metal form) or grease it with oil and sprinkle it with a little flour (if you have a silicone form).

Pour the dough into the mold and place strawberries in a circle.

Preheat the oven to 180 degrees and bake our pastries for 40 minutes.

The readiness of the pie can be determined with a wooden stick by piercing the pastry with it. If you remove the wooden toothpick dry, then the baked goods are ready.

All that remains is to call the family or guests, although they themselves are already somewhere on the way to the kitchen.

Open Italian pie with sour cream filling

You can surprise your guests with this recipe, despite the fact that it is very simple to prepare. Italian pie is an open-faced pie with fresh berries or fruits, topped with confiture. The basis of this baking is classic shortcrust pastry. Such a treat can even be served on a festive table for guests.

We will need:

For shortbread dough:

  • flour - 300 gr.
  • butter - 200 gr.
  • sugar - 80 gr.
  • vanilla sugar - 1 tsp.
  • eggs - 2 pcs.
  • soda - 0.5 tsp.
  • vinegar - 1 tbsp. l.

For filling:

  • strawberries - 200 - 300 gr.
  • sour cream - 200 gr.
  • sugar - 3 tbsp. l.
  • fruit jelly - 1 pack

First, let's prepare the fruit jelly. I just buy ready-made jelly, dilute it with water according to the instructions and cool it. But you can make jelly using gelatin. Pour 1 tsp. gelatin with water, compote or fruit juice (about 100 ml), let it swell and then heat until the gelatin dissolves. Place in the refrigerator until hardened. Gelatin should not harden very much, more like confiture, so that it can be spread freely over the surface.

Let's start preparing the shortbread dough.

Mix eggs with sugar and vanilla sugar, mix with a mixer until smooth. The color turns out almost white.

Warm the butter slightly to room temperature before cooking. Cut the butter into pieces and stir into the egg mixture. The mixer must run constantly. The mass will look like cream. You can eat it, of course, it’s delicious. But let's continue anyway.

Quench the soda with vinegar and add to the dough.

All that remains is to add flour. We make sure to sift it and gradually introduce it into the dough. Stir everything until smooth.

Wrap the dough in cling film and place in the refrigerator for 1 hour.

Place the dough in a mold greased with vegetable or butter. Using your hands, level the dough along the edges so that the filling fits into the crust.

Bake at 180 degrees for about 15 minutes. We take it out of the mold. The finished cake should cool.

In the meantime, let's start preparing the filling. Mix sour cream with sugar and beat with a mixer until fluffy.

While the pie is cooling, the sour cream can also be placed in the refrigerator.

Sour cream must have a fat content of at least 30%.

Pour the cream into the cake.

We level the surface and decorate our share with strawberries.

We take the gelatin out of the refrigerator and simply spread it on top of the pie with a spoon.

Bon appetit!

Let's start preparing the pie from the end. First, we will prepare a crumb of flour and butter, which we will use to cover the top of the product. Mix flour with sugar and vanilla sugar. Cut the softened butter into pieces and knead with flour with your hands, forming crumbs. Leave the crumbs on the side while we prepare the pie.

To make the filling, first grind the cottage cheese through a sieve. Don’t be lazy to do this, the pie will become softer and tastier after this.

Add butter to the cottage cheese and mix thoroughly with a mixer.

Add sugar, starch and yolks. Combine the mixture with grated cottage cheese. Stir again and leave the curd mass alone for now.

Let's start preparing the dough. The easiest way to mix is to use a mixer.

Mix softened butter with sugar and salt. Beat until the sugar dissolves.

Add eggs into the dough one at a time, while stirring continuously with a mixer.

Mix the dry ingredients - flour, starch and baking powder and add them in small portions to the butter mixture. At the same time, stir the dough all the time. At the end add sour cream.

The dough is thin and cannot be rolled out with a rolling pin. We'll just spoon it into the pan. Of course, we will cover the form with parchment paper and grease it with vegetable oil.

Spread the curd mass on top of the dough in a thick layer and level it again.

Decorate the top with strawberries cut in half.

Sprinkle with pre-prepared crumbs and place in an oven preheated to 170 degrees for 1 hour.

Determine readiness by the golden crust. The pie turns out juicy and just melts in your mouth.
